Was die Chocolatiers <strong>de</strong>r kleinen, aber feinen <strong>Confiserie</strong> <strong>Coppeneur</strong> an<strong>de</strong>rs machen, ist mit einem Wort gesagt: Alles! Und das erklärt sich so: Bei coppeneur wer<strong>de</strong>n chocoladige Genüsse von <strong>de</strong>r Bohne an aus handverlesenen Cacaobohnen hergestellt. Dafür wählt <strong>de</strong>r Chocolatier die bestgeeign<strong>et</strong>e Plantage im Ursprungsland selbst aus und erwirbt Anteile <strong>de</strong>r Ernte, entsprechend <strong>de</strong>m Bedarf. Die Zahlung eines fairen und angemessenen Preises ist allein schon durch die knappe Verfügbarkeit <strong>de</strong>s Cacaos gegeben. Es passierte schon <strong>de</strong>s Öfteren, dass aus diesem Grund eine Warenverfügbarkeit stark eingeschränkt war, ja sogar über Monate hinweg ausblieb. Jedoch garantieren diese vertrauensvollen Partnerschaften zu <strong>de</strong>n Farmern am Cacao-Ursprungsort, dass dann auch ausschließlich allerfeinste sortenreine Qualitäten aus natürlichem Anbau zu coppeneur gelangen. Die einzelnen Chargen sind vergleichsweise sehr klein und die selektierten Bohnen <strong>de</strong>mentsprechend äußerst wertvoll. „Cacao von höchster Qualität ist ein sehr rares Gut. Nur wenige Cacao-Farmer beherrschen alle hierfür notwendigen Arbeitsschritte in Vollendung, vom Anbau über die Ernte, die Fermentierung bis hin zur Trocknung. Jedoch ist es unabdingbar, sämtliche Disziplinen in Gänze abzu<strong>de</strong>cken, um einen Rohstoff zu erzeugen, <strong>de</strong>r <strong>de</strong>n Qualitätserfor<strong>de</strong>rnissen von <strong>Cru</strong> <strong>de</strong> <strong>Cao</strong> entspricht“, b<strong>et</strong>ont Oliver <strong>Coppeneur</strong>, <strong>de</strong>r international zu <strong>de</strong>n Spitzen-Chocolatiers zählt und ausschließlich in seinem Atelier im Rheinland produziert. Hier stellt er exquisite Chocola<strong>de</strong>n her, wobei die meisten seiner Creationen auf sorten-, ernte- und herkunftsreinem Cacao basieren. <strong>Cru</strong> <strong>de</strong> <strong>Cao</strong> chocolates are som<strong>et</strong>hing special from their origins. What the chocolatiers of the small but classy <strong>Confiserie</strong> <strong>Coppeneur</strong> do different is said in a word: Everything! And that can be explained as follows: Starting with the bean, the chocolate <strong>de</strong>lights at coppeneur are manufactured from hand-picked cocoa beans. The chocolatier himself selects the most suitable plantation in the country of origin and acquires shares in the harvest, corresponding with his need. Payment of a fair and appropriate price is given simply by the scarce availability of the cocoa. It has happened many a time that the availability of the goods has been severely restricted for this reason, or has even failed to materialize over months. However, these trustworthy partnerships with the farmers at the cocoa’s place of origin guarantee that exclusively the very finest and single-vari<strong>et</strong>y qualities from natural cultivation reach coppeneur. The individual batches are comparatively small and the selected beans correspondingly extremely valuable. “Cocoa in premium quality is a very rare commodity. Only very few cocoa farmers master all necessary working steps to perfection, from cultivation to the harvest, fermentation and all the way to drying. It is, however, indispensible, to cover all disciplines in total to produce a raw material which me<strong>et</strong>s the quality requirements of a CRU DE CAO”, emphasises Oliver <strong>Coppeneur</strong>, who is one of the international top chocolatiers and who produces exclusively in his workshop in the Rhineland. Here, he manufactures exquisite chocolates, where most of his creations base on vari<strong>et</strong>ally pure, single harvest and single origin cocoa. The special thing about this: The cocoa beans of one plantation stay among their peers from the harvest all the way to the premium refinement level, ripen so to say in a closed quality community, before they are gently processed to the finest chocolates. Chocolate creations, for which cocoa beans of one and the same farm were used, are called “Grand <strong>Cru</strong> <strong>de</strong> Plantation” resp. “Grand <strong>Cru</strong> d’origine”, when they have the same country of origin. At coppeneur, handpicked premium quality from controlled origins in the smallest harvest quantities is consi<strong>de</strong>red as indispensible prerequisite for authentic <strong>de</strong>lectation. In addition, each selected batch is roasted in minimal quantities, so that each individual unit, usually <strong>de</strong>livered in 60 kg jute bags, is taken into consi<strong>de</strong>ration for the <strong>de</strong>gree of roasting. For the conching step, the chocolatiers at coppeneur take ten to twenty times more time than is usual in the industry; that can take up to 128 hours! Does the extra effort pay off in the end? Of course! The difference is the taste. Das Beson<strong>de</strong>re daran: Die Cacaobohnen einer Plantage bleiben von <strong>de</strong>r Ernte bis hin zum höchsten Vere<strong>de</strong>lungsniveau unter ihres Gleichen, reifen sozusagen in einer geschlossenen Qualitäts- Gemeinschaft, bevor sie schonend zu e<strong>de</strong>lsten Chocola<strong>de</strong>n verarbeit<strong>et</strong> wer<strong>de</strong>n. Chocoladige Creationen, für die Cacaobohnen einer und <strong>de</strong>rselben Farm verwen<strong>de</strong>t wur<strong>de</strong>n, nennen sich „Grand <strong>Cru</strong> <strong>de</strong> Plantation“ bzw. „Grand <strong>Cru</strong> d’origine“, wenn sie dieselbe Heimat haben. Handverlesene Spitzenqualität aus kontrollierter Herkunft in kleinsten Erntemengen gilt bei coppeneur als unabdingbare Vorauss<strong>et</strong>zung für authentischen Hochgenuss. Zusätzlich wird je<strong>de</strong> ausgewählte Charge in Kleinstmengen geröst<strong>et</strong>, so dass beim Röstgrad individuell auf je<strong>de</strong> einzelne Einheit eingegangen wird, die meist in Jutesäcken zu 60 kg geliefert wer<strong>de</strong>n. Für das Conchieren nehmen sich die Chocolatiers von coppeneur dann zehn bis zwanzig Mal mehr Zeit, als es in <strong>de</strong>r Industrie üblich ist; das kann bis zu 128 Stun<strong>de</strong>n dauern! Ob sich <strong>de</strong>r Mehr-Aufwand am En<strong>de</strong> lohnt? Gewiss! Der Unterschied ist <strong>de</strong>r Geschmack.
