Bartenders bash wrap up<br />

Last month I had the pleasure of attending the infamous<br />

“BARTENDERS BASH” now called Hospitality Expo, at the<br />

Holiday Isles Resort and Marina in ISLAMARODA FL.<br />

I drove down with my local celeb<br />

bartender Mike, from my beach bar,<br />

Shaka Jons. Mike and I enjoyed the 2<br />

hour ride down from Ft Lauderdale.<br />

On the way there we stopped off<br />

and picked up some much needed<br />

supplies. Mike invested in a $100<br />

bottle of Grand Marnier and a bottle<br />

of Vodka for me. We were now<br />

ready for our 3 days of fun.<br />

We arrived late Sunday afternoon,<br />

a day before the event started<br />

which allowed us to settle in and<br />

look around the beautiful property.<br />

We checked into our room, which<br />

was a standard typical room for the<br />

area, and immediately went to the<br />

Wreck Bar for some of their famous<br />

island flair, we enjoyed the fresh<br />

conch fritters, which were hand battered<br />

and rolled of course, with an<br />

array of fresh fish. After dinner we<br />

headed to the RUM TIKI BAR located<br />

directly on the resort property. We<br />

heard great local performances and<br />

networked with <strong>ITB</strong> people from as<br />

far as TAMPA and ORLANDO.<br />

Day two was a great experience<br />

as from 11am to 1pm there was<br />

an array free liquor samples from<br />

a variety of vendors. We tasted an<br />

abundance of flavored vodkas, as<br />

well as tequila, prepackaged shots<br />

and beer. We spent the great part<br />

of the afternoon at the In The Biz<br />

<strong>Magazine</strong> booth, handing out magazines,<br />

bar towels and networking<br />

with hospitality people.<br />

I noticed the great response<br />

<strong>ITB</strong> got from people coming to our<br />

booth. There were several thousand<br />

people there by noon on Monday<br />

enjoying the FREE samples of liquor<br />

and beer brought in by the liquor<br />

companies. After the hospitality<br />

tents closed the party moved to<br />

the stage where there were various<br />

events from hot body contests to<br />

flair bartender contests. This is a<br />

must see and do event if you are IN<br />

THE BIZ and I highly recommend it.<br />

I enjoyed it, however, I have lots of<br />

ideas for next year.<br />

I would like see more live performances<br />

from locally grown talent,<br />

after all, we are the home of FLO<br />

RIDA, Casley and many talented musicians<br />

and entertainers. I think we<br />

can better organize this event to be<br />

an exclusive to <strong>ITB</strong> and their guests,<br />

it should not be an open event for<br />

the average Joe, as this event was<br />

and should be a celebration of our<br />

talented hospitality professionals.<br />

I would like to see some of the<br />

larger companies start a scholarship<br />

fund so that any of the people<br />

attending who are looking to better<br />

their career, can do so.<br />

Basically, what I am saying is,<br />

Hospitality Expo should be 3 days<br />

designated, geared and engineered<br />

to help our hospitality people relax,<br />

have fun and wind down from the<br />

previous season. The event should<br />

also go back to being a way for the<br />

Bar owners/managers to taste the<br />

new products being offered so that<br />

they can promote them to their<br />

clientele.<br />

I enjoyed this event and hats<br />

off to Holiday Isles Resort for hosting<br />

this year’s event again. I look<br />

forward to next year and hope that<br />

we can make some changes to bring<br />

it back to where it was several years<br />

ago.<br />

Summer usually equates with<br />

blockbuster, but <strong>June</strong> doesn’t quite<br />

fit the bill. While there may not be<br />

a plethora of intelligent cinematic<br />

fare to feast upon, there are a few gems in<br />

the mix from “Super 8’s” mystery and character-driven<br />

storyline to “Bad Teacher’s” irreverent<br />

humor. For action and comic book<br />

antics, see “Green Lantern” and the newest<br />

“X-Men.” For a more heartfelt cultural experience,<br />

choose “Just Like Us” or “A Better<br />

Life.” There are other films out there this<br />

month, but this gives a good range for an<br />

entertaining time at the movies.<br />

<strong>June</strong> 3<br />

Even mutants need to start somewhere<br />

and “X-Men: First Class” is about just that.<br />

This popular film series goes back in time<br />

to show how some of our favorite mutants,<br />

like Mystique (Jennifer Lawrence), got<br />

their start. Professor Charles Xavier began<br />

a school called Xavier’s School for Gifted<br />

Youngsters to help train those who had<br />

mutant superpowers how to hone and<br />

focus their skills. Ironically, he teamed up<br />

with Erik, who would later become his<br />

arch-enemy Magneto. The backdrop is 1963<br />

(when X-Men was first released as a comic<br />

book) and the Cuban Missile Crisis, adding<br />

an intriguing twist.<br />

<strong>June</strong> 10<br />

After touring the film festival circuit, the<br />

cultural gem “Just Like Us” is hitting the big<br />

screen. Showcasing some newer freedoms<br />

in the Arab world, focusing on Dubai,<br />

Lebanon, Saudi Arabia and Egypt, this documentary,<br />

directed by Ahmed Ahmed, talks<br />

about how comedy connects us all. Many of<br />

these regions have not been able to enjoy<br />

comedians the way we do here in America,<br />

but new freedom also has led to new forms<br />

of expression. This film opens in NY and LA<br />

<strong>June</strong> 10 and expands <strong>June</strong> 17.<br />

Steven Spielberg (as producer) teams<br />

up with J.J. Abrams (as director) for “Super<br />

8,” one of the most-anticipated films of<br />

the summer. By using minimalistic teasers<br />

that leave plenty of questions as to the<br />

content, this team has built up quite an<br />

audience, curious simply to see what the<br />

film is about. It takes place in the summer<br />

of 1979 when a group of young friends set<br />

out to make a super-8 movie and unexpectedly<br />

witness one colossal train wreck. (This<br />

is all built around the fact that something<br />

has been moved from Area 51, supposedly<br />

by train). But what comes next is more<br />

shocking – as people start to disappear and<br />

strange events happen and the local deputy<br />

tries to find out why. Unlike the hurried<br />

pace of most summer action films, this<br />

suspenseful piece seems more characterdriven,<br />

a throwback to films like “E.T” and<br />

“Stand By Me,” rather than a “Transformers.”<br />

<strong>June</strong> 17<br />

D.C. Comics “Green Lantern” is finally<br />

coming to theaters with Ryan Reynolds<br />

in the helm. His character, Hal Jordan,<br />

reluctantly accepts the green glowing ring<br />

and the power that comes with it<br />

when the purple alien tracks him<br />

down and bestows it upon him.<br />

Little does he know the notso-joyful<br />

ride he is about to<br />

take to the outer limits and<br />

back and the enemies he<br />

will face in an effort to save<br />

his own planet from total<br />

annihilation. Blake Lively<br />

also stars as his girlfriend.<br />

<strong>June</strong> 24<br />

“A Better Life”<br />

is a poignant<br />

drama about a<br />

father and son<br />

that some<br />

have called<br />

Oscar-worthy.<br />

Produced,<br />

in part, by<br />

Jami Gertz,<br />

best known<br />

for her acting,<br />

this film follows<br />

a father who tries<br />

to give his son a better<br />

life than he has had.<br />

He works to keep his<br />

teenage boy away<br />

from both gangs and<br />

immigration agents<br />

while struggling to<br />

keep himself afloat<br />

by doing gardening<br />

work.<br />

For those who love<br />

sarcasm irreverence and<br />

comedy, “Bad Teacher”<br />

seems to have all the right<br />

moves. The trailer has a<br />

notorious “red band,” meaning<br />

it has inappropriate written all over it,<br />

which means it is oh-so-right for a certain<br />

audience, not so good for kiddies. Cameron<br />

Diaz stars as a teacher who hates her<br />

job and would rather score with the new<br />

substitute, played by Justin Timberlake, not<br />

just for love, but for the money. But she<br />

finds herself competing with a fellow teacher<br />

while dealing with the day-in-day out<br />

struggles of her life by getting high, drinking<br />

and swearing like a sailor. Jason Segal (best<br />

known for “How I Met Your Mother”) also<br />

stars as the gym teacher who tries to win<br />

her over. Phyllis Smith (from “The Office”)<br />

plays off Diaz, with deadpan<br />

humor throughout.<br />

Happy Spring everyone!<br />

School’s out so you can take<br />

the kiddies to karaoke with<br />

you. Make sure you talk to your<br />

local KJ to find out if a show is family<br />

friendly. Even if it is in a restaurant,<br />

it doesn’t mean that it is a PG<br />

show. I try very hard to make sure<br />

people don’t swear on my mic or sing<br />

questionable songs while there are<br />

families around, but it happens. As<br />

KJs, we try to know the content of<br />

songs, but we can’t know every song.<br />

Unfortunately we don’t have a delay<br />

feature although there are times I<br />

wish I had one....<br />

Liz Bennett is at East Side Pub in<br />

Fort Lauderdale on Wednesday nights<br />

and Lou Laino is there on Saturday<br />

nights. Stop by to see them. You can<br />

section, but not a lot from KJs. Let me<br />

hear from you KJs out there!<br />

KJs-Dead air is what I am hearing<br />

bothers singers. Play music or make<br />

sure the next singer knows they are<br />

next.<br />

Singers-If it’s not “the version you<br />

usually sing” and it doesn’t come out<br />

as well as you’d hoped, don’t look at<br />

the KJ like we wronged you. If you are<br />

a regular singer at a show, the KJ will<br />

more than likely get the version you<br />

like OR you can go to Sing a Song (see<br />

above) and buy your favorite version<br />

from them.<br />

in this industry. From having team dress you<br />

from head to toe and looking beautiful, to the<br />

needs to set himself apart from the rest. There<br />

are tons of handsome men here so for a guy to<br />

attract me his personality must be vibrant, seductive,<br />

and witty.<br />

What’s your craziest work-related story?<br />

Luckily most of my shoots go very smooth and<br />

are carefully planned out. But for some reason<br />

my wardrobe changes always bring surprises,<br />

there’s just never anywhere to change in private<br />

to know about you? I am a very deep thinker. I<br />

like to study quantum physics, ancient history,<br />

years ago, I promoted a new swimsuit company<br />

It was crazy knowing this animal could<br />

know about you? I am a book rat. Reading is my<br />

life. I RUIN myself collecting all sorts of books.<br />

working?<br />

I really don’t have a chance to get to hear pick up lines, as I<br />

am performing most of the night. Usually guys just try and<br />

grab me, luckily the Nightclub security is always close by and I<br />

have never felt threatened in anyway.<br />

What’s your favorite part of the service industry?<br />

I would have to say MY JOB! I am a Dancer/Model/Entertainer<br />

for Zhantra Entertainment. Zhantra is known nationally<br />

and internationally for providing the ultimate in talent to venues<br />

that range from corporate parties to the most prestigious<br />

club venues, lounges, restaurants and hotels around the<br />

world. From week to week I never know where I will be working,<br />

I could be here in South Florida or jetting off to some far<br />

off location, some of the places I have been are: Las Vegas,<br />

Koh Samui - Thailand, Bahamas, Marbella (Spain), Cabo San<br />

Luca - Mexico, Trinidad, Bolivia, Guadeloupe Islands, Honduras,<br />

Chicago, and New york. I take great pride in working for<br />

Zhantra because they have a fabulous staff comprised of only<br />

the top individuals in their field. Each and every night I work<br />

is a unique and different experience that leaves me excited to<br />

Luckily I found him. My boyfriend is very supportive of my career<br />

and a kind and loving man, and that is important to me.<br />

What’s your craziest work-related story?<br />

Wow! Every day I get to work is pretty crazy from the time I<br />

open my costume bag to see what my designers and stylists<br />

have created for me, anything from being body painted to a<br />

light flashing bra and tutu to more refined corporate looks.<br />

Everyday getting to work I feel like a little girl on Christmas<br />

opening presents and it is so exciting watching myself transform<br />

as I have my make up applied and put on my costume.<br />

What do you like to do when you are not working?<br />

When I am not working I enjoy relaxing at home with my<br />

boyfriend Josh and my puppy Kaya.<br />

What is something we would be surprised to know<br />

about you?<br />

There are not many surprises with me, I believe Marilyn<br />

Monroe said it best when she said, “Beneath the makeup and<br />

behind the smile, I’m just a girl who wishes for the world.”<br />

Cool Drinks for the Summer<br />

Michelada<br />

1/4 teaspoon piquin pepper<br />

1/4 teaspoon salsa picante<br />

1 tablespoon freshly squeezed lime juice<br />

1/2 teaspoon salt<br />

1 (12-ounce) can Mexican lager, chilled<br />

Garnish: lime wedge<br />

In tall beer glass, stir together pepper sauce, salsa, lime juice, salt, and lager.<br />

Garnish with lime and serve immediately.<br />

Aviation<br />

2 tablespoons (1 ounce) fresh lemon juice<br />

1/4 cup (2 ounces) gin<br />

1 tablespoon (1/2 ounce) Maraska maraschino liqueur<br />

1/4 teaspoon simple syrup<br />

1 cup ice cubes<br />

Garnish with homemade maraschino cherry (see note, below) or pitted fresh cherry<br />

In cocktail shaker, combine lemon juice, gin, maraschino liqueur, and simple syrup.<br />

Add ice and shake vigorously for 20 seconds. Strain into chilled coupe glass and drop<br />

in cherry.<br />

Bartender’s note: To make homemade maraschino cherries: Fill a mason jar or sealable<br />

crock with pitted Bing cherries, add Maraska maraschino liqueur to cover, seal<br />

the jar, and let stand at least 3 months and up to 1 year.<br />

French 75<br />

1 lemon<br />

3 tablespoons (1 1/2 ounces) gin<br />

1 1/2 tablespoons (3/4 ounce) fresh lemon juice<br />

1 tablespoon (1/2 ounce) simple syrup<br />

1 cup ice cubes<br />

1/4 cup (2 ounces) dry sparkling wine, such as brut Champagne, chilled<br />

Using zester or paring knife, slice peel from lemon in long, thin spiral. Reserve<br />

lemon for another use and set peel aside.<br />

In cocktail shaker, combine gin, lemon juice, and simple syrup. Add ice and<br />

shake vigorously for 20 seconds. Strain into chilled Champagne flute and top<br />

with sparkling wine. Curl lemon peel around finger to create twist at least 6<br />

inches long. Garnish drink with twist and serve immediately.<br />

Sidecar<br />

2 tablespoons superfine sugar<br />

1 lemon wedge<br />

3 tablespoons (1 1/2 ounces) Cognac<br />

2 tablespoons (1 ounce) Cointreau or other Triple Sec orange liqueur<br />

1 tablespoon (1/2 ounce) fresh lemon juice<br />

1 cup ice<br />

Spread superfine sugar on small plate. Rub lemon wedge halfway around rim of chilled<br />

martini or coupe glass. Dip moistened side of glass in sugar to lightly coat outside rim of<br />

glass. Set aside.<br />

In cocktail shaker, combine Cognac, Cointreau, and lemon juice. Add ice and shake vigorously<br />

until well chilled, about 30 seconds. Strain into prepared martini or coupe glass and serve.

Jon G. feels lucky to work at<br />

Lucky’s Tavern. Once home to<br />

Coyote Ugly, this locale has been<br />

revamped and now is home to<br />

the 3 Legged Dog.<br />

Jon had this to say about how to<br />

make everyone happy at the bar:<br />

“One of the things that I feel is most<br />

important is making customers happy<br />

by not making them wait for drinks.<br />

After that I just treat people as a new<br />

friend, like we are hanging out at the<br />

bar together”.<br />

There will always be difficult situations<br />

that you have to deal with, Jon<br />

says, “Rough nights with bad customers<br />

comes with the job, the trick is not to<br />

let people get to you. You can’t always<br />

“kill-em with kindness.” unless you<br />

work in the corporate world which we<br />

don’t”.<br />

For those just getting into “the biz”<br />

he offers this advice: “Make the most<br />

of it. Treat bartending as a profession<br />

but don’t plan on doing it forever.<br />

There is no retirement plan for a<br />

bartender”<br />

Sometimes, working with coworkers<br />

can also have its drama. But<br />

Jon knows how to deal with those<br />

situations as well. “The way I deal<br />

with co-workers is come to work to do<br />

work and we’ll get along great. Don’t<br />

let work affect outside friendships<br />

because work is work and is separate<br />

from your social life”.<br />

He enjoys seeing customers coming<br />

in for themed nights week after week<br />

(like Monday – Free Buffet and Poker<br />

Night, Tuesday – 1st Team All Bar Competition,<br />

Wednesday – Ladies Night,<br />

ladies drink free). Patrons also enjoy<br />
