Editor’s letter<br />
Start from the Heart<br />
An old saying goes “Life is a performance for which there<br />
is no rehearsal.” But art and media, like this magazine,<br />
does get rehearsal time; time to get tweaked, sent back<br />
to the drawing board, polished and refined before it<br />
appears in the world like a ballerina to the stage.<br />
Which begs the question, how do we know if we’re<br />
going in the right direction with each new revision? Is<br />
visual perfection the end-all-be-all?<br />
We don’t think so. It’s not about looks alone, so don’t<br />
feel too much pressure to make your holidays appear<br />
flawless. Instead, do like we do and start in your heart —<br />
with thoughtfulness, sincerity, grandeur, and harmony,<br />
plus frequent steps back to look at the big picture and<br />
sense others. If you follow that wisdom, you’ll find that<br />
beauty and splendour come your way naturally.<br />
Here are just some of our favourite memories during<br />
our making of the <strong>Dec</strong>ember issue:<br />
We enjoyed working back and forth “across the pond”<br />
with Denmark-based designer and family man Enrico<br />
Fratesi on the article “Form and Fairytale,” and it feels<br />
wonderful to see the Outstanding Home Design article<br />
about Casa Mia take shape after a year of preparations<br />
and conversations with the designers, our new friends.<br />
Many Ngom, our fashion editor, mixed together smashing<br />
fashion pieces for your holiday wardrobe; each<br />
item she picks affects all those surrounding it, which<br />
makes for a giant puzzle-like accomplishment. Finally,<br />
we’ll never forget marvelling at “Peacock Alley” in New<br />
York’s Waldorf Astoria hotel on our way to hand-pick<br />
the ancient Chinese and Meissen porcelain you see in<br />
“European Palate.”<br />
Have a warm and heartfelt holiday season, aim toward<br />
charm and beauty, not perfection, and go easy on yourself…<br />

exuberant antidote to the humdrum of<br />
white, understated interiors.<br />

There aren’t many 11-year-old boys who would<br />
spend their allowance on an 18th century lap<br />
desk — but Mario Buatta did, buying the $12 antique<br />
that would become first in his fascinating<br />
collection. But then, Buatta has never been one for<br />
following a crowd.<br />
For over half a century, the New York-based<br />
decorator has been swathing rooms in flamboyant<br />
color and ornate detail, in resolute avoidance of<br />
the trending minimalism. Where clean lines and<br />
greige paint ruled the masses, the ‘Prince of chintz,’<br />
as he’s affectionately come to be known, celebrates<br />
overabundance with flourish. Buatta’s unapologetically<br />
opulent English country scenes of florals and<br />
brocades, gilded paintings and drape valances, have<br />
drawn the likes of Jackie Onassis and Mariah Carey<br />
to his high-flying client list.<br />
A lover of all things aged, Buatta values the sentiment<br />
of items passed down through generations,<br />
and isn’t afraid of a little dust. For this collector and<br />
self-proclaimed hoarder, the old isn’t just new again<br />
— it’s better.<br />
MARIO'S FAVOURITE THINGS<br />
Buatta goes understated on jewellery with a<br />
slim wraparound watch from Hermès, and<br />
appreciates the heady elegance of tuberose and<br />
jasmine. For dressy occasions, he chooses silk<br />
ties in simple patterns paired with a chic paisley<br />
pocket square, while his go-to scent evokes<br />
crisp citrus and woods in Tom Ford’s Azure<br />
Lime. He never travels without his phone and<br />
iPad, perhaps throwing in a silk scarf in a stripe<br />
or polka dot “for a little drama,” and wraps up<br />
his trip essentials in non-monogrammed Louis<br />
Vuitton luggage with his own initials on top.<br />
Indulgence, for Buatta, can mean a refreshing<br />
glass of lemonade in the summertime, or luxuriating<br />
in the traditional British opulence of the<br />
Claridges London. True to his tastes, Buatta<br />
selects furniture that summons history, such as<br />
this English chinoiserie side cabinet from the<br />
Regency period. And his distinctive style gets a<br />
finishing touch with a classic pair of Ferragamo<br />
tassel loafers.<br />

casting its soft glow over the room.<br />
If you’re thinking you’ve just stumbled down a<br />
rabbit hole and right into a Lewis Carroll novel,<br />
you may be surprised to learn that Fratesi’s quirky<br />
creations are rooted not between the rustling pages<br />
of children’s books, but in the very real media of<br />
woods, metals, and plastics. Together with partner<br />
Stine Gam, with whom he shares work, life, and a<br />
young son, Fratesi breathes life into chairs, tables,<br />
even ladders and brooms, that are as unabashedly<br />
pragmatic and traditional as they are steeped in<br />
twinkling whimsy. In decidedly modern forms,<br />
the designer embeds stories that belie his spirit<br />
while keeping true to his craft, his vision, and his<br />
sense of self.<br />
Taste of Life caught up with him at LivingSpace<br />
in <strong>Vancouver</strong>, where he was celebrating the 90th<br />
anniversary of manufacturer Porro with a contribution<br />
to their “Cabinet of Curiosities.” Gam-<br />
Fratesi created “9Ø,” a gorgeously crafted circular<br />
box whose locking top is just one of the secrets it’s<br />
designed to hold.<br />
“I always found it interesting to draw, to create<br />
in any way,” says Italian-born Fratesi, who first<br />

a natural progression from his student days in an<br />
architecture office.<br />
Though not hailing from a family of designers,<br />
Fratesi was no stranger to finely crafted products<br />
growing up, “not because [my parents] wanted to be<br />
fancy, but because they wanted good furniture.” The<br />
appreciation for quality and material, together with<br />
cultural heritage, have shaped the designer’s artistic<br />
vision: his creative pieces fuse the concept-based<br />
Italian design philosophy with Gam’s functional<br />
Scandinavian minimalism, wrapped in a generous<br />
dose of imagination.<br />
“It’s never just a drawing; it’s all in the process,” he<br />
says. “The product can affect your behaviour, communicate<br />
a message.” Some are literary metaphors,<br />
such as the compact Haiku sofa or Allegory desk;<br />
others, whimsical treatments of simple-looking<br />
shapes — the playful Nubo wall shelf that opens<br />
into a compact personal desk, or the Cheshire lamp,<br />
a reference to Carroll’s friendly feline.<br />
Another impromptu idea was the Fraga, an unexpected<br />
union of a pouf and coffee table. Being a<br />
parent, says Fratesi, has also taught him to see things<br />
differently: through a child’s wondrous wide-eyed<br />
gaze, with no preconceived notions, “totally free in<br />
the interpretation of things and in the behavior and<br />
experience of the space.”<br />
Spontaneity, I learn, is a recurrent theme for Fratesi,<br />

his free-spirited attitude backed by unconditional<br />
family support. “I was privileged to have a lot of<br />
freedom in what I wanted to do,” he says, recalling<br />
attending a talent fair with his parents when he was<br />
young and their concerns about the challenges of the<br />
competitive design field. “They thought it was complicated.<br />
But now they are proud of what I do; they<br />
see that I’m happy and that is the most important<br />
thing for them, not my position in society.”<br />
Today, GamFratesi may be the pinnacle of contemporary<br />
design, with over thirty awards and nominations<br />
in less than ten years of existence, including<br />
the coveted Elle <strong>Dec</strong>or Best Young Designer award,<br />
a Finn Juhl Prize, and the opportunity to curate<br />
the international Mindcraft15 design exhibition.<br />
Through it all, Fratesi’s sense of adventure and enthusiasm<br />
for his work remain unchanged.<br />
“You have to start from scratch, you have to learn<br />
from your mistakes,” he says of his path as an entrepreneur.<br />
“But on the other hand, you have the freedom<br />
to express yourself and your mentality, to be<br />
yourself, and that’s very important for me. Everything<br />
is interesting and complicated, and I love it<br />
that way.”<br />
One of Fratesi’s daily challenges is juggling career<br />
and family, which for him are happily intertwined. “In<br />
a difficult moment, you can count on someone who<br />
totally understands you,” he says of his professional and<br />
family union with Gam, which he calls “a privilege...”<br />
“And when everything is going well, it’s so beautiful to<br />

enjoy it together, to bring home the joy of your success.”<br />
Nevertheless, he says the task is not always easy. “You<br />
need to find your own balance,” he says, mentioning<br />
they have even explored the theme in their Balance<br />
design exhibition. “There is no recipe.”<br />
To preserve their creations’ one-of-a-kind nature,<br />
GamFratesi limits collaborations and expansion in<br />
favour of a smaller, more personal scale, and a focus<br />
on product rather than distribution numbers. Asking<br />
about design trends, I’m told they’re not on the<br />
radar. “We try to never look at trends, but to express<br />
our values and personality through design. It’s very<br />
important to be honest to ourselves and find the<br />
balance between our philosophy, the craft, honesty<br />
of materials, and simplicity.” According to Fratesi,<br />
their furniture is meant for living, not showrooms;<br />
ultimately, it’s all about the person on the other end<br />
of the production line.<br />

As for the future, Fratesi embraces a vision as unpredictable<br />
as his designs. “I may not be able to say<br />
now what it’ll be, but for sure there’ll be something<br />

Eric Meola’s photography personifies the art of<br />
observation. His camera, a Nikon D810, is his<br />
tool to give reason to the world, and a means to take a<br />
beautiful moment out of time and hold it still.<br />
“I’m in photography for the art of it and sharing<br />
something visually with the gift I’ve been given,” he<br />
told Taste of Life via telephone from his home on<br />
Long Island, New York.<br />
The next day, Meola would be back on the road, chasing<br />
epic storms with a team of meteorologists through<br />
the Great Plains of America. His latest project, a<br />
photo book titled Tornado Alley: The Sky Above the<br />
Land Below, is scheduled for release in 2019.<br />
It’s a photographic quest he’s dreamed about since the<br />
late 1970s while on a photo shoot in Nevada with rock<br />
star Bruce Springsteen. He recalls how they encountered<br />
an incredible storm of Biblical proportions with<br />
all sorts of wind, rain, threatening clouds and lighting.<br />
“I got some pretty dramatic photos out of that,” says<br />
Meola, “and it’s always been in the back of my mind<br />
to go out and find more storms. But as happens in life,<br />
one thing happens and another, and you put those<br />
dreams on the back burner.”<br />
Now on the eve of turning 70, Meola is seizing the<br />
moment to take those trips and capture those images<br />
once stifled by the demands of an illustrious commercial<br />
photography career.<br />
After assisting colour pioneer Peter Turner, Meola<br />
became a legend in his own right. His photos splashed<br />
across the pages and covers of Time, LIFE, Esquire,<br />
and National Geographic magazines. He shot advertising<br />
images for the likes of Porsche Audi, Johnnie<br />
Walker Scotch, Coca Cola, and Timberland apparel.<br />
To ask a photographer to pick his favourite image<br />
seems akin to asking a parent to declare which child<br />
they love best, yet as we talk, it’s evident there are a<br />

handful of images that Meola holds especially close<br />
to his heart. There’s the cover shot of Bruce Springsteen’s<br />
“Born to Run” album, depicting the legendary<br />
guitarist leaning on the shoulders of his husky saxophonist<br />
Clarence Clemons — like most of his work,<br />
a picture with a story behind it.<br />
Driven by the desire to photograph one of his favourite<br />
musicians, Meola inconspicuously followed<br />
Springsteen on tour for almost six months. The two<br />
coincidently came face-to-face one rainy afternoon<br />
as they sought shelter under the awning of a hotel.<br />
Meola recalls awkwardly telling Springsteen how<br />
much he liked his music and suggesting he become<br />
his subject, but it wasn’t until two years later that<br />
the rock star showed up at Meola’s studio. Some 700<br />
photos and 20 rolls of film later, the iconic blackand-white<br />
album cover was realized.<br />
Coca Kid<br />
On a 1972 photojournalism assignment to Haiti, Meola<br />
took one of his most recognizable images, “Coca<br />
Kid,” that would not only “put him on the map,” as he<br />
says, but showcase his talent as a true master of colour.<br />
He retells the moment like it was yesterday. “There<br />
was this wonderful old Coca Cola billboard in Port-au-<br />
Prince. It was the perfect backdrop for a photograph,<br />
but without life, it was meaningless.”<br />
He set up his tripod across the street, put on his<br />
telescopic lens, cropped the photo just the way he<br />
wanted, and waited. Hours passed. People passed.<br />
There was always something not quite right — the<br />
clothing of passersby clashing with the colour of the<br />
sign, or their movements jarring when compared to<br />
the sign’s fluid cursive typography.<br />
“Suddenly this little boy walked by. Between his<br />
white shorts and long, swinging arms, the concept<br />
just came together!”<br />
In those seconds as the boy passed, Meola held<br />
down the shutter for a motorized burst, using the<br />
last of his film. “In those days, I had to wait two<br />
weeks to get back home and process the film.” As he<br />
went through his images, holding his breath, he got<br />
to the three or four shots he had captured of the boy.<br />
“The very last photo was just perfect.”<br />
Spiritual awakening<br />
In a candid moment, Meola reveals that the heart<br />
and the mind are the true lens of his work — a realization<br />
that stirred a spiritual awakening while in<br />
Burma collecting images for a book depicting the<br />
disappearing beauty of various cultures.<br />
He was photographing a young boy as he knelt before<br />
a monk who was shaving the boy’s head. In this<br />
ceremony, known as Shin Bu, the child was initiated<br />
as a monk, and stepped onto the path of becoming<br />
a Buddha.<br />
“Within seconds, I started crying,” Meola says. “It<br />
was incredibly emotional visually, spiritually. There<br />
was a lot of dust in the air, people singing, just colours...<br />
It just was extremely moving.”<br />
No longer just an observer, but a participant, “In<br />
that moment, I felt that I, too, had crossed into another<br />
place and found the key to these other worlds<br />
I had imagined.”<br />

“There’s moments when I feel almost hypnotized by<br />
the beauty around me,” he says. “Like during a storm,<br />
I find myself watching the shapes and the colours<br />
and trying to stand up straight while the wind is<br />
blowing, and can forget for a moment why I’m there.”<br />
If there’s a mystic quality to Meola’s images, one<br />
might attribute it to his childhood fascination with<br />
magic tricks and the illusions of Houdini.<br />
A teenager with a vision<br />
At the age of 12, Eric Meola says he had a clear<br />
epiphany as to his life’s calling. His dad may have<br />
wanted him to follow in his footsteps and be a doctor,<br />
but for Meola, his own career would be decided<br />
in a darkroom.<br />
“One of my dad’s patients had a photography<br />
hobby and invited me over to his house to show me<br />
some of his negatives,” says Meola.<br />
“I was intrigued by the darkness and the red light.<br />
Watching the first print appear in the developer was<br />
a moment I will never forget. It was in those 30 seconds<br />
I decided I would be a photographer.”<br />
With earnings from his first job making sodas and<br />
sandwiches at the local pharmacy, Meola bought a camera.<br />
Suddenly, no place was boring when he had a pocketful<br />
of unexposed film. On a family vacation to Rhode<br />
Island, Meola, then a teenager, observed a flock of<br />
seagulls and shot a silhouette of a bird against the sun.<br />
On a whim he sent that photo to Audubon magazine.<br />
“I’d almost forgotten about it, when three months later<br />
I got this letter that they wanted to use it on their cover.<br />
It was the vindication that I needed. I can do this.”<br />
Today as he meets a new generation of photographers,<br />
he encourages them to approach their career<br />
with “their head in the clouds and their feet on the<br />
ground,” a formula that’s evidently worked for him,<br />
as he still approaches photography with the excitement<br />
of a child.<br />

tales of late-night jazz soirees, socialites sipping<br />
holiday cocktails and the extravagance of a lifestyle<br />

“You can just feel the time and the history that<br />
happened right here,” says interior designer Bianca<br />
Zanatta, chairperson for the charity event<br />
Home for the Holidays. Together with interior<br />
designer Danielle Molnar, the design duo dusted<br />
the opulent heritage home with holiday magic<br />
and added it to the annual parade of decorated<br />
homes to benefit Kids Help Phone.<br />
“The details inside Casa Mia are incredible —<br />
ceilings soar 30 feet at the entrance, elaborate<br />
hand-carved woodwork, enormous arched windows<br />
and dramatic chandeliers give the home a<br />
castle-like feel,” says Molnar, reminiscing on her<br />
first encounter inside the historic Spanish Colonial<br />
Revival-style estate, designed by architect<br />
Ross Lort. “I just soaked it all in. I could explore<br />
the house for hours.”<br />
With its eight bedrooms, 13 bathrooms, and nine<br />
fireplaces, the 21,000-square-foot Casa Mia remains<br />

Bianca 和 Danielle 在 整 個 大 宅 裏 安 放<br />

decades after George Reifel built it on Southwest<br />
Marine Drive. This shrewd businessman<br />
is described in history books as everything<br />
from a brewery baron and entertainment<br />
magnate to a philanthropist and conservationist.<br />
One thing, however, is for certain<br />
— Reifel did things on a grandiose scale.<br />
“Casa Mia even has its own Art <strong>Dec</strong>o-style<br />
ballroom, complete with goldleafed<br />
walls and a bouncy dance floor,” says<br />
Zanatta. “Back in the 1940s, jazz musicians<br />
like Louis Armstrong and Count Basie<br />
performed in the basement.”<br />
Especially whimsical is the third-floor<br />
children’s wing, reached by a stunning spiral<br />
staircase. Walt Disney artists were commissioned<br />
to paint a mural of Snow White and<br />
the Seven Dwarfs for the playroom.<br />
Inspired by this childlike wonder and the<br />
view outside the tearoom window, Zanatta<br />
and Molnar “brought the outdoors in.” Natural<br />
garlands drape elegantly over mantels,<br />
wreaths made of fresh holly and eucalyptus<br />
decorate windows, and faux-fur toss cushions<br />
add warmth to the sofas. Seven Christmas<br />
trees were brought into the home, including<br />
a live 12-foot Alberta blue spruce,<br />

“We kept our decorating very traditional,<br />
keeping with reds, silvers and golds,” says<br />
Zanatta. “The red is the punch, the appetizer<br />
that adds that wow-factor.”<br />
The hit of the tour was easily the enchanting<br />
front atrium, where glass balls<br />
cascade from the ceiling, and festively<br />
wrapped presents are stacked sky high!<br />
For the designers, however, it’s Casa<br />
Mia’s dining room that’s most compelling.<br />
The stately space evokes “an almost regal<br />
sophistication,” the culmination of antique<br />
sconces, floor-to-ceiling Cuban mahogany<br />
panelling — the preferred wood for the<br />
finest English furniture — and a handcarved<br />
fireplace. Allowing the architectural<br />
elements to speak, the room was embellished<br />
simply, with gold dinnerware, elegant<br />
silver candelabra and a sprinkling of<br />
aromatic Italian sage.<br />
“It’s all about creating a different realm,”<br />
says Zanatta. “This is a room to share joy<br />
and to share a very special season with<br />
family and friends. It truly is the season for<br />
giving.”<br />

A recent survey found that not only are male spa<br />
patrons on the rise (one Canadian study cited a<br />

Shangri-La Hotel, couples can bond over a threehour<br />
package that includes the West Coast Wave<br />
massage on temperature-controlled beds using<br />
natural marine botanicals, followed by a seaweed<br />
body wrap to calm redness, soothe joint stiffness<br />
and relax tense muscles.<br />
The masculine set prefer authentic, traditional<br />
treatments that don’t come across as too New Age-y,<br />
and oils and lotions that aren’t just borrowed from<br />
the girls. Featuring healing techniques from across<br />
Asia, the CHI’s Sense of Adventure treatments offer<br />
men signature massages from Thailand, India,<br />
China, and the Philippines. An ancient Ayurvedic<br />
detoxifying ritual from India — traditionally known<br />
as Panchakarma — uses coconut stems, aromatic<br />
oils and specific massage techniques to release toxins<br />
and ease muscle tension. Rugged types can brace<br />
themselves for a traditional Thai massage. The practitioner<br />
uses his or her own weight to stretch the<br />
client’s body and release tension from target areas,<br />
where stress (sadly, an equal-opportunity modern<br />

Gingerbread Cookies<br />
Ingredients:<br />

1 tsp cinnamon<br />
1 tsp cloves<br />
1 tsp ground ginger<br />
Directions:<br />
1. Carefully combine the flours, sugar, almond<br />
meal, and spices. Add in softened butter, cut into<br />
small pieces. Work the butter into the flour, rubbing<br />
with fingertips until the mixture reaches a<br />
fine crumb texture. Add the eggs one at a time,<br />
stirring briskly.<br />
2. Once the dough comes together, form into<br />
a ball, cover with plastic wrap, and let stand in<br />
a cool place or refrigerate for 30 minutes to an<br />
hour.<br />
3. Preheat oven to 180° C. Place dough on a<br />
floured surface. Dust rolling pin with flour and<br />
roll out the dough to ½ cm thick. Cut out shapes<br />
using a cookie cutter or a glass and place on a<br />
lined cookie sheet.<br />
4. Bake for approximately 20 minutes or until<br />
golden brown. Remove from oven, let cool, and<br />

The ancient Chinese people used to say, “One will<br />
find chicken and shrimp to be tasteless for three<br />
days after eating scallops.” Succulent yet firm, the delicate<br />
scallop flesh lends itself beautifully to stewing in<br />
soup. Steamed with chicken, conch meat, and Asian<br />
mushrooms, this comforting broth gets an added flavor<br />
kick with ginger, radish, and goji berries. The aromatic<br />
dish makes a perfect wintry meal, sustaining the<br />
stomach and spleen through cold temperatures, nourishing<br />
the kidney, and balancing the yin in the body.<br />
Ingredients (serves 4):<br />
300g white radish<br />
300g boneless chicken thighs<br />
200g conch meat<br />
4 slices of ginger<br />
4 Asian mushrooms such as shiitakes<br />
4 scallops<br />
20 goji berries<br />
Salt<br />
Directions:<br />
1. Cover the Asian mushrooms and scallops with water<br />
and let soak for 20 minutes. Reserve water to use in the<br />
soup later on.<br />
2. Cut the chicken thighs into small pieces and rinse. Add<br />
the chicken to boiling water and boil for thirty seconds<br />
on high heat. Drain, and rinse the meat with clean water.<br />
3. Divide all ingredients (add only a pinch of salt at this<br />
stage) between four single-serving stew pots (400ml each).<br />
Fill each pot nearly to the top with water, cover, and steam<br />
in a steamer pot for two hours. Add salt to taste.<br />
Tips:<br />
Alternatively, simmer all four portions in one large pot.<br />
Plastic wrap can be used to seal the stew pots if lids are<br />
not available. Make sure to add salt at the very end to<br />
avoid drying out the meat.<br />

There is something almost sacred about<br />
Sedona. The combination of the saffron<br />
buttes set against cobalt skies is otherworldly.<br />

seeking energy vortexes that are clustered in<br />
the area. It’s believed these vortexes form spiralling<br />

and meditation, and Sedona is peppered with<br />
New Age crystal shops and healers to usher<br />
you along the journey.<br />
Rise early when the sun is a muted orange<br />
and take a hike as the fog starts to lift off the<br />
desert floor. To take in the maximum number<br />
of vortexes, hike the Airport Loop trail. It’s<br />
an hour and a half route that takes you past<br />
vortex sites such as Bell Rock, Courthouse<br />
Butte, Coffee Pot Rock and the Cockscombe.<br />
The area does feels different — energy<br />
seems to course through you even as you wind<br />
through cypress forests, pass medicine wheels<br />

Trail to the saddle points of<br />
Cathedral Rock (the first half of the<br />
climb is steep, so take advantage<br />
of the carved steps in the rocks).<br />
Adventurous types should rent<br />
a bike and tackle Munds Wagon<br />
Trail, which crisscrosses Schnebly<br />
Hill Road and leads to the aptly<br />
named rock formation Cow Pies<br />
(a popular vortex spot) and the<br />
Carousel. Along the six-mile route,<br />
expect to navigate clusters of barrel<br />
cactuses, sheer inclines, and rocky,<br />
dry river beds that will give even experienced<br />
mountain bikers a shot of<br />
pure adrenaline. Bring a tour map<br />
and water before you head out.<br />
The sunsets in Sedona are epic,<br />
as the sun’s rays become more angled,<br />
the shadows stretch and the<br />
light on the rocks is amplified and<br />
deepened. Plan a sunset meditation<br />
at popular Overlook Point.<br />
Some visitors feel the vortex’s<br />
power from the top of the rock<br />
formation, while others swear it<br />
comes from the valley below and<br />
flows over the mesa, illustrating<br />
