KMUTT Annual Research Abstracts 2005 characteristics of model liquids undergoing mixing in a novel in-line mixer, viz. an in-line impinging stream (IS) mixer. First, the mixer with one set of three inlet jets was used. Later two sets of inlet jets were used in order to increase the number of impingement zones and hence the mixing capability of the mixer. A statistical analysis was performed to indicate the best geometry of the mixer based on the data of both the mixing effectiveness and the pressure loss due to impingement of liquid streams. IJ-044 DRYING KINETICS AND QUALITY OF COCONUT DRIED IN A FLUIDIZED BED DRYER Chalida Niamnuy, Sakamon Devahastin Journal of Food Engineering, Vol. 66, No. 2, January 2005, pp. 267-271 An industrial-scale batch fluidized bed dryer was used to dry finely chopped coconut pieces. The effects of various operating parameters, i.e., the values and patterns of inlet air velocity and temperature, on the drying kinetics and some selected quality attributes of dried coconut viz. color and surface oil content were then examined. It was found that the color of the dried product was affected mostly by the inlet air temperature, while the quantity of surface oil was affected mostly by the inlet air velocity. The surface oil content of the product dried by any tested conditions was still higher than that of the reference sample, which is accepted by the market, however. IJ-045 EVALUATION OF THE EFFECTS OF SOME ADDITIVES AND pH ON SURFACE TENSION OF AQUEOUS SOLUTIONS USING A DROP-WEIGHT METHOD Jomsurang Permprasert, Sakamon Devahastin Journal of Food Engineering, Vol. 70, No. 2, September 2005, pp. 219-226 In the present study a simple dropweight method was used as a technique to measure the surface tension of various aqueous solutions. A newly modified version of the Harkins-Brown correction factor was proposed in order to improve the accuracy of the dropweight method. The applicability of this newly proposed correction factor was tested with various aqueous solutions, i.e., sucrose, NaCl as well as acetic acid solutions, and it was found 17 that the deviation between the calculated and standard values of surface tension of these solutions was less than 2.5%. The technique was then used to study the effects of selected additives and pH on the surface tension of aqueous solutions. The results showed that addition of hydrocolloids decreased the surface tension of the solutions to various extents while addition of tapioca starch did not affect the surface tension of the suspension. It was also found that the type of acid used to adjust the pH affected the surface tension of aqueous solutions differently although the pH of the solutions was equal. IJ-046 DRYING KINETICS AND QUALITY OF SOY RESIDUE (OKARA) DRIED IN A JET SPOUTED BED DRYER Sarat Wachiraphansakul, Sakamon Devahastin Drying Technology, Vol. 23, No. 6, pp. 1229- 1242 The objective of this study was to investigate experimentally the effects of various drying parameters, i.e., inlet air velocity, inlet air temperature, initial bed height and heating duration, on both the drying kinetics and various quality attributes of dried okara viz. percentage changes of the total protein content, color, urease index, as well as the specific energy consumption during drying in a jet spouted-bed dryer. It was observed that all drying conditions tested could reduce the amount of urease to an acceptable level and increasing the heating duration, air velocity, and hot air temperature led to a significantly higher rate of reduction of urease activity. The percentage change of the total protein content of okara undergoing different drying conditions was not significantly different, however. After drying, the redness of okara was the highest changing color index, but its absolute value was still much lower than those observed for the lightness and yellowness. Hence, dried okara appeared light-brown. The specific energy consumption of the process was found to be in the range of 3.69 to 5.89 MJ/kg evaporated water. IJ-047 DRYING METHODS AND QUALITY OF SHRIMP DRIED IN A JET-SPOUTED BED DRYER Rungtip Tapaneyasin, Sakamon Devahastin, Ampawan Tansakul International Journal

18 Journal of Food Process Engineering, Vol. 28, No. 1, February 2005, pp. 35-52 The objective of this study was to experimentally investigate the effects of various parameters, i.e., size of shrimp, level and pattern of inlet drying air temperature, on the drying kinetics and various quality attributes of dried shrimp viz. shrinkage, rehydration ability, texture and color during drying in a jet-spouted bed dryer. It was found that the use of a constant inlet air temperature of 100C yielded dried shrimp of the best quality in terms of low percentage of shrinkage, high percentage of rehydration, low maximum shear force and high value of redness compared to shrimp dried using other conditions. A simple mathematical model that enables prediction of the drying behavior of shrimp in a jet-spouted bed dryer has also been developed. IJ-048 DRYING KINETICS AND ß-CAROTENE DEGRADATION IN CARROT UNDERGOING DIFFERENT DRYING PROCESSES Peamsuk Suvarnakuta, Sakamon Devahastin, Arun S. Mujumdar Journal of Food Science, Vol. 70, No. 8, October 2005, pp. 520-526 Superheated steam drying, which is an airless drying technology, has recently received much attention as an alternative to conventional hot air drying, which is a relatively oxygen-rich drying process and causes much product quality degradation. However, because most food products are damaged when subjected to superheated steam at atmospheric or higher pressures, lowering the dryer operating pressure is preferred. In this study, the effects of a lowpressure superheated steam drying (LPSSD), vacuum drying, and hot air drying on the drying and degradation kinetics of ß-carotene in carrot were investigated experimentally. LPSSD and vacuum drying led to less degradation of ß- carotene in carrot than in the case of hot air drying. The empirical models, which can describe the experimental data of ß-carotene degradation in carrot undergoing different drying techniques, were also proposed. ß- Carotene degradation in carrot depended more on the carrot temperature than its moisture content in all cases. IJ-049 DRYING KINETICS AND INVERSION KMUTT Annual Research Abstracts 2005 TEMPERATURE IN A LOW-PRESSURE SUPERHEATED STEAM-DRYING SYSTEM Peamsuk Suvarnakuta, Sakamon Devahastin, Somchart Soponronnarit, Arun S. Mujumdar Industrial & Engineering Chemistry Research, Vol. 44, No. 6, 2005, pp. 1934-1941 The present study aimed at investigating the drying rates and inversion temperatures of model porous particles undergoing low-pressure superheated steam and vacuum drying. Molecular sieve beads, which were used as the model material in this work, were dried as a single layer in a low-pressure superheated steam dryer. The effects of steam temperature and pressure on the drying rates of these particles were determined. The same dryer was also operated in a vacuum mode to determine the effects of the above-mentioned operating parameters as well as the variation of the inversion temperature of the processes with the operating pressure. The differences between the values of the inversion temperature calculated only from the rates of drying in the constant rate period and those calculated from the whole drying period are pointed out and discussed. Page's equations and a single-term exponential equation were found to satisfactorily describe the kinetics of low-pressure superheated steamand vacuum-drying systems, respectively. IJ-050 A NUMERICAL INVESTIGATION OF SOME APPROACHES TO IMPROVE MIXING IN LAMINAR CONFINED IMPINGING STREAMS S.J. Wang, Sakamon Devahastin, Arun S. Mujumdar Applied Thermal Engineering, Vol. 25, No. 2-3, February 2005, pp. 253-269 The laminar flow in an in-line mixer based on opposing jet impingement was examined as a first step toward the development of a simple efficient in-line fluid mixer. Some new design approaches to improve mixing effectiveness under laminar conditions in twodimensional configurations were studied numerically for different operating conditions and geometric configurations. It was found that unequal inlet momenta of opposing jets obtained using both equal and unequal slot widths and the addition of baffles in the exit channel yield better mixing over shorter distances after impact.
