I N T R O D U C T I O N

Between Christmas and New Year we have moved to our new home in Slough.

This new location now offers us more temperature controlled storage,

a larger demonstration kitchen area and an updated office space to allow us to

continue to develop over the next 10 years. (see p80 for photos).

2012 is an important year for UK hospitality with the Diamond Jubilee as well

as the Olympics in London. We have a wide range of Great British products

that you will need this summer (see p4). Please contact your Area Sales

Manager to arrange a meeting to discuss further.

We have introduced many new products over the last 6 months that are

now included in this brochure and please look at our website or mailings for

monthly updates on new products in 2012.

Origins of Tea

China is the largest producer of tea

with a seasonal production. There

are a variety of speciality Chinese

teas including Oolong, Lapsang and

White tea.

India is the second largest producer

of tea producing Darjeeling and

Assam amongst others.

Kenya has year round crops with

the best teas being harvested in late

Jan/early Feb and July. Its crop is less

than half of that of China.

The Tea Plant

(Camellia Sinensis) &

Process:

Different tea varieties come from different

methods of processing which normally involve,

withering to reduce moisture, rolling to release

flavour and oxidisation where leaves ferment

to turn coppery red. Then drying where leaves

are pan fired to halt the oxidisation process and

turn black.

Green and white teas are not oxidised which is

why they are different in colour, while Oolong tea

is partially oxidised. ‘Sencha’ green teas have been

steamed to dry rather than pan fired.

Teas are like wine: Black tea eg Assam, is fully

oxidised like red white, Oolong tea is partially

oxidised, like rose wine and green tea and white

tea are unoxidised like white wine.

The Tea Leaves

90% of teas drunk here are black blends made

with the lowest grade leaves, yet there are

single estate black, green and white teas which

are on the rise.

Novus teas use whole leaf tea grades

and supply them in a special pyramid

infuser (bag). The Novus

teabag replicates the

traditional technique of

steeping tea by creating

more surface area for

water to access the leaves.

They allow full extraction

without compromising the

natural flavours.

Tasting Notes

Brew strength, good presentation and

freshness are key characteristics that

tea drinkers look for in a cup of tea. We

recommend listing teas as you would wine

on a menu, to help consumers understand

their choice of tea.

Black Teas (brew for 3-5 minutes)

English Breakfast: slightly nutty, yet creamy

character. Full-bodied, perfect for mornings.

Tastes great with an English Breakfast.

Assam: strong, malty & robust, refreshes

the senses in the middle of the morning.

Great with sugar, as served in India, and

with a biscuit.

Darjeeling: Best without any milk. A Muscatel,

fragrant yet crisp and fresh character, this is

a thoughtful afternoon tea. The ideal food

Pure white tea: a smooth yet delicate white

tea, less bitter than green teas, and perfect

as an afternoon alternative to black tea. It is

Green and white teas become more bitter

the longer the tea is left to brew. We

recommend 1-2 mins for the green tea and

less than 1 min for the white teas. Both green

and white teas contain caffeine as they come

from the same plant as black teas.

B r i t i s h A f t e r n o o n

Anna Maria, the Seventh Duchess of Bedford, is credited with the invention of afternoon tea in 1840. To relieve

her hunger pangs between light luncheon and her evening meal she asked her footman to bring her a pot of tea

and a little light refreshment. She began to invite friends to this new ritual and soon all of fashionable London

was indulging in afternoon tea.

The word ‘tisane’ originated from the Greek word ‘ptisane’ a drink made from pearl barley, but is by definition any

herbal infusion other than from the leaves of the tea bush. Tisanes can be made with fresh or dried flowers, leaves,

seeds or roots, generally by pouring boiling water over the plant parts and letting them steep for a few minutes.

The tisane is then strained, sweetened if so desired, and served. Herbal ‘tea’ is best known for its medicinal effects.

O r i e n t a l

The origin of tea dates back to 2737 BC and Chinese Emperor Shen Nung’s discovery when the leaves of a nearby

tea tree fell into some water his entourage were boiling. From its Chinese routes, Japan started to learn about

and drink tea in the 7th/8th century AD, developing its own distinctive tea ceremony Cha-no-yu, based on the

Buddhist search for spiritual refreshment and harmony in the universe. This Oriental tea ritual is a combination

of both Chinese and Japanese ceremonies, taking you back to the Eastern origins of tea, by combining notes from

both tea cultures to create a delicate and elegant Oriental ritual.

Cru Sauvage

Cru Sauvage comes from wild cocoa beans in Bolivia’s upper Amazon

region. It is not found anywhere else in the world and the beans are far

too small for industrial processing. The beans grow in scattered locations

throughout the forests rather than on plantations.

These very small cocoa beans have higher demands during the traditional

manufacturing process than other cocoa beans.

All the machines have to be adjusted individually. For Bolivian wild cocoa,

the roasting temperature is lower and the roasting time is longer than for

all other cocoa beans. Each type of cocoa is different and therefore the

conching time has to be set accordingly. The specialists at Felchlin have

defined 60 hours in the traditional conches, as the optimum conching time

for the Cru Sauvage.

Quality

All goods supplied are guaranteed to be of the substance, nature and quality

now in force. All weights, dimensions and number of pieces stated in this

reasonable period allowed for examination has elapsed, the Company cannot

breakage or other damage must be made within 24 hours of delivery and
