Preface 

This directory is the result of the diligent work of Shawn Campbell, a Kerr Center food policy intern. It is 

comprehensive and builds on the work of others such as Robert Waldrop of the Oklahoma 

Sustainability Network, the Oklahoma Department of Agriculture, Food, and Forestry, and others who 

are in close contact with growers across the state. We have made every effort to ensure the accuracy of 

the data, but in such a dynamic environment, we cannot guarantee every single listing. 

The purpose of this document is several-fold. First there is a demand for local food from public 

institutions and consumers-- perhaps greater than we realized. This demand needs to be satisfied or it 

will simply go away. Our experience tells us that satisfying this demand can be profitable for those who 

are willing to adjust their production and marketing programs. 

There are a number of farmers in our state willing and able to service some of that demand. This 

directory lists farmers, where they are located, and what they produce. Consumers and public institutions 

wanting to buy local may wish to contact farmers in their area. 

In this publication you will also find listings of schools that have expressed interest in buying local 

produce. Farmers and institutional food buyers need to understand each other’s needs in order to have viable 

long term success in putting local foods in our schools. 

It is quite gratifying to find that "local foods on local tables" can become a reality. Many people 

want to help farmers remain on their land, restore rural communities, help children to connect with their 

community, and enjoy the fresh taste and nutrition of home grown food. 

It is the mutual goal of Kerr Center and the Oklahoma Food Policy Council to begin developing a 

framework to link farmers with schools and consumers demanding local food. We hope to develop pilot 

projects to make this happen. We look forward to watching the Oklahoma economy grow, particularly in 

rural communities, through the increased use of locally grown foods and locally made, value added products.

Introduction 

The backbone of Oklahoma’s rich heritage has always been the family farm, but due to consolidation and 

depressed prices, today’s family farms are disappearing at an alarming rate. On October 16th, 2001, a group of 

Oklahomans charged by Oklahoma’s Commissioner of Agriculture set out to reverse the course of this epidemic. 

Citing an opportunity to benefit Oklahoma farmers by opening new markets, the Oklahoma Food Policy Council 

was formed. The council is a joint project of the Kerr Center for Sustainable Agriculture and the Oklahoma 

Department of Agriculture, Food, and Forestry. 

One of the council’s first actions was to conduct a survey of food service managers at 638 Oklahoma institutions: 

public schools, colleges and universities, vo-techs, state resorts, correctional facilities, and state hospitals. The survey 

polled managers about the foods they serve and whether they and their institution would consider buying locally 

grown food. Survey results indicated that 54.5% are interested at this time in connecting with local food producers. 

Of these, 77% were willing to share their names with area producers; one hundred twenty nine of these were 

schools. The survey and results are part of a new publication, The Oklahoma Farm-to-School Report 2003. 

With the survey completed, a project was begun to link local farmers in Oklahoma to local buyers. The goal was to 

develop both a database of state schools willing to purchase from local sellers and a database of agricultural producers 

who would like to sell to schools. This publication incorporates this information into a directory of producers and 

the crops that they grow, which may serve as a "buyers’ guide" for area schools. It also contains a directory of 

schools that indicated through the survey they might be interested in buying locally, and are willing to be contacted 

by farmers. It is believed that both schools and farms can benefit from the project; new markets will be opened up 

for farmers, while institutions will be able to quality, locally produced foods at competitive prices. 

The producer information in this directory was obtained from a number of sources: the Oklahoma Department 

of Agriculture’s Made-in-Oklahoma program, Robert Waldrop’s Oklahoma Foods website, the Oklahoma Food 

Cooperative Organizing Committee, Oklahoma Farmers’ Markets’ Alliance, Oklahoma State University Cooperative 

Extension Service (Tulsa County), and the Texas - Oklahoma Watermelon Association. 

We also received information from individual farmers’ markets and the directory includes lists of sellers at these 

markets: Collinsville, Jenks, McAlester, Muskogee, Norman, OSU – OKC, Tulsa-Cherry Street, and Shawnee. In 

addition we received information from individuals who read about the project in their local newspaper or on internet 

list serves such as the Oklahoma Sustainability Network and New Okie Pioneers. 

We would like to thank all of these sources for their cooperation and assistance. 

Before publication, we attempted to contact producers via mail or phone and gave them the opportunity to correct 

information or to choose not to be included in the directory. The information found in the directory is true and accurate 

to the best of our knowledge, but is subject to change without prior notice. We encourage independent verification. 

The directory is an ongoing project and will be online at the Kerr Center website www.kerrcenter.com. Updates

We are also assessing the feasibility of a farm-to-school pilot project in Oklahoma. To that end, we are gathering

How to Use this Directory 

FARMS 

This list of producers is organized by county, city, and farm. In addition, the list is divided into sections, 

such as a fruit, vegetable, grain, and nut farm section, and a meat, fish, egg, dairy, and honey farm 

section. 

The producer list includes the contact information for each farm in the directory, and the items 

grown (if this specific information was supplied). Farms are organized by county and town. 

An asterisk (*) denotes produce grown organically. Organic produce can also be found in a later 

section. A ∞ denotes farms with websites; addresses can be found in a following section. 

This directory does not claim to be complete; it is an ongoing project that will be updated from 

time to time. To be added to the directory, visit www.kerrcenter.com. 

CROPS 

This section provides a list of producers for each product grown, organized by county and town. 

The contact information for a particular farm can then be located in the farm list. A list tallying the 

number of farms growing different crops is also given. 

The harvest calendar in this section includes produce from each growing season in Oklahoma and 

the time of the year harvested. It is not an all-inclusive list of produce grown but is meant to be a good 

representation of a possible year-round production farm. The chart can be used by buyers to plan purchases. 

Not included in the calendar is meat, fish, dairy, or egg production; adding these items to a farm’s 

enterprises would provide income during the seasons with little produce. 

DIRECTORY OF INSTITUTIONS 

The directory of institutions lists institutions that have expressed an interest in buying local produce 

from farmers. We ask that institutions only be contacted by farmers in the area, and that they only be 

contacted once unless otherwise suggested by the institution. The institutions include public schools, 

colleges, correctional facilities, technology schools, and state resorts. The directory of institutions section 

is formatted the same way as the farm list, with county, city, school, and contact information. This format 

makes comparing an area’s farmers to schools interested in buying local, a simple task. 

DEMAND/SUPPLY 

There are two parts to the demand and supply section-- the first is a map of Oklahoma. This map 

contains two numbers for each county; the top number is the number of institutions that expressed 

interest in buying locally grown produce. The bottom number is the number of farms listed in the 

directory selling local produce. An "X" through a county denotes no known supply or demand. 

The second part of this section is a side-by-side list of counties grouped into geographic sections. 

On the left side is the number of institutions per county with an interest in buying locally. On the right 

side is the number of farmers per county listed in this directory. Subtotals are by geographic location. 

This section helps to give a visual idea of the areas of Oklahoma that have a strong demand and a 

correspondingly strong supply. The section also helps locate areas where more work should be done to 

find both more demand and supply.

Oklahoma Food Policy Council: FACT SHEET 

What is the Oklahoma Food Policy Council 

It is a group that advises the Oklahoma 

Commissioner of Agriculture on food policy. It is 

a joint project of the Kerr Center for Sustainable 

Agriculture and the Oklahoma Department of 

Agriculture, Food, and Forestry (ODAFF). The 

group meets periodically in Oklahoma City. 

What exactly is a food policy 

It is any decision made (or not made) by a 

government or institution, which shapes the type 

and cost of foods used or available, influences the 

opportunities for farmers and employees, or affects 

the food choices available to consumers. 

Do other states have food policy councils 

Such councils have been established in six states. 

The first was established in Iowa in 2001, with 

Drake University agricultural law professor Neil 

Hamilton as its chair. Since then, Hamilton and 

Drake have assisted in the creation of food policy 

councils in Connecticut, North Carolina, Utah, 

New Mexico, and Oklahoma. 

Who are the members of the Oklahoma Food Policy Council 

Fifteen Oklahomans representing diverse groups 

with an interest in Oklahoma’s food system make up 

the council. Current members represent farming and 

ranching, food processing, retail foods, education, 

and the media; as well as tribal, conservation, religious, 

and anti-hunger organizations. Key staff from 

the ODAFF and the Kerr Center assists members. 

When was it established 

The council was established on October 16, 

2001, by then Agriculture Commissioner Dennis 

Howard at the Kerr Center’s Bringing in the Sheaves 

symposium on hunger, farming and the fairness of the 

American food system. The council enjoys continuing 

support from the Commissioner/Secretary of 

Agriculture Terry Peach. 

Why was it established 

• To broaden the discussion of issues beyond 

simply agricultural production to a more 

comprehensive, food system-wide examination 

• To provide an opportunity for a focused 

examination of how state and local government 

actions shape the food system 

• To create a forum in which people involved 

in all different parts of the food system and 

government can meet to learn more about 

what each one does and to consider how their 

actions impact other parts of the system. 

• To improve nutrition and the provision of 

nutritional information throughout Oklahoma 

• To create an infrastructure within the food 

system which will better connect stakeholders 

such as food producers, consumers, communities, 

food processors, marketers, and government 

agencies, including those agencies which may 

also be consumers 

• To improve the economic status of Oklahomans 

involved in the food system by creating new 

opportunities, increasing profitability and 

ensuring that food dollars stay close to home 

through local processing, enhanced distribution, 

direct marketing,diversification of products, 

and distribution of information regarding 

presently under-utilized opportunities. 

What can a food policy council do that is not already 

being done somewhere is government 

• A food policy council can bring to the table a 

broader array of interest and voices, many of 

which are not typically asked to be involved 

when farm and agriculture policy is discussed. 

• A food policy council can examine issues– such 

as hunger in the state, the nutritional well 

being of citizens, and how to increase purchases 

of locally grown food– with fresh eyes. 

• An FPC can employ a more comprehensive 

approach to analyzing issues, which recognizes 

the interrelation between different parts of the

food system and the need to coordinate and 

integrate action if policy goals are to be achieved. 

What has the Oklahoma food policy council 

accomplished so far 

For its first project, the council examined the 

potential for increasing the amount of Oklahoma 

grown and/or processed foods purchased by public 

institutions in the state. A survey of institutional 

food service directors was devised and mailed to 

638 institutions in the following categories: public 

schools (85%), colleges and universities (5%), correctional 

centers and state hospitals (6%), technology centers 

(2%), and state resorts (1%). 

The ensuing report– The Oklahoma Farm-to- 

School Report contains a full analysis of the answers 

as well as an examination of the importance of 

increasing local consumption of locally produced 

foods. In addition, a Farm-to-School directory 

has been completed which contains information 

about Oklahoma food producers and what they 

grow, along with information about farmers 

markets, schools interested in buying locally, and 

a harvest calendar.

About Shawn Campbell 

Shawn Campbell was a summer 2003 intern at the Kerr Center for Sustainable Agriculture. He attends 

Oklahoma State University, majoring in Agribusiness. He plans to graduate from OSU with a Bachelors of Science 

in Agriculture Sciences and Natural Resources in May 2004. He plans to further pursue a graduate degree in 

Sustainable Agriculture. 

At Oklahoma State, he is a member of Phi Kappa Phi, Golden Key, Alpha Zeta, and National Society of 

Collegiate Scholars Honors Societies. He is also an active member of the Agricultural Economics club Aggie-X. 

Shawn has been interested in agriculture and rural communities all his life growing up on ranches both in
