Ingredients Needed: Boned chicken breast halves – 4 ounce (skinned), Seedless raspberry preserves – 1/3 cup, Raspberry balsamic vinegar – 3 tablespoons, Vegetable oil – 1 tablespoon, Red onion – ½ cup (chopped), Dried thyme – ½ tablespoon, Pepper – ¼ teaspoon, Salt – ½ teaspoon and Cooking spray. Preparation: Heat vegetable oil in a large skillet coated with cooking spray over a medium-high heat until hot. Add chopped onion and sauté for 5 minutes. After that, combine thyme and ¼ teaspoon salt; and sprinkle it over chicken. Add chicken to skillet and reduce the heat to medium-low. Then, add the remaining salt, preserves and raspberry balsamic vinegar and pepper. Stir it constantly until the preserves melt. Take a serving plate and put a chicken breast in it. Spoon the raspberry sauce over the chicken. Serve every plate with 1 chicken breast and 2 tablespoons of raspberry sauce.
