CHIA OMEGA 3 BOOSTED FISH CAKESThese nutitious fish cakes combine potato, cauliflower and ground chia seeds to producebeautifully light and flavoursome fish cakes you will love.Ingredients400g desiree potatoes, scrubbed400g cauliflower, trimmed and cut into florets200g piece hot smoked salmon1 red chilli, chopped finely½ tsp lemon rind1 tbs lemon juice3 shallots, finely sliced2 tbs ground chia seed½ cup chopped coriander2 tbs sunflower oil to cookMakes 16 small pattiesMethodCut the potatoes into quarters and cook for 20–25minutes until they are soft. While the potatoes arecooking, steam the cauliflower for 12–15 minutesuntil it is tender.Mash the potatoes and transfer them to alarge bowl.Place the cauliflower in a food processor with thesalmon, chilli, lemon rind and lemon juice andprocess until the mixture is well combined butretains some texture.Transfer to the bowl with the mashed potatoesand add the ground chia, shallots and corianderand mix until the mixture is well combined. Usingyour hands form small patties approximately 6cmin diameter.Heat a non stick pan with a little sunfloweroil and cook the patties for 3–4 minutes on eachside.
