EACH WHISKEY TAKES A LONG JOURNEY<br />

TO GET TO YOUR GLASS – SO PREPARE<br />

YOURSELF TO ENJOY<br />

The Glass<br />

Sip whiskey in a classic whiskey tumbler or snifter.<br />

Experts consider the Glen Carin glass the official<br />

whiskey glass as it brings out the full aroma. With<br />

increased popularity and as our recommendation<br />

<strong>for</strong> enjoying whiskey, Glen Carin glasses are<br />

Drinking Temperature<br />

Whiskey should not be consumed too cold or too<br />

warm. The smell and the exquisite taste of these<br />

unique products are adversely affected by extreme<br />

temperature. The best temperature to enjoy your<br />

whiskey is between 64 and 68 degrees Fahrenheit.<br />

Whiskey with Water<br />

Drinking a glass of refreshing water with your<br />

whiskey is always recommended. A tiny added<br />

splash of water is especially important when<br />

enjoying a cask strength whiskey. The purpose<br />

is to increase the clarity of the taste and to<br />

round out the flavor on the palate.<br />

Whiskey on the Rocks<br />

Many experts condemn whiskey on the rocks as a<br />

mortal sin. And, it is true, in many cases, ice cubes<br />

are not beneficial <strong>for</strong> whiskey. However, you can<br />

add ice if the whiskey is served too warm. In<br />

that case, to preserve flavors in the whiskey while<br />

bringing it down to the optimal temperature,<br />

put one ice cube into the glass, swirl it around<br />

thoroughly, and use a spoon to take it out again.<br />

Tasting<br />

The sequence of tasting whiskey is<br />

straight<strong>for</strong>ward. First, look at the color and<br />

consider the age and type of cask in which the<br />

whiskey has matured. Next, slowly bring the glass<br />

to your nose and take in the bouquet. It is better<br />

to sniff a couple of times than to take one deep<br />

breath.<br />

Now it is time to taste. As you take a drink, draw<br />

a small breath in through your nose to bring in a<br />

depth of flavors. Pull the sip through your mouth<br />

slowly, covering your entire palate in order to get<br />

the full flavor range of this exceptional creation.<br />

Appreciate the whiskey by holding it in your<br />

mouth one second <strong>for</strong> every year it’s been aged.<br />

Take your time and slow down and taste awhile.<br />

Whiskey History - A Brief Overview<br />

EVERY WHISKEY INVOLVES<br />

CRAFTSMANSHIP, PASSION,<br />

LOVE, AND MORE THAN<br />

500 YEARS OF TRADITION<br />

There are many rumors about when the first<br />

whiskey was distilled and by whom. Here’s<br />

a short history, with a timeline of world<br />

events to clue you into the time period.<br />

<strong>14</strong>94 JOHN COR, a monk living in<br />

Lindores Abbey in Scotland, receives barley<br />

malt in order to produce aqua vitae or uisge<br />

beatha, a malt whisky. – Columbus starts his second<br />

voyage to the Caribbean.<br />

1608 THE IRISH “COUNTIE OF<br />

COLRANE” is granted a license to distill<br />

whiskey. – Galileo constructs astronomical telescope.<br />

1644 THE SCOTTISH KING imposes<br />

a tax on whisky to finance his wars.<br />

– Antonio Stradivari, the legendary violin maker, is born.<br />

1789 ACCORDING TO LEGEND,<br />

preacher Elijah Craig is the first man who<br />

distills whiskey in the United States of<br />

America. Later on, as an outcome, the<br />

tradition of bourbon develops. – The French<br />

Revolution starts with the Storming of the Bastille.<br />

1823 AFTER MANY FAILED<br />

ATTEMPTS, the new “Excise Act” once<br />

again tries to unify the tax on whiskey in<br />

Scotland and Ireland. The tax gains more<br />

acceptance later and becomes the foundation<br />

of the whole industry. The first distiller to<br />

acquire a license is George Smith of Glenlivet.<br />

– Mexico becomes a republic.<br />

1829-30 THE SCOTSMAN ROBERT<br />

STEIN and the Irishman Aeneas Coffrey<br />

invent the continuous still, also known as the<br />

“Coffrey Still.” This new <strong>for</strong>m of distillation<br />

is very economic and revolutionizes whiskey<br />

production. – Andrew Jackson is elected the 7th<br />

President of the United States of America.<br />

1853 ANDREW <strong>US</strong>HER offers an “Old<br />

Vatted Glenlivet.” He is regarded as the father<br />

of a new type of whisky, the blended scotch,<br />

which blends pure malt whisky with an<br />

innovative grain whisky. – The Crimean War<br />

breaks out.<br />

1879 PHYLLOXERA, which appeared<br />

<strong>for</strong> the first time in 1863, destroys almost<br />

all European vineyards, causing brandy<br />

production to halt. Scottish whisky merchants,<br />

such as John Buchanan (Black & White), the<br />

Walkers from Kilmarnock, and the Dewars<br />

(White Label), recognize their opportunity and<br />

create whisky brands that are still very popular<br />

today. Blended scotch becomes the most<br />

sought-after drink worldwide. – Woolworth’s opens<br />

its first store.<br />

1898 THE BANKRUPTCY of the<br />

Pattison Brothers puts the entire scotch whisky<br />

industry at risk in the middle of a boom when<br />

many new distilleries have just been built.<br />

– The patent <strong>for</strong> the Zeppelin is registered.<br />

1909 THE ROYAL COMMISSION<br />

decides that all three types of whiskey – malt,<br />

grain, and blended – are allowed to be called<br />

“whiskey.” – American businessman HG Selfridge opens<br />

a department store in London.<br />

1915 A MINIMUM STORAGE PERIOD<br />

<strong>for</strong> whiskey is stipulated. The minimum is<br />

three years. – Albert Einstein postulates the theory of<br />

relativity.<br />

1920-33 PROHIBITION PREVAILS<br />

IN THE UNITED STATES, which has a<br />

huge impact on global whiskey production.<br />

1923 MASATAKA TAKETSURU returns<br />

to Japan after his years of apprenticeship in<br />

Scotland, amongst others at the Lagavulin<br />

distillery on the island of Islay. He builds the<br />

Yamazaki distillery <strong>for</strong> Torii Shinjiro. – George<br />

Gershwin composes Rhapsody in Blue.<br />

1963 WILLIAM GRANT & SONS starts<br />

to sell its “Glenfiddich” as the first single malt<br />

worldwide. – John F. Kennedy is assassinated in Dallas.<br />

1969 THE GLENFIDDICH<br />

DISTILLERY in Dufftown opens the very<br />

first visitor center. – Apollo 11 was the first manned<br />

mission to land on the moon.<br />

1989 JOHN TEELING starts his Cooley<br />

Distillery and increases the number of Irish<br />

distilleries to three. – The Iron Curtain in Europe<br />

comes down.<br />

1995 THE ARRAN DISTILLERY<br />

opens in Lochranza on the island of Arran. –<br />

YAHOO! is founded in Santa Clara, Cali<strong>for</strong>nia.<br />

2008 THE EUROPEAN UNION<br />

stipulates a binding whiskey definition. – The<br />

Summer Olympic Games XXIX takes place in Beijing,<br />

China.<br />

2015 THE TEELING WHISKEY<br />

DISTILLERY opens its gates in Dublin.<br />

Production – What Characterizes a Good Whiskey?<br />

TO DISTILL A PERFECT WHISKEY,<br />

THERE IS AN AIR OF MYSTERY<br />

A classic malt whiskey is distilled from<br />

malted grain. This means the grain is soaked<br />

be<strong>for</strong>e it is allowed to germinate. Afterwards,<br />

the grain is dried on a kiln floor by means of<br />

heated air and sometimes also peat smoke,<br />

which creates the smoky or peaty flavor that<br />

characterizes some whiskeys.<br />

Next, the resulting malt is mashed and turns<br />

into a sort of whole-grain flour, which is<br />

called grist. Then, the grist is washed out<br />

in hot water and produces a white liquid<br />

consisting of water and starch.<br />

For further processing, the light, beer-like<br />

alcohol is distilled twice in a still and is then<br />

called wash. In Ireland, it is usually triple<br />

distilled.<br />

By law, the resulting whiskey has to age <strong>for</strong> at<br />

least three years in wooden casks. After this<br />

maturation period, it is diluted to its bottling<br />

strength, chill filtered, and bottled.<br />

This liquid, referred to as wort, is fermented<br />

with yeast in large vessels called washbacks.<br />

Essential Definitions<br />

FROM AGE TO<br />

STRAIGHT WHISKEY<br />

AGE<br />

A whiskey has to age at least three years in<br />

wooden casks. In the United States, it must<br />

age at least two years and in oak casks. Malt<br />

whiskey usually ages a lot longer. The age<br />

statement on the label always marks the<br />

youngest whiskey in the bottle.<br />

AMERICAN WHISKEY<br />

Typically bourbon, although rye and other<br />

single malts are produced in small distilleries<br />

in the United States.<br />

ANGEL’S SHARE<br />

The content of a cask that has evaporated<br />

during the aging process. In Scotland, it<br />

is estimated that 2% of the total content<br />

evaporates per year.<br />

BLEND OR BLENDED WHISKEY<br />

A blend is a mixture of different whiskeys<br />

comprising a high share of a single grain<br />

whiskey and a smaller share of different<br />

single malts.<br />

BOURBON<br />

An American whiskey, traditionally made<br />

in Kentucky, which has to be composed of<br />

at least 51% corn and aged in new, white<br />

American oak, charred barrels. Please, also<br />

see Page 28.<br />

CASKS<br />

In Scotland and Ireland, whiskey is generally<br />

filled into used casks. The majority are<br />

bourbon casks (barrels or hogsheads). Sherry<br />

casks are also very popular. Additionally, the<br />

use of <strong>for</strong>mer wine casks, <strong>for</strong> example port or<br />

other dessert wines, has increased.<br />

CASK STRENGTH<br />

The level of alcohol by volume that the<br />

whiskey has reached naturally after its<br />

maturation period.<br />

CHILL FILTERING<br />

It is a method <strong>for</strong> removing fatty acids<br />

in order to remove residue. It is rather<br />

controversial because this process is believed<br />

to sometimes affect the taste of the whiskey.<br />

When possible, we select non-chill filtered<br />

whiskeys at 43% volume.<br />

FINISHING<br />

Since the 1990s, finishing is a common<br />

method of pouring whiskey into a second<br />

cask after its maturation in the first cask. This<br />

process is called second maturation and the<br />

resulting malts are referred to as Doublewood.<br />

GRAIN WHISKEY<br />

Grain whiskey can be produced from any<br />

grain. Mostly, it is produced on a large scale<br />

and used <strong>for</strong> large, international whiskey<br />

brands because of its soft and appealing<br />

nature. Yet, if a good single grain whiskey<br />

ages <strong>for</strong> 20 or more years, it develops a<br />

fascinating flavor. Hence, aged single grain<br />

whiskeys are a market trend today. Please,<br />

IRISH WHISKEY<br />

Ireland possesses a long tradition of whiskey<br />

production. One specialty is that almost all<br />

Irish whiskeys are distilled three times. Highquality,<br />

handcrafted single malts from Ireland<br />

are very popular at the moment. Please, also<br />

see Page 20.<br />

ISLAY<br />

An island of the Inner Hebrides of Scotland<br />

with eight active distilleries currently. This<br />

island became famous because of its very<br />

distinctive, peaty, and smoky whiskies.<br />

MALT<br />

Malt is gained from barley in a complex<br />

process. The mash of malt whiskey has<br />

to consist of <strong>10</strong>0% barley malt.<br />

SCOTCH WHISKY<br />

The following five variations can be<br />

distinguished according to the Scotch <strong>Whisky</strong><br />

Regulations 2009:<br />

Single malt: A malt whisky that originates<br />

from just one distillery.<br />

Single grain: A grain whisky that originates<br />

from just one distillery.<br />

Blended scotch: A mixture of malt and grain<br />

whisky.<br />

Blended malt: A mixture of different single<br />

malt whiskies.<br />

Blended grain: A mixture of different single<br />

grain whiskies.<br />

SINGLE CASK<br />

If just one cask of a selected whiskey is filled<br />

separately, it is referred to as single cask.<br />

SPEYSIDE<br />

More than one-third of all Scottish distilleries<br />

are located in this region. As such, it is the<br />

core area <strong>for</strong> scotch. Please, also see Page 16.<br />

STRAIGHT WHISKEY<br />

This term is used in the context of bourbon,<br />

and it means “single whiskey.” It is a whiskey<br />

that is unblended and produced in just one<br />

distillery.<br />

THE ISLAND<br />

Scotch whisky (Scots don’t use the “e” in whisky) is<br />

the classic whisky of all whiskies. Nowhere else is the<br />

variety of whiskies as splendid and fascinating as it is<br />

in Scotland. Here is a brief overview of the different<br />

whiskies according to their region.<br />

THE SPEYSIDE<br />

Alongside the river Spey in the middle of the Scottish<br />

Speyside area are 48 active whisky distilleries. As<br />

such, it is the heart of whisky production in Scotland.<br />

Some of the most classic and renowned single malts<br />

originate from this region. Here, the main focus<br />

“Brothers in Arms” Irish Single Malt<br />

Whiskey, <strong>14</strong> years, 43% vol.<br />

Jack and Stephen Teeling, famous Irish whiskey<br />

specialists, together with VOM FASS, chose a<br />

splendid single malt, the “Brothers in Arms”. It’s<br />

a marriage of aged Irish single malt whiskey, some<br />

matured in sherry butts and some in bourbon<br />

casks. The result is a balancing act between two<br />

cask types with toffee, caramel, and nuts all<br />

fighting <strong>for</strong> attention with a long spicy finish.<br />

There are quite a few reasons not to drink<br />

whiskey neat; a delicious cocktail is one of<br />

Ingredients: Serves 1<br />

• 2 oz. VOM FASS Irish Single Malt Whiskey<br />

• ½ - 1 oz. lime juice (depending on how sour<br />

you like it)<br />

• 1 oz. VOM FASS Fassmix Grenadine<br />

Directions:<br />

1. Put all of the ingredients together with ice<br />

cubes into a shaker, and shake thoroughly.<br />

2. Next, sieve the cocktail into a suitable glass<br />

(preferably a martini glass).<br />

Until recent years, nobody in the<br />

whiskey market was talking about<br />

so-called grain whiskey. It was<br />

simple and treated rather poorly.<br />

It was considered to be good<br />

enough to build the boring base<br />

of big brand whiskeys and then<br />

enhanced by high-quality malt<br />

whiskeys. Time to rethink.<br />

Today’s grain whiskeys can be very favorably<br />

compared to a malt whisky if they are refined by<br />

experts or matured <strong>for</strong> decades. At VOM FASS,<br />

we have used our excellent relationships to offer<br />

you unique single grain whiskeys!<br />

“Against the Grain” Irish Single Grain<br />

Whiskey, 5 years, 40% vol.<br />

Grain whiskey tends to have a lighter flavor<br />

than malt whiskey and its principal purpose is to<br />

be mixed with the more flavorful malt whiskey<br />

to produce an easy-to-drink blended whiskey.<br />

However, at Teeling we aim to produce a grain<br />

whiskey that is good enough to drink on its own.<br />

By maturing our grain whiskey in <strong>for</strong>mer cabernet<br />

sauvignon and bourbon barrels, we have been able<br />

to create a bottling of our single grain whiskey <strong>for</strong><br />

VOM FASS with very distinctive character called<br />

Against the Grain. This is a unique combination<br />

of aged Irish single grain whiskey containing a<br />

single grain matured 50% in bourbon barrels and<br />

50% in cabernet sauvignon wine barrels. Through<br />

this process, we are “going against the grain” by<br />

not using this to blend with malt, but instead,<br />

revealing that grain whiskey on its own is an<br />

extremely interesting and singular expression of<br />

Irish whiskey.<br />

phylloxera hit vineyards hard<br />

and the elite clubs of the British<br />

upper classes ran out of brandy,<br />

Whiskey is also great in the kitchen. Try<br />

something new with VOM FASS.<br />

Try our Venison in Mango-Whiskey Sauce.<br />

VENISON IN MANGO-WHISKEY SAUCE<br />

Ingredients:<br />

Serves 4<br />

• 4 venison steaks<br />

• ½ cup VOM FASS Single Malt Whiskey<br />

• 1 fresh mango<br />

• 1¼ cups game stock<br />

• 2 T. VOM FASS Grape Seed Oil<br />

• 2 T. crème fraîche<br />

• 2 T. VOM FASS Mango Balsam<br />

• VOM FASS Salt and Pepper<br />

Directions:<br />

1. Brush the steaks with your choice of VOM<br />

FASS Single Malt Whiskey on both sides, and<br />

let marinate <strong>for</strong> at least one hour.<br />

2. Peel the mango and cut the pulp into 1-inch<br />

cubes. Briefly boil the mango cubes in the<br />

game stock.<br />

3. Dry the venison with a paper towel and sauté<br />

both sides in Grape Seed Oil <strong>for</strong> 2 minutes.<br />

Take the meat out of the pan and wrap it into<br />

aluminum foil. Then, let it rest in the oven <strong>for</strong><br />

at least 30 minutes at 175˚ F.<br />

4. Deglaze the venison pan by adding the<br />

remaining whiskey and the mango game stock,<br />

including the mango cubes. Stir in Mango<br />

Balsam and crème fraîche. (Be careful, as<br />

the mango cubes quickly become soft while<br />

cooking). Reduce the sauce to the preferred<br />

thickness.<br />

5. Take the meat out of the aluminum foil and<br />

place it on pre-warmed plates. Add any juices<br />

from the foil to the mango sauce. Serve steaks<br />

and sauce right away.<br />
