64Winter Minestrone1 1/2 cups chopped onions5 garlic cloves, minced1 cup diced celery2 tbsp red wine (or sherry)1 tsp non-iodized salt1 cup diced carrots1 cup diced parsnips1 cup chopped fennel bulb1 1/2 cups cubed sweet potatoes2 tsp ground fennel seeds2 tsp dried oregano¼ tsp dried chili flakes1 tsp freshly ground dried rosemary OR 1 fresh rosemary sprig3 cups fresh tomatoes -- chopped or pureed2-3 cups water1/2 cup dry red wine -- (optional)3/4 cup chopped fresh parsley1 1/2 cups cooked drained kidney beans (optional). Note canned beansmay have salt. Check the label, or prepare and cookpackaged beans.Procedure1 In a large soup pot, sauté the onions, garlic, and celery in wine on low heat for 8 minutes. Stir in the non-iodized salt, carrots, parsnips, and choppedfennel bulb. Cover and continue to cook for 10 minutes.2 Add the sweet potatoes, ground fennel, oregano, red pepper flakes, and rosemary and simmer for about 5 minutes. Add the tomatoes, water, and thewine. Cover and simmer for 20 minutes or until all vegetables are tender.3 Add the cooked beans at the end, if using, and top with parsley. Servings: 6

65Yukon Gold & Mushroom Soup2 tbsp oil1 small onion, chopped2 stalks celery, chopped3 cups diced and peeled Yukon gold potatoes (4 large)3 cups stock or Basic Vegetable Broth (page 52)2 small bay leaves1/2 tsp nutmegdash pepper4 cups diced mushrooms (shiitake, button, oyster, chanterelles)2 tbsp fresh parsleyProcedure1 Sauté onion, celery and potatoes, stirring until slightly softened but not coloured.2 Add stock, bay leaves, nutmeg. Simmer 20 minutes until potatoes are done. Discard bay leaves. Purée soup in blender or with hand-held.3 In a skillet sauté mushrooms until no liquid remains. Add to soup and sprinkle with parsley before serving in individual bowls.Servings: 6
