The land of the gravelly terrains

and of the rotational diary stores

The itinerary involves the naturalistic

and the cultural-gastronomic sides

of the Friulian plain: the evolved poor

meadows magredi and the rotational

dairy stores. The evolved magredi, a

particular kind of poor meadow (poor

terrain due to the presence of fluvialalluvial

sediments) form permanent

meadows (uncropped meadows)

rich in flowers, herbaceous, shrubby

and arboreal vegetations: such

resources, important protection of

the environmental biodiversity, have

a fundamental role in the gastronomic

regional tradition being the wild herbs

(Silene herb or sclopit in Friulian dialect,

taraxacum) an important ingredient in

the recipes of risotto and fried eggs.

Here is historical information on the

rotational dairy stores: in the first

“milk companies” at the end of the

eighteenth century, the farmers of

every hamlet gave their drawn milk to

the cooperative where one farmer per

day could convert the milk into cheese;

name derives from this process, were

so important in the pasts (652 stores

in 1960) that today a typical regional

cheese is called Latteria (cheese with

semi-hard paste, pitted with small

and uniform holes, straw-yellow,

with pleasant and delicate flavor):

today, in the Province of Udine, there

are only 45 diary stores and dairy

cooperatives (every municipality of

this tour counts one).

Setting out from Udine towards the

permanent meadows of Pasian di

Prato, in the nearby of the banks

of the Cormôr river, continuing to

Martignacco and then to the Park of

the Meadows in the Bertrando Plateau,

a biotope with facilities suitable for

excursions and observations with 30

hectares of permanent meadows and

woodlands, with more than 70 species

of herbaceous (orchids and gladiolus),

important arboreal specimen (hazel

and pedunculate oak), the typical

rows of mulberry (evidence of ancient

silkworm breeding), hedges and shrubs

(thorn tree and honeysuckle) fed by

the Lavia torrent. Passing through San

Vito di Fagagna, we head to Coseano,

in the large valley of the Corno

torrent: along its banks there is trace

of evolved magredi as we can see from

the toponyms “Prati della selva”, “Prati

di sopra” and “Prati di polenta” located

in the nearby of Maseriis.

of the nineteenth century. The route

carries on to Pantianicco, well known

location for the Apple regional festival

(Protected Designation of Origin), a

fruit that, together with cereal crop and

winegrowing, is characteristic of the

agricultural setting of this itinerary.

Driving southwards and crossing

Lestizza, along the Cormôr torrent,

we head to Mortegliano (the tallest

belfry in Italy, 113 mt) is an important

agricultural and dairy centre, famous

for the high quality polenta flour blave

di Mortean; worthwhile mentioning

is also the Chiasellis hamlet, famous

for the typical Julia Apple DOP

(Protected Denomination of Origin)

and its association that is based here;

before reaching Lavariano, in the

north, famous for cheese and ricotta,

with a brief detour to east we pass by

Bicinicco (with the suggestive rural

hamlet of Felettis) with a renowned

wine vocation.

Heading north as far as Campoformido,

reminding of the famous Napoleonic

treaty, where we can find a large

permanent meadow along the road

parallel to the state road Pontebbana,

in the nearby of a military zone. We are

right at the edge of Udine, where the

tour ends.

Udine, from an historical point of view,

has been very much influenced by the

Venetian Republic: the Libertà Square,

called “the most beautiful Venetian

mainland square” with the Loggia del

Lionello in Venetian style facing the

Torre dell’Orologio set into the Loggia

di San Giovanni that reminds of the

tower with the same name in S. Marco

Square in Venice.

The influence of Venice is evident

throughout the city tour, not only

for the architecture but also for the

culture and arts: the masterpieces of

the artist Giambattista Tiepolo in the

Udine

Cathedral Dome, in the halls of the

Civic Museums in the Castle (city’s

architectural heritage: Villa Lovaria

and the S. Giovanni dei Battuti church

deserve a visit; in Percoto (famous for

the pear regional festival) we stop at

the Villa Della Frattina-Caiselli while

in Ronchi is worth mentioning the

seventeenth century Villa Kechler-

Dorigo and the splendid Sant’Ulderico

Chapel of the fourteenth century; Villa

Florio in Persereano, dating back to the

eighteenth century, boasts remarkable

library, historical archive and private

oratory.

The villas and manor houses,

comprehensive of areas and buildings

of the peasant life, are important to

spread a deeper knowledge of the rural

reality, such as the foledôrs (complex

used for winepressing and silkworm

breeding, among the historical

growings in Friuli). Moving southwards

to Trivignano Udinese, famous location

for the historical dwellings such as the

Villa Valvason Strassoldo Attems (XVII

century), usually called as “customs

house” for its strategic position at the

ford of the Torre river.

Driving southeastwards and crossing

the bridge over the Torre river we head

to Chiopris-Viscone, small Lombard

village set between the Torre and

Corno rivers, on a flourishing plateau

almost at the foot of the Collio

Goriziano where stands Villa Chiopris,

today wine growers and producers and

holiday farm and, in the nearby, the

Sanctuary of Santa Maria di Strada.

Crossing again the Chiopris bridge

we go back to the municipality of

Trivignano to visit Clauiano, a small

village once roman settlement and

medieval hamlet, nowadays officially

recognized as one of the most

beautiful hamlets in Italy. Our next

stop is the rich area of Santa Maria La

Longa that we start discovering from

south (Mereto di Capitolo) with the

Villa Brazzà-Gortani with portal and

balcony made by stone, Villa Morelli

de Rossi, Villa Scala (barn attributed

to Andrea Scala). Back again to Santa

Maria La Longa where the neoclassical

Villa Bearzi with its garden stands

and the Villa di Colloredo Mels (XVII

century); in the nearby village Tissano

stands the Villa dei Conti del Torso,

today holiday farm.

Getting closer to Udine and further

north we visit the villages of Pavia

di Udine: Chiasottis with its mills on

the ancient irrigation ditch Turisella,

then Risano with its Rural Villa and

the valuable rural constructions along

the Palma irrigation ditch (worth

mentioning is the Burello Mill with

waterfall) and finally Lauzacco where

stands the Villa Beretta dating back

the eighteenth century with annexed

aristocratic chapel and the park

surrounded by the crenellated walls on

the back.

Before reaching our final destination,

we enter into the enchanting Cortello

agricultural-manor complex with

its Villa Caiselli of the seventeenth

century frescoed by Antonio Carneo

and surrounded by a wall made up

of river cobblestones while in the

southern part of the village stands the

imposing rural home Vallisella.

The tour starts in Codroipo, important

centre of the Middle Friuli both for

historical-cultural and naturalistic

aspects: here stands the Springs Park,

45 hectares of flora-fauna biodiversity

at the resurgences of the Stella river.

Springs are one of the most typical

habitat of the Friulian plain and is

characterized by abundance of rain and

fluvial waters: these, where the alpine

valleys become high plains (see the

itinerary 1 of the plain section – the

land of the gravelly terrain) find a soil

that is very permeable made up of rough

material (cobblestone and gravel) and

are partially absorbed by the subsoil,

creating a water table and, once met

the impermeable strata of the lowland

(made up of silt and clay), comes to the

surface. The water coming out from the

resurgence has a constant temperature

(9-10° in winter and 12-14° in summer)

granting a certain stability and a

form of protection for the flora and

fauna biodiversities. Leaving Codroipo

in Gorizzo, the Villa Colloredo-Mels is

worth visiting: this massive residence,

with two long barns on both sides,

has the main façade facing north

that is reflected on a water course

and overlooks a wide grassy meadow;

in the chief town we stop at “Borc

dai siors” (the hamlet of the Lords), a

series of manor palaces in Friulian rural

architecture with main entrances facing

the road and inner courtyards.

By crossing a small bridge over the

water course we reach Glaunicco to

admire the ancient windmill and the

lovely rural homes; driving southwards

along the left bank of the Tagliamento

river we head to Varmo: after visiting

the “Mulino di Ser Giorgio”, a mill

located in Gradiscutta, the church with

the castle tower in Belgrado and the

Venetian Villa Palassàt in the hamlet of

Santa Marizza we stop off at the main

city characterized by a rural setting

with elegant dwellings. Our next stop

Rivignano is a renowned village very

important from a naturalistic point of

view thanks to the Stella Park, Site of

Community Importance (SIC); this park,

aimed at protecting and developing the

habitat of the river, it includes also some

areas dedicated to the ecotourism such

as the English garden in Villa Badoglio-

Rota of the eighteenth century, built on

the ruins of what was once an ancient

castle, or the park with the Italian garden

of the Villa Ottelio located in Ariis.

We move eastwards to Paradiso where

we can admire Villa Caratti, a manor

complex provided with a barn and a

wide park with great variety of plant

types, ditches and one small lake.

The route winds its way along the

Cormôr and Zellina torrents, towards

Castions di Strada where, in a westwards

direction, we take the state road parallel

to the Napoleonic Route connecting

Codroipo to Palmanova as far as we

reach Talmassons, located in the area

called “Springs of the Stella River”;

continuing onward we reach Flambro,

historical hub of this area, linked to

the history of the aristocratic family

of Savorgnan whose splendid Villa dei

Conti can be admired here.

Our next stop is Bertiolo, renowned

village in the region for the important

wine festival promoting the Grave del

Fruili DOC (Controlled Denomination of

Origin) area: a visit to the Santissima

Trinità church, with the most ancient

bell in the whole province (year 1287 is

engraved on it) can not be missed.

In Passariano, last stop of our itinerary

at the eastern gates of Codroipo, we

can visit the majestic historical complex

of the sixteenth century and to the

gardens of Villa Manin, the Venetian

Villa residence of last doge of Venice

that hosted Napoleone Bonaparte

during his preparatory period for the

Treaty of Campoformido (17th October,

1797). Today the Villa is an important

museum and exposition centre for the

international cultural events. Within

easy reach stands Rivolto, air force base

Recipes

Soup with rice, savoy cabbage

and cicciole

The soup with savoy cabbage is one

of the most important soups of rural

Friuli. Same as the cicciole, the fried

fat parts of the pig. This recipe merges

these two traditional peasant dishes.

Ingredients for 6 people:

1 savoy cabbage,

100 g Italian lardo,

200 g bacon

garlic, 1 onion,

salt,

extra-virgin oil,

2 l vegetable stock,

50 g rice.

Chop together garlic, onion and the

Italian salami made with salted pig’s

fat (lardo), then fry. Cut the savoy

cabbage into thin strips and add it.

Keep cooking for 10 minutes. Pour the

vegetable stock and keep cooking until

it is ready. Add salt. Cut the bacon into

cubes and fry it until the cicciole get

crunchy. Keep it warm. Then cook the

rice in the soup and when it is ready,

add a spoon of cicciole and a drizzle of

oil. The ideal wine will be a white wine

aged in barrel such as a Chardonnay or

a Friulano.

Glorification of the pig

Pig holds an important role in our

culinary history. Italian butchers,

the so-called norcini, have created

dainty, simple and intensely flavoured

products out of its meat. We gathered

here three of these intuitions and

served them together, picturing a sole

main dish, rich and filling, to be eaten

in front of the typical Friulian fogolar

(fireplace) in the cold winter evenings.

The “marcundele”

A sort of meatball, as big as an apple,

made by minced liver, salami paste,

spices and wrapped in a net. It has to

be cooked with smooth Verduzzo wine

or better with Ramandolo wine and a

bay leaf for 20 minutes at low fire. To

be served with sweet-and-sour cooked

turnips.

The sausage

Unquestioned star of parties and

meetings with its tasty and bright

flavour and greedy indeed. It has to

be pierced with a stick to skim the fat

off while cooked very slowly, for 15 up

to 20 minutes, with white wine. To be

served with roasted yellow polenta.

The spare ribs

They must be eaten with the hands,

tradition says. Spread the pestat di

Fagagna (a relish made by chopping

together fine lardo and mixed

vegetables in a ratio of 1:1 or 7:3 and

then stuffing them in a gut casing for

storage) on an oven dish and then place

the spare ribs on it. They have hence to

be cooked in the oven at 180°C and

regularly sprinkled with dry white wine.

Keep cooking for around 20 minutes

until a golden tender crust has formed.

As a side dish, boiled savoy cabbage

(verze stufate) fried with fennel seeds

to be more digestible or fried thin

strips of purple top turnips soaked in

marc (brovada). The wine has to be an
