COOKING & DINING

Recipe: Versunkener Apfelkuchen - “sunken apple cake”

250g plain flour

200g sugar

125g soft butter

3 eggs

1 pack. vanilla sugar

1 1/2 teaspoons baking powder

1-2 tablespoons of milk

3-4 apples sliced

50g chopped almonds

A pinch of salt

Preheat oven to 180 C. Prepare and grease a 28 cm (10inch) round cake tin. Mix together all the

ingredients apart from the apples. Pour the mixture into the cake tin and smooth the top until flat.

Peel, quarter, and core apples. Thinly slice each quarter several times without cutting all the way

through. Do this just before you place them on cake. The apples "open" when they are baked.

Push the apple pieces gently into the cake so they sink slightly into the mixture. “Sprinkle” chopped

almonds around the apples. Bake in the oven for 35-40 minutes. Test whether the cake is cooked

through by piercing the centre with a toothpick. If it comes out clean then the cake is done. Let the

cake cool down. Remove cake from pan and serve with whipped cream!
