TO GET TO YOUR GLASS – SO PREPARE
YOURSELF TO ENJOY
The Glass
Sip whiskey in a classic whiskey tumbler or snifter.
Experts consider the Glen Carin glass the official
whiskey glass as it brings out the full aroma. With
increased popularity and as our recommendation
for enjoying whiskey, Glen Carin glasses are
available at your nearest VOM FASS store.
Drinking Temperature
Whiskey should not be consumed too cold or too
warm. The smell and the exquisite taste of these
unique products are adversely affected by extreme
temperature. The best temperature to enjoy your
whiskey is between 64 and 68 degrees Fahrenheit.
Whiskey with Water
Drinking a glass of refreshing water with your
whiskey is always recommended. A tiny added
splash of water is especially important when
enjoying a cask strength whiskey. The purpose
is to increase the clarity of the taste and to
round out the flavor on the palate.
Whiskey on the Rocks
Many experts condemn whiskey on the rocks as a
mortal sin. And, it is true, in many cases, ice cubes
are not beneficial for whiskey. However, you can
add ice if the whiskey is served too warm. In
that case, to preserve flavors in the whiskey while
bringing it down to the optimal temperature,
put one ice cube into the glass, swirl it around
thoroughly, and use a spoon to take it out again.
Tasting
The sequence of tasting whiskey is
straightforward. First, look at the color and
consider the age and type of cask in which the
whiskey has matured. Next, slowly bring the glass
to your nose and take in the bouquet. It is better
to sniff a couple of times than to take one deep
breath.
Now it is time to taste. As you take a drink, draw
a small breath in through your nose to bring in a
depth of flavors. Pull the sip through your mouth
slowly, covering your entire palate in order to get
the full flavor range of this exceptional creation.
Appreciate the whiskey by holding it in your
mouth one second for every year it’s been aged.
Take your time and slow down and taste awhile.

Whiskey History - A Brief Overview
EVERY WHISKEY INVOLVES
CRAFTSMANSHIP, PASSION,
LOVE, AND MORE THAN
500 YEARS OF TRADITION
There are many rumors about when the first
whiskey was distilled and by whom. Here’s
a short history, with a timeline of world
events to clue you into the time period.
1494 JOHN COR, a monk living in
Lindores Abbey in Scotland, receives barley
malt in order to produce aqua vitae or uisge
beatha, a malt whisky. – Columbus starts his second
voyage to the Caribbean.
1608 THE IRISH “COUNTIE OF
COLRANE” is granted a license to distill
whiskey. – Galileo constructs astronomical telescope.
1644 THE SCOTTISH KING imposes
a tax on whisky to finance his wars.
– Antonio Stradivari, the legendary violin maker, is born.
1789 ACCORDING TO LEGEND,
preacher Elijah Craig is the first man who
distills whiskey in the United States of
America. Later on, as an outcome, the
tradition of bourbon develops. – The French
Revolution starts with the Storming of the Bastille.
1823 AFTER MANY FAILED
ATTEMPTS, the new “Excise Act” once
again tries to unify the tax on whiskey in
Scotland and Ireland. The tax gains more
acceptance later and becomes the foundation
of the whole industry. The first distiller to
acquire a license is George Smith of Glenlivet.
– Mexico becomes a republic.
1829-30 THE SCOTSMAN ROBERT
STEIN and the Irishman Aeneas Coffrey
invent the continuous still, also known as the
“Coffrey Still.” This new form of distillation
is very economic and revolutionizes whiskey
production. – Andrew Jackson is elected the 7th
President of the United States of America.
1853 ANDREW USHER offers an “Old
Vatted Glenlivet.” He is regarded as the father
of a new type of whisky, the blended scotch,
which blends pure malt whisky with an
innovative grain whisky. – The Crimean War
breaks out.
1879 PHYLLOXERA, which appeared
for the first time in 1863, destroys almost
all European vineyards, causing brandy
production to halt. Scottish whisky merchants,
such as John Buchanan (Black & White), the
Walkers from Kilmarnock, and the Dewars
(White Label), recognize their opportunity and
create whisky brands that are still very popular
today. Blended scotch becomes the most
sought-after drink worldwide. – Woolworth’s opens
its first store.
1898 THE BANKRUPTCY of the
Pattison Brothers puts the entire scotch whisky
industry at risk in the middle of a boom when
many new distilleries have just been built.
– The patent for the Zeppelin is registered.
1909 THE ROYAL COMMISSION
decides that all three types of whiskey – malt,
grain, and blended – are allowed to be called
“whiskey.” – American businessman HG Selfridge opens
a department store in London.
1915 A MINIMUM STORAGE PERIOD
for whiskey is stipulated. The minimum is
three years. – Albert Einstein postulates the theory of
relativity.
1920-33 PROHIBITION PREVAILS
IN THE UNITED STATES, which has a
huge impact on global whiskey production.
1923 MASATAKA TAKETSURU returns
to Japan after his years of apprenticeship in
Scotland, amongst others at the Lagavulin
distillery on the island of Islay. He builds the
Yamazaki distillery for Torii Shinjiro. – George
Gershwin composes Rhapsody in Blue.
1963 WILLIAM GRANT & SONS starts
to sell its “Glenfiddich” as the first single malt
worldwide. – John F. Kennedy is assassinated in Dallas.
1969 THE GLENFIDDICH
DISTILLERY in Dufftown opens the very
first visitor center. – Apollo 11 was the first manned
mission to land on the moon.
1989 JOHN TEELING starts his Cooley
Distillery and increases the number of Irish
distilleries to three. – The Iron Curtain in Europe
comes down.
1995 THE ARRAN DISTILLERY
opens in Lochranza on the island of Arran. –
YAHOO! is founded in Santa Clara, California.
2008 THE EUROPEAN UNION
stipulates a binding whiskey definition. – The
Summer Olympic Games XXIX takes place in Beijing,
China.
2015 THE TEELING WHISKEY
DISTILLERY opens its gates in Dublin.

Production – What Characterizes a Good Whiskey?
TO DISTILL A PERFECT WHISKEY,
THERE IS AN AIR OF MYSTERY
A classic malt whiskey is distilled from
malted grain. This means the grain is soaked
before it is allowed to germinate. Afterwards,
the grain is dried on a kiln floor by means of
heated air and sometimes also peat smoke,
which creates the smoky or peaty flavor that
characterizes some whiskeys.
Next, the resulting malt is mashed and turns
into a sort of whole-grain flour, which is
called grist. Then, the grist is washed out
in hot water and produces a white liquid
consisting of water and starch.
For further processing, the light, beer-like
alcohol is distilled twice in a still and is then
called wash. In Ireland, it is usually triple
distilled.
By law, the resulting whiskey has to age for at
least three years in wooden casks. After this
maturation period, it is diluted to its bottling
strength, chill filtered, and bottled.
This liquid, referred to as wort, is fermented
with yeast in large vessels called washbacks.

Essential Definitions
FROM AGE TO
STRAIGHT WHISKEY
AGE
A whiskey has to age at least three years in
wooden casks. In the United States, it must
age at least two years and in oak casks. Malt
whiskey usually ages a lot longer. The age
statement on the label always marks the
youngest whiskey in the bottle.
AMERICAN WHISKEY
Typically bourbon, although rye and other
single malts are produced in small distilleries
in the United States.
ANGEL’S SHARE
The content of a cask that has evaporated
during the aging process. In Scotland, it
is estimated that 2% of the total content
evaporates per year.
BLEND OR BLENDED WHISKEY
A blend is a mixture of different whiskeys
comprising a high share of a single grain
whiskey and a smaller share of different
single malts.
BOURBON
An American whiskey, traditionally made
in Kentucky, which has to be composed of
at least 51% corn and aged in new, white
American oak, charred barrels. Please, also
see Page 28.
CASKS
In Scotland and Ireland, whiskey is generally
filled into used casks. The majority are
bourbon casks (barrels or hogsheads). Sherry
casks are also very popular. Additionally, the
use of former wine casks, for example port or
other dessert wines, has increased.
CASK STRENGTH
The level of alcohol by volume that the
whiskey has reached naturally after its
maturation period.
CHILL FILTERING
It is a method for removing fatty acids
in order to remove residue. It is rather
controversial because this process is believed
to sometimes affect the taste of the whiskey.
When possible, we select non-chill filtered
whiskeys at 43% volume.
FINISHING
Since the 1990s, finishing is a common
method of pouring whiskey into a second
cask after its maturation in the first cask. This
process is called second maturation and the
resulting malts are referred to as Doublewood.
GRAIN WHISKEY
Grain whiskey can be produced from any
grain. Mostly, it is produced on a large scale
and used for large, international whiskey
brands because of its soft and appealing
nature. Yet, if a good single grain whiskey
ages for 20 or more years, it develops a
fascinating flavor. Hence, aged single grain
whiskeys are a market trend today. Please,

IRISH WHISKEY
Ireland possesses a long tradition of whiskey
production. One specialty is that almost all
Irish whiskeys are distilled three times. Highquality,
handcrafted single malts from Ireland
are very popular at the moment. Please, also
see Page 20.
ISLAY
An island of the Inner Hebrides of Scotland
with eight active distilleries currently. This
island became famous because of its very
distinctive, peaty, and smoky whiskies.

MALT
Malt is gained from barley in a complex
process. The mash of malt whiskey has
to consist of 100% barley malt.
SCOTCH WHISKY
The following five variations can be
distinguished according to the Scotch Whisky
Regulations 2009:
Single malt: A malt whisky that originates
from just one distillery.
Single grain: A grain whisky that originates
from just one distillery.
Blended scotch: A mixture of malt and grain
whisky.
Blended malt: A mixture of different single
malt whiskies.
Blended grain: A mixture of different single
grain whiskies.
SINGLE CASK
If just one cask of a selected whiskey is filled
separately, it is referred to as single cask.
SPEYSIDE
More than one-third of all Scottish distilleries
are located in this region. As such, it is the
core area for scotch. Please, also see Page 16.
STRAIGHT WHISKEY
This term is used in the context of bourbon,
and it means “single whiskey.” It is a whiskey
that is unblended and produced in just one
distillery.

STRAIGHT FROM
THE ISLAND
Scotch whisky (Scots don’t use the “e” in whisky) is
the classic whisky of all whiskies. Nowhere else is the
variety of whiskies as splendid and fascinating as it is
in Scotland. Here is a brief overview of the different
whiskies according to their region.
THE SPEYSIDE
Alongside the river Spey in the middle of the Scottish
Speyside area are 48 active whisky distilleries. As
such, it is the heart of whisky production in Scotland.
Some of the most classic and renowned single malts
originate from this region. Here, the main focus
lies on elegance and soft richness. Since the VOM
FASS range of products is so extensive, we regularly
include premium selections from distilleries in this
area, such as Tormore, Glentauchers, Inchgower, and
Benrinnes.
Mac Spey Scotch Speyside Malt Whisky Blend,
43% vol.
Taste the quintessence of the Speyside area with
our Mac Spey Scotch Blend. It is composed of
delightful single malts from different distilleries. It is
wonderfully elegant, and its lasting taste has earned
great honor. In 2015, the German Agricultural
Society awarded VOM FASS Mac Spey as Best
Whisky in Contest.
THE ISLAND ISLAY
The popularity of the very peaty and smoky single
malt whiskies from distilleries on the island of
Islay is overwhelming. Yet, it is not surprising,
since these whiskies mirror the rough beauty of
the island. At VOM FASS, we offer rare batches
and single casks from selected distilleries such as
Bunnahabhain, Caol Ila, Laphroaig, or Bowmore.
Cragabus Scotch Islay Blended Malt Whisky,
43% vol.
Taste the essence of Islay! The mysterious smoke
of Islay can be found in this high-class blend of
the most exquisite single malt whiskies from the
famous distilleries of the island. This blend has
a traditional nose of smoke, salt, and peat with
the typical, complex taste of Islay and a finish
that lasts for several minutes. It is a must-have
for lovers of smoky, superior whisky. Awarded

THE LOWLANDS
The single malts from the Lowlands are often
slightly milder and softer. Yet, they comprise
a unique soft-spicy character. Our favorite
is from the Auchentoshan distillery. You
can almost always find one of its interesting
whiskies in our product lineup.
THE ISLANDS
Whisky is distilled not only on the main land
and on the island of Islay but also on many
of the Scottish islands. Legally, the islands are
attributed to the Highlands. Yet, this regulation
is quite controversial. At VOM FASS, we offer
regularly selected single malts from the best
island distilleries.
THE HIGHLANDS
Not only are the Scottish Highlands enormously
beautiful but they are the home of famous
whiskies produced by first-class distilleries.
At VOM FASS, we regularly offer single malts
made by the best distilleries from this area.
The Great Glen - Scotch Highlands Blended
Malt Whisky, 8 years, 43% vol.
Experience the mysticism of the Highlands with
this blended malt whisky, which contains only
the finest scotch single malt whisky that was
distilled in some of the best Highlands distilleries
of Scotland. It is named Great Glen, after the
magnificent landscape that surrounds these
distilleries. From the snow-capped mountains to
the heather-covered valleys, it is the pure, clean
water that flows beneath this land that gives this
exceptional scotch malt whisky the rich, complex
flavor it boasts. It has a red, golden color and an
intensely spicy bouquet that creates a wonderful
caramel and toffee touch if you add a dash of

Jack Teeling, one of the famous whiskey
specialists of Ireland, together with VOM FASS,
chose this wonderful aromatic and rich single malt
whiskey. It is aged for 11 years and then refined
for 3 months in sauternes casks. It is a must-have
for whiskey lovers!
“Brothers in Arms” Irish Single Malt
Whiskey, 14 years, 43% vol.
Jack and Stephen Teeling, famous Irish whiskey
specialists, together with VOM FASS, chose a
splendid single malt, the “Brothers in Arms”. It’s
a marriage of aged Irish single malt whiskey, some
matured in sherry butts and some in bourbon
casks. The result is a balancing act between two
cask types with toffee, caramel, and nuts all
fighting for attention with a long spicy finish.
There are quite a few reasons not to drink
whiskey neat; a delicious cocktail is one of
them! Here is one of our favorite whiskey
cocktails:
Irish Whiskey Sour
Ingredients: Serves 1
• 2 oz. VOM FASS Irish Single Malt Whiskey
• ½ - 1 oz. lime juice (depending on how sour
you like it)
• 1 oz. VOM FASS Fassmix Grenadine
Directions:
1. Put all of the ingredients together with ice
cubes into a shaker, and shake thoroughly.
2. Next, sieve the cocktail into a suitable glass
(preferably a martini glass).

Whiskey is one thing, but to choose an exquisite
whiskey and create a splendid liqueur from it is
one of the strengths of the VOM FASS Liqueur
Factory. Only superior Irish single malt whiskeys

which is then combined with fair trade cane sugar
from Paraguay and Mauritius.
The glass fills with a rich amber color; the nose
develops a vanilla-like aroma surrounding the cask

the Gold medal of the German Agricultural

whiskey market was talking about
so-called grain whiskey. It was
simple and treated rather poorly.
It was considered to be good
enough to build the boring base
of big brand whiskeys and then
enhanced by high-quality malt
whiskeys. Time to rethink.
Today’s grain whiskeys can be very favorably
compared to a malt whisky if they are refined by
experts or matured for decades. At VOM FASS,
we have used our excellent relationships to offer
you unique single grain whiskeys!
“Against the Grain” Irish Single Grain
Whiskey, 5 years, 40% vol.
Grain whiskey tends to have a lighter flavor
than malt whiskey and its principal purpose is to
be mixed with the more flavorful malt whiskey
to produce an easy-to-drink blended whiskey.
However, at Teeling we aim to produce a grain
whiskey that is good enough to drink on its own.
By maturing our grain whiskey in former cabernet
sauvignon and bourbon barrels, we have been able
to create a bottling of our single grain whiskey for
VOM FASS with very distinctive character called
Against the Grain. This is a unique combination
of aged Irish single grain whiskey containing a
single grain matured 50% in bourbon barrels and
50% in cabernet sauvignon wine barrels. Through
this process, we are “going against the grain” by
not using this to blend with malt, but instead,
revealing that grain whiskey on its own is an
extremely interesting and singular expression of
Irish whiskey.

phylloxera hit vineyards hard
and the elite clubs of the British
upper classes ran out of brandy,
the favorite club spirit at the
time. This shortage coincided
with the first large production
of grain whiskey blended with
malt whiskey. This produced a

taste for the times.

it for 3 years in new American white oak casks.
Rye Whiskey, 18 months, Madison,
Wisconsin, 40% vol.
VOM FASS Rye Whiskey is spicy, sweet,
and smooth. Neat, straight up, or in a classic
Manhattan, there’s no wrong way to enjoy this

This artisan-distilled bourbon is a fine
combination of Yahara Bay’s American Whiskey
and carefully selected Kentucky bourbons that
have been artfully blended. It is then matured for
up to another two years in new, charred southern
oak barrels. VOM FASS American Bourbon

Recipes with Whiskey
PERFECT
WITH FOOD
Just drinking whiskey? Think again!
Whiskey is also great in the kitchen. Try
something new with VOM FASS.
Try our Venison in Mango-Whiskey Sauce.
VENISON IN MANGO-WHISKEY SAUCE
Ingredients:
Serves 4
• 4 venison steaks
• ½ cup VOM FASS Single Malt Whiskey
• 1 fresh mango
• 1¼ cups game stock
• 2 T. VOM FASS Grape Seed Oil
• 2 T. crème fraîche
• 2 T. VOM FASS Mango Balsam
• VOM FASS Salt and Pepper
Directions:
1. Brush the steaks with your choice of VOM
FASS Single Malt Whiskey on both sides, and
let marinate for at least one hour.
2. Peel the mango and cut the pulp into 1-inch
cubes. Briefly boil the mango cubes in the
game stock.
3. Dry the venison with a paper towel and sauté
both sides in Grape Seed Oil for 2 minutes.
Take the meat out of the pan and wrap it into
aluminum foil. Then, let it rest in the oven for
at least 30 minutes at 175˚ F.
4. Deglaze the venison pan by adding the
remaining whiskey and the mango game stock,
including the mango cubes. Stir in Mango
Balsam and crème fraîche. (Be careful, as
the mango cubes quickly become soft while
cooking). Reduce the sauce to the preferred
thickness.
5. Take the meat out of the aluminum foil and
place it on pre-warmed plates. Add any juices
from the foil to the mango sauce. Serve steaks
and sauce right away.
OUR TIP:
Serve venison with a red wine from VOM FASS.
