Club activities include monthly meetings,<br />

car shows, weekend Club activities,<br />

overnighters, picnics, road rallies, summer<br />

Eligibility for membership in <strong>CVC</strong> is<br />

defined in Article III, section 1 of the<br />

bylaws in part as follows: "Membership in<br />

Central Valley Corvettes shall be open to all<br />

Corvette owners who are sponsored by a<br />

member in good standing. Additionally, a<br />

prospective member must, within a three<br />

month period , attend two consecutive<br />

meetings, participate in two club sanctioned<br />

social activities, pay current membership<br />

dues and initiation fees, and be approved by<br />

two- thirds vote of membership present at<br />

any general membership meeting by secret<br />

ballot<br />

Sponsors shall be responsible for advising<br />

prospective member of results. All<br />

members must submit proof of personal<br />

insurance in accordance with California<br />

State Law upon application for<br />

membership, and all members must be a<br />

member of the association providing club<br />

liability insurance for CENTRAL VALLEY<br />

CORVETTES.<br />

A prospective member who does not have a<br />

sponsor will be provided one by the<br />

membership committee. Non-members may<br />

not participate in more than three meetings<br />

or two sanctioned activities.<br />

<strong>CVC</strong> membership dues are $67.00 plus an<br />

initiation fee of $35.00. Membership entitles<br />

two members at the same address voting<br />

privileges at meetings (provided they are in<br />

good standing) and membership rights.<br />

I’d like to use this month’s message to engage the<br />

club in a conversation concerning the qualifications<br />

for president of <strong>CVC</strong>. Since the beginning, the<br />

prerequisite has been that the president must<br />

serve at least one year in another board position<br />

before becoming eligible. While this seems<br />

reasonable, it also restricts the pool of candidates.<br />

During <strong>CVC</strong>’s history, 24 people have served on the<br />

board out of our 78 members, or about 31%.<br />

However, eight or 33% of those folks have already<br />

served as president. Three more have either<br />

moved away or live here part time. Four others<br />

have family health issues or don’t attend enough<br />

meetings to be eligible. Now we are suddenly<br />

down to just nine people. Eight of those potential<br />

candidates are either currently serving multi-year<br />

terms on the board, or just finished a stint within<br />

the last three years and could probably use a<br />

break. That leaves one person left who served on<br />

the board 13 years ago who is healthy, eligible and<br />

has no excuses.<br />

Although this person I think would make a good<br />

president, suppose they decline. Then it’s up to<br />

either a former president, current board member<br />

or a very recent board member to step up.<br />

What I am proposing is relaxing the requirement so<br />

that anyone who has served on any board, or<br />

anyone who has three years good standing in the<br />

club, could run for the job. I can think of five or six<br />

people that could step in and hit the ground<br />

running. Besides, how does having served on the<br />

<strong>CVC</strong> board 10 or 15 years ago make you any more<br />

prepared today than a member who has been<br />

treasurer of their Kiwanis club for the past seven<br />

years, have career management experience, or a<br />

newer member that has been actively involved in<br />

<strong>CVC</strong> who is willing to lead the club? Also consider<br />

every new incoming president attends a board<br />

meeting prior to taking office. The soon to be pastpresident<br />

becomes the parliamentarian and is<br />

there for at least a year to provide guidance and<br />

advice to the new president. What it all boils down<br />

to is you either have leadership skills or you don’t.<br />

Every year people get nominated for president only<br />

to be disqualified because they haven’t served on<br />

the <strong>CVC</strong> board. Those that are qualified decline<br />

because they don’t want the job or they feel they<br />

have done enough service at this point. So then<br />

the club goes begging for someone to do it. In rare<br />

instances there might be two candidates and we<br />

actually have a real election instead of the<br />

traditional rubber stamp.<br />

If the requirement for President of the United<br />

States is be a natural born U.S. citizen and be at<br />

least 35 years old with no requirement of prior<br />

board service, why shouldn’t <strong>CVC</strong> reconsider its<br />

policy.<br />

Minutes from the May General meeting were read<br />

by Terri Parks. Motion was made by Gordon<br />

Capurro and seconded by Dale Comer to accept the<br />

minutes as read.<br />

Membership Chairman Diane Hays introduced our<br />

guests and potential members Del Walker and<br />

Susan Cursi. She added that she has the "In the<br />

Highlights" forms for anyone interested in being<br />

profiled in the newsletter.<br />

Treasurer Fred Parks gave the June Treasurer's<br />

report. Andy Anderson had a question regarding<br />

what made up the bank balance.<br />

Vice President of Public Relations Jeff Levin<br />

reported on the birthdays and anniversaries of the<br />

club members.<br />

In the absence of Vice President of Activities Pam<br />

Hansen, Patricia Garrahan had members report on<br />

their past runs. She reported the future runs as the<br />

Word from Home car show, Phoenician Gardens,<br />

potluck at the Capurro's, El Cid's dinner run,<br />

Chowchilla Steakhouse dinner run, Solvang, King's<br />

Diner, Chowchilla car show, Alaskan cruise,<br />

Ladies' day with dominos, and Christmas at Hearst<br />

Castle.<br />

In the absence of Sergeant of Arms Charlie<br />

Fosnaugh, Skip Severance volunteered to collected<br />

badge fines. He collected $0.75.<br />

Our "In the News" reporter Jan Pflepsen reported<br />

the news concerning our Corvette families.<br />

Keith Garrison thanked members for their well<br />

wishes for his recovery from surgery.<br />

Parliamentarian Linda Laningham had nothing to<br />

report.<br />

Old Business: Skip gave an update on the new<br />

Stingray.<br />

New Business: The next Board meeting will be at<br />

the home of Fred and Terri Parks on <strong>July</strong> 2nd at<br />

7:00 p.m.<br />

The next General meeting is <strong>July</strong> 16th at 6:30.<br />

The motion to adjourn the meeting was made by<br />

Sunshine and Clouds.<br />

1. This message is from Patricia Garrahan. Patricia says she E-mailed Jim Gregerson’s brother<br />

Rodger and received areply from his wife, Karen. Karen says Jim’s birthday was on May 1 st . He<br />

just turned 79. Jim has calmed down quite a bit (no longer bitter about living in a convalescent<br />

home). His mind still drifts in and out, but they think he recognized Rodger, although they had to<br />

tell him who they were. He still talks about the Corvette Club and how he would like to drive<br />

down for a meeting. That will never happen!<br />

2. Latest family news from Linda Laningham: her granddaughter Amanda gratuatted from Selma<br />

High School and will be attending Fresno State in the fall. Also, her granddaughter Janae was<br />

here from Georgia to attend her sister Amanda’ graduation. Linda finally was able to meet her<br />

great-granddaughter Anessa. She is two years old. Also, Janae got marriedin Georgia on<br />

Saturday night.<br />

3. More Family news from Jo Anne Krebs. Greg and Jo Anne will spend a very special 4 th of <strong>July</strong><br />

holiday weekend. Their son Steve, daughter-in-law Melissa and grand baby Emily will be<br />

visiting with the Krebs. They are very excited to have their children here and it is extra special<br />

because Jo Anne will be celebrating her birthday on the 4 th of <strong>July</strong> while they are here! Please<br />

note: no mention of age!!!<br />

4. Gary has goodnews to share, also. His daughter Pamela announced tthat she is now engaged to<br />

Brian Taylor. They are planning their wedding for the spring of next year and possibly will be<br />

held in the wine country of Paso Robles. Much happiness to them!!!<br />

5. Debbie reports that Keith’s Uncle Norman passed away at age 96.<br />

6. Tom Piercy reports that he had sinus surgery to remove two tumors (one large) on the back side<br />

of his left sinus that were causing servere headaches. He says his recovery has not been too bad<br />

and that is is great to be able to breath again. He hopes to get back to the meetings in August.<br />

INGREDIENTS:<br />

10-inch pastry shell (optional)<br />

1 1/12 lb zucchini<br />

Salt<br />

3 Medium-size ripe tomatoes<br />

4 T butter (I use less)<br />

1 T extra-virgin olive oil (or canola oil)<br />

3 eggs, separated<br />

2 cups grated Swiss cheese (I use<br />

mozzarella)<br />

½ cup feta cheese<br />

Freshly ground pepper<br />

1 T (or more) chopped fresh basil or mint<br />

(Use fresh basil for this recipe )<br />

Prepare the pie shell and cook.<br />

(Whip an egg white with a little cold water<br />

and brush the pie shell with the mixture<br />

before cooking. This will keep the crust<br />

from getting mushy also a good tip to keep<br />

crust crisp for any juicy pie filling); set aside<br />

to cool. (I make this in a casserole without<br />

the pastry shell and it is wonderful)<br />

Wash the zucchini, trim, and cut into ¼inch<br />

slices if large; cut small zucchini<br />

lengthwise. Salt and set aside to drain for<br />

20-30 minutes then rinse and pat dry.<br />

Meanwhile, peel the tomatoes, halve<br />

horizontally.<br />

Heat 2 T. butter with the oil in a large sauté<br />

pan; lightly brown the zucchini on both<br />

sides (cook it until about half-done or it will<br />

not cook in the allotted baking time); drain<br />

on paper towels. Lightly brown the tomatoes<br />

until they soften slightly but do not become<br />

limp-not more than a minute or two. Cool.<br />

When ready to assemble the pie (or<br />

casserole):<br />

Beat the egg yolks and set aside. Place half<br />

the zucchini in the shell (or casserole);<br />

sprinkle with 1/3 of the Swiss cheese (or<br />

mozzarella) and ½ the feta cheese, dot with<br />

1 T. butter, and sprinkle with salt, pepper,<br />

and ½ the basil or mint.<br />

Beat egg whites with an eggbeater and fold<br />

into the egg yolks. Spread ½ of this mixture<br />

over the cheeses. Slightly flatten the<br />

tomatoes, and arrange across the top of the<br />

pie (or casserole). Sprinkle with 1/3 of the<br />

Swiss cheese (mozzarella), ½ the feta<br />

cheese, and the remaining basil.<br />

Top with the remaining zucchini slices, and<br />

season with salt and pepper; spread with<br />

remaining egg mixture; top with remaining<br />

Swiss cheese (or mozzarella), and dot with<br />

remaining 1 T. butter.<br />

Bake in a pre-heated 400 degree oven for<br />

25-30 minutes or until eggs are set.<br />

Cover the pastry edges with aluminum foil if<br />

they are getting too brown. (Makes a 10inchdeep-dish<br />

pie)<br />

I baked it in a casserole to avoid all the<br />

calories in the pie crust and it is delish! I use<br />

a little more zucchini then it calls for and 4<br />

eggs instead of 3 and 4 tomatoes for a 9x13<br />

casserole. It would probably work fine<br />

without any alterations if you cook it in a<br />

7x11 casserole although I haven’t tried that.<br />

This will take a little less time to cook if you<br />

use a casserole.


Preheat oven to 400 degrees<br />

Combine 1/3 cup flour and ice water,<br />

stirring with a whisk until well-blended; set<br />

aside. Combine remaining 1 cup flour, 1<br />

tablespoon sugar, and salt in a bowl; cut in<br />

shortening with a pastry blender or 2 knives<br />

until mixture resembles coarse meal. Add<br />

ice water mixture, and mix with a fork until<br />

dry ingredients are moist. Roll dough into a<br />

14-inch circle on a lightly floured surface.<br />

Place dough on a large baking sheet coated<br />

with cooking spray.<br />

Combine 3 tablespoons almonds and<br />

3 tablespoons flour in a food processor;<br />

process 30 seconds or until almonds are<br />

finely chopped. Sprinkle almond-flour<br />

mixture over dough. Arrange apricot halves,<br />

cut sides down, over dough, leaving a 2-inch<br />

border.<br />

1/3 cups all-purpose flour<br />

¼ cup plus 1 tablespoon ice water<br />

1 tablespoon sugar<br />

¼ teaspoon salt<br />

¼ teaspoon vegetable shortening<br />

Vegetable cooking spray<br />

1/3 cup sliced almonds, divided<br />

3 tablespoons all-purpose flour<br />

2 pounds apricots, halved and pitted ( about<br />

12 large)<br />

¾ cups sugar<br />

½ teaspoon pumpkin pie spice<br />

2 teaspoons water<br />

Combine ¾ cup sugar and pie spice<br />

in a bowl; stir well. Reserve 1 tablespoon<br />

sugar-spice mixture; set aside. Sprinkle<br />

remaining sugar-spice mixture over apricots,<br />

and top with remaining 2 ½ tablespoons<br />

almonds. Fold 2-inch border of dough over<br />

apricots, pressing gently to seal (it will only<br />

partially cover apricots). Brush border of<br />

dough with 2 teaspoons water, and sprinkle<br />

with reserved sugar-spice mixture. Bake at<br />

400 degrees for 45 minutes or until lightly<br />

browned. Let cool on baling sheet five<br />

minutes. Carefully slide tart onto a serving<br />

platter using a spatula. Cut into 8 wedges;<br />

serve warm. Yield: 8 servings.<br />

(If substituting Splenda Sugar Blend, use 3/8<br />

cup sugar blend to sprinkle over the filling.<br />

I found his recipe when looking for<br />

something to do with all of the apricots a<br />

neighbor had given me. I thought the tart<br />

was easy to make-I used a pre-made crust<br />

from the store- and very tasty!)
