NEWSLETTER EDITOR
Pat Garrahan (Patrick)
559-275-9304
patricia.garrahan@att.net
I’d like to use this month’s message to engage the
club in a conversation concerning the qualifications
for president of CVC. Since the beginning, the
prerequisite has been that the president must
serve at least one year in another board position
before becoming eligible. While this seems
reasonable, it also restricts the pool of candidates.
During CVC’s history, 24 people have served on the
board out of our 78 members, or about 31%.
However, eight or 33% of those folks have already
served as president. Three more have either
moved away or live here part time. Four others
have family health issues or don’t attend enough
meetings to be eligible. Now we are suddenly
down to just nine people. Eight of those potential
candidates are either currently serving multi-year
terms on the board, or just finished a stint within
the last three years and could probably use a
break. That leaves one person left who served on
the board 13 years ago who is healthy, eligible and
has no excuses.
Although this person I think would make a good
president, suppose they decline. Then it’s up to
either a former president, current board member
or a very recent board member to step up.
What I am proposing is relaxing the requirement so
that anyone who has served on any board, or
anyone who has three years good standing in the
club, could run for the job. I can think of five or six
people that could step in and hit the ground
running. Besides, how does having served on the
CVC board 10 or 15 years ago make you any more
prepared today than a member who has been
treasurer of their Kiwanis club for the past seven
years, have career management experience, or a
newer member that has been actively involved in
CVC who is willing to lead the club? Also consider
every new incoming president attends a board
meeting prior to taking office. The soon to be pastpresident
becomes the parliamentarian and is
there for at least a year to provide guidance and
advice to the new president. What it all boils down
to is you either have leadership skills or you don’t.
Every year people get nominated for president only
to be disqualified because they haven’t served on
the CVC board. Those that are qualified decline
because they don’t want the job or they feel they
have done enough service at this point. So then
the club goes begging for someone to do it. In rare
instances there might be two candidates and we
actually have a real election instead of the
traditional rubber stamp.
If the requirement for President of the United
States is be a natural born U.S. citizen and be at
least 35 years old with no requirement of prior
board service, why shouldn’t CVC reconsider its
policy.
1. This message is from Patricia Garrahan. Patricia says she E-mailed Jim Gregerson’s brother
Rodger and received areply from his wife, Karen. Karen says Jim’s birthday was on May 1 st . He
just turned 79. Jim has calmed down quite a bit (no longer bitter about living in a convalescent
home). His mind still drifts in and out, but they think he recognized Rodger, although they had to
tell him who they were. He still talks about the Corvette Club and how he would like to drive
down for a meeting. That will never happen!
2. Latest family news from Linda Laningham: her granddaughter Amanda gratuatted from Selma
High School and will be attending Fresno State in the fall. Also, her granddaughter Janae was
here from Georgia to attend her sister Amanda’ graduation. Linda finally was able to meet her
great-granddaughter Anessa. She is two years old. Also, Janae got marriedin Georgia on
Saturday night.
3. More Family news from Jo Anne Krebs. Greg and Jo Anne will spend a very special 4 th of July
holiday weekend. Their son Steve, daughter-in-law Melissa and grand baby Emily will be
visiting with the Krebs. They are very excited to have their children here and it is extra special
because Jo Anne will be celebrating her birthday on the 4 th of July while they are here! Please
note: no mention of age!!!
4. Gary has goodnews to share, also. His daughter Pamela announced tthat she is now engaged to
Brian Taylor. They are planning their wedding for the spring of next year and possibly will be
held in the wine country of Paso Robles. Much happiness to them!!!
5. Debbie reports that Keith’s Uncle Norman passed away at age 96.
6. Tom Piercy reports that he had sinus surgery to remove two tumors (one large) on the back side
of his left sinus that were causing servere headaches. He says his recovery has not been too bad
and that is is great to be able to breath again. He hopes to get back to the meetings in August.
Thank you all so very much for your contributions. I appreciate your news and enjoy sharing. Thank
you, again.
Jan
INGREDIENTS:
10-inch pastry shell (optional)
1 1/12 lb zucchini
Salt
3 Medium-size ripe tomatoes
4 T butter (I use less)
1 T extra-virgin olive oil (or canola oil)
3 eggs, separated
2 cups grated Swiss cheese (I use
mozzarella)
½ cup feta cheese
Freshly ground pepper
1 T (or more) chopped fresh basil or mint
(Use fresh basil for this recipe )
Prepare the pie shell and cook.
(Whip an egg white with a little cold water
and brush the pie shell with the mixture
before cooking. This will keep the crust
from getting mushy also a good tip to keep
crust crisp for any juicy pie filling); set aside
to cool. (I make this in a casserole without
the pastry shell and it is wonderful)
Wash the zucchini, trim, and cut into ¼inch
slices if large; cut small zucchini
lengthwise. Salt and set aside to drain for
20-30 minutes then rinse and pat dry.
Meanwhile, peel the tomatoes, halve
horizontally.
Heat 2 T. butter with the oil in a large sauté
pan; lightly brown the zucchini on both
sides (cook it until about half-done or it will
not cook in the allotted baking time); drain
on paper towels. Lightly brown the tomatoes
until they soften slightly but do not become
limp-not more than a minute or two. Cool.
When ready to assemble the pie (or
casserole):
Beat the egg yolks and set aside. Place half
the zucchini in the shell (or casserole);
sprinkle with 1/3 of the Swiss cheese (or
mozzarella) and ½ the feta cheese, dot with
1 T. butter, and sprinkle with salt, pepper,
and ½ the basil or mint.
Beat egg whites with an eggbeater and fold
into the egg yolks. Spread ½ of this mixture
over the cheeses. Slightly flatten the
tomatoes, and arrange across the top of the
pie (or casserole). Sprinkle with 1/3 of the
Swiss cheese (mozzarella), ½ the feta
cheese, and the remaining basil.
Top with the remaining zucchini slices, and
season with salt and pepper; spread with
remaining egg mixture; top with remaining
Swiss cheese (or mozzarella), and dot with
remaining 1 T. butter.
Bake in a pre-heated 400 degree oven for
25-30 minutes or until eggs are set.
Cover the pastry edges with aluminum foil if
they are getting too brown. (Makes a 10inchdeep-dish
pie)
I baked it in a casserole to avoid all the
calories in the pie crust and it is delish! I use
a little more zucchini then it calls for and 4
eggs instead of 3 and 4 tomatoes for a 9x13
casserole. It would probably work fine
without any alterations if you cook it in a
7x11 casserole although I haven’t tried that.
This will take a little less time to cook if you
use a casserole.
Preheat oven to 400 degrees
Combine 1/3 cup flour and ice water,
stirring with a whisk until well-blended; set
aside. Combine remaining 1 cup flour, 1
tablespoon sugar, and salt in a bowl; cut in
shortening with a pastry blender or 2 knives
until mixture resembles coarse meal. Add
ice water mixture, and mix with a fork until
dry ingredients are moist. Roll dough into a
14-inch circle on a lightly floured surface.
Place dough on a large baking sheet coated
with cooking spray.
Combine 3 tablespoons almonds and
3 tablespoons flour in a food processor;
process 30 seconds or until almonds are
finely chopped. Sprinkle almond-flour
mixture over dough. Arrange apricot halves,
cut sides down, over dough, leaving a 2-inch
border.
1/3 cups all-purpose flour
¼ cup plus 1 tablespoon ice water
1 tablespoon sugar
¼ teaspoon salt
¼ teaspoon vegetable shortening
Vegetable cooking spray
1/3 cup sliced almonds, divided
3 tablespoons all-purpose flour
2 pounds apricots, halved and pitted ( about
12 large)
¾ cups sugar
½ teaspoon pumpkin pie spice
2 teaspoons water
Combine ¾ cup sugar and pie spice
in a bowl; stir well. Reserve 1 tablespoon
sugar-spice mixture; set aside. Sprinkle
remaining sugar-spice mixture over apricots,
and top with remaining 2 ½ tablespoons
almonds. Fold 2-inch border of dough over
apricots, pressing gently to seal (it will only
partially cover apricots). Brush border of
dough with 2 teaspoons water, and sprinkle
with reserved sugar-spice mixture. Bake at
400 degrees for 45 minutes or until lightly
browned. Let cool on baling sheet five
minutes. Carefully slide tart onto a serving
platter using a spatula. Cut into 8 wedges;
serve warm. Yield: 8 servings.
(If substituting Splenda Sugar Blend, use 3/8
cup sugar blend to sprinkle over the filling.
I found his recipe when looking for
something to do with all of the apricots a
neighbor had given me. I thought the tart
was easy to make-I used a pre-made crust
from the store- and very tasty!)
