Ask Jefe
Happy new year!
By wayne “Jefe” M. Zamora
i have to say that i had a positive outlook for this
past year and i have an even more positive outlook
for this year! i sit here writing my ‘ask Jefe’ with
over 4 inches of snow outside! i moved south to get
away from the snow now we’ve had snow twice
within a month so far. tonight we expect ice storm,
means that the snow is turning into rain and when
night comes in so the do the lower temperatures
thus turning the rain into iCe! Well i went out to
the stores to buy some food, firewood and some
popcorn. i figured we’re going to be stuck at home
tonight so we might as well do a movie and popcorn
tonight! turning this day into quality family time!
Just sit back and relax.
every year, along with most of the world, losing
weight is one of my New year’s resolutions. to
get us started, we have a healthy recipe from Ms.
sharon Fox, healthy Pasta shells and how to
prepare to run a 5k or 10k by Dr. Judy staveley.
i am going to try a 5k this year. Dr. Judy’s plans
looks very doable! i did go out and buy some nice
running shoes as well but that’s the easy part. i am
amazed at the number of people running marathon.
i see 25,000 plus runners attending the marathons!
it’s incredibly inspiring.
in this issue, we have sevcral Latina beauty Queens.
every time i search for Latina beauty Queens, i
find more than the year before. there seems to be
several Latina pageants throughout the country.
i’ve even seen a Miss Cinco de Mayo pageant. i
would love to attend one of these pageants and take
photos from the beginning to the end.
We have been getting more from our friends in
hollywood and we hope to soon have a permanent
“Latinos in hollywood” page. Now these are
Latinos just making their way into the big screen
so you’ll see many photos of the events they attend
and the networking that they do! Networking is
a very important skill one needs in any business.
of course we’d like to get some celebrities on
the magazine. still in the works is our “Latinos
in Pro sports” page. i hope
to get out to a NasCar
race and meet with Juan
Pablo Montoya, the only and
first hispanic in NasCar
or meet up with N.y. Jets
quarter back Mark sanchez.
be on the lookout next year
for a new NFL quarter back from the university of south
Carolina, stephen Garcia. Video is number one on our
wish list! We’d like to video record the events that we
attend and interview people as well.
We encourage our readers to participate. Please email us
with your family photos, work photos, birthday photos,
etc. if you would like for us to add you to our email list
let us know or if you want to come off the email list, we‘d
like to know that also, even though we don’t really want
that. My email is waynezamora@gmail.com we hope you
enjoy this issue of Latin Connection Magazine. n
to be removed from the mailing list, just reply with reMoVe in the subject line.
Diana ScHoutSen
biography
born in hamilton ontario, Canada
Diana is both Latin american
and Dutch. her parents are both
immigrants in Canada from
honduras and holland. Diana has
her roots in Canada and emulates
the best qualities from her family
and embodies the values of both
cultures from her parents. Due to her
diverse background, she has learned
to embrace different languages and
cultures.
Diana went to ballet school
throughout her education; in
addition, she began a modeling
career when she was sixteen. as a
model and dancer, she demonstrated
a graceful spirit and exceptional
talent. Diana began to study
kinesiology at york university in
toronto for about two years, after
much study she found she needed
some hands on experience in the
clinical field to decide where she
would go next. Diana is now a
graduate of Mohawk College with
a diploma in occupational therapy
and Physiotherapy assistant. Diana
also obtained her certificate as
nutrition and wellness specialist
from Niagara College, which
she uses to educate clients in the
professional clinical setting. she
now plans to pursue and complete
her degree in health and physically
fitness from york university.
as a dancer of 14 years and an
actress of 5 years, Diana actively
pursues a professional career in
the arts. she expresses her creative
side through dance, acting, and
modeling. her one ambition in life
is to be happy while defining her
identity. she strongly believes in the
power of influence, there is always
room to make a difference in the
lives of others.
she credits her parents for
sustaining a fundamental and
nurturing environment for her and
her siblings to grow up in. Growing
up on a dairy farm outlines Diana’s
hardworking abilities and made her
into the strong, self-directed learner
she is today. Country girl at heart,
she is second youngest of five. Diana
fully intends to become a congenial
and sincere woman, while crafting
her own individuality through her
experiences and influencing others
to make a difference.
her appetite for learning about the
world and other issues continues
to drive Diana through volunteer
opportunities. in the past three
years, Diana has kept busy
extensively traveling ontario
and Florida involving herself in
many charitable events. some of
many charities Diana has been
involved in includes: Children’s
fund aka tree of hope, uNiCeF
Canada, the Canadian heart and
stroke foundation, Children’s wish
foundation of Canada, the Canadian
and american cancer society, as well
as the Multiple sclerosis society
of Canada. With much experience,
Diana uses these unifying positions
to enrich her understanding about
the world and other issues to excel
in life.
in 2008, Diana wanted to take her
modeling career to the next level
and has started pageantry. Diana is
breaking barriers through pageants
to promote and raise awareness
about the things that she is passionate
about. her first pageant was the
Miss World Canada pageant held
in toronto, Canada. Diana placed
5 th runner up. she came out of the
experience craving for more. she
then entered Miss Latina Canada
in 2009 and ended up walking
away with the crown. it is Diana’s
country girl sincerity combined
with her striking Latin american
features that managed to captivate
both the audience and judges. as the
new 2009 Latin-Canadian goodwill
ambassador, Diana surely saw how
Miss Latina Canada opened up
many doors for her as she began
to travel extensively and was able
to network in the entertainment
industry. one stop was in West
Palm beach Florida, where Diana
had the opportunity to represent
Canada at local events, news
conferences, guest appearances and
photo shoots. another stop included
L.a, California where she attended
the New york film academy on
a scholarship she had won from
the pageant. this is where Diana
was able to express her love for
acting and take it to the next step
professionally.
hosting came to Diana as she
represented Canada internationally
as Miss Latina Canada. some
hosting jobs Diana was involved
with includes: “the hot spot,” an
esteam Productions as well as Christmas greetings
on Nuevo Mundo television. Diana also hosted
behind the scenes for “the style show,” in 2007 for
dream studios.
Diana feels sheer pleasure spending time camping,
snowboarding, running, and writing. Four of many
hobbies keep her energy and determination constant.
Music, dance, and acting also play a major interest in
Diana’s life; she feels compelled to dance passionately
from the sounds of music, which is driven by emotion
and self-discoveries to express characters through
acting.
sprung from her past experiences and knowledge,
Diana is ready to deliver her words of wisdom and
presence to the world and make an audience look
twice. n
“Miss america unida 2010” where
she won the title, “best Cultural
most proud of is the privilege to
represent all her Latin community.
A Message from Cynthia
i have to thank my mother tere
ricardo Navarro (Pollito!), for
all their support. this opportunity
has open doors for me that i never
and now my goals are, to make it as
the third most beautiful Mexican in
the “universe,” and be successful in
Let’s kick off the new year by learning to
cook and eat in a healthier way! Cooking
healthy is not as complicated as you may
think. it all starts with making smarter
choices at the grocery store. We’ve all
tasted that creamy, rich stuffed pasta at
one time or another. you can still have all
the flavor and creaminess if you make a
few slight changes in the recipe.
to create a lighter, healthier version of
stuffed shells, the standard whole milk
ricotta cheese filling is replaced with frozen
leaf spinach and lowfat cottage cheese or
part-skim ricotta, which cuts down the fat
without sacrificing creaminess!
Heart-HealtHy paSta SHellS
• 1 box (12 oz) jumbo pasta shells
• 2 tsp extra virgin olive oil
• 2 1/2 cups fresh broccoli, chopped
• 1 cup shredded carrots
• 1 small onion, chopped
• 1 clove garlic, minced
• 1 box (10 oz) frozen leaf spinach, thawed and coarsely cut
• 1⁄4 cup chopped fresh basil
• 1 cup lowfat small-curd cottage cheese (2%) or part-skim ricotta
• 2 tbsp grated Parmesan
• 1⁄4 tsp each salt and pepper
• 1 1⁄2 cups marinara sauce
• 1⁄2 cup shredded part-skim mozzarella
heat oven to 400ºF. Cook pasta in large pot of salted boiling water,
drain and cool on baking sheet as box directs.
Meanwhile, heat oil in large skillet over medium-high heat. sauté
broccoli, carrots, onions and garlic 3 minutes or until just tender.
add spinach and 1⁄2 cup water; cover and cook 2 minutes or until
vegetables are tender.
remove cover; cook until liquid is mostly evaporated. from heat;
stir in basil, cottage cheese, Parmesan, salt and pepper. spread
marinara sauce on bottom of 13 x 9-in. baking dish.
spoon 1 rounded tbsp filling into each shell; arrange in baking
dish. sprinkle with mozzarella, cover tightly with foil, and bake 35
minutes until hot and bubbly.
A New Year and a New You
JuDy Staveley, M.F.S., M. Sc., ph.D.
Fitness Editor
Get up and get moving! Make your
life an active one.
you’ve started the New year with
a new gym membership along with
a walking / running program for a
brand new sexy you. Now that you
have made this positive decision
to stay healthy, you are currently
wondering how to stay positive,
motivated or just continue what you
have started. you must set goals
along with rewards to encourage
you on your new journey. Consider
a local race to get you motivated.
a 5k /10k race for this New year
is a exciting way to stay motivated,
accomplish your goal and reward
yourself at the finish line. so how
do we continue what we started and
how do we get to that goal?
as a beginner, you should always
get your doctor’s approval before
getting on a running program. if
you are thinking of running and
haven’t run in several years, don’t
get discouraged when you get
tired easily once you start to ruN.
training must be a gradual build up
along with patience. Patience and
positive thoughts will be needed as
it takes time to run a complete 30
minutes. this preparation for a 5k
race, can take up to ten weeks to get
a full 30-minute non-stop run in, if
you haven’t run in years.
Warm up
start and finish each workout
session with a 5 to 10 minute walk
on the treadmill or outside as a warm
up and cool down. it is biologically
important to tell your muscles to get
moving by stretching and walking.
When you stretch your muscles,
you increase the blood flow to your
muscles and boost the nervous
system, which in turn tells the brain
to contract the muscle faster. these
few minutes of warm up will help
prevent injury.
Which muscles to warm up?
specific muscles should be focused
on before running. these are major
muscles to focus on when stretching
iliotibial band, hamstrings and
along with all the leg muscles.
Beginning a Walk / Run program
start by alternating a run / walk for
about 30 – 40 minutes over a ten
week period for three days a week.
over time, you should build to four
to five days a week with two rest
days. i have inserted a chart table to
guide you for the first ten weeks of
training for a 5k (3.1 mile) run.
remember to stay positive and seek
inspiration during these ten weeks.
Working out should be FuN! Listen
to music, and do this program with
friends or partners.
i will see you at the finish line! n
it’S Gone to tHe DoGS
by bobby Lopez
this year i resolve to “take the
time.” that’s it, no losing weight,
save money, buy this, buy that do
this, do that then resolve all over
again. i’m keeping it simple, i
resolve to take the time. take the
time to: be with my family more, to
do more enjoyable things i like to
do, take the time to be with friends.
take the time to have love, peace
and happiness, that’s it. so take the
time.
this issue, i’m dedicating to my
dogs, Jaxson (a Chitzhu) and Gidget
(a chiweiner). i swear these dogs
are just like my girlfriend and me.
Gidget is the younger more active
dog, while Jaxson is the older wiser
dog. they have taken both of our
characteristics. one wants to play
all the time and zooms though
the living room with no fear, my
girlfriend has the same spirit and
energy and zips through work with
the ease of a trapeze. the older dog
waddles through life with no care in
the world and is very routine in his
way. i waddle through work with
the very routine that has kept my
business afloat for the last 15 years.
both love the outdoor, we both
love the outdoor. Gidget is happy
go lucky with life today, sara has
her moods but for the most part is
happy go lucky, and the older dog
is grumpy and non-chalant and i’m
the same way as i get older. Grumpy
and i might add sleepy, where’s
Dopey in this scene?
My older dog is so much like me,
he’s a DJ dog. he loves when
artists come in and perform live in
studio, he also loves to
watch movies, then he
naps out, just like me.
the other dog, Gidget,
cowers in her blanket
and sara wraps herself
like a cocoon in hers.
these dogs are so like
us, we could trade places with one
another and no one would know the
difference. Can you relate to this
story? and here’s the puncher, i have
never had a dog until we adopted
Jaxson in Plano, texas. i wish i
had grown up with a dog, it would
have given me more responsibility
and learned more about loving and
caring. if your little ones growing
up don’t have a dog, i encourage
you to get them one. they will
become better people in society.
and encourage them to become
musicians, they’ll learn faster and
have a better memory than most.it’s
all about the dogs this time, why?
because i took the time!
My latest venture is bringing up
an internet radio station that will
broadcast from Market square
in downtown san antonio, how
unique is that, more details the next
time we talk. For now, happy New
year and please take the time. n
Undiscovered treasure
here are the lovers, meandering
down the sidewalk, fingers entwined.
there is the reed-like, impossibly
chic woman of “a certain age,”
delicately pawing her handbag to
find her ringing cell phone. a clutch
of office denizens urgently discuss
the details of the latest deal. and
there, observing it all from a seat at
a sidewalk café is a writer. Fueled
by coffee, croissant, and the muse
of a street scene, a page is filled,
then another. and there you are, too.
you can do this in one day, or take
several for a more leisurely pace. but
to really get a sense of place, this tour
concentrates on the neighborhoods
the literati frequented on the Left
bank. once home to penniless
intellectuals and bohemian artists,
the sixth arrondissement is the
current stomping ground of an
its charming galleries, shops, and
boites.
begin by staying at a hotel that
invokes the spirit of that great
age. the Cranes beach house, is
comfortably ensconced on a side
street, but no less opulent for it.
Located a block from the beach and
walking distance to all of the hottest
trendy restaurants and shopping
in south Florida, wide open blue
skies, a local gallery of exceptional
original art, lush tropical gardens and
quaint south Florida architecture
themes come off the magnificent
tiki bars and incredible pools. even
the smaller accommodations are
festooned with sumptuous draperies
and linens, with a reception that has
the most irresistible cookies.
the downtown’s booming art scene
is an experience for the eyes and
the soul! More than 20 galleries
and public art pieces are located
downtown, which includes the
newly redeveloped Pineapple Grove
arts District. Gallery Walks draw
visitors.
the lure of the seine may prove
too much to resist, once glimpsed
from the museum. Give in and stroll
