(vegetables in balsamic vinegar)

Sea bass fillet with two varieties of Umbrian truffle,
truffle pesto and truffle butter
Fillet schnitzel of Oldenburger pasture veal with green
pepper and grilled honey figs
Rack of lamb with Ligurian olive crust fresh from the
oven, braised borettane onions in ginger juice and
green beans
