Brothers and founders, Glenn and Garrett Meyers, bring with them a legacy of over 20 years<br />

of airport restaurant experience. They are consummate foodies—embracing the organic,<br />

farm-to-table revolution that was pioneered in California. They first brought their locallycelebrated,<br />

artisanal pastas and pizzas to the airport world in 2000, and have subsequently<br />

opened and operated numerous successful locations in various high-volume and highprofile<br />

airports, including <strong>San</strong> Francisco International Airport and Oakland International<br />

Airport.<br />

Celebrity cookbook author and chef/owner Su-Mei Yu proudly features her authentic<br />

Thai food. Overwhelmingly popular in <strong>San</strong> <strong>Diego</strong> for her healthy, fresh seasonal fare,<br />

and reasonable prices, her quick service atmosphere will lend itself well to the airport<br />

environment. Saffron Thai recently celebrated its 25th anniversary in <strong>San</strong> <strong>Diego</strong>, a<br />

testament to the consistent quality and intense flavor of a menu specializing in one<br />

tasty entrée: saffron-marinated chicken prepared with traditional Thai methods.<br />

She creates her menu from her childhood memories of Bangkok street food, and<br />

travels back to Thailand every year to continue developing new ingredients and<br />

cooking techniques for her menu. With the successful opening of her second<br />

restaurant, she expanded into noodles and sauté, again focusing on fresh, seasonal<br />

ingredients. Many of these ingredients promote healthy lifestyle, as taught to Su-Mei<br />

by her elders in Thailand with emphasis on the healing abilities of food. Her<br />

knowledge and care will reduce the stress felt by many airline passengers. On sale<br />

will be her outstanding cookbooks, both of which successfully simplify Thai cuisine<br />

Stone Brewing Co.<br />

<strong>San</strong> <strong>Diego</strong> has become the epicenter of artisan craft breweries. Stone<br />

Brewing Co. is the recognized leader of this local artisan movement, creating<br />

The expansive beer tasting menu will include six annual beers, limited special<br />

Phil's BBQ<br />

Renowned <strong>San</strong> <strong>Diego</strong> BBQ pit master, Phil Pace presents his highly awarded<br />

grilled baby back ribs, beef ribs, chicken and sandwiches. <strong>San</strong> <strong>Diego</strong> Magazine<br />

has awarded Phil's BBQ the best BBQ in <strong>San</strong> <strong>Diego</strong> 10 years running. His<br />

masterful cooking process starts with his flavorful spice rub, adds basting sauce<br />

(both top secret recipes), and then gently smokes the ribs and chicken until they<br />

are fall-off-the-bone tender. His “magic” ovens impart intense smoked flavor<br />

favored by the ten thousand satisfied guests dining at his restaurant every week.<br />

More than a great cook, Phil works hard to create the “Phil’s Experience.” He<br />

playfully describes the experience as organized chaos. His loyal customers know<br />

better, as the staff is well trained and friendly, focusing on creating a positive<br />

experience for each individual guest. To help travelers enjoy their BBQ without<br />

worry the dining room will feature a washing station, allowing passengers to clean<br />

up before, during and after their meal without leaving their luggage or having to<br />

Bankers Hill Bar & Restaurant<br />

Talented local celebrity chef and James Beard award nominee Carl Schroeder<br />

(Market in Del Mar) continues his magic with his version of a hip bistro-style<br />

restaurant and bar. Carl describes the food as casual American, focusing on<br />

fresh, seasonal ingredients in creative flavor combinations that lead to continual<br />

lines out the door. The farm to table menu is affordable, with all entrée prices<br />

below $20. Carl again teams with business partner and Food Network star Terryl<br />

Gavre, creating a cool, comfortable, casual atmosphere. Gensler has re-created<br />

this popular space with warm woods and showcase lighting. Passengers can<br />

browse the extensive liquor list on iPads and place their order from anywhere<br />

within the room.<br />

The bar features specialty cocktails, as well as a vast selection single malt<br />

scotch, single barrel bourbon, and rare vintage tequila. For those with a sweet<br />

tooth, passengers will be best served not to forget about dessert, as pastry chef<br />

Rachel Going is gaining a large national following for her takes on traditional<br />

The Counter MINI<br />

Praised by celebrities and food critics, California-based The Counter MINI is<br />

the 21st century’s bold answer to the classic burger joint. Presenting a<br />

contemporary version of industrial décor, the Counter is successful as they<br />

focus on presenting one menu item (the burger) exceptionally well. Local<br />

celebrity and skate board icon Tony Hawk thought so much of The Counter, he<br />

The Counter grinds its own meat every day, utilizing certified humanely raised,<br />

natural grain-fed Angus beef. Turkey burgers, with a combination of white and<br />

dark meat, and veggie burgers offer additional healthy options. Buns are baked<br />

daily. Passengers will love the sweet potato fries as they build the ingredient list<br />

for their specialty burger. Clipboards present the toppings choices, with<br />

everyone’s favorites contained within the more than 40 ingredient options<br />

leading to a dizzying number of over 100,000 food combinations. Breakfast<br />

sandwiches and omelettes made with cage free eggs round out early morning<br />

choices.<br />

For those in a hurry, iPad order stations are conveniently placed on the counter<br />

so passengers can speed the ordering process in order to make their flight.<br />
