THE TRIO OF STAC POLLYRESTAURANTS, OFFER LOCALS ANDTOURISTS’ ALIKE, A TASTE OFQUINTESSENTIAL SCOTTISH CUISINE.THE NAME ‘STAC POLLY’ REFERS TO AHIGHLAND MUNRO AND THE MENUCELEBRATES THE PRODUCE OF OURESTIMABLE ‘SCOTTISH LARDER’. MRBITE AND I POPPED ALONG ONEEVENING TO THE GRINDLAY STBRANCH WHICH CONVENIENTLY LIESWITHIN A STONE’S THROW OF THESHERATON, CASTLE, USHER HALLAND LYCEUM THEATRE.I started with the chilled white crab andsmoked salmon salad, sun- bursttomatoes, micro-herbs and saffrondressing (£8.95) and Mr Bite plumped forthe freshly prepared smoked haddockchowder with saffron oil (£6.95). Thefresh smell of both dishes greeted ournostrils and we dived in. The salmon wasfinest quality, flavoursome, rich andsumptuous and stood up to the verydifferent but equally fine, clean, freshflavour of the crab. The cress, watercressand coriander sparkled on the palate. MrBite was pleased with this chowder too,which he declared “a fine, stout, plate ofScottish soup”. It was milky inconsistency with lots of flaky yellow fish,chunks of tattie and chopped syboes.Like the starters, the main courses werepretty, colourful and beautifullypresented. I had the pan-fried supremeof salmon on a pea and mascarponecake with a wild mushroom creamREVIEWSTAC POLLYThe Scottish restaurants(£17.95) and Mr Bite had the dry-searedduck breast, pickled red cabbage, crispypancetta and a star anise and port jus(£18.95). These two dishes resembledsummer and autumn. My salmon was alarge, majestic slab of fish aloft fragrantsummer peas, seared asparagus andgrassy, green beans. A cream sauce,earthy mushrooms, and sweet, saffronoil completed a plate full of texture,interest and flavour. The duck was pinkand plentiful and the jus waswonderfully intense. Like the cabbage ithad just the right balance of sweet,fruity and sharp.Dessert was strawberry shortbread,raspberry sauce and mascarpone (howdo you hide a horse? quipped Mr Bite)cream (£6.95) for me and mango andcoconut cheesecake with a passion fruitsorbet (£6.65) for him. REVIEWTHE GLASSHOUSE OFF THE MILEFine food in a fine locationTHIS RESTAURANT MOVED FROMITS FORMER HOME AT ESKMILLS AFEW MONTHS AGO ALONG WITHCHEF, STEVEN ADAIR. IT NOW SITSIN THE SHADOW OF THE COURTBUILDINGS AND CATHEDRAL IN THEGRADE B LISTED FRASER SUITES.THE STYLE OF THE RESTAURANT, ASTHE PRESS RELEASE STATES, BLENDS“ELEGANT VICTORIAN OPULENCEWITH STYLISH CONTEMPORARYCOOL”. THE AMBIENCE IS TASTEFULAND A FINE SETTING FOR SOMEFINE FOOD.To start my partner had smooth liverparfait, home-made chutney andtoasted wholemeal bread (£5.25). Theparfait had that special contrast ofsmooth, silky texture with dark, intenseflavour; the chutney was spicy and rich.I had Arbroath smokie cracked blackpepper mousse and pickled lemonserved with thyme and garlic crostinis(£5.95). This was a sophisticated,creamy fish mousse; the pickled lemonwas an intense, sweet joy and thecrostinis, moreishly thin and crispy.Main course for me was rump ofPerthshire lamb rolled in cumin saltserved with a confit of potatoes,buttered spinach, pink grapefruit andcoriander jus (£16.95) and my friendchose seared calves liver, crispysmoked streaky bacon & buttered mashwith rich red wine jus (£15.50). My lambwas beautifully tender, cooked pinkand well-seasoned. The potatoes andspinach were soft and delicious andthe jus intense and fragrant. A perfectlyput together plate of food. My partnerliked her liver but thought it couldhave been sliced slightly thinner. Themash was yellow with richness anddelicious with the jus but, slightlyunder-seasoned. Also, less mash andsome spinach or other veg would makethe dish more unisex. Overall though,we thoroughly enjoyed our mains.For dessert I had the banoffee bruléewith coconut shortbread (£4.50) andmy friend had the trio of desserts,banoffee ice cream, cranachan andblood orange pannacotta. The bruleedidn’t really work. The topping wasglassy and good, the cream luscious,but fibrous, tasteless chunks ofanaemic banana spoilt it. JAMIE OLIVER – I ALWAYS WANTTO HATE HIM BUT END UP LOVINGHIM AND I MENTION THIS BECAUSEI FEEL INEXPLICABLY THE SAMEABOUT THE TRIO OF ‘DOG’S’RESTAURANTS. I WANT THEM TOSLIP UP BUT HAVE VISITED THEDOGS. AMORE DOGS AND NOWSEADOGS WITHIN THE LAST YEARAND RATE THEM ALL.For those of you not familiar withthese restaurants, they are all ownedby David Ramsden who is commonlyrecognised as a ‘bit of a character’ anda ‘very good chef’. The concept of his‘dogs restaurants’ is to offer affordableplates of food that are typicallyBritish, Italian or fishy at the threerestaurants respectively,Pushed for time I could only get alongfor lunch recently but left hankeringfor more. I suspect Seadogs willbecome a regular lunch-time hauntfor me and I very much look forwardto sampling the dinner menu.I wanted a selection of dishes but thetwo I chose were so delicious and sofilling that these were all I couldmanage. First up, a seasonal trout patéwith toast (£4.65); an unapologeticplate of delicious brown slop. Noponcy garnish for colour just a bigdollop of ultra smooth pate, rusticcrunchy brown toast and a pool ofrhubarb and black pepper jam. Myonly criticism – three slices of toastREVIEWSEADOGSAhoy me heartiesrather than two please. It was agenerous dish and an extra slice wouldbe sensible.Next a plate of Cullen Skink (£4.50); Ithink you can judge a cook orrestaurant on their Cullen Skink andthis one was just as it should be;hearty, comforting and unpretentiouswith nice flakes of yellow haddock,chunks of potato and slithers ofcolourful vegetables. Simple but good.Dessert didn’t really appeal; deepfried chocolate cake and apreponderance of ice cream failed toexcite me. Lots of other lunch-timeofferings did appeal though, such asfish and chips in beer batter oroatmeal, mushy peas and tartaresauce (£4.50-£6.50 depending on thetype of fish), chickpea, apple andfennel salad (£3.50) and troutsandwich with spiced veg crisps(£4.50). Theskies were blue with no sign ofominous ash and it was warm enoughto sip a glass of wine on the outdoorterrace whilst drinking in the beautifuland ever changing panoramic views. Aswim and a sauna was next on the ‘todo’ list and we indulged ourselves. Afull range of beauty treatments areavailable and complimentary robesmean you can relax entirely for theduration if that is your wish. Note thatno under 18’s are allowed at Knock.There are two restaurants, the Oakwhich exudes grandeur and the afore-13

We ate in therooftop restaurant andenjoyed the fixed pricedinner menu for £30.I started with beefCarpaccio with blue cheesecream and my partner hadthe prawns and smokedsalmon salad. The salmonwas good quality and mybeef was very good. Theblue cream cheese howeverwas as uninspired as was theprawn salad.Main courses lifted the barconsiderably. My partner loved heroven-roasted breast of corn-fedchicken with thyme mash, creamedSavoy cabbage and parsnips. I had toagree; the chicken was succulent anddelicious, the mash a revelation andthe cabbage cooked perfectly to alovely bright, al dente, green. Sheinformed me that the parsnips werethe best she had ever tasted but Ididn’t get a look in there. I had pansearedfillet of sea bass with butterednew potatoes, sautéed spinach andchar-gilled asparagus spears. The twoseasonal veg were cooked toperfection (they are good withvegetables here) and the fish wasequally tasty and moreish.Desserts had a lot to live upto and didn’t make thegrade. I had a banana crèmebrulee with shortbread. Thelatter was chunky, homemadeand very good butthe brulee didn’t have therequired glassy topping. Myfriend had saffron poachedpineapple and mangosorbet which was a slightlydisappointing ‘ok’. Thebottle of Rioja from Riscalwe drank with our meal wasa joy (£33). My quest was answeredwhen I walked into AppellationWines on Dalry Road in Edinburgh.This little wine store was opened inNovember 2009. Ashton McCobbowns the store and does 100% of thebuying. He has sourced fabulous winefrom all over the world and has anamazing selection of wines fromAlsace.After pursuing the shelves I decidedon two reds. A Los Condes fromSpain and a Merlot from SonomaCounty, California.The Los Condes wine took me backto the early days of my career in thewine business. You could get it backthen for about £2.50 per bottle. Iused to buy cases of the stuff. At£6.80 per bottle I thought I wouldgive it a try for old time’s sake.Wonderfully surprised, it didn’t letme down; it was bold, fruity withsolid structure and light tannins. WellWINEAPPELLATION WINESworth the money.The second wine that made it to mybag was a wonderful Sonoma CountyMerlot from De Lyeth. I loveCalifornian wines, maybe becausemost of my wine knowledge camefrom spending time in the Napa andSonoma regions. It has been astruggle to find great Californianwines in Scotland. I think availabilityis light on this one, but at £10 it isgreat. Deep fruit, layers of oak, andneat, tight tannins that tie it alltogether. Yum!So if you are tired of the supermarketand majestic journey, take a trip overto 43 Dalry Road. Here I was minding my ownbusiness when this gentleman cameinto the store, where I happened to be,with a bottle under his arm andgenerously offered to share thebottom half of the bottle with thestaff of the said store.I have to say that I was a littlegobsmacked. For starters, I would havecomfortably consumed the bottle notthinking of anyone in the world, letalone who I might share the bottomhalf with. And secondly, who wouldtake the time to age such a fine vintageand then not share it with his or hersnearest and dearest?We tasted this fine specimen of a winewith that dazzling black label andunmistakable gold emblem and writing.I have to say it stood up to my finestideals. It was beautiful, elegant, earthy,lightly tannic, the fruit was fading butstill showed that it once was bountiful.The wine still showed structure andpure elegance. Here I was, quietly inthe corner, tasting a piece of winehistory. I was thrilled and overjoyed.The kind man left and we thanked himprofusely for his generosity. I am notsure if he realised what this meant. Tome it was a single stroke of purekindness. No, he did not save anyone’slife, he did not cure cancer, but whathe did; He shared a 1990 ChateauPalmer. BODA BAR IS ONE OF A QUARTETOF QUIRKY BARS THAT BEAR THEDISTINCTLY SCANDANAVIANHALLMARK OF ANNA AND MIKECHRISTOPHERSON. ALTHOUGHMUCH SMALLER IN SIZE THAN ITSMORE WELL KNOWN ‘SISTER’JOSEPH PEARCE’S, IT TOO IS ABOHEMIAN HAVEN IN THE HEARTOF LEITH.Anyone could be forgiven for thinkingthat with its entrance right on thecorner of Leith Walk and Lorne Street,this is a standard Leith boozer.Thankfully they’d be wrong. Sportingdécor that could best be described asshabby chic (the deer’s head wearing aStar Wars storm trooper mask certainlycatches the eye), Boda oozes charmand is one of those bars it is impossiblenot to feel comfortable in. And themusic, well any bar that plays bothLeonard Cohen and Bic Runga is wellworth a visit. And since they use thenearly limitless music database Spotify,they love to take musical requestsfrom clientèle.The selection of drinks also mirrors thenorthern European feel of the place.Here you can get Idun’s Swedish cider(try the fantastically refreshingelderflower), O P Anderson Akvavit (agreat digestif), and two of my favouriteflavoured vodkas – Aivy and Cariel.Aivy is a wonderful blend of pear,strawberry and mint and Cariel is oneof the best vanilla vodkas on theCOCKTAILSBODA BARThe Swedish setmarket. They also stock an interestingrange of rums and a decent (and wellpriced) selection of wines.For those who like their cocktails, goalong on a Thursday when you’ll findit’s, strangely enough, CocktailThursday. During the evening some oftheir cocktails are on offer at £3.50each. Although limited in choice, theseare exceptionally good value and thereis always something tempting on themenu.On our visit we tried the Koko Loco,the Apple in 1’s Eye and theCosmopolitan. 18COCKTAILSTEQUILA OCHOMaldita tequilas finos!TEQUILA OCHO IS THERESULT OFCOLLABORATION BETWEENA THIRD GENERATIONTEQUILERO FAMILY, THECAMERENAS, AND TOMASESTES, THE ‘AMBASSADOROF TEQUILA TO THEEUROPEAN UNION;. THERESULT IS SOMETHING NEWAND EXCITING: FANTASTICSINGLE ESTATE TEQUILASSHOWING TERROIR ANDVINTAGE. BOTH WORK FORAGAVE.Each year the agave for the tequilascomes from different estates or“ranchos” in Ariandas, Jalisco. As theseranchos are at different altitudes withdifferent soils, different micro climatesand the agaves are harvested at slightlydifferent ages, the results are subtlydifferent tequilas, many of which willundoubtedly be collectable in thefuture. Just now, however, they aregreat tequilas, either for drinking ontheir own or for making cocktails.Each bottle is labelled with the year itwas produced and the exact field theagave was sourced from. To reallyappreciate the character of each, trytasting them in a small wine goblet or asherry glass and forget the salt and thelime.Take the latest blanco for instance.'Cerrito de San Augustin' 2009 comesfrom a hilly landscape with a deep rediron oxide soil. This is aclassic blanco, peppery withstrong agave flavour givingway to smooth creamy fruit.It makes wonderfulmargaritas, such as thefollowing two, and will bewell worth keeping. TheCamerenas have said theywill not be leasing the landthe agave was grown inagain so it really is a one off.Ocho Margarita – A subtle variationof the classic that highlights thewonderful agave flavour of OchoBlanco 'Cerrito de San Augustin' 2009.Shake 50mls of the Ocho, 12.5mls oftriple sec, 12.5mls of Kings GingerLiqueur and 20mls of fresh lime juiceover ice. Strain into a salted margaritaglass and enjoy.A Peach of a Margarita – Thismargarita shows the versatility ofOcho, working well with the flavoursof ginger, peach and just a hint ofcitrus. Shake 37.5mls of Ocho Blanco'Cerrito de San Augustin 2009, 10mls ofKing’s Ginger Liqueur and 25mls of RinQuin Quin de la Peche (a peachvermouth from France) with a fewdrops of grapefruit bitters. Strain into amargarita glass and garnish with alemon twist.If you like your tequilas slightly aged,then try the El Carrizal' 2008. This is a

tequila with strong agave flavours,tempered with floral notes, a slightsweetness and hints of oak as a resultof the aging. In onemetal tankard, pour 37.5mls of OchoReposado 'El Carrizal' 2008 and 25mlsof King’s Ginger Liqueur. In anothermetal tankard, pour 50mls of boilingwater and a few drops of lemonbitters. Light the Ocho mixture andpour into the other tankard (whilst stillalight). Pour back into the emptytankard and repeat. When the flamehas been extinguished, pour into an oldfashioned glass and serve with agrapefruit twist.As ever the best hasbeen left to last: theOcho Anejo 'El Vergel'2007. To reallyappreciate this tequilatry it on its own in asherry glass. Again theagave is distinctivewithout beingoverpowering, but whattruly makes this a greattequila is the richsweetness, the darkchocolate, the vanillaand the well-balancedoakiness. BY CHRISTMAS, A NEWPRODUCT ARRIVED ON THE SHELVES,PITCHED PRETTY MUCH DIRECTLY ATTHE SECTOR OF THE MARKET WHICHHAD PREVIOUSLY ABANDONED THEBREEZER, IN FAVOUR OF PEAR CIDER:Crabbies Alcoholic Ginger Beer has beena bit of an instant hit. Backed by cannymarketing and aggressively pushed inthe on-trade, it is now the sugary boozeof choice for progressively more people.Unfortunately, it no longer has anythingto do with old Crabbies and bondedwarehouses in Leith; it now exists purelyas a brand owned by HalewoodInternational, a company whichspecialises in alcopops whose biggestproducts are WKD & Lambrini. It is thisfact, rather than any fault in the drinkitself, that has lead many in the trade todismiss it as just another novelty hooch.It is an attractive golden straw colour,with a surprisingly assertive nose ofyeast, herbs and cardamom pod. Thepalate is initially as sweet as a cola, richwith flavours of raisin & molasses, butdies quickly while leaving a sticky,honeyed sensation in the mouth.I would hesitate to call it a beer since itis not brewed from malted barley, but ifwe have to classify it as an alcopop it iscertainly one of the more digestible.As an alternative, I urge you to give theWilliam’s Brother’s Ginger a go. This is aproper beer from a proper Scottishbrewery.It is paler in colour than the Crabbies,but throws a decent head with nicecreamy foam. The nose has sweetaromas of fudge & digestive biscuit. Thepalate is much drier, more grown upwith a very zesty bite of tart lemon. Theginger dominates the finish with apeppery burn akin to that found in aJamaican ginger beer.Both are impressive as mixers, especiallywith rum. They are both of around 4%a.b.v. and are reasonably priced. WHAT’S IN SEASONELDERFLOWERSA COUPLE OF YEARS AGO, MYHUSBAND MADE ELDERFLOWERWINE. IT TASTED LIKE FLORALWHITE SPIRIT AND,UNFORTUNATELY, PRODUCED ATOXIC HANGOVER. SO, IT IS WITHTREPIDATION THAT I APPROACHTHIS MONTH’S SEASONALOFFERING.But there’s something about the uniqueblossomy, sweet yet tangy taste ofelderflowers that signifies the start ofBritish summer time, so I’ve resolved togive this humble plant another chanceto impress. There must be somethinggood about it – it’s been revered for itshealing properties and ability to wardoff evil spirits for centuries. It’s alsorumoured to relieve the symptoms ofboth asthma and flu.Freshly picked flower heads from yourgarden, the local park, or even by theroadside can be deep fried in batterand served with ice cream or added toa glaze for a succulent joint of roastlamb. For the more adventurous, tryelderflowers stewed with gooseberriesand white wine as a sauce for mackerelor herring.Left to ferment naturally, elderflowerscan be turned into a very Britishversion of Champagne; however, aftersampling one homemade wineoffering, I’m not going to recommendyou try it! This non-alcoholic cordial isprobably a safer bet, but I might just betempted to add it to a martini if themood takes me.27Elderflower Cordial(Makes around 2.5 litres)2.5 kg white sugar35 elderflower heads2 litres water3 lemons100g citric acid (available fromchemists and brewing shops)Slowly bring the sugar and water to theboil in a large pan.Meanwhile, check the elderflowerheads for any bugs or bits and piecesand remove them (there’s no need towash them). Place them in a large bowl.Zest the lemons and sprinkle this overthe flowers, then quarter the lemonsand add them to the bowl.When the sugar syrup is boiling, stir it tomake sure all the sugar is dissolved anduse a ladle to pour it over the flowers.Stir in the citric acid and cover with aplate or tea towel. Leave the mixtureovernight.The next day, strain the cordial throughsome muslin or a very fine sieve andpour into glass bottles.And there you have it, a taste ofsummer that will last all year.
