Bohr. The most ambitiousproject so far has been Cracking the Genesis Code, a series of 52 one hour lecturespresenting the full message of the Bible from the perspective of Genesis 3:15. All ourproducts are useful for evangelism, in-depth Bible study and provide fresh insights forchurch members. Most of our productions are broadcast ready.Secrets UnsealedPastor Bohr was born in Wisconsin but grew up inVenezuela and Colombia where his parents served asmissionaries for over thirty years. His heavy speakingschedule has taken him around the world.In over 30 years of denominational work he has served inmany capacities. In addition, he has dedicated many years tothe study of the prophetic message of the Bible and is bestknown for his groundbreaking video series, Cracking theGenesis Code.Twice a year he teaches the class Foundations ofSeventh-day Adventist Theology at the Amazing Facts College of Evangelism.Presently he serves as Senior Pastor of the Fresno Central Seventh-day AdventistChurch and also as Speaker/Director for Secrets Unsealed.His wife, Aurora, is from Colombia, and they have two grown children. Theirson Stephen is the Webmaster and Senior Production Technical Director forSecrets Unsealed, and their married daughter Jennifer is currently attendingPacific Union College majoring in international communications.ABOUT UScurrently has three full time employees. Chances are that when you callus you speak with either Virginia or Terry.Virginia Flores has been volunteering her time faithfully twice per week in thecall center for over four years. She is a prayer warrior, and makes sure wealways have something good to eat. She and her husband Robert also assist withthe booth at various functions like ASI, GYC and camp meetings. He could be working anywhere making alot of money, but he has dedicated the better part of the last six years to thisministry, and we are truly grateful for his hard work and dedication. He is one ofseveral technical directors and does all the editing to make our productionsbroadcast ready. He's our I.T. person, a computer wiz, and helps us all with ourcomputer needs and issues. He developed our first website, and yes, he is PastorBohr's son and single, but don't tell him we told you.Our finance manager, Richard Wagenleitner, our graphic artist, DanielaGiangrande, and over 60 volunteers dedicate their spare time in variouscapacities so that Secrets Unsealed can produce new materials for broadcast,and we are thankful for every one of them. Unbleached Flour (the best brand is Sunny Select available at Food Max)5 cups tap water1 large onion2 large stalks celery (it is better to use the leaves on the stalks as much as possible)1 handful of cilantro½ bottle soy sauce (about 10 ounces)1 envelope George Washington's broth3 walnuts (broken into quarters)Making the dough:In a large bowl, mix the flour into the water and knead into a lump of dough. Make sure the lump is firm and not sticky. Fill the bowl withwater until the lump is completely submerged. Allow it to sit overnight.Preparing the broth:Finely chop the onion, cilantro and celeryPut the chopped onion, cilantro and celery into a large cooking pan with 8 cups of water, the walnuts, the soy sauce and the envelope ofGeorge Washington broth.As soon as the water begins to boil, turn down the temperature to a low simmer. Do not allow the water to boil forlong because the broth will lose its flavor.Washing the dough:Place the large bowl with the lump of dough under a faucet with a trickle of cold water (if you use warm water the dough will fall apart)coming out. Squeeze the dough gently turning it clockwise at every squeeze to wash out the starch from the dough. Make sure you squeezethe dough together as you wash it. Squeezing the dough too tightly will separate the dough into pieces and make it much more difficult toform the steaks. When the dough has been reduced to a small ball (which is the gluten) and the water is slightly white (the color of dilutedskim milk) take it out from under the water and squeeze out the excess water from the gluten ball.Making the cutlets:Cut the ball of gluten into two equal pieces. Stretch out the first piece until it has the shape of a log. Cut the log shaped piece into small slicesabout ½ to ¾ inches wide (larger for larger steaks and smaller for smaller steaks). Press the piece of gluten from the outer edges inward togive it the form of a cutlet. Make sure you don't stretch it to the point of the gluten having holes. Follow the same process with the secondlump of gluten.Cooking the cutlets:Evenly distribute the cutlets in the simmering cooking pan slowly one by one. Adjust the temperature to a low simmer and allow the cutletsto cook for about one hour. The delicious cutlets are now ready to be used in any way you wish.Preparing the Cutlets:I personally like to fold the cutlets in flour and then brown them in a skillet with a little olive oil. Then I like to sauté some onions, red andgreen peppers and mushrooms to put over the top of the cutlets. I save the broth from the pan where I cooked the cutlets and make gravy topour over the cutlets and then bake for about 30 minutes. Simply delicious!My wife likes to slice the cutlets into strips and sauté them with a little olive oil, pieces of yucca (a root available in most supermarkets) andguiso (we will explain how to make this at the cooking school). We use guiso to flavor all the beans we bring to the potluck.
