Stephen G. Michaelides<br />
Founder, Words, Ink<br />
Following two years (1958-1960) in the Armed Forces where<br />
he helped prepare infantry and tank strategy lesson plans for junior<br />
officers assigned to Command & Staff (Fort Knox, KY), Michaelides,<br />
in 1962, joined Muskingum College (New Concord, OH) as associate<br />
dean of the college and instructor in English literature and creative<br />
writing.<br />
In 1966, he joined Penton Media (Cleveland) as an assistant<br />
editor. Later that year, he was named editor of Management Personal<br />
Time, a mini-publication appearing in every magazine published by<br />
the company. MPT advised executives of ways to spend their away-<br />
from-horneloffice time productively.<br />
With the move of Restaurant Hospitality from Chicago to<br />
Cleveland in the summer of 1970, Michaelides was named editor, a<br />
position he held until 199 1, when he was named associate publisher.<br />
January 1998 saw him leave the company he had been with for<br />
32 years to pursue other business interests as a freelance writer,<br />
speaker, and foodservice consultant. His articles have appeared in<br />
Food Arts, the Ritz-Carlton magazine, Hotel Food & Beverage<br />
Executive, Lodging Hospitality, and Nation's Restaurant News; and<br />
they continue to appear in Restaurant Hospitality. His company,<br />
Words, Ink, is a business-to-business communications company.
In 2004, Words, Ink joined with Grossi Public Relations to<br />
manage public relations for restaurants and other foodservice oriented<br />
companies.<br />
He has received a number of awards from the foodservice<br />
industry and several from associations that recognize editorial<br />
excellence: in 1996, the Educational Foundation of the National<br />
Restaurant Association inducted Michaelides into its College of<br />
Diplomates, the association's highest honor. Also, in 1996, the<br />
Pennsylvania State <strong>University</strong> appointed him a Conti Distinguished<br />
Professor. A 26-page cover story in the May 1989 Restaurant<br />
Hospitality on the foodservice industry in what was then the USSR<br />
was recognized by the American Society of Business Press Editors<br />
as one of the best feature articles to appear in the business press that<br />
year. One year later, Penton honored him with its first-ever Editor-<br />
of-the-Year award. In 2003, the American Business Media presented<br />
him with its Crain Award which recognizes lifetime achievement as<br />
an editor of a business publication.<br />
Michaelides serves on the board of UNLV's William F. Harrah<br />
College of Hotel Administration (Las Vegas). He is a fellow of the<br />
Culinary Institute of America (Hyde Park, NY and St. Helena, CA),<br />
and has served since 1989 as a founding member of <strong>Sullivan</strong><br />
<strong>University</strong>'s National Center for Hospitality Studies Advisory Board.<br />
Michaelides is a sought-after speaker at foodsewice industry-<br />
sponsored trade shows, conferences, and seminars.<br />
He holds a Bachelor of Arts degree in English Literature from<br />
Grinnell College (Grinnell, Iowa) and studied creative writing under<br />
Philip Roth at the Writers' Workshop of the State <strong>University</strong> of Iowa.

ACADEMIC ATTIRE<br />
As early as the twelfth century the first modern colleges and universities, at Bologna<br />
and Paris, were the centers of European learning. The usual garb of the time, for both church-<br />
men and laymen, was a long gown necessary for warmth in the unheated buildings of the<br />
day. Scholars, generally members of church orders, wore such robes, as well as hoods to<br />
protect their shaved heads. Later, skull caps were worn on the head, and the hood became<br />
a cape that could be pulled over the head in unpleasant weather. The hood was also some-<br />
times used to collect alms from the more affluent members of the community. As more<br />
colleges and universities were founded, distinctive forms of the gown and hood were adopted<br />
by their faculties. Variations indicated various ranks within the institutions. Strict rules were<br />
published, and sometimes tailors who departed from the authorized design were punished.<br />
The academic hat was a later development adapted from the headdress of the ordinary<br />
people. Academically was it was originally worn as a symbol of the master's degree and<br />
existed in various forms: some were round, some were square, and some had a tuft in the<br />
center. The flat, square "mortar board" of today originated in Oxford.<br />
Academic costume came to America in 1754 with the founding of King's College,<br />
now Columbia <strong>University</strong>. Styles became quite varied, as they were in Europe, but in 1895<br />
a group of American college and university representatives met to establish a uniform sys-<br />
tem of academic apparel for this country. This led to the establishment in 1902 of an "In-<br />
tercollegiate Code of Academic Costume." The American Council on Education formed a<br />
committee in 1932 to review the 1895 code, and it was again reviewed and revised in 1960.<br />
There are today three basic types of gowns and hoods. The associate and bachelor's<br />
gowns have pointed sleeves and are designed to be worn closed. The master's gown is de-<br />
signed with an oblong sleeve, open at the wrist, and with an arc cut away at the front of the<br />
sleeve. It may be worn either open or closed. The doctoral gown is a full design with volu-<br />
minous sleeves, and it also may be worn open or closed. Unlike the other two, the doctoral<br />
gown is faced down the front with velvet and has three velvet bars on the sleeves. These<br />
may be black or of a color related to the subject of the degree.<br />
Of particular interest may<br />
be the colors associated with<br />
each academic program. Arts<br />
and humanities may use white,<br />
business degrees may be light<br />
brown, education uses light<br />
blue, and science, a golden yel-<br />
low.<br />
The hoods worn by those<br />
who hold the bachelor's,<br />
master's, and doctoral degrees<br />
are lined with the official color<br />
of the institution awarding the<br />
degree. The binding or edging of<br />
the hood is of silk or velvet in<br />
the color pertaining to the sub-<br />
ject area. Doctoral hoods are<br />
longer and somewhat hller, but<br />
the colors of the lining again are<br />
those of the institution granting<br />
the degree, and the wide edging<br />
bears the color of the subject.
