This is a hard crumbly cheese that has a delicate yet slightly sharp flavour with a fragrant aroma and<br />

Pecorino Romano (Sheep’s milk, italy)<br />

This is a hard-pressed cheese. Aged for a minimum of 10 months it is semi-soft in consistency and<br />

slightly crumbly with strong cheddar like flavour. Accompanied with dried muscatel grapes and quince paste.<br />

Wine match = Cabernet Sauvignon, Tepranillo, Sauvignon Blanc<br />

Prima donna (cows milk, holland)<br />

A nutty, sweet and salty cheese, with a slight sharpness. The cheese is hard, but softens quickly in the mouth. rich and<br />

satisfying, it is made in the same style as gouda. Accompanied with plum paste and caramelised hazelnuts.<br />

Wine match = Chardonnay, Syrah, Zinfandel<br />

tarago River Gippsland Brie (cow’s milk, australia)<br />

A typical double brie with strong pungent flavours and a smooth creamy texture. Accompanied with quince paste and<br />

Pont l’eveque (cow’s milk, France)<br />

This is a soft creamy cheese somewhat close to camembert. It has a savoury and piquant flavour with a trace of<br />

This is a crumbly melt-in-the-mouth blue cheese. This has a distinct flavour that combines the sweet, burnt caramel<br />

taste of sheep’s milk with the sharp tang of the blue. Accompanied with pear slices and honey.<br />

Wine match = Sauternes, Muscat, Port<br />

te Mata iron Gate Wash Rind Brie (cow’s milk, new zealand)<br />

This very flavourful brie is a beautiful dark cream colour, rich, soft and creamy wrapped in a moist orange rind. The daily<br />

washing of the surface of the cheese gives it strong aromas of yeast and sweet tangy flavours. Accompanied with plum<br />

paste and caramelised hazelnuts.<br />

Wine match = Gewürztraminer, Viognier, Chenin Blanc<br />
