Holiday 2010

The holidays are always an exciting time

in our beautiful village. The Winnetka

Chamber of Commerce is planning

many special events for you, your family

and friends to share during the month

of December. Look for the glimmering

of the holiday lights throughout the

village. To add support for our village’s

annual tree lighting costs, The Winnetka

Chamber of Commerce has a series of

commemorative porcelain plates available for purchase at the

Chamber Office and Village Hall. All donations go towards the

Lighting Fund. Photo on page 10.

The Chamber will be kicking off our special Holiday Weekend

with a tree lighting ceremony on Friday, December 3rd at the

corner of Chestnut and Elm Street right next to Caribou Coffee.

Join us for caroling and hot chocolate at 6:00p.m.

Bring the family for a ride on a horse drawn carriage, have a

picture taken with Santa and enjoy making holiday crafts with

your children all provided by Coldwell Banker South, 568 Lincoln

Avenue on Saturday, December 4th, from 10:00a.m. – 1:00p.m.

Join in caroling with Hubbard Woods School 4th graders in our

Hubbard Woods business district on Saturday morning.

Corner Cooks, 507 Chestnut, is offering a Kid’s Holiday Cookie

Decorating Class, from 2-4p.m., for $25 which includes 6 cookies

for decorating, lots of icing and sprinkles and a holiday cookie

cutter. Ages 6 to 12 (ages 6 to 8 need a parent partner.)

Jerry’s restaurant, 505 Chestnut is offering an Early Bird Family

Holiday Special on Sunday, December 5 from 4 to 6p.m. with a

special kids menu. Complimentary dessert for kids and parents

(Kids choose from an ice cream sundae or a holiday cookie.

Adults choose from Cranberry, Caramel and Almond Tart or

Gingerbread with Apple Sabayon).

The Chamber of Commerce businesses will be holding their

annual “Holiday Sunday Sale”, on December 5th. Watch for

the “Red Invitation” inserted in the December 1st issue of the

Winnetka Current newspaper listing all of the wonderful specialty

shops participating and discounting merchandise for our one day

Holiday Sale Event.

As the 2010-2011 President of the Chamber, I would like to

remind you that shopping locally during the holidays, is not only

convenient but appreciated by shop owners. The Chamber and

its member businesses encourage you to support local businesses

that offer unique merchandise and promise to provide exemplary

Holiday Recipes

Open House Punch

Fabulous holiday party punch

6 Bananas

1 12 oz. can of frozen orange juice

1 6 oz. can of frozen lemonade

1 46 oz. can pineapple juice

3 cups water

2 cups sugar

4 quarts ginger ale

You leave out the sugar and use ice cubes

instead of water

Blend Bananas with liquid. Combine all of

the rest of the ingredients, mix well.

Pour into punch bowl add ginger ale as

needed.

Party tip: Freeze punch in a bundt mold.

When ready to serve, place frozen ring in

punch bowl and cover with warm ginger

ale. Delicious for all ages.

Add vodka or champagne—adults only.

Upside Down Apple Pie

Oven 375°F

1/2 cup chopped pecans

1/2 cup brown sugar

6 Tablespoons butter (3/4 stick)

1 cup sugar

1/3 cup flour

3/4 Tablespoon cinnamon

5 large Granny Smith/firm apples, peeled

cored cut into wedges

Pie Crust (see recipe below) or use 1

package of (15 oz.) refrigerator pie crusts.

Coat deep dish pie plate with spray and

line with parchment. Coat parchment with

spray. In a small bowl, cream 4 T. butter

and brown sugar, add pecans; mix well and

spread evenly over the bottom of the pie

plate. Unfold 1 pie crust and place it in the

pie plate, pressing the crust firmly against

the nut mixture and the sides of the plate;

set aside.

Combine sugar, flour, cinnamon and 2 T.

butter; mix well. Add the apples and toss

gently to coat. Spoon into the pie crust.

Unfold the second pie crust and place

over the apple mixture. Trim, pinch the

edges together to seal, and flute, if desired.

Using a knife, cut four 1-inch slits into the

top crust.

Bake for 1 to 1 1/4 hours, or until crust

is golden. Carefully loosen the parchment

around the rim and invert the pie onto a

serving plate while still hot. Remove the

parchment and allow to cool slightly, then

cut into wedges and serve warm, or allow

to cool completely before serving

Pastry Dough – For a

Double-Crust Pie

Basic is best: When it comes to piecrust,

there’s no need to fiddle. This simple

dough will elevate any filling.

2 1/2 cups all-purpose flour

1 1/2 sticks (12 Tablespoons) cold

unsalted butter, cut into 1/2 inch cubes

1/4 cup cold vegetable shortening

(preferably trans-fat-free)

1/2 teaspoon salt

7 to 9 Tablespoons ice water

Blend together flour, butter, shortening,

and salt in a bowl with your fingertips

or a pastry blender (or pulse in a food

processor) just until mixture resembles

coarse meal with some small (roughly

pea-size) butter lumps.

Drizzle 5 Tablespoons ice water evenly

over mixture. Gently stir with a fork

(or pulse) until incorporated.

Squeeze a small handful of dough: If it

doesn’t hold together, add more ice

water, 1/2 teaspoon at a time, stirring

(or pulsing) until incorporated. Do not

overwork dough, or pastry will be tough.

Turn dough out onto a work surface.

Divide dough into 8 portions. With heel

of your hand, smear each portion once

or twice in a forward motion to help

distribute fat. Gather all dough together

with a pastry scraper. Divide dough with

one half slightly larger, form each into a

ball and flatten each into a 5-inch disk. If

dough is sticky, dust lightly with additional

flour. Wrap each disk in plastic wrap and

chill until firm, at least 1 hour.

Dough can be chilled up to 2 days ahead.


Rosemary Walnuts

(These are nicest served warm)

6 Tablespoons butter

1 Tablespoon dried rosemary, crumbled

1 Tablespoon salt

1/2 teaspoon cayenne pepper

4 cups walnut halves

Preheat oven to 325°F

Melt butter in a large sauce pan. Remove

from heat and add seasonings. Add the

walnuts in a shallow roasting pan in one

layer. Bake about 10-15 minutes, shaking

occasionally.

Chocolate Kiss Cookies

1 1/4 cup all purpose flour

1/4 cup powder sugar

1/2 cup crushed pecans

1/2 cup butter

Cream butter and sugar

Add flour then nuts

Roll around kisses

Bake at 350°F for 8-12 minutes.

Sprinkle with powdered sugar

Snappy Turtle Cookies

Sift: 1 1/2 cup flour

1/4 tsp. salt

1/4 tsp. soda

Blend: 1/2 cup butter

1/2 cup brown sugar

cream together really well

Add: 1 egg and 1 egg yolk

beat well, reserve egg white

Blend in: 1/4 tsp. vanilla

1/8 tsp maple flavor

Add: Dry ingredients

Arrange: Split pecan halves (rounded side

up) in groups of three on greased baking

sheets to resemble head and legs of a

turtle.

Mold: dough into balls (use rounded tsp.

of dough for each). Dip bottom into

unbeaten egg white and press onto nuts.

Bake: 350°F 10 to 12 minutes

Do not over bake.

Frost: combine 2 squares (2 oz.) chocolate

and 1/4 cup milk and I Tablespoon butter

in top of double boiler. Heat over boiling

water until chocolate melts; blend until

smooth.

Remove from heat; add 1 cup powdered

sugar, beat until smooth.

Chanukah White

Cheesecake

White, creamy cheesecake topped with

chocolate covered Chanukah gelt.

Crust:

1 1/3 cups crushed shortbread cookies

4 Tablespoons unsalted butter - melted

2 Tablespoons granulated sugar

1/4 teaspoon vanilla extract

1/4 teaspoon ground cinnamon.

Batter:

2 pounds cream cheese

3/4 cup granulated sugar

1/4 cup all purpose flour

5 large eggs

Holiday Recipes

1 can condensed milk

1 1/2 teaspoons vanilla extract

2 to 3 drops each: Boyajian orange and

lemon oil (optional)

1/3 cup whipping cream

Topping:

1 1/2 cups sour cream

1 teaspoon vanilla extract

2 Tablespoons confectioner’s (powdered)

sugar

Gold chocolate gelt

1. Preheat oven to 425°F.

2. For crust, mix all ingredients and pat

into the bottom of a 10-inch spring-form

pan.

3. For filling, cream the cheese with the

sugar and flour. Add condensed milk, eggs,

vanilla, (orange and lemon oil) and mix

well (on slow speed), making sure bottom

is well scraped. Pour into cake pan.

Place on a baking sheet and place in oven.

Bake 15 minutes. Reduce heat to 325°F.

and bake until just set—about 30 minutes.

4. Raise oven temperature to 350°F.

5. For topping, whisk together sour cream,

vanilla and confectioner’s sugar. Spread

over top of cake. Place cake back in oven

for 8 minutes. Turn off oven and let cake

cool (in oven) for at least 1 hour.

Remove to refrigerator.

6. To serve, top cake with gelt. (Sometimes

I serve this with grated white chocolate

and coins on top and a side of raspberry

puree).

Serves 12.

Light up Winnetka for the Holidays!

Each holiday season, the Village of Winnetka

illuminates and decorates Winnetka’s business

districts. To kick off this ongoing tradition, everyone

is asked to gather Friday, December 3rd at 6:00 p.m.

on the northeast corner of Elm and Chestnut Streets.

Bring your family, friends and caroling voice!

To add support for our town’s annual project, the

Winnetka Chamber of Commerce had a series of

commemorative porcelain plates produced. Local

artist, Kaylyn Shelby, illustrated all the designs for each

plate: Village Hall and Moffat Mall in green, Schmidt-

Burnham Log House in brown, the Hubbard Woods

Gazebo in cranberry red and New Trier High School

in black.

Each 6” plate is lead-free and dishwasher safe. They

are perfect to use as appetizer or dessert plates.

Boxed for gift-giving or mailing, they make thoughtful

Heald at the WPD Community Room

In this one hour workshop, children will decorate their

very own graham cracker gingerbread houses. Using a

variety of candies, such as gum drops, tootsie rolls, necco

their creativity and use their imaginations as they create

these beautiful houses. Children may get messy, so please

dress appropriately.

The Winnetka Historical Society educates people on the stories

of our past, in an effort to enrich our present and inspire our

future. We promote awareness of Winnetka’s heritage through

artifact collection and preservation, public access to our research

center and enlightening programs, exhibits and publications. The

Society, founded in 1932, is headquartered at 411 Linden Street,

a Civil War era house, one of the few remaining examples of

Gothic Revival architecture in the Village. The museum provides

exhibits, research and programming spaces, as well as the

Society’s extensive collection.

The Society owns another historic treasure in Winnetka, the

Schmidt-Burnham log house, c. 1837. Distinguished as the

longest continually inhabited house in northern Illinois, the log

house was gifted to the Society in 2001 by the family of Ann

Hibbard Burnham-Smith.

In June 2005, the log house was moved to the Crow Island

Woods. The Society has restored this fine example of pioneer

architecture. This “house museum” is open to the public

and has become a regular educational stop for teachers and

students.
