Imports and a member of the organizing team for the

annual World Pastry Forum. Tina is the Pastry Director

for the Western Reserve School of Cooking. She earned a

bachelor of science degree in nutrition from Case Western

Reserve University and is a graduate of the French

Culinary Institute in NYC. She attended the University of

Sorbonne and has apprenticed in Paris, France. A pastry

chef at some of New York’s finest restaurants, she has

taught the art of pastry to chefs in the U.S. and Japan.

We are grateful for Tina’s volunteer time through the

years – she has made tonight especially wonderful!

The Creative Confections Dessert Competition is our major fund raiser to

support our Art Therapy programs. Whether our clients have had a stroke,

received a traumatic brain injury or spinal cord injury, have suffered from abuse,

or turn to art as a creative wellness outlet, art therapy provides self-expression and

the opportunity for tremendously valuable healing and growth.

A panel of 16 culinary judges from Northeast Ohio’s top cooking schools will

award Most Decadently Delicious and Most Artistic desserts in the categories of

cakes/tortes and plated/individual desserts. The dessert with the highest overall

score will be awarded Best in Show.

Following the judging, guests can taste-test the entries while enjoying the sights,

sounds, and butterflies of the Cleveland Botanical Garden. To participate in

future events, entry forms and ticket information for the Creative Confection

Mark Zinni is an Emmy and AP award-winning reporter at FOX 8 News. Born and

raised near Cleveland, Mark graduated from Notre Dame-Cathedral Latin High School

and St. Bonaventure University. Mark has interviewed politicians, celebrities, religious

and spiritual leaders and many “real people.” His work has taken him to New York and

Pennsylvania post-9/11, to the front lines of Utah wildfires and deep into West Virginia’s

coal mines. Mark has always been active in the community through various charities and




Jacqueline Gerber, “Queen of the Morn,” WCLV 104.9 FM

Since 2001, Jacqueline Gerber has hosted the “First Program,” 6-10 a.m. on WCLV. She

got her first radio job by accident. Her background is in communications, theater and

law. Originally from Peoria, Illinois, she has written reviews, features and humor articles

for newspapers in Cleveland and Illinois. Her favorite extracurricular activity is public

speaking because, unlike in radio, she actually gets to see her audience. After years of

getting up at 3 a.m. to host morning drive, she has concluded that nightlife is overrated.

Chef Roland Mesnier

Born into a large family in the tiny village of Bonnay, France, Roland Mesnier was the

pastry sous chef at the iconic Savoy Hotel in London, then was hired as Executive Pastry

Chef and spent nine years at the legendary Princess Bermuda resort where he met his

wife, Martha and they had a son, George. Roland and his family traveled back to France,

this time Roland was hired as the Executive Pastry Chef at what is now the Four Seasons

Hotel George V in Paris. After a short time in Paris, Roland missed the beaches of

Bermuda and returned as Corporate Pastry Chef for all of the Princess properties. Then

in April 1976, Roland came to the U.S. as Executive Pastry Chef at The Homestead, a

venerable resort hotel in Hot Springs, Virginia.

Hired in 1979 by first lady Rosalyn Carter, Roland Mesnier began his career as White

House Executive Pastry Chef and went on to become the longest tenured chef ever to

serve there. Never content to sit still, on Roland’s days off from the White House he

developed and taught the first professional Pastry Arts Program at L’Academie de

Cuisine in Bethesda, MD – currently ranked in the top 10 Culinary schools in the U.S.

Chef Mesnier has won 18 gold medals, 4 silver and 3 bronze for his pastry creations in

competitions around the world. He is a member of the Academie Culinaire de France

and the recipient of many awards and accolades which include: the French Legion of

Honor in 2005 – the highest honor bestowed on a French citizen; that same year he was

inducted into the Chocolate and Pastry Hall of Fame in New York. He was awarded a

Doctorate of Culinary Arts from the prestigious Johnson & Wales University in South

Carolina. He is the author of three books, Dessert University, Basic to Beautiful Cakes and

All the Presidents Pastries: Twenty-Five Years at the White House, A Memoir.

While Chef Mesnier retired from the White House in 2004, he is currently at work on

a fourth book, this one in conjunction with the White House Historical Association,

scheduled for release in late 2010.

THE BUCKEYE ROOM RESTAURANT is run by students from the Lorain Co. Joint

Vocational High School. Open for lunch by reservation, Tues.-Thurs., 10:15am-12:30pm. The

Bakery/Café is open 10:00am-1:00pm. All meals and baked goods are prepared from scratch by

the students. Buckeye Room menu items include soups, salads and sandwiches and entrees all at a

reasonable price. The Café makes cookies, brownies, tarts, pies, fancy tortes and much more. The

Lorain Co. JVS is offers a dynamic Culinary and Baking/Pastry program. One of the best

programs in the US.

THE BAKERY & CAFÉ AT POLARIS is a training facility for 11th and 12th grade students

aspiring to join the ranks of the Culinary Arts. The two-year baking and pastry program prepares

students for the industry, college and beyond. The bakery is open W-F, 11:30-2:30 during the

school calendar and features artisan breads and pastries, gourmet coffee, tea and espresso.

ORANGE CREAMSICLE CHEESECAKE: Memories of childhood will flood your taste buds!

We start with a chocolate Oreo butter crust filled with orange cream cheese filling, top it with

vanilla sour cream and finish it off with orange flavored whipped cream.

SLICES FABULOUS PASTRIES has been in business over twenty-five years with Efty Simakis

always at the helm. Her first customer was Mr. Z’s and they stayed with her many years until they

SWEET & SPICY ROMANCE: Like all love affairs, the relationship goes through stages. It’s how

well you blend those stages that will tell if your love will last the test of time. We have created a

jalapeño cheesecake with a raspberry filling and mojito whip. The sweet and spicy blend perfectly

to give you a balanced relationship.

THE HEART OF LOVE: We are taking a playful take on Sweetest Day. We created a chocolate

raspberry Port Wine cake with a raspberry glaze filling. The heart shaped cake will be made to look

like a box of chocolates. Yes, I have made the chocolates to put in the box as well! It will contain a

variety of everyone’s favorites.

TWISTED TREATS is not your cookie cutter bakery! Some of our specialties include tornado’s,

s’mores, brownies, chocolate covered bacon, Oreo cake, etc. We have created everything from a

small birthday cake to a 5 foot tall giraffe cake! Our “playful” bakery is open Tuesday-Friday

of America, he worked in Newport, R.I.; was the assistant pastry chef at the Breakers in Palm

Beach, Fla.; the pastry chef at the Hyatt Palm Beach and the founder of Truffles in Cleveland.


Art Therapy Studio

For over 40 years, the Art Therapy Studio (ATS) has provided art therapy services for

those with special needs as well as individuals and groups seeking wellness. Our

programs are based on the belief that self-awareness through art enhances the quality of

life. Each ATS art therapist is highly trained and has a master’s degree in art therapy and

1000 hours of supervised clinical experience to become a Registered Art Therapist, or

ATR. ATS is proud to be the oldest hospital based art therapy program in the United


Our mission is to enhance the quality of life for children and adults affected by spinal

cord injury, brain trauma, stroke and multiple sclerosis through the therapeutic use of art.

Our Programs

• Help people cope with change after a traumatic accident.

• Help people who have had a stroke express themselves without words.

• Provide focus and a way to find peace for those with spinal cord injuries.

• Provide control and a sense of self to people with multiple sclerosis.

• Teach new skills and enrich the lives of people with special needs.

In 2009, ATS served 1,662 clients in 5,076 client sessions. A client session can be

one-on-one or a group; number of clients is the number of unique individuals. Each

person is counted once, even if they were seen repeatedly.

Art Therapy Studio

Programs and Services

Hospital In-Patient: Art therapy is offered bedside or in small groups to help reduce

patient anxiety, increase self-expression, and begin to cope with change after a traumatic

injury or illness. Current programs specialize in working with brain, spinal cord injury

or stroke patients at MetroHealth Rehabilitation Institute of Ohio and at the Cleveland

VA Hospital.

On-Site at Community Agencies: Anywhere from 2 to 30 hours a week, art therapists

are sent to off-site locations to provide therapeutic art for special needs clients or

corporate wellness workshops for employees.

Community Studios: Classes in watercolor, acrylics, clay, collage, drawing and other

media are held once a week for 10 weeks. Studios are located at Fairhill Partners,

Ursuline ArtSpace, River’s Edge, and MetroHealth.

Professional & Community Education

We offer CEU’s for social workers, counselors, psychologists, Occupational Therapists,

Physical Therapists, MR / DD Facilitators, Caseworkers and Activity Professionals to

learn about using art with clients.


Art Therapy for Stroke Survivors: Join others who want to feel better about themselves

while engaging in a journey of self-discovery through the art making process. No

previous art experience is required and caregivers are welcome (at no cost). Tuesdays,

10 – 11:15 am.

Media Exploration for those with MS: Join others to explore art media in the safe and

supportive environment of the Art Therapy Studio! Thursdays, 1 – 3 pm.

The Art Therapy Studio was co-founded in 1967 by Dr. George

Streeter, a psychiatrist/artist and Mickie McGraw, an artist/

therapist. Both turned to art as a way to cope with serious physical

illnesses – he with tuberculosis and she with polio. They have

firsthand experience as to the power of healing through art.

For the past 40 years, the Art Therapy Studio continues to

provide art therapy services for those with special needs as

well as individuals and groups seeking wellness. Our Registered

Art Therapists provide programs based on the belief that
