Each member enjoys business as well as

social networking opportunities, whilst giving

something back to those less fortunate, learning

new skills and having a huge amount of fun!

Rotary runs countless humanitarian projects

both locally, nationally and internationally, and

also partners with many charities

worldwide. Rotary members organise

community projects that address many

of today’s most critical issues, such as

violence, drug abuse, health, hunger,

the environment, and illiteracy.

Rotary clubs determine service

projects based on local needs. They

work for and with young people to address

challenges facing the youth of today.

Worldwide, Rotarians are enthusiastically

committed to the drive to wipe out polio. Since

Rotary became involved in polio eradication in

1985, the number of reported polio cases has

fallen from 350,000 a year to less than a 1,000;

125 endemic countries have been reduced to just

and two billion children have been protected

from the disease.

Welcome to the Hitchin

Wine & Food Festival

Welcome to the 5th year of the Hitchin Wine

& Food Festival. This annual event goes

from strength to strength and this year we

have more exhibitors than ever. As well as all

the food exhibitors, restaurants and cookery

demonstrations, we have no less than nine

independent wine merchants, some of whom will

be holding master classes throughout the day.

Many of the food and wine exhibitors are highly

praised for their produce, giving a mix of great

flavours and tastes. Choose from a variety of

great wines that you would not normally find on

the shelf at your local supermarket which you

can taste before you buy.

See the chefs from the local top restaurants

in action. Get an insight into their skills and

passion for great cooking with locally sourced

produce and treat yourself to a great meal out,

Support group’s fear

Thursday, October 24, 2013. No. 2202 Hitchin Edition

A charity that o fers help and advice

to parents of children who have

behavioural conditions has lost its

funding from Herts County Council.

Angels Support Group, which

supports parents and carers of children

with a tention deficit hyperactivity

had £40, 0 in funding removed by

the county council.

Leise Cooper, 43, was one of the

first members to help set up the

charity, which is based at The

Letchworth Centre for Healthy

diagnosed with the conditions 10

Herts County Council (HCC) said

the delay was due to a mechanical

was scheduled to begin on October 18.

However, poor weather conditions

mean this was not po sible.

A spokesman for HCC said: “We

Now tha these weather conditions

are becoming more prevalent, we

have reluctantly had to postpone the

treatment until March 2014.”

areas to free up space for visitors

and people using local busine ses.

“We now understand that this

work has b en postponed until next

March, so we wi l schedule in the

the end of this month.”

Supporting independent providers

Every exhibitor is passionate about what they do

whether it is preserving rare breeds, encouraging

us to be adventurous with our taste buds or

showing us that we don’t have to compromise

on quality for the sake of convenience.

Our exhibitors bring with them quality,

freshness, uniqueness and variety that you won’t

find in supermarkets.

There are meats from rare breeds of pigs and

native breeds of beef and lamb that have all

grazed freely on the hillsides of the eastern edge

of the Chilterns. Many producers will happily

invite you to their farms and smallholdings but

why not visit them on the Market Place? What

is meat without vegetables? Find an array of

fresh, seasonal produce that comes straight from

the producers and is with you on the same day.

And what better way to finish a meal than with

one of the 40 local cheeses on display that are

sustainable, traceable and organic.

The Rotary Wine and Food Festival is one way

of supporting our local businesses, it is one way

we can bring our communities together and it is

one way we really find out what delicious, fresh

tastes are right there on our doorstep.

Flavours from around the World

Our wine exhibitors may come from Hitchin,

Gloucestershire, Wiltshire, Yorkshire and

Essex but many have travelled around the

World to bring character, quality, beautiful

and rare wines back with them. Discover new

and exciting flavours and be prepared to be

pleasantly surprised as there is something to suit

everyone’s pockets and taste buds.

Many of our wine exhibitors support artisan

produce and small vineyards in countries across

Europe like Israel, Hungary and Switzerland

and as far afield as South Africa, South America

and New Zealand. Taste the quality of wines that

are made by small producers who passionately

care about what they are making.

We could not forget that this festival is a marriage

of wine and food, so our wine exhibitors have

many ideas of how to blend the two together.

Whether you would like to drink and eat or put

the drink in what you eat, they will be happy

to make a recommendation!

If you prefer beer, then visit the Rotary Beer

Stand in the Market Place where you can try

and purchase a selection of real ales from Tring

Brewery. Experience the richness of ales prepared

by the traditional method, using malted barley,

hops, water and yeast. The finest ingredients,

most of which are home grown.

Poached Apple & Ginger Crumble with vanilla custard

(Serves 4)

Peel, core and slice apples into segments. Place in a

pan with sugar, cinnamon and ginger, cover with water

and bring to simmer until apples are tender, but not

mushy. Remove apples and reduce liquid by 1/3rd.

Place all topping ingredients into a baking tray and

cook until golden brown and crisp, stirring as necessary

then briefly pulse in food processor to remove any

large lumps.

Gently warm cream, milk and vanilla seeds until

warm. Over a gentle bain-marie, whisk the yolks and

sugar until thick and creamy, add 1/2 milk mixture

to yolks, whisking all the time. Return to remaining

milk and stir until the mixture thickens, take care not

to let it boil.

Divide apples between 4 ramekins and pour over

syrup, cover with crumble topping and heat through.

Preparation & cooking

1. Make the mini meringues by whisking egg whites to stiff

peaks – when they reach soft peaks gradually add 200g

of the caster sugar. Transfer to piping bag and, if you

like, swirl through a few drops of the food colouring

with a wooden spoon. Pipe dots of meringue mixture

(width of a penny) onto baking paper. Cook at 100°C

for 90 minutes.

2. Boil the frozen berries, 60g sugar and the water

for 5 minutes and leave to cool.

3. Whisk the double cream together with the vanilla

essence and 40g of sugar until stiff.

4. Make a thick custard by following the instructions on

the pack but reducing the amount of milk to 200ml per

tablespoon custard powder and 2/3 tablespoon sugar.

Leave to cool. Alternatively thicken a pre-made custard

using cornflour.

5. Build the trifles in tumbler glasses.

a) Cut a piece of cake to fit, place in the bottom

of the glass and then soak with sherry.

b) Cover with a desert spoon of fruit compote.

c) Mix together the cream and the custard and pipe

a layer on top of the compote.

d) Fold another spoon of fruit compote into the cream

and custard mixture.

e) Top the glass with mini meringues, fresh berries

and a sprig of mint to garnish.
