This being the report for the court<br />

of Caleb Reynolds, Baron of the Rhydderich<br />

Hael at Baronial Twelfth Night, January 4th<br />

2011, A.S. 45. Lady Elizabeth Law Robertson<br />

reporting.<br />

Lady Muirgel Ingen Ghiolla Chomghaill and<br />

Lord Stephan Calvert deGrey were<br />

called forward to formally transfer the office<br />

of Seneshal from Muirgel to Calvert.<br />

Muirgel was thanked for her service.<br />

Lord Stephan Calvert deGrey was immediately<br />

recalled into His Excellency's presence<br />

to bring forth an old scroll for another citizen<br />

of the Barony which was in his possession.<br />

He produced the scroll, which was indeed<br />

quite old, however the person for whom it was<br />

intended was not present.<br />

Rhiannon Elandris was summoned to finally<br />

receive the scroll she had been awarded for<br />

winning the Baronial haiku contest at Summer's<br />

End. Scroll illuminated by Baron Caleb,<br />

and calligraphed by Lady Murigel.<br />

Baroness Kateryne of Bakestondone was<br />

brought forward and told that many had<br />

spoken of her creative talents. She was then<br />

inducted into the Order of the Golden Bee<br />

and presented with a scroll (illumination by<br />

Sir Sextus Plinius Callidus).<br />

His Excellency announced that Barony meeting<br />

would commence after court.<br />

There being no further business, His Excellency's<br />

court was closed.<br />

The Festival of the Passing<br />

of the Ice Dragon<br />

Greetings to one and all from Augusto Giuseppe<br />

da San Donato and all of the Rhydderich Hael.<br />

I have once again been honored with the ability to<br />

autocrat The Festival for the Passing of the Ice<br />

Dragon in the spring of 2011. The actual date is<br />

March 26th 2011 and it will be held at the Connecticut<br />

Street Armory, 187 Connecticut St. Buffalo,<br />

NY 14201, the same location as last year.<br />

We are making, what we hope, to be some great<br />

changes in the layout and overall structure of this<br />

year’s event. All of your comments have been read,<br />

logged, and charted so that this year’s staff knows<br />

precisely what is desired by their department.<br />

The tavern is getting a long overdue face lift by Her<br />

Ladyship Ysabeau Tiercelin, The merchants’ row is<br />

under the direction of Lady Murigel Ingen Ghoilla<br />

Chomhgail, the Pentathlon is under the guidance of<br />

Maitresse Yvianne de Castel d'Avignon and is<br />

looking to be one of the best ever.<br />

These are just a few of the officers of Ice Dragon, if<br />

you wish to know more of the changes and plans of<br />

the rest of the staff including the skinny on the<br />

tournaments look to the Æstel. Each month there<br />

will be an article or two from each officer describing<br />

why you should not miss this year’s Festival for the<br />

Passing of the Ice dragon.<br />

chance to fight people you only see at Pennsic<br />

and a few rare events.<br />

From The A&S Mistress<br />

Report by Alicia Hennenberg<br />

Greetings and thank you for the opportunity to serve you as A&S<br />

Minister. I do not yet have a drop dead but I am looking for 1 or 2.<br />

Many hands make light work<br />

Ice Dragon will soon be here, be sure to stop in and see the many<br />

and varied works of the artisans of out kingdom at the pent. If you've<br />

entered something (Viviant) make sure to see Isolde for details about<br />

registering your entry with the A&S 50 challenge. She will be giving<br />

away a stupendously spiffy gift to the lucky winner. Ice Dragon also<br />

keeps our scribes busy this time of year. They are furiously finishing<br />

fabulous scrolls for all the pent winners. Have you hugged a scribe<br />

today? IF not,why not?<br />

Spring is not far off and soon our events will move outdoors. Pennsic<br />

will be a large event, and there are some new people in our<br />

group. In conjunction with our chatelaine I would like to organize an<br />

A&S day situated around preparing for outdoor events. If you are<br />

interested in teaching a class or would like to see a class taught<br />

please contact me. I will have more details next month Hopefully<br />

thinking warm thoughts will expedite winters demise.<br />

We have a rich and varied A&S community from the subtleties of<br />

food, the ornamentation of paper, the finery of clothes the Joy of<br />

music and dance, to the fine science of flinging rocks. I look forward<br />

to working with them all. Seek them out and learn something new<br />

Remembering Durlome Rakesh d'Mithnan called Dwarf<br />

Back in the early times, when we were all much<br />

younger and the world was a brighter place,<br />

there lived a man named Durlome Rakesh<br />

d'Mithnan. Son of Hannibal of the<br />

Rhydderich Hael and a high-born Castilian<br />

lady, grandson of Morgan Argante Elandris;<br />

Durlome, known as Dwarf, was the sworn man<br />

of Morgan Elandris to the end.<br />

Through the years, he took part in raids on the<br />

Midrealm and traveled far through all the<br />

lands that were once the East Kingdom. He<br />

was one of the original Rhinos of the Elandris<br />

Shieldwall, protecting the pole-arms-men and<br />

shield-men. The sheer mass of the men of the<br />

Shieldwall was calculated to press the enemy,<br />

and in many battles Elandris was seen leading<br />

charges to break through the enemy lines. With<br />

Mthumbal, Hak, Stor Dodlig and others, the<br />

Rhinos’ fierce reputation was feared throughout<br />

the Known World.<br />

Dwarf was a soldier. His preferred weapons<br />

form was sword and shield, though he did delight<br />

in large heavy maces and mass weapons<br />

he referred to as ‘weapons of mass destruction’<br />

long before the term acquired other connotations.<br />

He concentrated on melees and the arts<br />

of war, not the arts of the tournament. His<br />

task was to make the spears and pole-arms<br />

more effective. His driving purpose was to protect<br />

his Baroness. His lifeblood was his loyalty<br />

and that loyalty defined his friendships<br />

and his life in the Society.<br />

In a more modern parlance, Dwarf - as Greg<br />

Tamutis was known to his many friends - was<br />

a sturdy pier upon which the Rhydderich<br />

Hael, Shire and Barony, was built and his influence<br />

lasts to this day.<br />

Dwarf joined the Society in Fredonia when<br />

the Rhydderich Hael was centered there. He<br />

had graduated from the college and was working<br />

there when he got involved with the organization.<br />

Ever thinking of others, he sold his small car<br />

and bought an Impala – the better to transport<br />

the members of the fledgling group to New<br />

York City, Toronto, Philadelphia, New England<br />

and beyond; exposing the members of<br />

what was a very isolated group from the far<br />

Western Marches - what is the now the Kingdom<br />

of AEthelmearc - to the major characters<br />

and movements that were shaping the Society<br />

of that time. And to give you a better idea of<br />

just how different life in the SCA was then,<br />

the Impala held six people and all their SCA<br />

stuff for the weekend. It was a smaller world<br />

then in many ways.<br />

He met the Lady who was to be his wife,<br />

Catalina de la Estrella, at Ice Dragon 2. As<br />

she fondly recalls, “I scritched him and he followed<br />

me home – what was I supposed to do?”<br />

Their loving relationship produced a son,<br />

Morgan, named both for Greg and Kathy’s<br />

dear friend Morgan Elandris, and lasted from<br />

that day to January 26, 2011, the day he passed<br />

away.<br />

With his wife, Dwarf continued to contribute<br />

to the local group, the Kingdom, and the Society.<br />

He acquired equipment that was needed<br />

and was a behind-the-scenes work horse for<br />

many years. He welcomed people into his<br />

home to assist them in working on behalf of<br />

the Barony. Looking through the Baronial history,<br />

you can still see old Ice Dragon newsletters<br />

and Domesdays marked ‘Dwarvin<br />

Press’; where the Henschel sisters, Kunegunda<br />

and Roswitha, then Ice Dragon editors,<br />

playfully gave credit for the use of Dwarf’s<br />

mimeograph machine. Kunegunda has since<br />

gone on to be a successful writer for the Buffalo<br />

News. Dwarf and Kat also hosted one of<br />

the first meeting places of the Rhydderich<br />

Hael choir and recorder ensemble led by<br />

Arianna of Wynthrope.<br />

Kat and Dwarf made the first Baronial Pavilion,<br />

a brown and gold 15 foot tall at the center,<br />

19 foot diameter round tent, in their 8 X 50<br />

foot trailer home. That tent, one of the first of<br />

the movement toward more historically accurate<br />

tents at Pennsic, served as a meeting<br />

place for the Barony and saw many meetings<br />

of the War Council of the East when Morgan<br />

Elandris was War Leader.<br />

Our Dwarf, as with many dwarves, was<br />

known for his facility with tools and fire. At<br />

the Pennsic that featured Hurricane Danny as<br />

an unwelcome guest, Dwarf’s fire was one of<br />

the few in the entire encampment that would<br />

stay lit. It did alarm the autocrat a bit as the<br />

wind caused the flames to stream 8 to10 feet<br />

or more to the side of the fire pit. The brown<br />

and gold pavilion was noted as one of the very<br />

few tents that did not drop in the storm: courtesy<br />

of Dwarf-manufacture and technology.<br />

Dwarf enjoyed the softer side of Society life.<br />

In his intermittent forays into Mongol culture<br />

he happily encouraged the art of belly dancing.<br />

He also cultivated an appreciation of the<br />

cooking and brewing arts, most notably where<br />

the two met in happy harmony in raisins in<br />

the bottom of the Glugg pot. While cleaning<br />

in the kitchen after an event, Dwarf and<br />

James O’Neill did the sensible thing and ate<br />

all the left –over Glugg-soaked raisins, not realizing<br />

they were quite high-test, and the two<br />

were found later in the evening with Dwarf<br />

attempting to put himself through the automatic<br />

dishwasher and James tucked into a corner<br />

singing ‘Lily Marlene’ into a Spangen<br />

Helm because he liked the sound of the echo.<br />

His friends will fondly recall his broadreaching<br />

curiosity and willingness to experiment.<br />

A number of old Society helmets can<br />

attest to his work with James O’Neill to determine<br />

the effect of real weapons on armor, as<br />

can a junk vehicle one of the crew was going<br />

to have hauled away. It is amazing the damage<br />

a Pike-maul can do to a Chevette.<br />

In the later days of the Barony, around about<br />

A.S. XX, Dwarf worked with James O’Neill<br />

and Roderick of Basing to establish the Frieland<br />

Legion – the East Kingdom Artillery –<br />

under the patronage of Morguhn Sheridan,<br />

then King of the East. In addition to assisting<br />

with the building of the guns, he helped establish<br />

the routines and safety practices used<br />

when acting as signal corps for the Pennsic<br />

battle staff. There are several photos of him<br />

commanding one of the cannon crews at field<br />

and woods battles. His son had an interesting<br />

childhood explaining to his teachers and<br />

classmates that he really DID have a cannon<br />

in his backyard.<br />

Around A.S. XV, Kat and Dwarf stepped<br />

back from the Society to concentrate on raising<br />

their son though they kept in touch with<br />

their many friends, eventually moving to the<br />

Canton of Beau Fleuve where Kat still lives.<br />

Many old friends continued to game regularly<br />

with Dwarf. He was also active in other<br />

groups including Klingon Fandom.<br />

Dwarf was a good man with a wicked sense of<br />

humor and an abiding love for and allegiance<br />

to his friends. He could be called on and<br />

counted on in the Society and outside of it.<br />

His work enabled the progress of others in the<br />

Society, including Master James O’Neill,<br />

Baroness Morgan Elandris, Mistress Arianna<br />

of Wynthrope, Duke Sir Morguhn Sheridan<br />

and Sir Andreas Hak. He influenced the people<br />

who built the Society we have today.<br />

He was a good friend and I will miss him<br />

fiercely.<br />

Mistress Cori Ghora, OP, OL<br />

I first met Dwarf in the fall of 1978, I believe. I<br />

was a student at SUNY Fredonia, and I think<br />

he was a computer programmer in the college's<br />

IT Dept. He became one of the core members<br />

of the then *Shire* of the Rhydderich Hael. We<br />

all played D&D together regularly, and of<br />

course went to SCA events. Dwarf was kind<br />

of quiet and shy but had a fun sense of humor<br />

and was always willing to lend a hand when<br />

asked. I remember one particular event for<br />

which one of our members had made several<br />

gallons of an alcoholic beverage called<br />

"Glog" (except the "o" should have an umlaut<br />

over it, I think - it's pronounced sort of like the<br />

o's "book"). Glog was made by steeping raisins<br />

in red wine mixed with something stronger -<br />

vodka, maybe? Anyway, it was very sweet, and<br />

a lot of us got a little more inebriated than we<br />

expected on the stuff. Dwarf was on kitchen<br />

cleanup duty for the event, called the "Feast of<br />

Good Friends." Anyway, the cleanup crew were<br />

all a little merrier than usual due to the glog,<br />

and at one point Dwarf got up on the conveyor<br />

belt that sent the dish racks through the site's<br />

industrial dishwasher and ended up sliding on<br />

through. Fortunately, no one tried to turn the<br />

water on and he was no worse for wear coming<br />

out than he was going in. We were a lot sillier<br />

in those days, I think. One of our bywords for<br />

years after that event was "Watch out for the<br />

raisins!" meaning the raisins in the glog, which<br />

soaked up the alcohol to an amazing extent.<br />

Dwarf and Kat also hosted the very first rehearsals<br />

of the Rhydderich Hael Singers in<br />

their home for several years in the 1980s. Dwarf<br />

wasn't a singer but he was gracious about allowing<br />

us to invade their home every week.<br />

Dwarf was a man of sometimes surprising talents.<br />

Once I went to his and Kat's home for<br />

choir rehearsal and commented on their new<br />

red velvet sofa. Not so, I was informed - it<br />

was their old sofa, reupholstered by Dwarf. I<br />

hadn't known he was so handy until then.<br />

I am very sad to hear of Dwarf's passing, and<br />

wish to offer my condolences to his friends<br />

and family.”<br />

I don't remember the first time I met Dwarf. I<br />

do remember that he became an instant<br />

"Uncle". Although he was one of the famous<br />

Rhinos of the Elandris shieldwall, the phrase<br />

gentle giant truly applied to him.<br />

There weren't many other kids around when I<br />

joined the SCA and not everyone knew what<br />

to do with me or how to interact. Dwarf was<br />

always at ease, quick to give a hug or listen to<br />

my excited chatter.<br />

I lost touch with him and his wife Kat as I<br />

grew up and moved away, but I will always<br />

hold fond memories of him in my heart.<br />

I hopped a ride to Pennsic with Dwarf a few<br />

years ago. All right, maybe it wasn’t a few<br />

years ago. Maybe it was 1979. My first<br />

Pennsic. And Dwarf had a VW minibus of<br />

the classic orange and ivory coloring. I wouldn’t<br />

have attended the event without a willing<br />

ride, and that event changed everything. I<br />

abruptly stopped attending classes at Fredonia<br />

State, and started attending the more important<br />

classes of the SCA. Soon enough I<br />

had flunked out of Fredonia, and graduated in<br />

the SCA. But the two remained connected.<br />

You see, in those days, the Rhydderich Hael<br />

was located in Fredonia. Buffalo was the<br />

Shire of Beau Fleuve. And our weekly barony<br />

meetings were held on the Fredonia State<br />

campus, in Fenton Hall, on the first floor in a<br />

room to the left of the main entrance. Forgive<br />

me if I no longer remember the room number.<br />

Every week we would have a brief meeting<br />

which included connecting drivers and riders,<br />

and a preview of all upcoming events within<br />

reasonable commuting distance. Afterwards<br />

might be a dance practice, an arts & sciences<br />

workshop, or other activity. On more than a<br />

few occasions what followed was Dwarf and<br />

me having long sessions of trying to top each<br />

other with punning shaggy dog stories.<br />

Dwarf had an inexhaustible supply of these<br />

stories, and the challenge was to try to pull at<br />

least a few of them into the realm of the middle<br />

ages, or at least the SCA. It didn’t seem<br />

any stretch to ride to Pennsic VIII with<br />

Dwarf and Kat (his girlfriend, and future<br />

wife); though I believe I rode to about only<br />

four events total with them. It was a pleasure<br />

to travel with them, although they were definitely<br />

more refined than I was in those days.<br />

After the weekly meeting and activity, most of<br />

us would repair to Pizza Hut where the manager<br />

allowed us all to partake of the “Family<br />

Special” which consisted of a 49 cent all you<br />

can eat salad bar with the purchase of any<br />

large pizza. The dozen of us could always afford<br />

at least one large pizza. Dwarf didn’t often<br />

join us at Pizza Hut, and didn’t always<br />

make it down from West Seneca to Fredonia,<br />

but he and Kat made it often enough to be an<br />

essential part of the landscape. And sooner<br />

rather than later, most of the people from Fredonia<br />

moved northward to Buffalo. During<br />

that time period I was Baronial Chronicler,<br />

and Dwarf was a patron of the office contributing<br />

sponsoring money to an issue or two,<br />

and at least a time or two, contributing an article.<br />

At that point Dwarf and I also intersected<br />

regularly in D&D groups, and at the steadily<br />

increasing number of local and nearby events.<br />

While Dwarf had a special talent for muttering<br />

vile curses under in breath, he did so in<br />

dwarvish so as not offend young ears. And<br />

that makes an important point, although<br />

Dwarf was a fighter and a hardy soul, he was<br />

also a gentle man with a weakness for some<br />

children. I remember an Ice Dragon at Buffalo<br />

State College where Dwarf was the major entertainment<br />

of the minors.<br />

When it came to fighting, Dwarf was one of<br />

the Four Rhinos of the Apocalypse, a shield<br />

wall consisting of Stor Dodlig (sp?) who was<br />

Dwarf’s mundane brother, Barak Elandris<br />

Muthumbal, and me in my alternate persona<br />

as Barak Elandris Bostar. At Pennsic IX we<br />

made a difference in the field and woods battles.<br />

Dwarf and I were both on the Eastern<br />

team in the first ever Unbelted Champions<br />

Battle that year, 20 men to a side. We were<br />

part of a shield wall with Barak Elandris<br />

Mago and Barak Elandris Linnaeus, and Morgan<br />

Elandris behind us fighting spear. The<br />

East won the battle dominantly.<br />

Dwarf was also active in broadening SCA<br />

combat. One of his pet projects was to create a<br />

list legal flail, but he was ahead of his time.<br />

Given the primitive state of armor at the time<br />

he was never able to convince the marshalls<br />

that his flail was safe, but in today’s list I<br />

think there would be no question. His creation<br />

had a stout shaft and three balls that were not<br />

unlike the duct-taped rolls of toilet paper that<br />

would make list-legal boulders in a later era.<br />

The balls were attached serially by rope.<br />

Dwarf’s creativity came out in various ways,<br />

the shaggy dog stories, the articles, D&D, the<br />

flail. It also came out in his syntax and grammar.<br />

He had ways of inverting sentences that<br />

made Yoda envious. And he moved accents<br />

and emphasis to unexpected places in sentences.<br />

The result is that one I start remembering<br />

the unusual way in which he spoke, I can often<br />

remember whole stories and conversations<br />

from thirty years ago. What a wonderful gift<br />

that is for me. Thank you.<br />

As years passed, we moved in different directions,<br />

Dwarf into different kinds of reenactment;<br />

me applying the lessons of the SCA in<br />

never ending turns as a college student and professor.<br />

I always thought fondly of Dwarf, and<br />

through the years there were always threats to<br />

rekindle our old D&D group. But that never<br />

happened. The last time I saw Dwarf was late<br />

summer of 1997 when I stopped at his house for<br />

a pleasant hour. It seems that almost all my<br />

memories of Dwarf were pleasant hours.<br />

Greg. I haven’t called him “Greg” since the<br />

late 70’s. I was a penniless college student at<br />

Fredonia and he was on staff as a computer programmer.<br />

I took a part time job as the evening<br />

mainframe babysitter and occasional programmer<br />

so Greg and I saw each other almost every<br />

weekday for about a year. He taught me much<br />

about reducing stress by facing work with a<br />

good attitude, though I didn’t realize it at the<br />

time. I remember his evil grin as he ate onion<br />

sandwiches at lunch, that is, two slabs of onion<br />

separated by a thin layer of mustard. Maybe<br />

that’s the real secret to dealing with workplace<br />

idiocy. He was my first professional reference<br />

and helped launch my career.<br />

Greg was smart and funny, with a wicked<br />

streak. It was always good to talk with him. I<br />

remember him telling me about his days in the<br />

military. I remember telling him about this<br />

weird group of people that my girlfriend and I<br />

stumbled across on campus. Before long we<br />

had all joined them in garb and armor. He was<br />

a kind and gentle man who took such a perverse<br />

glee out of hitting people with sticks.<br />

We started playing D&D. He was a fun Dungeon<br />

Master who enjoyed seeing what the<br />

players could come up with when presented<br />

with “creative” situations. He played characters<br />

very well, especially the evil ones. They<br />

were so at odds with his easy going nature that<br />

they always took you by surprise. I remember<br />

DMing. He paid close attention to the game,<br />

even while Ruth and Kat were crafting and<br />

chatting away beside him. Look, it’s Halley’s<br />

Comet! Even after we were both inactive in<br />

the SCA and long removed from Fredonia we<br />

still met regularly to play D&D.<br />

Until I moved to Virginia in January 1996.<br />

Over time I have lost contact with almost<br />

everyone from that time and place in my life,<br />

much to my regret. Dwarf is a bright light in<br />

my memory. He will be missed. I only hope<br />

that Kat, Morgan and all those who were<br />

close to him are able to find comfort in memories<br />

of him. I know that he would want us all<br />

to remember him and smile. Or perhaps, an<br />

evil grin.<br />

Greetings, My name is Filipo DeSancto<br />

Martino and I am the Chronicler of the<br />

Rhydderich Hael. I joined the SCA some<br />

thirteen or fourteen years ago. I had never<br />

met Durlome Rakesh d'Mithnan the one<br />

called Dwarf.<br />

He was one of the pioneers of the Rhydderich<br />

Hael, and of the modern SCA. I thank him<br />

and those like him for keeping this activity going<br />

and growing do that the new people like<br />

me and those who come after can enjoy this<br />

wonderful activity.<br />

Guild Minister position and we have someone who is interested. So please be sure to attend.<br />

Ice Dragon - It is very important to make sure you have your scrolls done and into me BEFORE<br />

Ice Dragon. I will not be there until after 2 pm. So with that Isabetta Orsini has gladly stepped<br />

up and will act as my deputy until April 15. If you can not get the scroll in at the March meeting,<br />

we can make arrangements to meet and get the scroll BEFORE March 25.<br />

If you have volunteered to help Scribe the names of the Pent winners, time and location will be<br />

known at Ice Dragon. Isabetta will make sure it is posted.<br />

Brewers Spotlight<br />

This Months Recipe<br />

From the Autocrat for<br />

Champs:<br />

My mead recipe:<br />

This is most definitively NOT a period recipe but it<br />

works for me:<br />

Ingredients:<br />

17-20 lbs of honey (anything light (e.g. NOT buckwheat))<br />

2 gallons of fruit juice (no preservatives...) or 1-96<br />

oz can of wine starter juice.<br />

water to make up 5 gallons total<br />

1 packet Lalvan EC-1118 yeast (yeah, this is why it's<br />

not period)<br />

yeast nutrient<br />

wine makers acid blend<br />

In a 20 quart or larger stockpot, heat water to 160<br />

degrees F. Turn off heat and mix in honey until dissolved.<br />

Heat to 160 degrees, again. Do not heat<br />

beyond 160 or you will boil off the esters that give<br />

the mead it's distinctive nose. Carefully transfer to<br />

fermenter and add juice. Cover and wait until cool<br />

(less than 80 degrees). Add in 5 tsp of yeast nutrient<br />

and 5 or less tsp of acid blend. If the juice that<br />

you are using is very acidic, use less acid blend.<br />

Follow directions on yeast packet for activating dry<br />

yeast. Add yeast to fermenter and stir vigorously.<br />

Cover, install airlock and forget for a month or so.<br />

Since honey ferments much slower than cane sugar, it<br />

may take as long as 3 days to start bubbling in the<br />

airlock. Ferment until bubbling stops. Rack into<br />

clean carboy and wait until clear. Bottle and allow<br />

to age until the sharpness goes away. The aging could<br />

be as little as 8 months or as long as 2 years, depending<br />

on what juice has been used.<br />

Put June 11th on your calendars.... That is, if<br />

you have a cheap calendar that is missing days;<br />

otherwise mark June 11th as Baronial Champs.<br />

We will be at the same site as last year<br />

(Cummings Lodge in Akron Falls Park). Pani<br />

Zosia will be cooking up a Fabulous Feast(tm).<br />

We will have loads of space for fighting, fencing,<br />

archery, thrown weapons, fishing (no, there<br />

will not be a fishing champion), sitting in the<br />

sun (also, no champion), bardic and A&S. And,<br />

the parks service will be spraying poison-ivy repellant,<br />

in the woods, as soon as the snow<br />

melts.<br />

Recipes<br />

These are both recipes we were introduced to by<br />

Duke Cariadoc in Enchanted Ground at Pennsic<br />

26, both can also be found in Cariadoc's Miscellany:<br />

An Islamic Dinner. Since that first experience<br />

we have made both recipes many times<br />

and experimented with variations on them.<br />

Hais (date and nut balls)<br />

2 cups pitted dates, chopped fine (approx 1 lb)<br />

2/3 cup roasted almonds, processed fine<br />

2/3 cup roasted cashews, chopped course<br />

4 tbsp melted butter (or sesame oil)<br />

1/3 cup powdered sugar<br />

1 tsp cinnamon<br />

Combine the dates, nuts and fat in a bowl and<br />

Red Lentil Soup/Chili<br />

Bay leaves are a key ingredient here; they bring<br />

out the best in lentils. This easy<br />

recipe makes a rich, but not heavy meal. Makes<br />

6 to 8 servings. Multiply as<br />

needed.<br />

Ingredients<br />

1 onion, chopped<br />

2 to 3 cloves garlic, minced or put through a<br />

press<br />

¼ teaspoon chili powder or ¼ teaspoon cayenne<br />

pepper<br />

½ teaspoon cuminseed<br />

1 tablespoon olive oil<br />

1 tablespoon butter<br />

2 quarts water or vegetable stock<br />

2 cups dried red lentils, washed<br />

1 carrot, sliced thinly<br />

2 ribs celery, diced finely<br />

1 bay leaf<br />

2 teaspoons salt, preferable sea salt, or to taste<br />

1 tablespoon Dijon mustard<br />

3 tablespoons tomato paste<br />

½ cup parsley<br />

In a stockpot or Dutch oven, sauté the onion,<br />

garlic, and spices in the oil and<br />

butter until the onion is soft.<br />

Add the remaining ingredients and bring to boil,<br />

then reduce heat, cover, and simmer<br />

for 1 to 2 hours or<br />

until reaches the desired thickness. Stir periodically<br />

so indredients will not stick<br />

or burn to the pot.<br />

Correct the seasoning and serve alone or especially<br />

good over steamed rice.<br />

When this recipe was used at last event, it was<br />

multiplied by 5. There was plenty to<br />

Almond and Cardamon Cirlettes<br />

These cookies are inspired by recipes in "The English<br />

Hus-Wife" (1615)<br />

To make Fine Cakes. Take fine flowre and good<br />

Damaske water you must have no other liqeur but<br />

that, then take sweet butter, two or three<br />

yolkes of eggs and a good quantity of Suger, and a<br />

few cloves, and cardmund and mace, as your Cookes<br />

mouth shall serve him, and a lyttle saffron, and a little<br />

Gods good about a spoonful if you put in too<br />

much they shall arise, cutte them in squares lyke<br />

unto trenchers, and pricke them well, and let your<br />

oven be well swept and lay them upon papers and so<br />

set them into the oven. Do not burn them if they be<br />

three or foure days olde they bee the better.<br />

Take three pounds of very fine flower well<br />

dryed by the fire, and put to it a pound and half of<br />

loaf Sugar sifted in a very fine sieve and dryed;<br />

Three pounds of Currants well washed and dryed in a<br />

cloth and set by the fire; When your flower is well<br />

mixed with the Sugar and Currants, you must put in<br />

it a pound and half of unmelted butter, ten spoonfuls<br />

of Cream, with the yolks of three new-laid Eggs beat<br />

with it. One Nutmeg; and if you please, three spoonfuls<br />

of honey. When you have wrought your paste<br />

well, you must put it in a cloth, and set it in a dish<br />

before the fire, till it be through warm. Then make<br />

them up in little Cakes, and prike them full of holes;<br />

you must bake them in a quick oven unclosed until<br />

golden blonde. Afterwards Ice them over with Sugar.<br />

The Cakes should be about the bigness of a handbreadth<br />

and thin: of the cise of the Sugar Cakes sold<br />

at Barnet.<br />

Ingredients:<br />

1 Cup, sweet cream butter<br />

2/3 Cup, un-refined, organic turbinado sugar<br />

¼ Cup, Clover honey<br />

1 beaten egg<br />

2 1/2 Cups, King Arthur band Artisan, Organic allpurpose<br />

flour (flour<br />

from hard red what, unbleached)<br />

2 Teaspoon, fresh lemon zest, minced<br />

2 Tablespoons, fresh squeezed lemon juice.<br />

3/4 Teaspoon, crushed cardamon seeds<br />

1/2 Cup, chopped and sliced almonds<br />

Procedure and explanation:<br />

Heat the oven to 350F. Melt the butter and mix it<br />

with the sugar until well integrated. Add in the<br />

honey, cardamon, almonds and the lemon<br />

juice and zest. Mix well. Add the beaten egg to the<br />

mixture (which will be very sticky). Finally, add in<br />

the flour, however, add it in thirds and make sure<br />

that each batch of flour is mixed in before the next<br />

batch is added. Roll the dough out into small balls<br />

and smash them flat: they should be about the diameter<br />

of a poker chip. Do not dock the cookies, as<br />

suggested in the above recipes. Bake until they turn<br />

"golden blonde". Do not leave the Cirlettes alone<br />

while they bake: they can go from pale, to blonde<br />

to burned very quickly. Check every minute after<br />

the first five minutes.<br />

Since there is no yeast or leavening added to the<br />

mix, the cookies receive all of their lift from steam<br />

trapped inside of the sticky dough. The cookies<br />

should be soft and chewy when finished. However,<br />

if you prefer a crunchy cookie, let the batter sit in<br />

the 'fridge over night. The flour will absorb more of<br />

the liquid in the mix, leaving less available to turn<br />

to steam and puff up the cookies.<br />

“I have served this as a pre-event feast to my<br />

ride on more than one occasion” -Constantinia<br />

Description: A great new way to have eggs for<br />

breakfast or lunch.<br />

Ingredients<br />

3 large eggs<br />

1⁄4c milk<br />

1 dash each salt, nutmeg, ground pepper, & onion<br />

powder.<br />

1 TBS each fresh chopped parsley, basil &<br />

chives<br />

3 slices of bread chunked<br />

3/4 cup 6 slives lunch meat or any cubed left<br />

over meat like beef ,ham or corned beef<br />

1⁄2 oz shredded regiano and monterey jack<br />

cheeses<br />

3 t salsa<br />

Instructions<br />

I start with 3 large eggs and a 1/4 cup of milk<br />

that I whisk together.<br />

To that I add large dashes of salt, nutmeg,<br />

ground pepper, & onion powder. I whisk that<br />

into the egg mixture.<br />

I then add a healthy pinch of both fresh<br />

chopped parsley, and basil and repeat the<br />

whisking.<br />

Two slices of diced fresh whole wheat or rye<br />

bread are mixed into the egg mixture by spoon.<br />

5 slices of the lunch meat of your choice are<br />

diced and added to the egg & bread.<br />

1/2 once each of freshly shredded Regiano and<br />

Monterey Jack cheeses are stirred in,<br />

Pour the whole mess into a greased medium<br />

sized ramekin and bake at 375 for 35 - 40 min.<br />

Or until deeply golden brown on top and sides.<br />

Let cool for 3 - 5 min before serving. I recommend<br />

the universal condiment of salsa as the<br />

perfect way to complete the dish.<br />

“I made this in a dutch oven over an open fire at<br />

Shoote in the Wyldewoods last september. It<br />

was one of 6 over filled dutch ovens filled with<br />

soups. & was the first one emptied of everything;<br />

it was that well liked. I was glad that I sampled<br />

as I made it because no one left any for me. “<br />

Spicy sausage, Beef & Barley.<br />

1 pound Hot sausage<br />

1 pound Beef chunks<br />

1 pound Barley (uncooked)<br />

Canola oil<br />

Salt<br />

6 Onions cut into rough chunks<br />

5 cloves garlic smashed<br />

Basil<br />

Sage<br />

Water<br />

shredded Parm cheese<br />

Put enough oil in the bottom of dutch oven to<br />

well coat, fry beef on all sides & remove from<br />

pot. Add a bit more oil and do the same with the<br />

sausage. Add onions and garlic to pot and barley<br />

Add enough water to fill pot 2 inches shy of top<br />

& let boil until barley is fully cooked stirring often.<br />

Put back in the sausage & beef and salt, sage<br />

& basil to taste<br />

Simmer another 15 - 20 min stirring often,<br />

Serve each bowl with a generous helping of<br />

fresh Parm cheese<br />

This does make a lot so either be hungry or have<br />

a lot of very hungry friends.<br />

“I was gifted with a very large bag of precooked<br />

meatballs, left over from an Ice<br />

Dragon some years ago. Since I was running<br />

the kitchen at the next event, I had to figure<br />

out what to do with them. They became a<br />

meat pie - which went over very well. I had<br />

some children working in the kitchen who enjoyed<br />

smashing the meatballs! I wrote up the<br />

recipe and have shared it with my family.<br />

They liked it. The only difference is, we put a<br />

pastry top on the pie for the event, instead of<br />

cheese.<br />

MEATBALL PIE<br />

2 packages precooked Italian meatballs (about<br />

12 per package)<br />

5 or 6 eggs, depending on size<br />

2 prepared, uncooked pie shells<br />

2 cups shredded sharp cheddar cheese<br />

1 half pint of light cream or half-&-half<br />

1 cup chopped fresh dates (don’t use commercial<br />

ones, they contain sugar)<br />

Your choice of two or more of the following ingredients:<br />

½ cup currants (or if you prefer, white<br />

raisens)<br />

½ cup dried cranberries or blueberries<br />

2 cored, chopped apples (or 1 cup chunky<br />

applesauce, without cinnamon)<br />

Thaw meatballs, smash and chop them up to<br />

resemble ground meat. Put them in a large<br />

bowl and add the dates and other fruit. Beat<br />

the eggs with the cream and add half of it to<br />

the meat/fruit mixture. Using your hands,<br />

knead this like you were making meatloaf.<br />

Continue to add eggs and blend, the mixture<br />

should be little runny.<br />

Mound the meat/fruit mixture into prepared pie<br />

shells. Top with cheese, dividing between both<br />

pies and spreading it out to cover the tops as<br />

much as possible. Bake at 350 degrees for about<br />

45 minutes. These directions make two pies - if<br />

you only want one, just divide the ingredients<br />

in half.<br />

Get creative … Try using a prepared quiche<br />

mix instead of whole eggs (meat/fruit won’t be<br />

quite so runny before baking). Or try adding<br />

grated cheddar or parmesan cheese and diced<br />

tomatos to the filling instead of fruit, and using<br />

a pastry lid on top. You could add onions,<br />

mushrooms, any leftover meat that you chop<br />

up, some cooked vegetables, or any other combination<br />

of ingredients that you think your family<br />

would like. You could add more seasoning, or<br />

use less fruit (I recommend keeping the dates,<br />

however, the sweetness is a pleasant surprise).<br />

The pie can be served warm for dinner, or sliced<br />

cold as a snack for later on.<br />

Although this recipe is my creation, you can<br />

turn it into you own individual speciality. It’s<br />

particularly useful when you have company<br />

coming or want to serve things buffet style, the<br />

pie can be made in advance and kept in the<br />

fridge for several days. The cheese crust on top<br />

seals in the moisture.<br />

Kushkhananaj<br />

2 cups white flour<br />

1 cup wheat flour<br />

1/2 cup sesame oil<br />

3/4+ cup cold water<br />

1 1/2 cup sugar<br />

1+ cup nuts or dried fruit in any combination,<br />

chopped fine (almonds are traditional, but<br />

anything will work; you can also add various<br />

spices as well)<br />

Combine the sugar and nuts in a small bowl.<br />

Mix the flour together, stir in the oil and water;<br />

kneed briefly then divide into 6 parts. Roll<br />

each part out into a rectangle roughly<br />

8"x16" (wider is better, but it will break if too<br />

thin), scatter the filling evenly and roll up like<br />

a pastry roll making sure to seal the ends and<br />

flap with a bit of water.<br />

Bake on baking sheets (preferably with baking<br />

parchment) at 350 degrees for ~45mins<br />

“A story comes with this photo. It was a<br />

Rhydderich Hael baronial champs tourney<br />

in, hmm, maybe 1984? I was having a hot<br />

day (my ONLY hot day fighting, ever), had<br />

won a couple of rounds, lost one but been<br />

competitive and then had a bye, so I was in<br />

the quarter-finals. I was the only woman in<br />

the tourney so all the women were rooting<br />

for me. I faced my knight, Sir Ogami. I<br />

handed my camera to Caterina del Cavallo<br />

and asked her if she could take a picture of<br />

the fight. Hasdrubal was marshaling, said<br />

"Lay-on" and Ogami one-shotted me to the<br />

head and I went flying. Caterina hit the<br />

shutter as fast as she could, and this was<br />

what she got as I tumbled ass over teakettle.<br />

I keep this photo on the wall as a reminder<br />

that humility is a Good Thing. :-)”<br />
