The décor reflects the ancient Ethiopian culture, which makes an exotic yet comfortable, homey atmosphere. MENU HIGHLIGHTS Dining at T.G.’S Addis Ababa Restaurant is characterized by the ritual of breaking injera (traditional yeast-risen flatbread, spongy in texture, crèpe-like in appearance, with sourdough tanginess) and sharing food from a communal platter, strengthening bonds of loyalty and friendship. Despite its reputation for being blistering-hot, truly authentic Ethiopian cuisine is characterized by a blending of flavours in order to produce a harmony of ingredients. T.G. is a skillful chef and her signature dishes from the repertoire of Ethiopian cookery comprises variations of sweet, bitter, sour, salty, hot and fragrant. She has developed a large variety of vegetarian and vegan dishes, with a wide range of deliciously spiced preparations and beautifully balanced flavours, based on lentils, split peas, chickpeas and other pulses. These flavour contrasts are the hallmark of T.G.’s cooking. Meat dishes fall mostly into two distinct categories: red stews (wat), which include berbere, and green stews (alicha wat), which do not. Wats are prepared with a generous amount of sautéed chopped onions, fried without oil, which gives them the distinct taste central to Ethiopian cuisine. T.G.’s menu includes several types of meat dishes, such as zilzel tibbs, strips of beef sautéed with green onion and spices. Ethiopian cuisine does not include pork. Recommendations include: • Dulet Kitfo — freshly minced, very lean beef, mixed and cooked with butter, onion, jalapeno pepper, and a special addis spice. • Quanta Ferfer is marinated grilled beef, with onion, tomato and a spicy sauce mixed with injera. • Defen Misr, green lentils cooked with traditional seasoning, onion and curry, is one of the most popular vegetarian choices.
