Quinoa Salad with Black Beans<br />
Quinoa is packed with protein and fiber; gluten-free, cholesterol-free<br />
Ingredients<br />
1 cup quinoa, dry<br />
1 can black beans, rinsed and drained<br />
1 small box of sweet cherry tomatoes,<br />
diced in half<br />
1 bunch green onions, chopped<br />
1/4 cup fresh cilantro, chopped<br />
1/4 cup flat leaf parsley, chopped<br />
1 lemon<br />
1 lime<br />
extra virgin olive oil<br />
sea salt and pepper to taste<br />
Ingredients<br />

1 cup quick oats<br />
1/2 cup raw almond butter<br />
1 Tbsp. coconut oil<br />
1 Tbsp. raw honey<br />
1 Tbsp. chia seeds<br />
1 Tbsp. pumpkin seeds<br />
1 Tbsp. sunflower seeds<br />
Directions<br />
Directions<br />
Prepare 1 cup dry quinoa<br />
according to package directions.<br />
Place cooked quinoa in a<br />
large bowl and add the black beans,<br />
tomatoes, green onion, cilantro and<br />
parsley. Squeeze the juice of 1<br />
lemon and 1 lime in the bowl. Pour<br />
in olive oil to coat ingredients or<br />
until your desired amount. Add sea<br />
salt and pepper to taste and mix all<br />
together. Serve alone or with pita<br />
and hummus.<br />
1. Mix oats with almond butter<br />
first, then add coconut oil and<br />
honey. Afterwards, toss in all<br />
the seeds.<br />
2. Mix until thoroughly<br />
combined. Add some more<br />
oats if mixture feels too wet.<br />
3. Spoon out a tablespoon worth<br />
and shape into a ball with clean<br />
hands. Repeat.<br />
4. Place on a plate and put in the<br />
fridge to “set” for 30 minutes.<br />

Accounting Mgr, has been<br />
assigned additional responsibilities<br />
and has not only embraced<br />
them but exceeded expectations<br />
in her ability to take our department<br />
to the next level. In addition<br />
to her new responsibilities,<br />
Heather has developed and<br />
trained two new Staff Accountants,<br />
refined many of our internal<br />
processes, and has strengthened<br />
relationships with operations.<br />
Heather demonstrates all of the<br />
six core values in her every day<br />
activities and we strongly believe<br />
she should be recognized for<br />
her efforts as a key asset to the<br />
finance department and the<br />
<strong>Desert</strong> <strong>Mountain</strong> team.<br />
