Summer Dressings

(serves approx. 12)

Mango Chili Dressing

100 g vegetable stock

50 g Basic Textur

50 g mango puree

50 g Balsamico Bianco

30 g olive oil

25 g Herbasweet

15 g lime juice

15 g finely diced shallots

1 small chili pepper

lime zest

salt and pepper, freshly ground

1. Sweat diced shallots with Herbasweet

in a sauté pan until they are

transparent and remove from the

heat.

2. Cut along the length of the chili

pepper, deseed and slice finely.

3. Add all remaining ingredients to

the sauté pan.

4. Mix dressing well with the stick

blender and season with salt and

pepper.

5. Keep in a cool place.

Herb Dressing

130 g vegetable stock

50 g Basic Textur

50 g vegetable oil

50 g olive oil

50 g Balsamico Bianco

25 g Herbasweet

15 g finely diced shallots

12 g herbs (parsley,

chives and basil)

salt and pepper, freshly ground

1. Wash herbs and leave to drain.

2. Place all ingredients in a high

container.

3. Mix dressing well with the stick

blender until it is green.

4. Season with salt and pepper.


Raspberry Almond Dressing

100 g vegetable oil

70 g Basic Textur

50 g Herbasweet

50 g almond oil

50 g raspberry vinegar

50 g raspberries

salt and pepper, freshly ground

1. Place all ingredients in a high

container.

2. Mix dressing well with the stick

blender and season with salt and

pepper.

3. Strain dressing through a fine

sieve and keep in a cool place.

Tip: The desired consistency is obtained by varying the amount of Basic Textur

or vegetable stock used. The acid profile of dressings varies from region to region.

By altering the amount of vinegar used in the recipes, you can ensure the dressing

has the desired acidity.
