<strong>Culinary</strong> Arts - The competition requires a<br />
culinary team to prepare a gourmet 3-course<br />
dinner in one hour, using only two propane<br />
burners. Students are judged on knife skills,<br />
speed, efficiency, cleanliness, planning,<br />
presentation, and taste.
This year’s menu starts with<br />
Seared Ahi Salad Niçoise with<br />
watercress sauce; followed by a<br />
main course of Rabbit Three Ways<br />
with Molé sauce, Polenta and<br />
Poached Spiced Pears; and finished<br />
with a dessert of Passion Fruit<br />
Panna Cotta, White Chocolate<br />
Mousse, Almond Tuile & Passion<br />
Fruit Fettuccini.

Restaurant Management students must create a theme and a<br />
complete plan to open a restaurant, make a presentation as if<br />
pitching the idea to investors, then face grilling by judges to<br />
determine how thoroughly they researched every detail of<br />
operating a restaurant.
