Product Characteristics
NOJAX ® Cellulose Casings are regenerated cellulose casings that
are presented in the form of shirred sticks and designed for automated
production of small tubular sausages such as hot dogs, cooked
sausages, dry mini salamis, and coarse ground fresh sausages.
NOJAX ® Casings are also permeable to smoke.
Treatments
NOJAX ® Casings are available with either closed ends for use on automatic equipment or with
open ends for manual stuffing. Value-added treatments include:
� Regular NOJAX ® Casing is a standard product and does not contain a peeling
treatment.
� E-Z PEEL ® NOJAX ® Casing contains a peeling treatment to ensure perfect casing
removal.
� Self Coloring NOJAX ® Casings* are available in Dark Cherry and Light Orange and
impart food grade dyes to the surface of the hot dog.

Color Range
NOJAX ® Casings are offered in a wide selection of colors that do not transfer, to meet your
product needs. Our selection includes:
� Clear
� Blue (Sentry)
� Blue w/ clear window (SENTINEL ® ): a unique and highly visible blue casing with a
clear window that guards against peeler skips, but allows easy monitoring of product
surface color.
� Green
� Wedzone (Smoke Color)
� STRIPED NOJAX ® Casing, designed to aid in differentiating production, Stripes help
ensure peeling

Finishing Formats
Casings are shirred into a variety of long length sticks to match requirements and optimize
productivity on the wide range of stuffing and cooking systems available in the industry. Casing
sticks are then packed in Flex Caddies.

diameters and net package weights popular in the market today.

Storage & Handling
NOJAX Casings are pre-moisturized and ready for use. They are delivered in special packages
in order to retain the existing moisture. Store the casing only in its original, protective packaging
to retain moisture. Ensure that any unused casings are enclosed properly in an airtight bag.
Store in a cool, dry place away from steam pipes, hot storage areas and direct sunlight. Best
storage temperatures are 40° - 75° F (4° - 24° C). Best storage humidity is between 60 and
70%. If, during transport or storage, the casing have been exposed to low temperatures below
(32°F or 0°C), they must be held at normal temperat ure (60° - 70°F or 15° - 20°C) for at least
two days before being used..
