apricots, fresh blueberries and<br />

Blueberry Milk Flip<br />
make up several servings each<br />
of this delightful threesome.<br />
Start with Bluberry Milk<br />
Flip, a wonderful combination<br />
of fresh blueberries, milk, egg,<br />
whipping cream, water, sugar<br />
and ice cream. And make a<br />
Misty Apricot Milk or two.<br />
This is a fluffy mixture of pureed<br />
apricots, whipping cream,<br />
egg, milk and vanilla ice cream<br />
with a drop of food coloring.<br />
Strawberry Mist is fun to concoct<br />
too. Just substitute strawberries<br />
for the apricots.<br />
Then get on the telephone^and<br />
in your most cheerful voice,<br />
send out the word that there are<br />
cooling refreshments to be had<br />
at your home.<br />
(6 8-ounce servings)<br />
cups fresh blueberries 1 egg, beaten<br />
Vi cup sugar<br />
1 quart milk<br />
% cup water<br />
1 pint vanilla ice cream<br />
% cup whipping cream,<br />
whipped<br />
Cook blaeberries in sugar and water to make a thick syrup.<br />
Mash syrup through a sieve to form blueberry puree. Fold whipped<br />
cream and beaten egg into the milk; blend in blueberry<br />
syrup. Pour into glasses. Top each with a scoop of vanilla ice<br />
cream.<br />
Misty Apricot Milk<br />
(4 8-ounce servings)<br />
1 No. 303 can peeled apricots 2 cups milk<br />
% cup whipping cream, 1 drop red food coloring<br />
whipped<br />
1 drop yellow food coloring<br />
1 egg, beaten 1 pint vanilla ice cream<br />
Mash apricots through a sieve to form a puree. Fold whipped<br />

food coloring. Pour into glasses and top with scoop of vanilla<br />
ice cream.<br />
STRAWBERRY MIST VARIATION<br />
In place of apricots, thaw and sieve one ten-ounce package<br />
frozen strawberries to form puree. Omit food coloring.<br />
CURRIED HAM ROLL-UPS<br />
Curry-flavored ham roll-ups make an enticing summer main<br />
dish. Prepare them in the morning; serve them in the evening —<br />
Patio Style. The ham rolls are stuffed with fluffy cooked rice<br />
seasoned with parsley, onion and curry powder and then bake<br />
in a rich curry sauce. A crisp salad would be a nice accompaniment.<br />
And for dessert how about cantaloupe sundaes?<br />
3 cups cooked rice<br />
Vi cup minced onion<br />
% cup chopped parsley<br />
2 tablespoons melted butter<br />
Curried Ham Rolls<br />
V* teaspoon salt<br />
V-i to 1 teaspoon curry powder<br />
8 slices trailed ham<br />
Mix cooked rice, onion, parsley, butter, salt and curry powder<br />
together. (If your family is a lover of curry dishes by<br />
all means use the 1 teaspoon, but be careful if you're just<br />
introducing them to curry flavor — it's quite pronounced you<br />
know.) Place about Vz cup of the cooked rice mixture on each<br />
slice of ham. (Here you see the recipe calls for boiled b —<br />
but if your refrigerator holds some left over baked han. use<br />
it and slice it nice and thin so it will roll). Now roll up ham<br />
slice and place seam side down in a baking pan. Pour curry sauce<br />
over rolls. Bake at 375 degree oven for 30 to 35 minutes.<br />
CURRY SAUCE<br />
V\ Tablespoons butter '/i teaspoon pepper<br />
2 tablespoons flour 1 teaspoon curry powder<br />
Yi teaspoon salt (scant) Z cups milk<br />
Melt butter in sauce pan, blend in flour and seasonings.<br />
Stir in milk and bring to boil, stirring constantly. Boil 1 minute<br />
and pour over ham rolls.<br />
Looking for a luscious summer fruit pie? Here it is. Fresh<br />
sliced peaches and sweet cherries (or bananas) are folded into<br />
a dairy rich sour cream and cream cheese mixture, then poured<br />
into either a baked pie shell or graham cracker crust. Chill<br />
well or freeze if you like. Good! "^<br />
Fruited Sour Cream Pie<br />
1 baked 9-inch pie shell or<br />
graham cracker crust<br />
1 cup dairy sour cream<br />
1 3-oz. package cream cheese,<br />
softened<br />
4 tablespoons O/i cup)<br />
honey or light corn syrup<br />
1 teaspoon vanilla<br />
>i teaspoon salt<br />
1 cup sliced peaches<br />
1 cup pitted sweet cherries<br />
or sliced bananas<br />
Combine sour cream, cream cheese, honey, vanilla and<br />
salt. Blend until smooth. Fold in peaches and cherries (or bananas).<br />
Turn into pie shell and chill until firm, at least several<br />
hours. Yields 6 servings.<br />
