Pecan Pie
2 Pies
6 eggs each
3 cups sugar, granulated
1 ½ teaspoons salt
½ cup butter
3 ¾ cups corn syrup, dark
2 cups pecan halves
2 each vanilla beans
2 each 9 inch pie crust
Beat the eggs with the sugar and salt until foamy.
Add the butter and stir in the corn syrup gradually.
Fold the pecan halves into the mixture and add the vanilla.
Pour the mixture into prepared pie shells and bake at
350° F for about 40-50 minutes or until the filling is set.
