ACEITUNAS MARINADAS

Marinated Olives

This was the first Tapa I had in Spain and it’s among

the most common.

Ingredients:


1. Olives…..there are so many varieties and I try

different ones every time. Sometimes I pick

some from a supermarket salad bar.

2. Garlic or Garlic Olive Oil if you already have

some

3. Olive Oil if you haven’t made Garlic Oil yet

4. Vinegar……in Spain, Sherry Vinegar is often

used and I use it if I have it. Otherwise, I use

whatever I have on hand.

5. Herbs…………optional. I like a little Fennel,

Thyme or Dill……….or all.

6. Lemon Juice……..optional

found these on sale in a supermarket bargain box.

I found

these at a bargain store. They were produced in Spain

and I bought all they had.

Even

though the liquid in the can may have a good flavor,


you might want to pour off some just so you don’t

end up with too much liquid.

Find a nice jar and dump in the olives.


Now add enough Garlic Oil to cover the olives.

What’s Garlic Oil? Well, hippity-hop, it’s the first

thing I always do when I’m going to make Tapas and

it’s the first recipe on the Tapas page.

Then add a little Vinegar……….about one part to

five parts Oil. In Spain, Sherry Vinegar is often used

and so do I if I have it. Otherwise, I use whatever I

have………..often, Rice Wine Vinegar.


Then you could add a few of your favorite

Herbs……………and maybe a Lemon wedge and or

a small Chile……….and a few Garlic Cloves……or

peppercorns……….or capers……….or whatever you

think might look nice.


Then put it in the fridge beside your Manchego

Cheese.


Serve it with a few Sprigs of Dill or

Fennel…………or some Edible Flowers.
