Leaves): Discard any imperfect<br />

leaves. Top each leaf with 2 tbsp.<br />
of the meat mixture. Roll up.<br />
Fasten together with toothpicks.<br />
Brown in savory fat adding %<br />
tsp. sugar.<br />
When browned all over, baste<br />
with 2 c. meat stock or 1 (10 V<br />
oz. > can concentrated beef bouillon<br />
diluted with % c. water.<br />
Cover. Slow-braise 50 min. Re-,<br />

imove the toothpicks.<br />
The Gravy: Add 1% tbsp. flour!<br />
to the liquid in the pan and stir;<br />
.until smooth.<br />
Then stir in 2-3 c. undiluted<br />
evaporated milk or dairy sour<br />
cream. Cook-stir until boiling.<br />
Reheat the cabbage rolls in the<br />
gravy. Garnish with chopped pars- 1<br />
ley.<br />
Maryland Spoon Bread (Happy<br />
Memory Food to Hosts of Southerners*:<br />
In a qt.-size baking<br />
dish, combine 1 c. fine enriched<br />

cornmeal, 2 tbsp. bacon drippings.<br />
Gradually beat in 1 c. boiling water.<br />
Cool.<br />
Add 2 well-beaten eggs, 1 c.<br />
• buttermilk or sour milk and ^<br />
tsp. baking soda dissolved in 2<br />
;tsp. cold water. Beat thoroughly.;<br />
Bake 30 min. in a moderate<br />
oven, 325 degrees-350 degrees F.<br />
Note: If using sweet milk add<br />
2 tsp. double-acting baking pow-j<br />
der instead of the baking soda.'<br />
