It highlights the fact that 2009 is the75th year that Brookfield has been in business. By any measure wehave been and are successful in what we do, which is to supply highvalue instrumentation and service to our customers. But it is a mistake to laud ourselves for our success to date. Itis more important to realize what factors allowed Brookfield togrow and thrive for the last 75 years, and to make certain thatwe continue the programs and attitudes and principles that havegiven Brookfield such an enviable position throughout industry andthe world. Offering products that customers need at the levelof quality they expect, developing new products and accessoriesbased on customer feedback and market requirements, andcontinuously improving our after sales support through superiorservice and training, all with an attitude of low cost and high valueto our customers. We recognize that it is our customers who have made Brookfieldsuccessful, and continued success depends solely on protectingand expanding our customer’s satisfaction with Brookfield. In2008 we acquired a company whose products we have been sellingfor 10 years, thereby allowing us to provide faster response andbetter service for our successful RS Rheometer product line. Weare expanding into other fields, such as texture, with products thatprovide high performance at very competitive pricing. We continueto develop and improve our existing product line to meet the needsthat arise from the modern industrial environment. It is our hope, our expectation, that by continuing to do thesethings, which historically have allowed Brookfield to grow and togain our reputation as a top tier supplier, we will be able to proudlyannounce our 100th year and beyond with the same satisfactionand commitment as we now recognize our 75th anniversary.David Brookfield,PresidentT: 800.628.8139 or 508.946.6200 F: 508.946.6262 www.brookfieldengineering.com

Celebrating 75 Years!1934-1958 - The first 25 years“I can make a better one than that!”said a young, confidentDonald Brookfield, Sr. in1933 to his father whileaccompanying him to alaboratory supply house tolook at viscometers for theirsynthetic resin businessventure. And with thisunpredictable statement fromthe recent MIT graduate, ourhistory began.Don went home and beganexperimenting with motorsand springs in the basementof his family’s home. It wasn’t as easy as he thought it wouldbe while at the laboratory supply house with his dad, but Donfound the work challenging, he enjoyed it, and he was goodat it. Don envisioned a different viscometer than what wasconventional at the time and began experimenting with othermaterials that would ultimately produce his first viscometer. This original, single-speed instrument would later developinto what is now known as “the world standard” in viscositymeasurement and control.Business began slowly, but it built at a steady pace as wordof the instrument’s quality — and its inventor — began tospread. Don’s practice of exchanging older units with newand improved ones at no charge was unheard of, and ofcourse, well received. As Don later said, “This gave us greatcredibility…or maybe they just thought we were crazy!”.A few years after the business began to pick up, war brokeout. Brookfield, like many manufacturers of the time, puttheir main business on hold in order to contribute to the WWIIeffort. Although it was necessary to shift the priority fromviscometers to war components, Don felt privileged to helpout any way he could, and in later years, was very proud of thecontribution Brookfield had made. After the war, Don was able to return full-time to developmentby improving on the original single-speed design bydeveloping a two-speed model, then a four-speed, and later,an eight-speed. The instrument continued to evolve over theyears into the multi-speed electronic drive model that is still inproduction today.1959-1983 - The next 25 yearsDon remained true to his original vision of “the highest qualityat the lowest possible price” by developing other significantchanges to the instruments themselves and, also, by creativelyextending their range and uses. Over the next 25 yearsBrookfield continued to address issues of temperature control, the ability to measure small sample volumes, and the needto measure very low viscosities by inventing a wide range ofaccessories to compliment the various model viscometers thathad been engineered over the years. Temperature controldevices, adapters, mixers, and stands were designed to expandthe versatility of Brookfield’s original — and newly developeddigital — line of viscometers. Brookfield also responded torequests by customers to measure continuously in productionby developing a complete range of shear rate defined in-lineProcess Viscometers. What was once a small, application-specific instrumentcompany was now becoming a globally-important resourcein such industrial areas as asphalt, adhesives, biological fluids, chemicals, drilling fluids, foods, paints, personal care products, polymers, etc. During this period, his son, David, joined thecompany and helped to develop the companies’ productand reputation further. The Brookfield Viscometer beganappearing in standards all over the world — and still continuesto be a force in most major industrial applications.1984-2009 - The past 25 yearsTechnology began progressing at an alarming rate, continuallyknocking on the doors of conventional instrumentation.Brookfield answered each call by producing a wide range ofdigital and programmable viscometers and rheometers thatwould operate in stand-alone mode or could be remotelycontrolled by a PC and software. Greater measurementcapabilities would allow customers the ability to perform avariety of testing methods, from simple centipoise readingsto high end shear rate/shear stress calculations. To meetthe needs of the increasing number of customers usingcontinuous viscosity measurement in the automation of theirproduction control, Brookfield expanded its line of processinstruments to include viscosity sensors with no moving partsand no need for field calibration.Brookfield also branched into new areas by adding our firstTexture Analyzer to the product mix. These instrumentsprovided the perfect compliment to our line of R&D and QCtesting instrumentation as it imitated many human testingconditions that a traditional viscometer cannot offer.Don passed away in 2004 but Brookfield Engineeringcontinues to honor his legacy by supplying products of thehighest quality and value with the best service…and of course,by always thinking ahead—of advancing the technology,to find ways of making viscosity measurement and controlinstrumentation even “better.”

Why measure viscosity? The ability to gather data on a material’s viscosity behavior givesmanufacturers an important “product dimension.” Knowledge ofa material’s rheological characteristics is valuable in predicting itspourability, its performance in a dipping or coating operation, orthe ease with which it may be handled, processed, or used. Theinterrelation between rheology and other product dimensionsoften makes the measurement of viscosity the most sensitive orconvenient way of detecting changes in color, density, stability, solids content, and molecular weight. Why Choose Brookfield?Ease of use, flexibility, reliable performance andquality of service have made Brookfield Viscometersfavorites all over the world. All Brookfield Viscometersare accurate within ±1.0% of the range in use andhave a reproducibility within ±0.2%. Test results canbe duplicated anywhere in the world when the samemodel instrument is used.PriceChoices for InstrumentationThis chart shows the Brookfield family of Laboratory Viscometersand Rheometers at a glance. This will help to give you a general ideaof what is available before making a decision. Thermosel for Elevated Temperature TestingCompatiblewith standardBrookfieldViscometersand DV-III UltraRheometersNote: requires optionalcable DVP-141Provides controlof sampletemperatureup to +300°CTemperature Rampingbetween set points is possible if used withRheocalc (DV-III Ultra & DV-II+Pro) SoftwareNote: Requires optional cable HT-106Thermo Container(Heating Chamber)Computer Controlledwhen used with DV-II+Pro or DV-III Ultraand Rheocalc32 SoftwareProgrammable Temperature Controlleroffers single set point or up to 10programmable set points. The difficulty with viscosity measurements of hot melts and liquids at elevatedtemperatures has been in maintaining accurate temperature control that isconsistent from sample to sample so that meaningful data could be obtained. The Brookfield Thermosel solves this problem by providing a stable, preciselycontrolled sample environment. This, together with the inherent accuracy ofthe Brookfield Viscometers, is fundamental to the Thermosel System, whichproduces viscosity measurements that are not only accurate but entirelyreproducible.Several factors contribute to the stable environment:Non-fluctuating temperature controlSmall sample volume and insulated sample chamber which reducestemperature gradients within the sampleThe rotating spindle, which acts as a built-in stirring deviceThe test procedure is quite straightforward. Once familiar with the system, unskilled operators can easily produce accurate, reproducible data. What’s Included?Choice of one SC4 SpindleSpecify when orderingAlignment BracketThermo Container with safety guardand insulating cap1 Removable Sample Chamber (p41)5 Disposable Sample Chambers (p41)Order additional chambers in quantities of 100, HT-2DB-10018” Lab Stand RodExtracting ToolsTemperature Controller with an RTD probeApplicationsHot MeltsWaxAsphaltPolymersBROOKFIELD TEMPERATURE CONTROL30 T: 800.628.8139 or 508.946.6200 F: 508.946.6262 www.brookfieldengineering.com

Small Sample Adapterfor rheological evaluation where sample volume is limitedStandard SampleChamber with embeddedtemperature probeprovides direct temperaturemeasurement of sample9.8.DisposableSample Chamber(Requires SSA-DCUWater Jacket)Complete system shows the DV-II+ProViscometer and Small Sample Adapterwith Circulating Water Bath fortemperature control.6.5.The Small Sample Adapter provides adefined geometry system for accurateviscosity measurements at precise shearrates. Consisting of a cylindrical samplechamber and spindle, the Small SampleAdapter is designed to measure small samplevolumes of 2 to 16 mL, and easily attachesto all standard Brookfield Viscometers/Rheometers.Removable Sample ChamberThe design of the Small Sample Adapterallows the sample chamber to be easilychanged and cleaned without disturbing theset-up of the viscometer or temperature bath. This means that successive measurements canbe made under identical conditions.Temperature ControlThe sample chamber fits into a water jacketso that precise temperature control can beachieved when the Brookfield circulatingtemperature bath is used. The stirring actionof the rotating spindle, plus the small samplevolume, helps to keep the temperaturegradient across the sample to a minimum.Direct readout of sample temperature isprovided using sample chambers withoptional embedded RTD sensor connectedto the DV-I Prime and DV-II+Pro Viscometersand the DV-III Ultra Rheometer. Workingtemperature range for the Small SampleAdapter is from –15°C to 100°C.Cylindrical GeometryThe Small Sample Adapter’s coaxial cylindergeometry provides extremely accurateviscosity measurements at defined shear rates.Disposable Sample ChambersDisposable 13R chambers, for hard-to-cleanmaterials, are available in a kit that comescomplete with 100 chambers and specialsizedwater jacket (Part No. SSA-DCU).Additional disposable chambers can bepurchased in quantities of 100 (Part No. SC4-13RD-100).BROOKFIELD ACCESSORIES32 T: 800.628.8139 or 508.946.6200 F: 508.946.6262 www.brookfieldengineering.com

Enhanced UL Adapterideal for low viscosity materialsReduces measuring range toas low as 1 cP, depending onviscometer usedSimple attachment to astandard Brookfield Viscometeror DV-III Ultra RheometerSmall sample size: 16 mLCylindrical geometry providesdefined shear rates for detailedproduct analysisRemovable cap of low densitypolyethylene can be considereddisposable for one-time use ifrequiredStainless steel parts are easilycleanedThe Brookfield UL Adapter is used withany standard Brookfield Viscometer andRheometer to make accurate and reproduciblemeasurements on low viscosity materials.Newtonian and non-Newtonian materials canbe measured. It is most commonly used withthe LV series instrument (at 60 rpm, thesemodels have a full scale range of 1-10 cP withthe UL Adapter). The UL Adapter consists of aprecision cylindrical spindle rotating inside anaccurately machined tube. Its rheologicallycorrect cylindrical geometry providesextremely accurate viscosity measurementsand shear rate determinations. The tube has a removable end cap whichallows the open ended tube to be used ina beaker or tank. With the cap in place, theclosed tube can be immersed in a temperaturebath or used with the ULA-40Y water jacketfor precise temperature control. Workingtemperature range is from –15°C to 100°C.Why replace your currentUL Adapter? The new design saves a significant amount oftime on set up and tear down of equipment. The new spindle with universal connector iseasier to thread onto the viscometer. The entire assembly can remain in placebetween tests with only the chamber beingremoved to prepare the next sample fortesting.LVT, LVDV-ELVDV-IP, LVDV-II+PLVDV-IIIU1.0 - 2KRVTRVDV-ERVDV-IP6.4 - 2KRVDV-II+PRVDV-IIIU3.0 - 2KHATHADV-EHADV-IP12.8 - 2KHADV-II+PHADV-IIIU6.0 - 2KHBTHBDV-EHBDV-IP51.2 - 2KHBDV-II+PHBDV-IIIU24.0 - 2KK = 1 thousandBROOKFIELD ACCESSORIES34 T: 800.628.8139 or 508.946.6200 F: 508.946.6262 www.brookfieldengineering.com

What is texture analysis?Texture analysis is primarily concerned with the evaluationof mechanical characteristics where a material is subjectedto a controlled force from which a deformation curve of itsresponse is generated. These mechanical characteristics infood can be further sub-divided into primary and secondarysensory characteristics which have proven to be correlatedto sensory perception.Primary CharacteristicsPARAMETER SENSORIAL DEFINITION INSTRUMENTAL DEFINITIONHARDNESSSPRINGINESSADHESIVENESSCOHESIVENESSForce required to compress a food between molars.Defined as force necessary to attain given deformation.Rate at which a deformed material goes back to its undeformedcondition after deforming force is removed. The work necessary to overcome the attractive forces betweenthe surface of the food and the surface of other materials withwhich the food comes into contact (e.g. tongue, teeth, palate).Work required to pull food away from a surface. The strength of internal bonds making up the body of theproduct (greater the value the greater the cohesiveness)Peak force of the first compression cycle.Height that the food recovers during thetime that elapses between the end of thefirst bite and the start of the second bite. The negative area for the first bite, representing the work necessary to pullcompressing probe away from sample. The ratio of positive force during the secondto that of the first compression cycle(downward strokes only)Secondary CharacteristicsPARAMETER SENSORIAL DEFINITION INSTRUMENTAL DEFINITIONBRITTLENESS(Fracture force)GUMMINESSCHEWINESSForce at which a material fractures. Related to the primaryparameters of hardness and cohesiveness, where brittlematerials have low cohesiveness. Not all foods fracture andthus value may relate to hardness if only single peak is present.Brittle foods are never adhesive.Energy required to disintegrate a SEMI-SOLID food product to a stateready for swallowing. Related to foods with low hardness levels.Energy required to chew a SOLID food product to a statewhere it is ready for swallowing. attribute is difficult toquantify precisely due to complexities of mastication(shear, compression, tearing and penetration). The first significant break in the firstcompression cycle.Calculated parameter:Product of Hardness x CohesivenessCalculated Parameter:Product of Gumminess x Springiness(essentially primary parameters ofHardness x Cohesiveness x Springiness)*Parameters utilized in determining the manner in which a food handles and behaves in the mouth.PARAMETERS AS DENOTED WITHIN ORIGINAL SZCZESNIAK et al (1963) AND BOURNE (1978) TPA WORKBROOKFIELD TEXTURE ANALYZER48 T: 800.628.8139 or 508.946.6200 F: 508.946.6262 www.brookfieldengineering.com

Why measure texture?Consumer products succeed in the marketplace in partbecause their “textural characteristics” are pleasing tocustomers. This is certainly true with food products but it alsoapplies to cosmetics, pharmaceuticals, packaging, industrialmaterials and even adhesive type materials.ApplicationsQuality Control, Product Development and R & DFoodDairyYogurtButterCheeseBakeryDoughBreadPastrySnack FoodsChipsGranolaBarsConfectionsMeatBeefPoultrySeafoodFruit andvegetablesCosmeticsLipstickMascaraPowdercompactsEye liner pencilsCreamsSoap barsPharmaceuticalsGelatinsTablet hardnessOintmentAdhesive dressingMaterialsPackagingAdhesivesCaulkingRubberGreaseWaxWhy Choose Brookfield?Brookfield has over 75 years experience in providing reliable, low cost viscosity measuring instruments while offering highquality product support. Why Measure Viscosity In-Line?Why Measure Viscosity In-Line?Practical application of viscosity measurement data often leadsto the need for in-process control of viscosity. The installation ofviscosity control equipment on a process can provide a level ofcontrol achievable by no other means. Variations in viscosity aredetected and corrected instantly before they can negatively affectproduct quality. Real time viscosity control can reduce downtimeand material waste by ensuring that the process is operating withinits specified viscosity parameters. In many cases, the savings fromincreased efficiency can pay back the cost of the viscometer in onlya few months. Why Choose Brookfield?Brookfield builds its Process Control Viscometers to thesame high standards of performance and value as itsLaboratory Viscometers. Particular attention has beendevoted to making these instruments rugged and easyto maintain for long service in demanding industrialenvironments.AST-100Advanced sensortechnologyfor direct inlineviscositymeasurement (p60)TT-100For in-line systemapplicationsrequiring pipelinemounting (p62)TT-200For in-line systemapplicationsrequiring flangemounting (p64)TT-220ProbeFor both solventand water basedproducts (p65)ViscoselFor systemsopen to theatmosphere (p66)Questions to Consider1. What is the viscosity range of your material?2. Is your material Newtonian, Dilatant, Non-Newtonian,Thixotropic or Plastic?3. What is the minimum, maximum and average pressurerequirement of your application?4. What is the minimum, maximum and averagetemperature of your application?5. What is the minimum, maximum and average flow rateof your application?6. Where in production would you like the viscometer:in-line, on the top of the tank or on the side of the tank?7. What electrical code requirements do you have:NEMA 1 (general purpose—indoor)NEMA 4 (watertight/dust tight for indoor/outdoor use)NEMA 7 (explosion proof—Class 1, Div. 1&2, Group D)ATEX (explosion proof—Code: EE x d 11B T6)The above parameters may eliminate some of theinstrument models because, for example, the viscosity ishigher than the range of the instrument or outside of thepressure rating of the instrument. In many cases, more thanone instrument may be applicable. Please allow us to assist you in choosing the best viscositycontrol system for your application.59
