We feature the fi nest quality sausage and luncheon meats ever produced. Karl<br />

Geier started in the trade at the age of fourteen, earning his Degree of Master <strong>Sausage</strong><br />

Making at the age of twenty two. For generations sausage making has been<br />

and continues to be a part of our family tradition.<br />

Cooking Tips<br />

Cooked <strong>Sausage</strong> Links<br />

Frankfurter, Bauernwurst, Bratwurst,<br />

Debrizener, Hot Dogs, Andouille, Ring Bologna<br />

Note: These sausages are pre-cooked so they<br />

only need to be heated.<br />

Grill - Pre-heat grill. Place sausage directly on<br />

grill turning as needed. Being careful not to over<br />

cook causing the casing to split and lose fl avorful<br />

juices.<br />

Pan-Fry - Place sausage in frying pan or heavy<br />

skillet. Add a small amount of water or butter to<br />

the pan. Cook over medium heat until heated<br />

through, turning as needed. Can be covered to<br />

hold in moisture heat more quickly for approximately 5 - 10 minutes .<br />

Broil - Pre-heat oven on broil. Place sausage in pan with a small amount of water.<br />

Broil approximately 3-5 minutes on each side.<br />

Boil - Bring a pan of water to a boil. Remove from heat and add sausage. Cover<br />

the pan and let stand until the sausage is thoroughly heated. Approximately 10 - 15<br />

minutes. Remember do not boil as the casing will become tough.<br />

Microwave - Place sausage in microwave safe plate. Cover with paper towel. Cook<br />

on high for 1 - 4 minutes until sausage is hot. Let stand for a minute then serve.<br />

Fresh <strong>Sausage</strong> Links Grill - Place fresh sausages directly on grill over low to medium<br />

heat. Turn sausage frequently with tongs to ensure that they are evenly cooked.<br />

<strong>Sausage</strong>s can be par-boiled in water, or beer and onions before being placed on the<br />

grill to speed up the grilling process. Then grill slowly, turning frequently until done,<br />

170 o degrees.<br />

Pan-Fry - Place sausage in frying pan or heavy skillet. Add small amount of butter<br />

or water with sausage. Cover and cook at medium heat until internal temperature of<br />

170 o turning sausage as needed.<br />

Bake - Pre - Heat oven to 350 o . Place sausages in casserole dish or any covered<br />

oven safe dish with a small amount of water or butter. Cook until internal temperature<br />

is 170 o . Approximately 30 minutes. Add sauerkraut, potatoes or cabbage for an<br />

unsurpassed fl avor.<br />

Remember all of these sausages are produced in a natural casing and you do not<br />

want to over cook them or puncture them with a fork or knife as the casing will split<br />

allowing the natural juices and fl avors to escape. Enjoy !<br />
