The <strong>Brix</strong> scale canvary by industry, either by scale or referencetemperature. Coriolis mass flow meters arebeing used in process applications to measuredegrees <strong>Brix</strong> as it correlates to density.Customer profileDegrees <strong>Brix</strong> has been used as ameasurement of the percent dissolvedsucrose in the food industry for years. Aten percent degrees <strong>Brix</strong> would equal tengrams of sucrose dissolved in 100 grams ofwater.Typical handheld, bench and in-linerefractometers or hydrometers are oftenemployed in the food industry to producea measurement of dissolved sugar <strong>Brix</strong> todetermine product quality or grade.Refractometers measure dissolved sucroseonly and do not take into account theamount of insoluable solids, minerals,pulp or sugars present in solution whenproducing a measurement. This can lead toa disagreement between the measurementproduced by a Coriolis mass flow meter andthat produced by a refractometer.Application descriptionSeveral degrees <strong>Brix</strong> measurement scalesexist in the food industry.The ICUMSA (International Committeefor the Uniform Measurement of SucroseAnalysis) produces a table used to gaugecane and beet sugar solution concentration.This table is referenced from 10 to 80degrees C.The Orange Juice Industry must conform toUSDA requirements. They have specifiedranges of <strong>Brix</strong> which relate to SingleStrength Equivalent (SSE) or concetratedjuice which differs from the ICUMSA table.The measurement scale for Orange juicevaries from 8.5 to 70 degrees <strong>Brix</strong>. Further,the product is graded by a <strong>Brix</strong> to Acid ratioand is usually corrected to 20 degrees C.The Tomato Industry uses multiple tablespublished by the NFPA for “sugar scale”or refract index for grading juice, paste,ketchup, and pulp products correlated at 25degrees C. The tomato tables also differfrom the ICUMSA table used for cane andbeet sugar.Application challenges<strong>Brix</strong> or sugar scale measurement mustalways be referenced to the proper tableand temperature.Since a Coriolis meter measures actualdensity, the measurement of degrees <strong>Brix</strong> orsugar content can be fouled by:measurements performed to the wrongreference temperature or scale, nottaking into account the effects of totalsoluable solids (TSS) and insoluablesolids (pulp, minerals andundissolved sugars), or failure to usethe proper expansion coefficient forcorrection of the measurement to adifferent reference temperature.Instrument usedPROline <strong>Promass</strong> <strong>83F</strong> with custom concentrationfunction.Previous instrumentRefractory, densitometer, hydrometer orcompetitor Coriolis mass flow meter.


Measurement resultsThe Endress+Hauser <strong>Promass</strong> Coriolis massflow meter has been used in multiple foodindustry applications for the measurementof degrees <strong>Brix</strong>.The Coriolis measurement results are accurateto 0.0005 grams/cc or +/- 0.05 sugarscale with a high degree of repeatability.Since the Coriolis meter is a multi-variablemeter, it can produce simulataneous measurementof mass or volume flow, customdensity, and temperature all in one unit.Instrument descriptionPROline <strong>Promass</strong> <strong>83F</strong> is a dual tube Coriolismass flow meter with exceptional accuracyand suitable for hygenic applications.
