<strong>SAGA</strong> <strong>Cooking</strong> Paper is ideal <strong>for</strong> any cooking from freezing to heating. The greaseproof, non-stick coating<br />

prevents sticking <strong>and</strong> crusting on a <strong>baking</strong> or GN tray. The cooking paper is also steam- <strong>and</strong> boil-proof <strong>and</strong><br />

Aubergine <strong>and</strong> Tomato Gratin<br />

with Goat’s Cheese<br />

Ingredients <strong>for</strong> 4 portions<br />

2 aubergines<br />

6 tomatoes<br />

1 red onion<br />

200 g goat’s cheese<br />

fresh basil leaves<br />

salt<br />

black pepper<br />

<strong>SAGA</strong> <strong>Cooking</strong> Paper (approx. 30 x 40 cm)<br />

Slice <strong>the</strong> aubergines, tomatoes <strong>and</strong> red onion.<br />

Break (or cut) <strong>the</strong> goat’s cheese into small pieces.<br />

Dry fry <strong>the</strong> aubergines in a frying pan on each side until<br />

golden brown. Prepare 4 <strong>SAGA</strong> boats (see page 12).<br />

Stack <strong>the</strong> aubergine, tomato, red onion slices <strong>and</strong> basil<br />

leaves alternately in <strong>the</strong> boats (just like stacking books<br />

on a shelf) <strong>and</strong> season with salt <strong>and</strong> black pepper every<br />

now <strong>and</strong> <strong>the</strong>n.<br />

Sprinkle <strong>the</strong> goat’s cheese on top <strong>and</strong> bake at 200°C<br />

in <strong>the</strong> fan oven (220°C in <strong>the</strong> conventional oven) until<br />

<strong>the</strong> cheese is golden brown.<br />

TOP TIP: By using <strong>SAGA</strong> pouches, packages <strong>and</strong> boats,<br />

you can cater to individual tastes by leaving out or<br />

adding more ingredients.<br />

Salmon Fillet with Tomato<br />

Ingredients <strong>for</strong> 16 portions<br />

16 salmon fillets à 150 g (skinned)<br />

8 slices of fine white bread or toast<br />

400 g dried tomatoes<br />

200 ml olive oil<br />

fresh tarragon to taste<br />

salt<br />

ground white pepper<br />

<strong>SAGA</strong> <strong>Cooking</strong> Paper <strong>for</strong> GN trays<br />

Cover a GN tray with <strong>SAGA</strong> <strong>Cooking</strong> Paper. Wash <strong>the</strong><br />

salmon fillets briefly under running water <strong>and</strong> dab dry.<br />

Lay on <strong>the</strong> cooking paper <strong>and</strong> season with salt<br />

<strong>and</strong> pepper.<br />

Soak <strong>the</strong> dried tomatoes in tepid water or steam,<br />

as required, <strong>the</strong>n gently express. Process <strong>the</strong> oil,<br />

bread <strong>and</strong> tarragon in a mixer to <strong>for</strong>m a smooth mixture.<br />

Spread <strong>the</strong> tomato mixture evenly over <strong>the</strong> salmon fillets.<br />

Cook in <strong>the</strong> fan oven at 180°C (200°C in <strong>the</strong> conventional<br />

oven) <strong>for</strong> approx. 8 minutes.<br />
