The Gouldian Finch Society will host the Fred Barnicoat Memorial
07 Show & Auction on February 7 at Weltmeyer Stables, 75 Fore Street,
Alberante, Alberton, to honour a pioneer of South African aviculture. Very few
names in South African aviculture evoke the same sense of respect, mentorship,
and quiet dedication as the late Fred Barnicoat. A lifelong birdkeeper,
breeder, teacher, and supporter of avian clubs across the country, Fred’s influence
stretched far beyond his aviaries. His passing left a noticeable silence in
the community he enriched for decades. That silence will be filled once again
with the colours, sounds, and excitement of exhibition birds. More than just
a competition, this event stands as a tribute to a man whose contributions
helped shape aviculture in South Africa into what it is today. The GFS invites all
bird lovers to join them in celebrating the life and contribution of Fred Barnicoat,
and to enjoy a day filled with excellence, camaraderie, and the timeless

residents desperately seeking advice
to assist injured birds. Whether it’s a
turtle dove, a screeching hadeda or a
timid Cape Robin, volunteers of the
South African Wildlife Rehabilitation
Centre, based in Springs, are willing to
assist at no cost. Get involved and show
your support to keep their good work
going. Donations and continued support

Probus Alberton is one of many clubs throughout South Africa as well

Retina South Africa has announced that the 37th Dis-Chem Ride for
15 Sight is scheduled to take place on February 15 at Boksburg City Stadium.
The race, which has raised over R10m since its maiden race, is organised by
volunteers under the leadership of Retina SA. It aims to fight retinal blindness and
proceeds go to projects that find treatment for the disease. The event includes
the main 116km super classic (it serves as a seeding event for next year’s Ride
Joburg and the 2027 edition of The Cape Town Cycle Tour), 62km challenge and
a 10km fun ride. This year’s event attracted around 3 500 cyclists and included

The Barnyard Theatre was recently transformed into a spectacle of sound and
colour as audiences flocked to experience Big Top Rock, a high-energy fusion of rock
music and circus magic. Guests filled the theatre eager to witness a performance

to a sell-out crowd at Emperors Palace’s Centre Court. The star had nearly 3 000
fans on their feet and throwing carnations, as is Greek custom at concerts, while
singing along to hits from his numerous platinum-selling albums, including Den
Teliosame, Ti Imouna Gia Sena, Lene, Ma De Ginetai, Min Figies and Einai Stigmes. This
was Remos’ second visit to the Palace of Dreams, having last performed at the

A love
When we think of love, we often
think of romance but for Talitha
Oosthuizen (43), love is something
much deeper - it is love for family,
love for service, love for purpose
and love for living life fully. Recently
crowned Mrs South Africa second
princess, Talitha’s journey is a powerful
reminder that the greatest love
story can be the one you live with
intention.
Roots of love
Talitha grew up in Edenvale, where
close family bonds shaped her early
childhood. Her family later moved
to a farm in Nigel, an experience
that connected her deeply to
nature and the outdoors. Not long
after, they returned to the East
Rand, settling in Bedfordview, where
Talitha completed her high school
years.
Family played a defining role in who
she became. She speaks with deep
respect about her parents and the
lessons they passed on.
‘If there’s one role model that planted
seeds of leadership, service, and
entrepreneurship, it would be my
father,’ she shared.
‘He started his company in 1979,
and it was a great leap of faith he
took.’
Her mother was equally influential.
‘Yes, my father showed me the business
side of things, but my mom
certainly showed me the softer side
of life - how to be nurturing and a
woman of integrity.’
Talitha has been married for 15
years, and her husband remains one
of her strongest pillars of support.
‘My husband is so supportive, he
just lets me fly,’ she says. ‘He’s there
when I have my moments; when
I’m in the shadows he’s there to pick
me up.’
Learning curves and building a
career
After matric, Talitha planned to
attend university and received a
dance scholarship, as she is a trained
dancer. She spent six months there
before leaving due to personal reasons.
While this felt like a setback at
the time, it opened a new door.
She went on to study beauty therapy,
qualifying in the field and later
owning her own salon. This chapter
marked the beginning of her passion
for empowering women. From
there, her career took an unexpected
turn into tourism.
In 2007, Talitha partnered with her
brother-in-law to found Bush Whisper
Expeditions, a tourism business
offering tours and safaris across
Southern and Eastern Africa.
‘I love our country and with most
of our clients being international, I
love showing them the beauty of
Africa,’ she says. When the Covid-19
pandemic hit, the business faced
challenges. Instead of giving up,
they adapted and launched Bush
Whisper Apparel, specialising in locally
produced Shweshwe products.
Between 2007 and 2022, Talitha
faced profound personal loss, including
the passing of her father.

where my strength lies,’ she says.
After his passing, she took over his
construction company, a move that
pushed her far outside her comfort
zone.
‘It’s a construction company and
I had to learn everything from
scratch. I had to quickly learn and
put on my big girl boots, as it still is
a very male-dominated industry.’
She admits the experience was
both overwhelming and exciting,
and credits it with building her
resilience. She is grateful to see the
industry changing and encourages
women to support one another.
She also values the role the business

Love in action
Giving back is not an add-on to Talitha’s
life; it is woven into her work.
Through the
Bush Whisper
Foundation,
a portion of
profits from
their soft toy
range is used
to do good. The
foundation employs
disadvantaged women
who create Shweshwe
apparel, giving them
skills and a sustainable
income.
Funds are also distributed
to Green Trax, which
focuses on conservation
and anti-poaching, and
Shattering Shackles, an organisation
combating human
trafficking and GBV. Talitha also
supports Abraham Kriel Kinderhuis,
a children’s home caring for
children affected by GBV. She chose
Shattering Shackles because it
closely relates to her own personal
experiences.
‘Advocating for these causes has
been like a perfectly painted picture
where I am able to help make a difference,’
she says. Talitha has openly
shared about overcoming an eating
disorder and later developing
epilepsy. Today, she speaks about
it to help others. She believes that
healing becomes meaningful when
it gives hope to someone else.
From silence to strength
Pageantry was not always easy for
Talitha. As a child, she modelled but
experienced injustice, which affected
her confidence. Her mother sent
her for modelling classes, where she
met Andrea Stelzer, a former Miss
South Africa , who helped restore
her self-belief.
At 17, Talitha won Model of the Year
South Africa, which opened many
doors. She later entered Miss South
Africa, but admits she was not ready
at the time.
After getting married, she entered
Mrs South Africa for the first time
in 2014. While she was unprepared,
the experience taught her valuable
lessons. When she entered again,
everything changed.
‘From the moment I entered, I knew
I was ready and born for this,’ she
says.
‘Seeing my childhood dream come
to life is a humbling and uplifting
experience. ’For her, it was never
about the crown.
‘There is a deeper reason, a why,
and a greater purpose,’ she explains.
‘My mission is and will always be to
empower women. I want to show
women that it’s possible to find your
voice and use it for good.’
She credits the Mrs South Africa
platform for helping her step out of
silence and into purpose.
Talitha is also an avid climber and
adventurer, using physical challenges
as metaphors for resilience. She
has completed over 40 hiking trails
across South Africa and Namibia,
summited Mount Kilimanjaro on her
father’s birthday in his honour, and
even bungee-jumped.
In March, she will trek to Mount
Everest Base Camp, carrying not
only the South African flag, but the
dreams of women everywhere. Her
advice is that with courage and
purpose, anything is possible.

Alberton’s own rising star, Yvette Mhlauli,
was born in July 1992 and raised in
Brackendowns. Her life is shaped by a
strong sense of identity and belonging.
‘My cultural upbringing gave me a
clear moral compass,’ she says. ‘Staying
connected to Bizana and Umzimkhulu
reminded me that no matter where
I go, I should never forget who I am
and where I come from. It taught me
humility.
’ This deep connection to self is the
foundation of everything she does,
including the way she loves sport and
people.
Love, tradition and grounding
Yvette grew up in a home where culture
and family came first. Every June
was spent in Bizana in the Eastern Cape,
and every December in Umzimkhulu
in KZN. Her parents were committed
to keeping traditions alive for Yvette
and her siblings. ‘My parents were strict
but also fair, so that played a huge role
in shaping who I am today,’ she shares.
‘They valued hard work and made sure
my siblings and I had everything we
needed when we grew up.
’ Family remains her anchor. She speaks
to both parents every day and draws
strength from them during high-pressure
moments. ‘Even when I couldn’t
physically be with my family, knowing
they believe in me helps a lot.’
Her love for sport
Her love for sport began early. She
played netball and touch rugby at
school, and weekends were spent
watching cricket on SABC 3 as a family
ritual. Football, however, captured her
heart through her father’s love for Orlando
Pirates. ‘I realised it very early on.
My Dad loved sport, and the bug bit
me too,’ she explains.
Soweto Derby days were serious business
in the Mhlauli home, with early
dinners and strict rules if Pirates lost.
Her older brother Mongezi, a passionate
Manchester United supporter,
added another layer to her football
education. ‘Watching European football
with him expanded my understanding
of the sport beyond local leagues and
showed me how incredible global football
really is.’ Sport became a language
of love, loyalty and bonding in her
home.
The SuperSport MVP journey
All heart,
all game
Raised on tradition, driven by passion and fuelled by love
for sport, Yvette Mhlauli proves that when you stay true to
yourself, the game always finds its way home.
Yvette is currently part of the nationally televised SuperSport MVP Talent Search
and has made it into the Top 3. A radio broadcaster at YFM, she has long dreamed
of moving into sportscasting. That dream began to feel real when she started
blending sport into her prime-time show, The Lunch League (weekdays 12–3pm
alongside FreshBy Caddy). ‘The spark came from realising that I didn’t just love
sport, I loved talking about it,’ she says.
Her first on-camera experience was “humbling”. Long days, technical run-throughs,
time away from family, and constant pressure tested her deeply.
‘Being away from my family, my daughter, my routine and everyday life was extremely
difficult,’ she shares.
Yet the journey brought unexpected gifts. The Top 20 contestants formed a closeknit
family. ‘We lifted each other up during low moments and celebrated each
other’s wins,’ she says.
Guidance from Carol Tshabalala proved life-changing. ‘Hearing her tell me that she’s
proud I took her advice was incredible,’ Yvette says, after placing second in that
challenge. ‘It was an indication to me that I would go far in the competition.’
Downtime: Choosing peace
When she switches off, Yvette does so with intention. ‘Definitely simplicity, peace
and resetting mentally,’ she says. She spends time with her family and her daughter,
watches MasterChef and Courage The Cowardly Dog, and puts her phone on DND.
Meditation and journalling are daily rituals. ‘The first 10 minutes after I wake up and
the last 10 minutes before I go to sleep are reserved for that,’ she explains.
Love yourself enough to try
Yvette hopes young women understand that background does not limit potential.
‘Where you come from does not define how far you can go,’ she says. Her message
to young women is: ‘Keep dreaming boldly, trust your passion, and know that the
love you have for sport will one day become your purpose. It’s ok to make mistakes
and not be perfect… it’s all worth it in the end.’
Purpose and legacy
Yvette is focused on becoming a respected and credible sports broadcaster,
known for authenticity and insight. ‘I want to be a storyteller that resonates across
audiences,’ she says.
Her bigger dream is to build a legacy rooted in excellence and inspiration. ‘I want
to open doors for other young women and reshape representation in the world of
sports.’

Getting to know the powerhouse that is
Liziwe Matloha
In the vibrant world of South African cuisine, few names capture the warmth of
family, the depth of cultural heritage and the hustle of entrepreneurial
grit quite like Liziwe Matloha.
A chef, entrepreneur, mother, wife, cookbook author and cookery class host, Liziwe
embodies the beautiful balance between nurturing a family and building a powerful
brand. It is all rooted in her love for food.
Born and raised in Boskop, a rural part of Potchefstroom in the North West, Liziwe’s
early life was steeped in humble beginnings, tradition and shared family duties.
“The earliest memory I have of making food was around 13 years old, when we had
to take turns cooking and doing chores around the house. Sundays were especially
exciting because that’s when we got
to eat a proper meal with meat and
veggies.”
While many in her family cooked out
of necessity, Liziwe quickly discovered
that her relationship with food went
far beyond obligation. Even at that
young age, for her it was about flavour,
creativity and joy.
Some of her favourite memories are
making desserts and baked treats for
her father.
“My dad always loved whatever I made
him, and I remember how wonderful I
felt when he told me how delicious it
was,” she recalls.
After completing her first college
qualification and getting married,
Liziwe moved to Boksburg, where she
worked in retail before pivoting into
media studies at Boston Media House
and building a career in marketing and
advertising.
A goal achieved
But her culinary calling never faded,
and in 2015, she took the bold step of
enrolling at Capsicum Culinary Studio’s
Boksburg campus for their Diploma
in Food Preparation and Cooking
programme.
From the start, her goal was clear. She
wanted to write cookbooks and teach
cooking classes and now, 10 years later,
she’s done precisely that.
“I created social media pages for my
brand, which got me an interview at
Metro FM, and that changed the whole
game for me.”
One standout achievement was being
crowned Drum Magazine’s Food Ambassador.
“The whole experience changed my
life and fulfilled many of my dreams. It

was unexpected, as this was a cooking competition among some of South Africa’s
great foodies and chefs. Winning meant being crowned Drum Food Ambassador,
which entailed becoming a food writer for the magazine, which was published
weekly, creating a recipe book (with me on the cover!) and winning a cash prize.
“As part of the accolade, I had to deliver four recipes a month, developing, testing
and food styling them for shoots, and write monthly food articles. I created the recipe
book with over 50 recipes and travelled across South Africa doing food demos
with amazing food brands. What followed was a whirlwind of radio interviews, TV
appearances, magazine features and food demonstrations, which not only boosted
her visibility but also validated her voice in the food space.
About community and culture
One of Liziwe’s most beloved projects is Dinner@Matloha’s, a food brand that’s as
much about community and culture as it is about cooking.
“It gives a glimpse into our family dinner table and our kitchen, from the recipes
shared to conversations over dinner,” she says.
Through this platform, Liziwe hosts cookery classes, shares recipe development tips
and explores food in ways that resonate with everyday South Africans.
“Food is my love language. The idea of sitting around the table, enjoying dishes
and good conversation, excited me. When I started sharing recipes and images on
social media, my followers responded with so much enthusiasm, and that’s when I
knew I was on the right path.
“At Dinner@Matloha’s, I celebrate food as a story and a connection. My journey is
about showcasing African flavours in a fresh, modern way while keeping the heart
of home cooking alive. Through my classes and cookbooks, I hope to inspire confidence
in the kitchen, celebrate our local ingredients, and remind people that food
is best celebrated around the table.
Recipes shared around the table
Among the many hats she wears, Liziwe is also proud to be the author of her
cookbook, Dinner at Matloha’s, published in 2021, which features recipes for all
times of day and every season. The book features authentic recipes: “the kind you
want to cook and eat at home,” which are easy to understand, quick, simple, feature
everyday ingredients, and are budget-friendly.
Liziwe is currently working on a second cookbook project, which she hopes to
publish in the next year or two. The recipes are elevated, creative, and delicious, yet
remain true to family cooking - recipes shared around the table with loved ones,
bringing comfort.
“Publishers have approached me to do one now, but I am not ready to release another
book just yet because I want to write books that are genuine and authentic.
Recipes that will be passed down through family generations.”
Where does Liziwe see herself in five years’ time?
“Looking ahead, I’m drawn to leaving city life behind for a sustainable existence on
a farm. A place where I can live more harmoniously with nature. Alongside this, I
want to establish a skills development centre to empower others through learning
and sharing. I’m also passionate about writing books, crafting recipes, and collaborating
with brands, both local and global, that appeal to me. This mix of creativity,
community focus, and sustainable living is central to how I envision my path
unfolding over the next few years.”
Liziwe is more than a chef - she’s a movement. A woman who transformed her
childhood memories into a brand; a storyteller whose medium is food; a mother
who brings her family’s values to her audience’s tables; and a dreamer who continues
to push boundaries in the culinary space.
Her story is a reminder that passion, when paired with resilience and vision, can
take you from humble beginnings to inspiring heights.

Liziwe Matloha’s Slow Roasted
Lamb Shanks (serves 4)
You’ll need:
• 4 lamb shanks • Salt and freshly
ground black pepper to taste •
Flour, for dusting • 4 tbsp olive
oil • 1 large onion, peeled and
roughly chopped • 10 garlic cloves,
chopped • 4 sprigs fresh rosemary •
4 sprigs fresh thyme • 2 tbsp Moroccan
spice rub • 250ml chicken stock
• 250ml dry white wine • 250ml
water • 300g baby potatoes, halved
if necessary
To make:
Season the lamb shanks and dust
lightly with flour. Heat 2 tbsp oil in a
nonstick pan and brown the shanks
on all sides (you may need to do
this in batches).
Place the browned shanks in a large
ovenproof casserole or roasting
pan. (If you like, deglaze the pan
with a little boiling water or warm
stock and add the juices to the
roasting pan.) Add the onion, garlic
cloves, rosemary, thyme, Moroccan
spice rub, chicken stock, wine and
water to the roasting pan.
Cover with a lid or heavy foil and
roast in a preheated oven at 200°C
for 1½ hours. Remove the dish from
the oven and add the baby potatoes.
Check the seasoning and adjust
if necessary. Return to the oven
for a further hour, or until the meat
is tender and falling off the bone. (If
the potatoes are not tender at the
end of the cooking time, remove
the lamb and continue cooking the
potatoes while the lamb rests.)
Once the potatoes are done, strain
the pan juices into a gravy boat or
small bowl, discarding the herbs.

Sweet cravings
Chocolate and coffee. All you need to kick start the month of love.
FIVE INGREDIENT CHOCOLATE POTS
You’ll need: 125ml milk, 250ml cream, 3 Tbsp castor
sugar, 5 egg yolks, 200g dark chocolate - chopped
To make: Heat the milk and cream in a small
saucepan over medium heat to just before boiling
point. Remove from the heat. Whisk the sugar
and egg yolks in a heatproof bowl. Slowly add
the cream mixture to the yolks, while beating to
prevent the eggs from scrambling. Return the
custard to low heat and cook, while stirring, for
about 5 minutes or until the mixture coats the
back of a spoon. Strain the custard through a sieve.
Stir through the chocolate until melted. Spoon
into 6 x 125 ml bowls. Set in the fridge.
Optional: Place 2 egg whites and 125 ml (½ cup)
castor sugar in a medium heatproof bowl set over
a small saucepan with simmering water. Beat with
a hand beater on medium speed until the sugar
has dissolved and the mixture is heated. Take off
the heat and continue beating until the meringue
reaches room temperature and soft peaks form.
Spread dollops onto the chocolate pots. Char with
a blowtorch. Serve with berries and shortbread
biscuits/cigars (optional).

NUTTY MOCHA MOUSSE
A bold, no-bake dessert made to impress.
You’ll need: 500ml fresh cream, 60g Babylonstoren Dark Chocolate
with Rye - finely chopped, 125ml Babylonstoren Coffee Nut
Butter, 60ml Babylonstoren Salted Caramel, Maldon salt to serve,
Babylonstoren koffiekoekies to serve
To make: Heat half a cup of cream in a small saucepan over
medium heat or in the microwave until just below boiling point.
Stir in the chocolate until melted and smooth. Cover
directly with plastic wrap and set aside to cool.
Whisk the remaining cream in a bowl until medium
peaks form. Add the nut butter and salted caramel
and whisk until smooth. Pour into six ramekins or
glasses (about 160 ml each) and place in the fridge
to set.
Divide the cooled chocolate ganache over the
mousse and place in the fridge until needed.
Serve with a pinch of flaky salt and koffiekoekies.

CHERRY & CHOCOLATE COFFEE CHARLOTTE
Serves 6 to 8
You’ll need: Some oil for the mould, 175g Boudoir finger biscuits,
2–3 Tbsp brandy, 1 small cup of strong Jacobs coffee, 300ml
cream, 200g mascarpone cheese, 2 Tbsp cocoa powder (plus
extra for dusting), 2 Tbsp powdered sugar (plus extra for
dusting), 300g cherries, pitted and halved (plus 3 cherries for
garnish), 100g dark chocolate, melted
To make: Lightly brush a deep bowl with oil and line the base
with baking paper. Set aside 5 biscuits. Mix brandy and Jacobs
coffee, soak the remaining biscuits briefly. Line the bowl with
halved biscuits at the bottom and whole biscuits around the
edge (sweet side facing out).
Whip cream until stiff and fold in mascarpone. Divide into two
bowls - mix cocoa and powdered sugar into one, and cherries
into the other.
Alternate layering cream mixtures in the biscuit-lined bowl. Add
spoonfuls of leftover soaked biscuits on top and press down
firmly. Refrigerate for several hours or overnight to set.
Before serving, invert onto a plate. Dust generously with cocoa
and powdered sugar, garnish with cherries, and drizzle melted
dark chocolate. Serve and enjoy!

Summer Cheese & Fruit Board
A cheeseboard that’s vibrant, fresh and indulgent. Juicy grilled nectarines
pair beautifully with creamy mozzarella, and the peach and ginger compote

plums and a few simple extras, and you’ve got a stunning spread.
You’ll need: Peach and ginger compote, 4 peaches - peeled, pitted and cut
into chunks, 2 Tbsp brown sugar, 1 Tbsp honey, 1 Tbsp lemon juice, 3 slices
of fresh ginger, 4 sprigs fresh thyme, grilled nectarines, 4 nectarines - halved
and pitted, 10ml olive oil, balsamic reduction for drizzling
To assemble: 250g plain chunky cottage cheese, mixed olives, assorted
cheeses - white cheddar, gouda, mozzarella, camembert and chevin, 3
plums (cut into wedges), crostini or baguette slices, Italian cold meats like
prosciutto and coppa, fresh thyme to garnish.
Method: To make the peach compote
place all of the ingredients into a
saucepan. Stir over a medium heat to
dissolve the sugar. Bring to the boil, then
lower the heat and simmer for 10 minutes,
stirring occasionally, until the peaches
are tender and the liquid is syrupy. Set
aside to cool. Brush the cut side of the
nectarines lightly with some olive oil. Heat
a griddle pan and cook the nectarines
cut side down for 5 minutes until charred
and slightly softened. Transfer to the
cheeseboard and drizzle with balsamic
reduction just before serving. Remove
the ginger from the peach compote
and transfer to a small bowl. Scoop the
cottage cheese into a bowl. Place the
olives in a small bowl and arrange on
a large serving board with the cottage
cheese and compote. Arrange the
cheeses on the board around the bowls.
Add the fresh plum wedges, crostini and
cold meats. Garnish with fresh thyme and
serve immediately.

Harissa Yoghurt Marinated Chicken with Charred Nectarines,
Fennel, Tomato, Feta Salsa & Mint Dressing on corn tacos
You’ll need: 2 Tbsp harissa spice or paste, 80ml full cream yoghurt, 1 Tbsp lemon
juice, 800g chicken thighs, 2 nectarines or peaches - quartered, 1 fennel bulb -
sliced, 2 tomatoes - diced, 100g feta - crumbled
For the dressing, you’ll need: 2 Tbsp full cream yoghurt, 2 Tbsp mint, 1 Tbsp olive oil,
6 to 8 soft corn tacos
To make: Combine the yoghurt, harissa, lemon juice, and salt, and mix until well
combined. Add chicken and coat with yoghurt marinade. Allow to rest, covered
for 30 minutes or up to overnight in the fridge.
Braai chicken on medium coals for 20 to 30 minutes, turning every 5 to
8 minutes. If the chicken was refrigerated, bring it to room temperature
before cooking.
Cut nectarines and fennel into quarters, char on the fire rotating every minute for
about 4 minutes. Dice nectarines once charred.
In a bowl combine tomatoes, feta, charred fennel and nectarines.
To make dressing: Add mint, olive oil, yoghurt into a food processor and blitz till
smooth. Add a teaspoon of feta brine to loosen the mixture up if needed. Slice or
shred chicken and serve in a warm taco with nectarine salsa and a drizzle of the
mint dressing.
Nectarine and Plum Galette
For the dough, you’ll need: 280g allpurpose
flour, pinch salt, pinch sugar,
170g butter - must be cold and cut
into cubes; 4 to 5 Tbsp water - must
be cold
For the pie filling, you’ll need: 4 to 5
fresh nectarines - thinly sliced, 3-4
plums (depending on the size) –
thinly sliced, 100g goat’s cheese, ±125
grams cream cheese, fresh thyme, 1
egg - beaten, honey
To make: Pulse the flour, salt, sugar
and butter in a food processor until
you have coarse crumbs. Add the
cold water a tablespoon at a time
until the dough comes together. Turn
it out onto a floured surface, lightly
knead into a ball, wrap and chill for
at least 1 hour. Preheat the oven to
180°C and line a baking sheet with
baking paper. Roll out the chilled
dough into a rough circle and place
it on the baking tray. Spread cream
cheese over the centre, leaving about
a 5cm border all around the edge.
Layer the sliced nectarines and plums
over the cream cheese, sprinkling
goat’s cheese as you go.
Add a sprinkling of fresh thyme to the
top of your fruit layer.
Gently fold the 5cm border over the
filling before brushing the pastry
border with the egg wash.
Bake for about 30 minutes, until
golden and the stone fruit is soft.
Remove from the oven and drizzle
honey over the warm fruit.

We’re planting … Dipladenia
Diamantina (Jade Scarlet) in
pots or hanging baskets for
the patio. This is the first really
compact, bushy Dipladenia that
fills its container with bright red
trumpet-shaped flowers. Plants
perform best with plenty of
morning sun and some afternoon
shade, so don’t position them
against a hot, west facing wall.
Water when the topsoil feels
slightly dry. Fertilise monthly in
summer and trim to keep neat.

Garden tasks for February
• In very hot weather set the lawnmower on its highest setting so that the grass is
higher to shade the roots. • Watering in the evening helps plants to start the day
moist and they will be less heat stressed. • If it is very hot, delay fertilising until it
gets cooler. This puts less stress on the plants. • Succession crops of bush beans,
beetroot, carrots, Swiss chard and rocket can still be sown. • If annual herbs have
gone to seed, sow a new crop of basil, rocket and coriander. • Keep birdbaths
filled with fresh water.
Herb of the month
Did you know that Summer Savory
(Satureja Hortensis) was known as
the herb of love during Roman times?
They believed this aromatic herb was
a natural aphrodisiac and used it to
make love potions. While we don’t
have the recipe for the potions, you
can still work culinary magic by using
this herb to flavour roast chicken, slow
cooked stews, and to season grilled
meat on the braai.
The small, delicate, light green leaves
have a peppery, thyme-like flavour
with a hint of marjoram. Use it fresh or
dried, but in small quantities so that it
doesn’t overpower the dish. It can also
substitute for sage.
To grow: Sow seed directly into the
ground or in seed trays or pots.
Transplant when seedlings are big
enough to handle and space or thin
out seedlings 20cm apart. Summer
Savory thrives in full sun in fertile,
well-draining soil. The aromatic
leaves deter pests and it is a good
companion plant for garden beans.
The first leaves can be harvested
within 60 days from planting, or the
whole plant can be harvested in the
bud stage. Leave some plants to
flower for the bees and butterflies. To
dry, hang the plants in a warm, dark

Indoor plant of the month
Exotic and romantic, Curcuma, also known as Siamese Tulips, are the perfect gift
plant for Valentine’s Day. Their unusual pink, white or purple flowers are carried
on tall stems above the spear-shaped green leaves. To keep curcuma flowering
for the rest of summer, cut down faded flowers at soil level to encourage new
flowers and feed with a liquid fertiliser once a month. Place plants where they will
receive bright indirect light and keep the soil consistently moist but not soggy.
When they go dormant in winter, put the pot in a cool, dry place and let the soil
