136Vanilla Cupcakes1 cup YÜ Rice Beverage or homemade Almond Milk (page 122)1 tsp apple cider vinegar1 1/4 cups unbleached flour2 tbsp corn starch3/4 tsp baking powder1/2 tsp non-iodized salt1/3 cup canola oil3/4 cup granulated sugar2 1/4 tsp vanilla extractVanilla Butter Cream Frosting1/2 cup Becel Vegan margarine2 1/2 cup Sifted Powdered sugar3 tbsp YÜ Rice Beverage or homemade Almond Milk (page 122)1 1/2 tsp Pure Vanilla ExtractProcedureCupcakes1 Spray one layer cake pan with non stick all natural canola oil spray.2 Whisk milk and vinegar, set aside to curdle.3 In large bowl mix milk mixture, oil, sugar and vanilla. Sift flour, corn starch, baking powder. Add gradually to the liquid ingredients.4 Pour into cake pan or a 12 muffin tin lined with cupcake paper liners and bake at 350 approximately 20 or until tested done. Transfer to a cooling rackand let completely cool.Vanilla Butter Cream Frosting1 Cream Margarine, milk and vanilla into a creamy consistency. Gradually add the sugar. Beating until light and fluffy. Add a splash more of milk asneeded for spreading consistency.2 If making a layer cake, split the layer in half, frost cut side, place top on and frost as for a regular layer cake. For cupcakes frost each as desired.Yield: 12 cupcakes Oven Temperature: 350°F

Fill 12 greased or paperedcupcake wells 3/4 of the way through and bake 15 minutes or until a toothpick inserted in the center cupcake comes out clean.2 Sprinkle with confectioners' sugar.Yield: 12 cupcakesOven Temperature: 375°F
