150Ginger Snap 'Granny' Cookies3/4 cup shortening1 cup white granulated sugar1/4 cup fancy molasses1 3/4 cup all purpose-flour2 tsp baking soda1 tsp cinnamon3/4 tsp powdered ginger3/4 tsp clovesProcedure1 Combine shortening, sugar, and molasses together in a large bowl. In a separate bowl, sift the flour, baking soda, cinnamon, ginger, and clovestogether. Combine the two mixtures together until evenly blended. Dough should be slightly sticky. Roll into 1” balls and place on a greased cookiesheet. Bake at 375° F about 10 minutes.Yield: 3 dozenOven Temperature: 375°F

151Homestyle Chocolate Chip CookiesWith canola instead of margarine1 cup all-purpose flour1 tsp baking powder1/2 tsp baking soda1/4 cup sugar1/4 tsp non-iodized salt (optional)1/3 cup pure maple syrup1- 1 1/2 tsp vanilla extract1/4 cup canola oil (a little generous 1/4 cup)1/3 cup non-dairy LID-friendly chocolate chips(e.g. PC Choice Decadent Semi SweetChocolate Chips)Procedure1 Preheat oven to 350°F (176°C).2 In a bowl, sift in the flour, baking powder, and baking soda. Add the sugar and optional non-iodized salt, and stir until well combined. In a separate bowl, combine themaple syrup with vanilla, then stir in the oil until well combined.3 Add the wet mixture to the dry, along with the chocolate chips, and stir through until just well combined (do not over mix).4 Place large spoonfuls of the batter on a baking sheet lined with parchment paper and flatten a little.5 Bake for 11 minutes, until just golden (if you bake for much longer, they will dry out). Let cool on the sheet for no more than 1 minute (again, to prevent drying), thentransfer to a cooling rack.Yield: 8-10 large cookiesOven Temperature: 350°F
