Steam Cooking 30 - 130 °C

It maintains all the nutritional values of food, the colours remain bright, it

requires less seasoning, less water, less salt ad therefore products’ cost is

reduced.

OPTIONAL

Combination Hot Air + Steam Cooking 30 - 300 °C

It is the mode allowing quick cooking while ensuring great quality of resulting

dishes. The less amount of seasoning required and the remarkable reduction in

weight loss result in substantial economic benefits.

Core probe Ø 3 mm (S Version)

By using the core probe, precise control of the

cooking and its subsequent preservation, if needed,

are achieved.

AUTOCLIMA

FAST DRY

Convection Cooking 30 - 300°C

With convection cooking times are reduced, the temperatures used are lower

than those required by conventional ovens with greater capacity and it is

possible to cook different products at the same time without flavours mixing

together. All at lower costs.

Autoclima

It automatically manages the perfect climate in the cooking cavity.

Temperature and percentage of humidity according to the food to be cooked.

Juiciness and softness always ensured.

Fast Dry

Thanks to the patented Fast Dry® system perfect crunchiness of fried, au

gratin and grilled food is ensured, as well as that of cakes and bread, even at

full loads. Load capacity used at 100%.

Needle probe Ø 1 mm

The needle probe (Ø 1mm) is also available for

vacuum cooking and cooking small pieces.

Reduced speed (S Version)

For delicate cooking, or when wanting to use a low

fan speed, it will be sufficient to press the key on

the control panel that reduces ventilation and the

supplied power, in order to give the correct amount

of ventilation for each product and avoid wasting

energy.

Recipes can be stored with 4 cooking cycles

in automatic sequence. (S Version)

Compact offers you the chance to create your own cooking programs in

several steps and then store them. They can each comprise up to 4 phases in

automatic sequence. In this way you can create an archive of personal recipes

to be added to the international recipes already set and previously stored in the

memory by Lainox. They also include the plated and tray regeneration modes.

Construction characteristics

• Stainless steel construction

• Cooking chamber made of AISI 304 stainless steel,

moulded, with completely rounded edges having a

wide radius to make cleaning easier.

• Perfectly smooth, fluid-tight chamber.

• Thermal insulation of the cooking chamber,

35-mm thick.

• Door with double toughened glazing,

with air casing, so less heat is radiated toward

the operator.
