THE PRODUCTS<br />

OF TRENTINO<br />

Firs and olives, larches and lemons, vast apple<br />

orchards and a huge garden of grapevines.<br />

This is <strong>Trentino</strong>, a varied and vibrant land of<br />

just over five hundred thousand hectares that<br />

descends gradually from high mountains<br />

almost down to sea level. A rich and thriving<br />

morphology featuring the Mediterranean<br />

climate of Lake Garda and a typically Alpine<br />

environment obviously offers an incredible<br />

variety of produce and raw materials. The<br />

succession of slopes and altitudes are the<br />

magical key to the intense and unparalleled<br />

flavours of not only wines and grappa, but also<br />

vegetables, apples and small fruits. The alpine<br />

countryside has jealously guarded the ancient<br />

custom of mountain grazing, so that we can<br />

still enjoy the incomparable taste of long or<br />

medium ripened cheeses that recall the green<br />

meadows and fresh air of the mountains and<br />

the manual skill of dairymen. Then there are the<br />

typical sausage meats of the area still made<br />

with recipes of hundreds of years ago, or the<br />

trout that have that special taste only the crystal<br />

clear waters of the mountain torrents can give<br />

them. Nature and man’s activities, tradition and<br />

innovation mingle in this land giving a variety of<br />

products of high quality. <strong>Trentino</strong> is like a book<br />

of tastes that unfolds with the gentle rhythm of<br />

its splendid landscapes.

GOLDEN DELICIOUS<br />

The most widespread variety in <strong>Trentino</strong> where<br />

this apple achieves its best quality. A goldenyellow,<br />

oval-shaped apple with a pink blush<br />

on the side exposed to the sun. It has a finegrained,<br />

juicy and very crisp flesh and a sugary<br />

and aromatic taste.<br />

The apple is perhaps the product by which<br />

the name of <strong>Trentino</strong> is best known. This fruit<br />

is mostly cultivated in Valle di Non and Valle<br />

di Sole, Valle dell’Adige, Upper Garda and<br />

Valsugana, areas favoured with sunny terraces<br />

and particular climatic conditions. <strong>Trentino</strong> is in<br />

fact the largest fruit plateau in Europe. In 2003<br />

Val di Non received the prestigious D.O.P. -<br />

Denomination of Protected Origin - recognition<br />

from the European Community, which confirms<br />

the quality of the territory and the apples<br />

produced in this area.<br />

Poor in sodium, rich in potassium and vitamins,<br />

the apple provides a quarter of the daily<br />

requirement of vitamin C. With only 12% of<br />

sugar it is also recommended for diabetics,<br />

whilst the presence of antioxidants helps to<br />

fight free radicals. Moreover, apples boast<br />

RENETTA CANADA<br />

The Renetta Canada apple is perhaps less<br />

inviting to the eye because it has a dumpy<br />

shape and a greenish russet colour, but it<br />

has made the name of Val di Non great. It is<br />

the favourite for cooking and makes excellent<br />

apple tarts, pies, flans, pancakes, baked apple<br />

and delicious apple strudel. It has a rich flavour<br />

and aroma that recalls the valleys of <strong>Trentino</strong>.<br />

RED DELICIOUS<br />

The classic red apple, unmistakable for its<br />

bright colour. It is a long-shaped dark red apple<br />

with five small knobs at the end opposite the<br />

stem and its skin is smooth and slightly waxy. It<br />

has a crunchy, fine-grained flesh and a slightly<br />

acid, fairly aromatic and sweet flavour.<br />

Other varieties grown: Granny Smith, which<br />

ripens in early autumn; Royal Gala, a decidedly<br />

early fruit, almost summer; Morgenduft,<br />

recognizable by its slightly flattened shape<br />

THE SMALL FRUITS<br />

Small in size, but great in taste. Strawberries,<br />

raspberries, blackberries, bilberries, currants that<br />

have always grown wild in the mountains here.<br />

The strawberries are cultivated chiefly in Val dei<br />

Mocheni, in Valsugana and on the Altopiano di<br />

Piné from an altitude of five hundred metres to<br />

over one thousand two hundred. The same can<br />

be said for the small wild strawberries, the most<br />

typical wood fruit: fragile and delicate, but strong<br />

in aroma and flavour. Throughout the summer<br />

a particular variety of raspberry, slightly long in<br />

shape and coloured deep red, grows up to an<br />

altitude of 1500 metres. Closely related to the<br />

raspberry is the shiny and very juicy blackberry.<br />

Bilberries ripen above one thousand metres,<br />

mainly in upper Val dei Mocheni and on the<br />

Lagorai mountain slopes. Currants grow in clusters<br />

and their flavour varies according to their colour:<br />

red, black or white. The small fruits are used in<br />

confectionary to make cakes and ‘semifreddo’,<br />

ice-cream and fruit salads, but they also combine<br />

well with the typical savoury dishes of this region.<br />

THE CHERRIES<br />

There are several varieties of cherries grown in<br />

Italy up to an altitude of one thousand metres<br />

in areas protected from the spring winds. In<br />

<strong>Trentino</strong>, chiefly in Valsugana, the traditional<br />

cherry is a sweet late variety that is harvested<br />

from June to early August.<br />

THE VEGETABLES<br />

Between Vallagarina and lower Valle del<br />

Sarca there is a natural oasis that is wellknown<br />

for its organically grown and integrated<br />

produce. It is Val di Gresta, also known as<br />

the “organic vegetable garden of <strong>Trentino</strong>”.<br />

The geographic location of this valley makes<br />

it particularly suitable for the cultivation of<br />

vegetables because the diversity and variety<br />

of the soil allows each species to be grown in<br />

the best place. The exposure to the sun and<br />

nearness of Lake Garda provides a favourable<br />

temperature and climate up to considerable<br />

Potatoes, cabbages, carrots, celeriac, leeks,<br />

cauliflowers, chicory, lettuces, French beans,<br />

onions, turnips: all organically safe products<br />

package. The motto of the Val di Gresta Fruit<br />

and Vegetable Cooperative is “cultivate without<br />

using poisons, nourish the fields with manure,<br />

because the quality of food depends on the<br />

sweet to intense and strong, depending on<br />

how long it is left to mature. It probably owes its<br />

name to the practice of pressing the cheese,<br />

or the numerous processes of skimming that<br />

VEZZENA<br />

By tradition the Vezzena cheese is produced on<br />

THE CURED MEATS<br />

In the past the diet of the peasants was<br />

deficient and lacked variety. Sausage meat<br />

was the only source of protein and animals fats.<br />

Sausages also satisfied the need to preserve<br />

meat for long periods. This is why every house<br />

in <strong>Trentino</strong> had a cellar or pantry, where the<br />

sausages could be left to mature, or a room<br />

where the meat could be smoked.<br />

CIUÌGA DEL BANALE<br />

This fresh sausage of mixed pork, beef and<br />

turnip is produced in the area of Banale from<br />

autumn to March. This product, a protected<br />

Slow Food, tells a story of hard times when<br />

families were extremely poor and they mixed<br />

the remains of meat with turnips to survive.<br />

MORTANDELA DELLA VAL DI NON<br />

This is homemade: pork meat is rolled into<br />

balls by hand and placed on wooden boards<br />

sprinkled with buckwheat flour. Then it is left<br />

to mature for two or three days before being<br />

cooked and eaten. The Val di Non mortandela<br />

can also be eaten raw after a maturing period<br />

of at least one month. This protected Slow Food<br />

is usually accompanied by polenta or boiled<br />

vegetables.<br />

TROUT AND CHAR<br />

Owing to the particular quality of its water<br />

<strong>Trentino</strong> is a symbol of Italian trout breeding,<br />

which began to spread in the second half of<br />

the nineteenth century.<br />

Here the fish is bred in the clean and well<br />

oxygenated waters of the springs that flow<br />

from the dolomite glaciers, in an ideal habitat<br />

that ensures quality and genuineness. In these<br />

fresh waters the trout take between eighteen<br />

and twenty-four months to grow to the best<br />

size; a slow growth that helps to improve its<br />

organoleptic properties.<br />

breeding and the adoption of a controlled<br />

feeding policy ensures the superior quality of<br />

our trout and mountain char. The use of shrimp<br />

flour and flour obtained from yeast produces a<br />

natural salmon colour.<br />

RAINBOW TROUT<br />

Trout, renowned for its lean and delicate flesh,<br />

rich in noble proteins and mineral salts and<br />

easily digestible, is considered a precious<br />

food in a balanced dietetic regime. It is much<br />

appreciated for the production of Omega 3,<br />

which is particularly indicated in the prevention<br />

in our region that it is an integral part of the<br />

<strong>Trentino</strong>, with a production of over seven<br />

million bottles (out of a total 18 million) is the<br />

undisputable leader (40%) of the national<br />

production of the classic spumante method.<br />

The grape that is mostly used (98%) to produce<br />

spumante is the Chardonnay which is chiefly<br />

cultivated in <strong>Trentino</strong>. Other grapes used are<br />

Pinot Noir and Pinot Blanc.<br />

The production area lies between 200 and 700<br />

metres a.s.l. on hillsides of mainly calcareous<br />

soil, where the grapes ripen slowly, but maintain<br />

their acidity. The climate is characterised by wide<br />

ranges of temperature, favourable for wines,<br />

spumante, in 1990, became TRENTO D.O.C.,<br />

the first controlled denomination of origin<br />

Owing to its excellent quality the Marzemino<br />

grape occupies a prominent place in the<br />

panorama of <strong>Trentino</strong> wine producing. The<br />

origins of the vine is lost in the mists of time:<br />

some say it derives from a plant that gave the<br />

ancients nutriment and refreshment. Others<br />

call it “vitis veneto longobardica” presuming<br />

it was known and cultivated by the Veneto<br />

vine came from Marzimin, a village in Carinthia,<br />

In the field of <strong>Trentino</strong> oenology the red Teroldego<br />

wine has always had p<strong>rid</strong>e of place. The<br />

wine is famed for its particular organoleptic<br />

characteristics that make it the ‘prince of wines’<br />

of <strong>Trentino</strong>.<br />

Teroldego Rotaliano was first mentioned in<br />

the literature towards the mid-16th century in<br />

a disquisition on wine by Michelangelo Mariani,<br />

the historian of the Council of Trent, who, in<br />

his book on Trento, “with the Holy Council and<br />

other Notables”, describes the Teroldego wines<br />

as “mute wines that make you speak”.<br />

Tradition and careful cultivation and winemaking<br />

undisputable quality of this wine that, in 1971,<br />

interrupted only by the course of the river Noce.<br />

When young the wine has a delicate perfume<br />

and an unmistakable fruity fragrance of<br />

Dark ruby red in colour, at times tending to<br />

purplish-blue, it has a full and continuous finish<br />

with balanced tannins on the palate. The taste<br />

is dry, intense and full-bodied.<br />

When young it goes well with cheese soufflé and<br />

in between dishes. When aged it is excellent<br />

with roasted red meat, game and seasoned<br />

cheese. If the wine is young it is served at a<br />

temperature of 16-18°C, when aged at 18-<br />

20°C.<br />

TRENTINO GRAPPA<br />

Closely connected with the wine-making sector<br />

is the production of <strong>Trentino</strong> Grappa, an ancient<br />

<strong>Trentino</strong> tradition. The strong point of this distillate<br />

of marcs is the high quality obtained by a careful<br />

selection of the raw material and subsequent<br />

excellent conservation, the use of a particular<br />

distillation system - the ‘Tullio Zadra’ bain-marie<br />

discontinuous method - and last but not least, the<br />

technical experience of the distillers. In 2004 over<br />

180 thousand quintals of marcs were distilled in<br />

<strong>Trentino</strong>, which produced more than two and a half<br />
