Welcome to the first issue of The V GUIDE,

a clear and concise guide to help you

make healthy choices in where to dine

out, find grocers, caterers, deliveries,

vegan friendly businesses, organizations

and events. Much research has shown the

health benefit of a plant based diet. Many

people in the Northeastern Ohio area

have decided that health begins with the

foods that are put into their bodies and

the thoughts they choose to put into their

minds. After all, the bodies we reside in

are all that we have for this lifetime - so it

truly needs to be taken care of. Our desire

is to help guide people to many dedicated

businesses, organizations and events that

share that belief.

We would also like to thank all that have

Robbins

Americans today spend a smaller

percentage of their income on food than

any people in the history of the world, and

also a smaller amount of time preparing

it. We think of that as an achievement and

a blessing. But it’s not widely recognized

that, thanks to misguided farm bills, it’s

primarily unhealthy foods like feedlot meat,

sweetened beverages, and processed foods

with added sweeteners and fats that are

cheap.

We need to ask, what is the real cost

of this seemingly cheap fast food? The

agricultural systems producing them are

destroying rural communities, polluting

our water, eroding our topsoil, causing

incredible suffering to animals, emitting

greenhouse gases at egregious rates, and

giving most of us toxic levels of nutritional

stress. The Centers for Disease Control

estimate that more than one out of every

three children born in the U.S. today will

develop diabetes as a result of the food they

eat. We are paying a terrible price for our

seemingly cheap food.

How can we break the cultural trance

and overcome the political cowardice that

permits industrial fast food and factory

farms so much control over both national

and state food policies, and ultimately, over

what most of us eat? How can we obtain

foods that are truly nutritious, affordable,

and produced in a sustainable way?

We need desperately to move toward a

healthier, more humane and more earthfriendly

agriculture and cuisine. And that’s

why the V Guide is such an important

resource.

What would happen if more Americans

were to eat plant- strong diets, and derive

as many of their nutrients as possible from

healthy plant foods? We’d stop overeating

unhealthy foods. We’d be eating foods

with higher nutrient densities and cancer

protective properties. We’d have a more

affordable, sustainable and effective health

care system. We’d be less dependent on

insurance companies and doctors, and

more dependent on our own health-giving

choices.

Here’s where our power lies: We can

make healthy choices as individuals, as

families and as a society. We can support

farmers’ markets, natural food stores, and

organic and locally sourced restaurants.

Let’s lend our support to those who are

working to build a healthier way of life and

a healthier world. Let’s give our business

to restaurants, caterers and grocery stores

who are accountable for their impact on our

earth, our health, and our future.

What will happen if you eat a plantstrong

diet? Your mind will be clearer, your

heart will be more at peace, and your body

will thank you for the rest of your life.

DEFINITIONS & CODES

V: Vegan

Vegans are Pure Vegetarians who exclude

animal products from their entire lifestyle diet

(e.g. wool, leather, soaps that contain animal

fats, products tested on animals etc.).

VT: Vegetarian

Pure Vegetarian (VT): Pure Vegetarians do

not eat meat, poultry, fish, seafood, milk,

dairy products or eggs. The diet comprises

vegetables, vegetable oils, cereals, legumes

(peas and beans), nuts, fruit and seeds. Honey

is usually seen as being optional. This diet is

not as “boring” as it sounds due to the wide

range of meat alternatives, non-dairy yogurts

and ice-creams, biscuits, chocolates etc.

Lacto and Ovo-Vegetarian (VT) Both Lacto-

Vegetarians and Ovo-Vegetarians do not

eat meat, poultry, fish or seafood. Lacto-

Vegetarians still consume milk and dairy

eggs (lacto - milk; ovo - eggs).

GF: Gluten Free

Gluten Free (GF): excludes foods containing

gluten. Gluten is a protein found in wheat

(including kamut and spelt), barley, rye, malts

and triticale. It is used as a food additive in the

form of a flavoring, stabilizing or thickening

agent, often as “dextrin”. A gluten-free diet

is the only medically accepted treatment for

celiac disease, the related condition dermatitis

herpetiformis, and wheat allergy.

RF: Raw Food

Consists of unprocessed vegan foods that have

not been heated above 115 degrees Fahrenheit

NO: No Oil

The concept of no oil cooking is part of the

protocol from Dr. Caldwell Essestyn’s diet for

treating and curing heart disease from a 100%

plant derived diet.

M: Macrobiotic

Includes unprocessed vegan foods, such as

whole grains, fruits and vegetables in specific

proportions, and allows the occasional consumption

of fish. Sugar and refined oils are

avoided. Perhaps the most unique qualifier of

the macrobiotic diet is its emphasis on the consumption

of Asian vegetables, such as daikon,

and sea vegetables, such as seaweed.

LG: Locally Grown

Foods that are grown within 100 to 200 miles

of where you live.

O: Organic

Organic Foods are for that are produced using

methods that do no involve modern synthetic

inputs such as synthetic pesticides and

chemical fertilizers Organic foods are also not

processed using irradiation, industrial solvents,

or chemical food additives.
