Hops <strong>are</strong> usually dried immediately after harvest<strong>in</strong>g to<br />

preserve them for use for the com<strong>in</strong>g year.<br />

Green <strong>hops</strong> <strong>are</strong> fresh, undried <strong>hops</strong> <strong>used</strong> <strong>in</strong> brew<strong>in</strong>g<br />

very soon (under 12 hours <strong>in</strong> Kent) after be<strong>in</strong>g picked.<br />

<strong>What</strong> <strong>do</strong> <strong>hops</strong> <strong>do</strong> <strong>in</strong> <strong>beer</strong> <strong>and</strong> <strong>how</strong> <strong>are</strong><br />

<strong>they</strong> <strong>normally</strong> <strong>used</strong>?<br />

Hops add flavour <strong>and</strong> aroma to <strong>beer</strong>, <strong>in</strong> a similar way season<strong>in</strong>g<br />

with herbs <strong>and</strong> spices adds to a dish when cook<strong>in</strong>g. Also as <strong>in</strong><br />

cook<strong>in</strong>g there <strong>are</strong> flavour differences between us<strong>in</strong>g dried <strong>hops</strong><br />

<strong>and</strong> fresh, or green, <strong>hops</strong>.<br />

Hops <strong>used</strong> to be dried <strong>in</strong> Oast Houses, although today this<br />

usually happens <strong>in</strong> kilns. After dry<strong>in</strong>g <strong>they</strong> <strong>are</strong> made <strong>in</strong>to bales<br />

or pockets <strong>and</strong> sold to a hop merchant who <strong>in</strong> turn sells them<br />

on to brewers to make <strong>beer</strong> <strong>in</strong> the com<strong>in</strong>g year.<br />

<strong>How</strong> <strong>are</strong> green hop <strong>beer</strong>s different<br />

from conventional dried hop brews?<br />

Just like herbs <strong>in</strong> cook<strong>in</strong>g, us<strong>in</strong>g fresh <strong>hops</strong> creates a different<br />

taste <strong>in</strong> <strong>beer</strong> than dried <strong>hops</strong> <strong>do</strong>. This is because <strong>hops</strong> <strong>are</strong> full of<br />

flavour-rich oils, but many of these <strong>are</strong> driven off by the dry<strong>in</strong>g<br />

process. Green <strong>hops</strong> reta<strong>in</strong> all the oils, the flavours of which <strong>are</strong><br />

then transferred to the <strong>beer</strong>. The other th<strong>in</strong>g that makes green<br />

hop <strong>beer</strong>s special is that each one is unique. You literally can’t<br />

make the same <strong>beer</strong> twice as each batch of fresh <strong>hops</strong> br<strong>in</strong>gs a<br />

different taste to the <strong>beer</strong>, even if it is the same variety from the<br />

same hop garden.<br />

Why is Kent Green Hop Beer<br />

Fortnight at this time of year?<br />

Hop harvest beg<strong>in</strong>s early <strong>in</strong> September <strong>and</strong> Kent<br />

Green Hop Beer is a truly seasonal dr<strong>in</strong>k. As soon<br />

as brewers <strong>are</strong> able to get fresh, ripe <strong>hops</strong> <strong>they</strong><br />

make <strong>beer</strong> with them. Around a month later it is<br />

ready to dr<strong>in</strong>k. Be<strong>in</strong>g a seasonal product it is best<br />

enjoyed fresh, so late September to early October<br />

is the natural time to enjoy these <strong>beer</strong>s!<br />

Kent Green Hop Beer Fortnight will beg<strong>in</strong><br />

at Canterbury Food & Dr<strong>in</strong>k Festival on<br />

Friday 28th September.<br />

This is the only time all the <strong>beer</strong>s brewed for<br />

The Fortnight will be available <strong>in</strong> the same<br />

place at the same time.<br />
