Forward by John RobbinsJohnRobbinsAmericans today spend a smallerpercentage of their income on food thanany people in the history of the world, andalso a smaller amount of time preparingit. We think of that as an achievement anda blessing. But it’s not widely recognizedthat, thanks to misguided farm bills, it’sprimarily unhealthy foods like feedlot meat,sweetened beverages, and processed foodswith added sweeteners and fats that arecheap.We need to ask, what is the real costof this seemingly cheap fast food? Theagricultural systems producing them aredestroying rural communities, pollutingour water, eroding our topsoil, causingincredible suffering to animals, emittinggreenhouse gases at egregious rates, andgiving most of us toxic levels of nutritionalstress. The Centers for Disease Controlestimate that more than one out of everythree children born in the U.S. today willdevelop diabetes as a result of the food theyeat. We are paying a terrible price for ourseemingly cheap food.How can we break the cultural tranceand overcome the political cowardice thatpermits industrial fast food and factoryfarms so much control over both nationaland state food policies, and ultimately, overwhat most of us eat? How can we obtainfoods that are truly nutritious, affordable,and produced in a sustainable way?We need desperately to move toward ahealthier, more humane and more earthfriendlyagriculture and cuisine. What would happen if more Americanswere to eat plant- strong diets, and deriveas many of their nutrients as possible fromhealthy plant foods? We’d stop overeatingunhealthy foods. We’d be eating foodswith higher nutrient densities and cancerprotective properties. We’d have a moreaffordable, sustainable and effective healthcare system. We’d be less dependent oninsurance companies and doctors, andmore dependent on our own health-givingchoices.Here’s where our power lies: We canmake healthy choices as individuals, asfamilies and as a society.
