Experience. Rack ovens made by wachtel ®<br />

High-quality materials for heat exchanger, baking chamber<br />

and front and exterior paneling add a very appealing<br />

appearance to this concept. The individual components<br />

are not bolted but carefully and securely welded. Each<br />

COMPACT and COMET rack oven stands on an extremely<br />

strong stainless steel base plate. These are decisive factors<br />

for a long and reliable service life.<br />

wachtel ® rack ovens boast exceptionally large baking<br />

surfaces with minimum space requirements. Due to its<br />

unusual height, the baking chamber can accommodate<br />

racks with 20 layers as standard while maintaining the<br />

technically required minimum layer pitch of over 84 mm.<br />

Compared to ovens accommodating racks with only 18<br />

layers, wachtel ® rack ovens produce 11% more volume<br />

with the same baking surface.<br />

wachtel ® engineers are especially proud of the cross-flow<br />

fan installed in the COMPACT F which assures an absolutely<br />

consistent and uniform air distribution and flow. This results<br />

in optimal energy efficiency at the slowest possible air flow<br />

while baking products of supreme quality. Continuous<br />

baking is not a problem due to the large-capacity steaming<br />

unit generating sufficient steam at any time.<br />

With the computer controls as a standard feature, wachtel ®<br />

rack ovens are easy to operate. If you need an alternative to<br />

oil or gas operated COMPACT ovens , the electrically operated<br />

COMET rack ovens would be your choice.


Innovation. The COMPACT K STIR by<br />

wachtel ® was the first rack oven in the world that baked<br />

with a combination of radiation and convection heat. So far,<br />

this combination has been applied successfully in wachtel ®<br />

deck ovens.<br />

The STIR radiating chamber walls increase the infra red portion<br />

in the heat by up to 90% which results in baking times<br />

reduced by 30% and more flexibility for other products.<br />

Moreover, the quality and freshness of the baked product<br />

are improved.<br />

The design incorporating a patented large-surface heat<br />

exchanger boasts even more benefits. Compared to conventional<br />

rack ovens, the energy consumption drops by up to<br />

30%. The exhaust temperature is only 15°C (59°F )<br />

above the temperature in the baking chamber. The large<br />

heat storage capacity of the baking chamber minimizes the<br />

temperature drop when charging the oven. Dough pieces<br />

are warmly greeted and reciprocate with premium quality.<br />

The patented COMPACT K STIR can be operated either by oil<br />

The SHOPMATIC control: Easy and safe operation.<br />

29 automatic programs and one manual program are easily managed<br />

via scroll wheel or key pad. Comfortable operator guidance through<br />

display prompts. The SHOPMATIC control is network-capable as are<br />

all wachtel® computer controls.<br />

Cleary arranged and comfortable.<br />

Programming, monitoring and controlling of<br />

baking programs is made easy with the help<br />

of the wachtel ® WinServer which also allows<br />

selection and downloading of programs at<br />

the oven. The WinServer software includes<br />

comprehensive control functions and allows<br />

connection of a printer as an option. For the<br />

electrically operated COMET power management<br />

programs are available.<br />

The OX C Computer control makes your daily work easier and safer<br />

by programmed baking parameters. The large display screen clearly<br />

shows all relevant program data. Comfortable data input at the scroll<br />

wheel or touch screen. The OX control can be linked to a network as<br />

any PC so that your oven becomes internet-compatible.<br />

The “Quick Start” burner.<br />

A new generation of oil and gas burners<br />

provide quick burner start without purging<br />

which significantly reduces the temperature<br />

drop after loading. Use less energy but<br />
