DOPPELTES MUOTITHALER KALBS-<br />
KOTELETT, IM KACHELOFEN GEBRATEN AUF<br />
STOOSHEU VOM «LAUI-WIESEL»<br />
ZUTATEN Zubereitung<br />
2 doppelte Kalbskoteletten,<br />
à ca. 450 g<br />
3 EL Olivenöl<br />
½ TL schwarzer Pfeffer<br />
zerdrückt<br />
2 Zweige Thymian, grob gehackt<br />
½ Zweig Rosmarin, grob gehackt<br />
1 EL Meersalz<br />
Bratbutter, zum<br />
Anbraten<br />
2 Büschel Alpheu<br />
½ dl Heublumenschnaps<br />
(Getränke Omlin,<br />
Sachseln)<br />
1,5 dl brauner Kalbsjus<br />
«Bratgumeli»<br />
(Bratkartoffeln)<br />
Saisongemüse<br />
Pfeffer, Thymian, Rosmarin, die Hälfte des Heublumenschnapses<br />
und das Olivenöl mischen. Die Koteletts mit der<br />
Marinade einreiben und eine Stunde zugedeckt bei Zimmertemperatur<br />
marinieren. Die Koteletts aus der Marinade nehmen<br />
und mit dem Meersalz würzen. Die Bratbutter in einer<br />
Bratpfanne erhitzen und das Fleisch rundum ca. 20 Minuten<br />
gut anbraten. Die Koteletts immer erst wenden, wenn sich eine<br />
Kruste gebildet hat. Das Fleisch aus der Pfanne nehmen. Die<br />
Pfanne leicht auskühlen lassen und die Hälfte des Heus in die<br />
Pfanne geben. Die Koteletts darauf betten und mit dem restlichen<br />
Heublumenschnaps begiessen. Das Fleisch mit dem<br />
restlichen Heu bedecken. Ein Fleischthermometer an der<br />
dicksten Stelle einstecken und im auf 120 °C vorgeheizten<br />
Ofen für ca. 60 Minuten garen, bis die Kerntemperatur 60 °C<br />
erreicht hat. Das Fleisch warm stellen, die restliche Bratflüssigkeit<br />
zum Kalbsjus geben und aufkochen. Die Koteletts<br />
zwischen den Knochen in zwei Teile schneiden, mit neuen<br />
«Bratgumeli» und Saisongemüse servieren.<br />

Preparation<br />
Mix together the pepper, thyme, rosemary, olive oil and half of<br />
the hay flower schnapps. Rub the chops <strong>with</strong> the mixture and<br />
leave covered for an hour to marinate. Remove the chops and season<br />
<strong>with</strong> the sea salt. Heat the clarified butter in a pan and sauté<br />
the meat for a good 20 minutes. Turn the meat only when a seared<br />
crust has formed. Remove the meat from the pan. Let the pan<br />
cool a little before adding half of the hay. Place the chops onto the<br />
hay and drizzle <strong>with</strong> the remaining hay flower schnapps. Cover<br />
<strong>with</strong> the rest of the hay. Insert a meat thermometer into the thickest<br />
part of the meat and cook slowly for about 60 minutes in a<br />
pre-heated oven at 120 °C, until a core temperature of 60 °C is<br />
reached. Keeping the meat warm, add the roasting juices to the<br />
veal jus and bring to the boil. Cut the chop in two, and serve <strong>with</strong><br />
roasted new potatoes and seasonal vegetables.<br />
