In the dawn of Chinese civilization, its tastes in food and in cook-<br />
ing- were originally classified under and based upon the five principal<br />
elements of Nature: viz, Mineral, Veg-etation, Water, Fire and<br />
Earth.<br />

the lungs.<br />
2. Food that tastes sour, like vinegar or greens, belongs to the Vegetation<br />
Element and attracts the action of the Liver and Gall.<br />
3. Foods that taste salty belong 'to the Water Element and have an influence<br />
upon the Kidneys.<br />
4. Foods that taste hot, such as those containing liquor, belong to the Fire<br />
Element. They rush to the head and influence the action of the Heart.<br />
5. Food that tastes sweet belongs to the Earth Element. It is craved by the<br />
Stomach and by the Spleen.<br />
Equalization in the combination of foods is beneficial to all parts of the<br />
human body.<br />
