The clocks have gone back and that can<br />

only mean one thing, winter is not far away.<br />

With the nights drawing in and temperatures<br />

plummeting, let <strong>Bounce</strong> <strong>Magazine</strong> keep you<br />

In this edition we have an exclusive interview with<br />

Rick McMurray from the band Ash. I spoke to Rick<br />

personally about the bands upcoming UK tour<br />

this December, which stops in Norwich. To read<br />

Lamb Korai<br />

Recipe<br />

BY AWARD WINNING CHEF ABDUS SHAHID<br />

Prep Time<br />

30 mins<br />

Cooking Time:<br />

45 minutes<br />

Serves 4-6<br />

This is a great healthy recipe for Lamb<br />

Korai. I have tweaked it to my taste and<br />

hope you all like it too! It is a popular<br />

dish in our restaurant.<br />

Method<br />

1. Preheat oven to 180*/fan 160*/gas 4, then place<br />

an ovenproof dish, oiled, over a low heat.<br />

2. Add the onions and stir fry for 10 minutes until<br />

softened, but not coloured. Then stir in the curry<br />

powder, chillies, garlic and ginger and cook for 1<br />

minute<br />

3. Turn heat up to medium, add the tomatoes and<br />

cook, stirring, for 4-5 minutes or until any liquid has<br />

evaporated. Then add the lamb (you could also use<br />

chicken) and cook, stirring, for 5-10 minutes until<br />

browned. Add the stock, bring to the boil then add<br />

the peppers and season. Cover with a lid or foil and<br />

cook in the oven for 45 minutes or until the lamb<br />

is tender.<br />

4. Meanwhile, rinse the rice then transfer to a pan<br />

with 700mls of boiling water and simmer over a<br />

low heat for 10 minutes. Remove from the heat and<br />

leave to stand for 45 minutes. Fluff up with a fork,<br />

divide between 4 bowls, add curry, garnish with<br />

coriander leaves. Serve with lemon wedges.<br />

Ingredients<br />

• 3 brown onions finely chopped<br />

• 4 tsp medium curry powder<br />

• 2 green chillies halved<br />

• 3 Garlic cloves finely chopped<br />

• 4cm fresh root ginger peeled and finely<br />

chopped<br />

• 4 tomatoes roughly chopped<br />

• 500 g lamb leg steaks fat removed cut<br />

into bitesize chunks<br />

• 450 ml lamb stock<br />

• 2 Green peppers de-seeded and cut into<br />

bitesize chunks<br />

• 1 salt and freshly ground black pepper<br />

• a handful fresh coriander leaves to<br />

garnish<br />

• 4 lemon wedges<br />

• 350g Basmati rice<br />

This is a very healthy recipe if you are<br />

slimming, but when you get the usual<br />

takeaway urge this is just as good.<br />

The tenth Aldeburgh Food and Drink Festival smashes records...<br />

Record numbers of guests headed to Snape<br />

Maltings during September, as it hosted the<br />

tenth Aldeburgh Food and Drink Festival.<br />

Visitors to Suffolk were able to sample some<br />

of the mouth-watering delights on offer at the<br />

seaside town’s food and drink festival.<br />

Final numbers are yet to be confirmed but<br />

organisers have said that the number of<br />

people passing through the gates for the twoday<br />

event had exceeded 8,000.<br />

The festival was hailed a ‘food lover’s<br />

paradise’.<br />

Our <strong>Bounce</strong> team popped along and had a<br />

great time sampling and shopping around for<br />

some of East Anglia’s tasty treats.<br />

Firstly, (with the help of our mascot Archie)<br />

we came across ‘Barkers of Suffolk’. Offering<br />

tasty canine baked treats with messages such<br />

as “I woof you”, we couldn’t resist treating our<br />

Norfolk Terrier.<br />

We also spotted our friends ‘Paddy and<br />

Scott’s’ who were on hand with some caffeine<br />

fixes, we bumped into co-owner Paddy<br />

Bishopp getting stuck in at the event who<br />

expressed the day so far had been very busy.<br />

Also based locally were ‘Scarlett and Mustard’<br />

who tickled our taste buds with a variety<br />

of chutneys and sauces. We particularly<br />

enjoyed the ‘Rudolphs Left Over Curry Sauce’<br />

which will be perfect for leftover turkey<br />

at Christmas! Speaking of Christmas, the<br />

Cratfield farm were on hand with poultry<br />

delights for the Christmas table.<br />

A variety of cuisines were available including<br />

authentic Malaysian cuisine, the ‘Walking Wok’<br />

were serving up some delicious dishes and<br />

we also loved the ‘Red Chilli Kitchen,’ simple<br />

sauces but very tasty.<br />

The festival has a great location at Snape.<br />

You’ve got all the things that you see at<br />

Snape anyway, boutique shops, collectors<br />

centre, cafe. It’s very friendly and there’s<br />

always different things to try.<br />

Walt Whitman once said “Keep<br />

your face always toward the<br />

sunshine - and shadows will fall<br />

behind you”.<br />

Now, it’s a safe bet to assume that Walt was<br />

talking metaphorically however this highlights an<br />

important issue; your face.<br />

The part of your body that takes the brunt of the<br />

weather and is essentially exposed 24/7 and yet<br />

probably the most under cared for area too. So<br />

let’s break this down…<br />

EYES<br />

Don’t pack away your shades with your summer<br />

wardrobe. Just because its cold doesn’t mean<br />

the sun isn’t out (mostly). Sunglasses will help<br />

protect you from harmful UV rays all year round<br />

and the AW season is the perfect chance to<br />

experiment with some different styles. Why<br />

not go for that tortoise shell pair you’ve had<br />

your eye on?<br />

LIPS<br />

The part of your face most likely to feel<br />

the effects of the colder weather. Chapped<br />

lips are nobody’s friend so make sure<br />

you’ve got a quality lip balm to hand (yes<br />

gentlemen, you too). Remember to keep<br />

drinking plenty of water too.<br />

HAIR<br />

Nothing escapes the bitter cold and wind<br />

unscathed. Your hair can become dry<br />

and lifeless in the winter months. You can<br />

reduce this by keeping it covered. There<br />

are some great chunky knit hats on the<br />

high-street this year. And yes, bobbles are<br />

encouraged. If you’re worried about “hat<br />

hair” ruining your look then opt for a coat,<br />

jacket or form of knitwear with a large hood<br />

or collar. There are some great faux-fur and<br />

shearling numbers to be found this year.<br />

SKIN<br />

Speaking of UV rays, ensure you’re<br />

thoroughly protected by getting your hands<br />

on a moisturiser that has a built in SPF factor.<br />

Over exposure to the sun is the number one<br />

cause of ageing skin. As the weather becomes<br />

more aggressive you might find that your skin<br />

becomes tight and dry. If that’s the case consider<br />

switching to a more intensive product until Spring<br />

rolls around.<br />

As for the rest of your body, be sure to find<br />

fabrics that are going to easy on your skin.<br />

Knitwear especially can irritate your skin so make<br />

sure you’ve got some vests and tees to wear<br />

underneath.<br />

Well hello there! Welcome back to my <strong>Bounce</strong> monthly column… Ok so<br />

firstly a reminder about me. I’m Zena (Zee for short) I’m 42, a mother and a<br />

grandmother.<br />

So, autumn is officially here and<br />

the winter coats are out! I love this<br />

season as it gives me a chance<br />

to layer up and experiment with<br />

colour. Tights especially, and the<br />

odd roll neck can transform your<br />

summer dresses into autumn<br />

staples. Of course winter boots are<br />

always a satisfying purchase.<br />

with accessories. My favourites<br />

are the green clip ons (see right<br />

I have some beautiful navy blue<br />

suede boots by Lisa Kay that my<br />

husband bought from me from<br />

a now closed shoe boutique in<br />

town, and I recently purchased<br />

some (genuine pleather I’ll have<br />

you know) black over the knee<br />

boots. They are fabulous.<br />

This month, my husband and<br />

I celebrate our first wedding<br />

anniversary. His gift to me was the<br />

most beautiful vintage handbag from<br />

I’ve also taken inspiration<br />

from the one and only Mary<br />

Quant and paid a visit to my<br />

hairdresser Zoe at Toni and Guy<br />

in Bury St Edmunds.<br />

She has a real eye for detail<br />

and seems to magically make<br />

my hair do what I ask her to!<br />

No mean feet when I’m always<br />

dying it purple or bleaching to<br />

within an inch of its life!<br />

I’m also being interviewed by an entrant for<br />

the ‘Vogue Young Writer of the Year’, Maya<br />

Lindberg. I’m answering questions on my fashion<br />

inspirations and views. Good luck Maya you will<br />

be fantastic!<br />

I’ve been keeping an eye lately on a new men’s<br />

shop that’s been in development at the traverse<br />

in Bury St Edmunds. ‘Dapper Fox’ is definitely<br />

going to be one to watch. I will be featuring the<br />

launch event and photos from the shop on my<br />

blog.<br />

So, winter coats. If you’re thinking of upgrading<br />

your winter coat, maybe you’ve had it a few<br />

years now, why not be brave? The cape has most<br />

definitely made a come back this season. My<br />

favourites can be found on Asos<br />

and eBay… but how about this<br />

beauty from velvet cape, its<br />

such a beautiful colour.<br />

One of my biggest fashion rules<br />

is to invest in your coat and<br />

footwear; everything else will just<br />

complement it. Don’t be afraid to<br />

experiment and if you feel great in<br />

what you’re wearing you will look<br />

great. Simple.<br />

Next month I will be styling our editor here<br />

at bounce towers in my take on retro and<br />

modernist fashion for all those parties coming up<br />

over <strong>November</strong> and December. Think glamour,<br />

think retro think alternative. And yes I will be<br />

featuring that all-important LBD.<br />

national award ceremony held<br />

in Coventry.<br />

Hosted by the Association of Independent<br />

<strong>Magazine</strong> Publishers, <strong>Bounce</strong> was short-listed<br />

in this category against incredibly strong<br />

competition from applications across the UK<br />

and Europe and came away with a crystal.<br />

Winning the award on the 2nd October<br />

Rachel Ducker, editor and owner of <strong>Bounce</strong><br />

<strong>Magazine</strong> shares the following news from the<br />

ceremony…<br />

“After spending the day with other fabulous<br />

independent magazine owners, I was intrigued<br />

to find out what other publications like mine<br />

were up to around the UK and Europe.<br />

Robbie Rutherford, owner of ‘Costa Property<br />

Pages’ managed to come all the way from<br />

Spain for the event. I also met a lovely<br />

Scottish couple that together, run a magazine<br />

called ‘Border Events’. Andrew Lang and<br />

Rosemary Dean, made me feel very welcome<br />

during the conference and I have to say I<br />

thoroughly enjoyed my time with them.<br />

The AOIMP conference was a great place<br />

to mix with other like-minded individuals<br />

in the same industry. After making many<br />

connections and a few new friends, we<br />

headed back to the hotel for a quick change<br />

into our best evening wear.<br />

Accompanied by my partner Sam Hunt,<br />

Managing Director of our sister company<br />

Apparition Marketing and Design, we took our<br />

seats and the night began.<br />

I waited nervously to find out the results, and<br />

I have to say I had a tummy full of butterflies,<br />

awards never get any easier! As the category<br />

was announced I eagerly waited to hear the<br />

winner. As <strong>Bounce</strong> <strong>Magazine</strong>’s name was<br />

called out I couldn’t have been more proud,<br />

many long days and sleepless nights have<br />

gone into creating this publication, and for<br />

one person it can be tiring work.<br />

Get prepped for<br />

Christmas<br />

Christmas is only one short month<br />

away, although some ‘Grinches’<br />

think it’s still much too early to<br />

start thinking about Christmas, I<br />

think this is a great time to get a<br />

head start so that December can<br />

be a time of celebration instead of<br />

frustration.<br />

Tis’ the season… so myself and the team at<br />

<strong>Bounce</strong>, have put together ten things (in two<br />

parts), to help you get ahead of the game…<br />

1. Start organising a Christmas list<br />

Make a list of who you need to buy presents for,<br />

and what you want to buy them. If you can’t think<br />

of ideas for people, ask them what they want now<br />

- giving them a heads up so early in advance will<br />

allow them time to think about what they really<br />

want.<br />

2. Start saving<br />

Christmas can be expensive, so putting some<br />

money aside early can help you budget in<br />

advance. Write a budget for how much all the<br />

presents are going to cost, and if you’re going to<br />

be spending a small fortune on a lot of people,<br />

you can stagger when to get the gifts, so it<br />

doesn’t all fall on your December pay packets<br />

3. A really deep clean<br />

Prepare your home for Christmas decorating by<br />

getting things spiffy clean. During the busyness<br />

of December you will be able to get by with just<br />

some maintenance cleaning.<br />

was like releasing 26 singles in one year, and then<br />

when we came to the end of that we were like<br />

there’s no way we are ever going to top this, in<br />

terms of continuing the single releases.<br />

So in the intervening years, it seemed the album<br />

format sort of revived and the vinyl became<br />

super cool. And people were buying into having<br />

physical copies. When we announced we were<br />

going to do albums it was like 2007. Album sales<br />

were dropping off the edge of a cliff really and<br />

people cherry picked their favourite songs on the<br />

album.<br />

We wanted to do something that reflected<br />

that, as we felt the rest of the music industry<br />

was burying its head in the sand and we felt we<br />

needed to do something pro-active. But I think<br />

with the vinyl becoming more stable again, we<br />

were kinda back in the idea of doing it again.<br />

We’ve always released on vinyl during the A-Z<br />

series so they are all available.<br />

Q: Actually that was my next question<br />

Rick, obviously times have changed<br />

since the release of your first album<br />

‘1977’, people now download tracks as<br />

opposed to buying full albums from the<br />

shops, how has this affected you as a<br />

band?<br />

Yeah over the years there’s been a huge change,<br />

its kinda weird actually, we recently came back<br />

from an American tour and there’s a few people<br />

getting cassettes signed that they bought back<br />

in 95, 96.<br />

Q: The years surrounding ‘Free All<br />

Angels’ were extremely vibrant. What<br />

are your lasting memories of that<br />

period?<br />

A highlight has to be headlining, I think it was the<br />

NME stage back then at Reading Festival, I think<br />

it was the year The Strokes were supposed to be<br />

up on the main stage and there was a big kick-up<br />

at The NME, so we ended up staying in the tent.<br />

The tent was like totally rammed, it was like 5<br />

deep outside the tent and it just felt like one of<br />

the most special gigs of the year.<br />

You must have had quite a few<br />

highlights over the years!<br />

we’ve looked at what we’ve done in the past and<br />

tried to live up to it.<br />

I guess at the start of that particular year, we<br />

were very close to bankruptcy when we put out<br />

‘Shining Light’, which is one of our best-known<br />

songs. When we were recording that song the<br />

record company were really unsure about it, but<br />

we were adamant that it was the best come-back<br />

single we had. The record company actually<br />

refused to pay for it, so we put pretty much put<br />

the last of our own money into that single, then<br />

delivered it to them and then they were like, ‘oh<br />

ok, you were right’. But when we were young we<br />

could take massive risks like that.<br />

Q: I guess your instincts paid off, you<br />

mention being young, you met Tim and<br />

Mark when you were around 16, is that<br />

right?<br />

Q: Who were you listening to leading up<br />

to the creation of the new album?<br />

We still try and listen to new music, in terms<br />

of influence we’ve kinda got our own thing, we<br />

influence ourselves.<br />

Q: OK, down to the nitty gritty<br />

questions, who is the most sensible one<br />

in the band?<br />

We take turns at it, overall it would be Tim, when<br />

he’s on the road he’s conscious of looking after<br />

his voice, he cant cut lose as much as he’d like to!<br />

Me and Mark have got kids now so we’ve calmed<br />

it down somewhat. I mean I’m 40 now, I can’t do<br />

three nights like I used to!!<br />

Yeah, I think Tim and Mark have been playing<br />

together since they were 11 years old and I<br />

hooked up with those guys when I was about 16<br />

and they were 15, and that was the start of Ash.<br />

They previously had another band and kicked the<br />

other members out, stripping it back leaving the<br />

three of us. Before I knew it, a week later we were<br />

recording our first demo.<br />

Q: Would you say your music style<br />

changed at all since you exploded onto<br />

the scene in the 90s? From listening<br />

to the new album there are still real<br />

glimpses of some old school sounds in<br />

there?<br />

With the new album, we feel like we’ve come full<br />

circle, after saying we weren’t going to do an<br />

album again we were very conscious of the fact<br />

that if we are going to do it, we had to come up<br />

with something that would stand up against ‘1977’<br />

or ‘Free all angels’, which are still our best known<br />

works, so that was the pressure and those were<br />

the benchmarks. It was probably the first time<br />

Q: And who is the lady magnet?<br />

I’d definitely say Tim; he’s got the looks for it,<br />

being the front man of the band.<br />

Q: Van Halen famously requested a bowl<br />

of M&Ms, with the brown ones removed<br />

as part of their rider. Who in the band<br />

has made the most outrageous request,<br />

or are you all nice, down-to-earth lads?<br />

In the very early days we did put oxygen on<br />

the rider, it was kinda pointless but the most<br />

outrageous thing.<br />

Q: One of my favourite songs is ‘Girl<br />

from mars’, I remember in particular<br />

passing my driving test, and it was one<br />

of the songs I would blast up and sing<br />

too (badly I might add) - out of your<br />

old material what is the song you enjoy<br />

playing the most?<br />

‘Girl from mars’ it’s fun and its just had its 20th<br />

anniversary, we’ve played it at every single show,<br />

but just recently we close with ‘Burn Baby Burn’ I<br />

really enjoy that! We’ve never been a band that’s<br />

shied away from the hits; we love the energy from<br />

the crowd.<br />

Q: Your UK tour starts in December with<br />

eleven dates in the UK and Ireland, what<br />

are you looking forward to the most?<br />

Just before that tour we’re doing a few weeks<br />

in Europe with ‘We are Scientists’ so a couple of<br />

weeks on a bus with them will be fun, it will be a<br />

good way to get us warmed up.<br />

Q: Do you ever get bored of being ‘on<br />

the road’?<br />

I wouldn’t say bored by you do miss your home<br />

life, especially having kids. Your main focus is on<br />

the gigs, which perhaps in the early days wasn’t<br />

the main focus!<br />

Q: We are very excited about your<br />

upcoming show in Norwich on 12th<br />

December. Have you ever played in East<br />

Anglia before?<br />

Yeah we’ve had some great shows in Norwich<br />

over the years, we have the students there, its<br />

usually a young excited audience.<br />

Q: What can we look forward to?<br />

We will be playing the new album, which fits into<br />

the set with the old hits really well, creating a nice<br />

balance.<br />

Q: After the tour has finished what<br />

comes next?<br />

We’ve got a bunch of stuff left from the<br />

Kablammo sessions, perhaps an EP we need<br />

to figure that out. We need to get in the studio<br />

maybe early next year to get some new material.<br />

We’re hoping to continue touring.<br />

Nasty Nits...<br />

Ever since my children have started school<br />

‘Nits’ have been a big part of my life!<br />

Before having children I was blissfully<br />

ignorant to Nits and the constant<br />

outbreaks children get at school.<br />

As a GP I rarely see children with nits as<br />

they are mainly dealt with at home or at<br />

school, but occasionally I will see a child or<br />

an adult with a bad infestation.<br />

Head lice are the insects that<br />

live in our hair and feed on our<br />

blood. The ‘Nits’ are their eggs<br />

that are stuck onto the individual<br />

hair shafts.<br />

Head lice don’t harm us but<br />

the idea of them can be quite<br />

disturbing and also they can give<br />

you a very itchy scalp, mainly at the back<br />

of the head and behind the ears.<br />

Head lice are passed from head to head,<br />

so children often pass them to each other<br />

when they are sitting close together in the<br />

reading corner.<br />

So if your child has shorter hair or has<br />

their hair tied back this may help to reduce<br />

transmission.<br />

It is important to regularly look for head<br />

lice and nits by separating the hair through<br />

the back, sides and top of the head.<br />

You may see 1-2mm yellow oval eggs stuck<br />

fast onto the hairs themselves.<br />

Sometimes you can see the individual<br />

insects crawling on the scalp, these are<br />

dark in colour, approximately 1-4mm long<br />

with wings, but they can’t fly.<br />

Comb through thoroughly and try to pull<br />

out the individual insects or eggs then<br />

discard of them in a tissue.<br />

Head lice will die when they<br />

are not on your scalp but<br />

it is worth putting all your<br />

towels in the wash if you<br />

find head lice.<br />

The best treatment is<br />

combing through with a nit<br />

comb and to use a Head<br />

lice shampoo that you can<br />

buy from the chemist.<br />

My daughter was getting nits so often that<br />

I now routinely check and treat her hair<br />

about once a week, and this seems to have<br />

done the trick.<br />

It is also important to treat other members<br />

of the household including your own hair.<br />

Just the thought of nits make my head<br />

itch!<br />

and tinsel, there may be excited children or<br />

grandchildren dashing underfoot so do what you<br />

can whilst they are still at school.<br />

Then, when the term comes to an end you can<br />

make the most of them being at home with you.<br />

Start by taking inventory. Move from room to<br />

room listing objects into things that will stay and<br />

dividing those that can go into - rubbish, things<br />

to sell and things to give away.<br />

Choose which room most needs your attention,<br />

set some time aside and then put your plan into<br />

action. Deliver unwanted items to their final<br />

destination whilst momentum is high.<br />

If you cannot decide what to do with an item, ask<br />

yourself – do I need it? Is it useful? Do I like it?<br />

Sometimes we hold onto old things because we<br />

think we should, but it is OK to let things go.<br />

By clearing a small area each day, you can quickly<br />

make a big change to the atmosphere in your<br />

home.<br />

Life is not meant to be stressful, the purpose of<br />

life is to be happy. Putting some effort in now<br />

means that during December you will have time<br />

Changing the Dialogue of Domestic Violence by Min Grob...<br />

Following the success of the 1st Conference on<br />

Coercive Control which was recently held at The<br />

Apex in Bury St Edmunds and which sought<br />

to raise awareness of controlling and coercive<br />

behaviour, a form of domestic violence which will<br />

soon be made illegal under the Serious Crimes<br />

Act <strong>2015</strong>, where do we go from here?<br />

We need to, all of us, start looking at domestic<br />

violence differently. Instead of focussing on<br />

the ‘high risk’ incidences of abuse that result in<br />

physical injury, we need to look at the pattern of<br />

behaviour that makes up coercive control. The<br />

smaller incidences that, of their own, stay under<br />

the radar but, when viewed collectively, form<br />

a very definite pattern of the abuser trying to<br />

undermine, isolate and subjugate.<br />

We need to start looking beyond what is being<br />

presented.<br />

Two scenarios:<br />

Police are called to a domestic incident. The wife<br />

is ‘hysterical’ the husband is calm. Who is the<br />

perpetrator?<br />

A woman goes to her GP soon after birth and<br />

asks for the contraceptive pill. Does she want to<br />

resume sexual relations or is she being subjected<br />

to marital rape?<br />

We need to start challenging this belief that<br />

domestic violence is a private matter. It is not. We<br />

need to start speaking up. More next month....<br />

Nestled comfortably in the heart of<br />

Beccles sits a gem just waiting to<br />

be discovered…<br />

By day ‘Upstairs at Bailey’s’ is a top quality<br />

delicatessen, stocking excellent cheese and<br />

charcuterie, Spanish olive oil, olives and pulses<br />

and an interesting range of Spanish wines<br />

carefully selected by owner Xavier Esteve.<br />

However, on a Friday and Saturday night, Xavier<br />

and his head Catalan chef Mauro up their game<br />

and transform the establishment into a wonderful<br />

fine dining experience. Their a la carte menu<br />

offers the best of traditional Catalan cuisine right<br />

here in Suffolk.<br />

and his wife Alice, were kindly invited along to<br />

enjoy the delights on offer at the family-owned<br />

Catalonian restaurant.<br />

“As we arrive journeying through the darkened<br />

Deli, we are led up the stairs of Baileys, where we<br />

are warmly greeted by owner Xavier.<br />

It is clear from the offset that his character, charm<br />

and passion for Spanish food would certainly rub<br />

off on us all throughout the evening.<br />

Presented with a pristine menu full of elegant and<br />

fresh dishes, Xaiver indulgently talks us through<br />

the menu. The creations of his head chef, sound<br />

amazing considering he is left pretty much to his<br />

own devices. We all look to each other for help<br />

on deciding what to order, but to help us along<br />

the way we are served a special Baileys house<br />

cocktail, that when down faster than a speeding<br />

ticket.<br />

My attention is caught by the ‘Arrebossat de<br />

Vieira I Porc,’ which to you and I is scotch scallop<br />

and pork belly served with spiced apple, carrot<br />

and curry cream and a reduction of marsala.<br />

As I try to pronounce the Spanish title to Xavier<br />

(very badly I might add), the others selected<br />

their dishes. Andrew chose the Octopus with<br />

quinoa and chorizo veloute, whilst Sam and Alice<br />

both opted for the black spaghetti with lobster<br />

Bolognese and fresh crab bisque.<br />

With this job I am lucky enough to review many<br />

fine restaurants, but I have to stay the standard of<br />

food at Baileys is second to none.<br />

The dishes are presented like pieces of art, but<br />

unlike some dishes that ‘look good but just taste<br />

ok’, these exude wonderful Spanish flavours<br />

bringing a taste of Spain to your table. Each of<br />

these dishes tells a story, as the best meals should<br />

do. I was certainly not disappointed with my<br />

starter; in fact I could have managed two!<br />

From his stash of handpicked imported wines, he<br />

recommended a bottle of Winery Arts number<br />

‘9’, combining the Tempranillo and Cabernet<br />

Franc grape from Spain. This matched our second<br />

course dishes perfectly.<br />

For the main course following my fish theme, I<br />

selected ‘Arros negre amb rap,’ Catalan black rice<br />

with monkfish, cuttlefish and oyster mushrooms.<br />

Sam selected the Spanish cod in comfit with<br />

prawn crème, Piquillo peppers caulis and picked<br />

vegetables, Andrew chose duck leg with foie gras<br />

and cocoa truffles, orange cremeux and Bigarade<br />

sauce and finally Alice opted for the slow<br />

cooked lamb loin medallion with cottage cheese,<br />

caramelised pink lady and black olive reduction.<br />

Xavier fondly remembers long family meals where<br />

everyone sat together enjoying the food and<br />

company – it’s this relaxed atmosphere focused<br />

on great food, wine and hospitality that you will<br />

find at Upstairs at Bailey’s.<br />

Saving the best course until last… dessert. I<br />

had no hesitation in selecting the dark and<br />

white chocolate mousse with sorbet, absolutely<br />

amazing with textures that just melt in your<br />

mouth. Although I personally think my choice was<br />

the best, Alice and Sam (with minds alike once<br />

again) both picked the Elderflower Gin and Tonic,<br />

which arrived in an interesting fashion. To get<br />

to the goodies at the bottom you had to smash<br />

through a layer with your spoon – fun! Andrew<br />

was delighted with his Praline coulant with<br />

mango sorbet. So much so, we began to argue<br />

who’s pudding was the best!<br />

The happy atmosphere of a busy independent<br />

restaurant in a small town deserves to be put on<br />

the map, especially since we all walked out so<br />

happy ourselves. Apologies for shouting about<br />

our fantastic evening, but I think that Xavier, his<br />

team and their outstanding food deserve huge<br />

praise indeed.<br />

Wines of<br />

California<br />

Winemaking started in California as a result<br />

of Spanish Conquests moving up from South<br />

America.<br />

Valley just north of San Francisco Bay.<br />

This occurred in the 18th Century<br />

and used the Mission grape for<br />

sacramental purposes in the church.<br />

The first plantings were in San Diego in 1769 and<br />

after that further north in Sonoma County north<br />

of San Francisco in 1805. These were in Missions<br />

set up by the conquerors and thus the title of<br />

the grape. By 1830 a Bordeaux Producer started<br />

planting vines and by 1838 they were in Napa<br />

The Gold Rush in 1848/49 caused a population<br />

explosion and much wealth was created.<br />

Subsequently the Railroad got through to San<br />

Francisco in 1869 which further enhanced the<br />

potential for commercial wine making.<br />

By 1890 the wine was becoming a quality<br />

product and even got to winning medals in<br />

Paris. Production by this time was approaching<br />

25 million gallons of wine. The ruinous bug<br />

Phylloxera struck in the same period creating<br />

similar problems to those in Europe. By the 20th<br />

Century things had improved with European<br />

immigrants arriving bringing their own vines and<br />

expertise to the State.<br />

A major setback occurred in 1919 when<br />

prohibition stopped wine production. This<br />

lasted until 1933 when the act was repealed.<br />

The Second World War also intervened, which<br />

delayed progress and it took until the 1950’s to<br />

recover. By the 1960’s a group of experts started<br />

the Quality trail which led to 227 wineries being<br />

established by 1966. This grew to 900 by 1998<br />

and today stands at about 1200.<br />

The Climate and Geography<br />

About twice the size of the UK, the climate varies<br />

from North to South but also West to East. Not<br />

only does it get warmer the more southerly you<br />

are but it also gets warmer the more Easterly<br />

you go.<br />

Most vineyards therefore are situated near the<br />

Pacific coast and Central valley.<br />

The more northerly you are,<br />

generally the better quality. The<br />

Pacific Ocean acts as a cooling<br />

influence that balances the<br />

heat and sunshine. Rolling<br />

mists are famous for achieving<br />

this, particularly in Napa Valley<br />

where the mist rolls in from San<br />

Francisco Bay. Soil types are<br />

extremely varied, complicated by<br />

geological plate movements. This<br />

leads to a diversity of soils where even the same<br />

vine variety and same block of vines can lead to<br />

different results.<br />

North Coast<br />

Napa Valley, Sonoma County, Mendocino and<br />

Lake County, generally north of San Francisco<br />

South Coast<br />

South of Los Angeles, Temecula Valley, Antelope<br />

Valley, San Pasqual Valley and Ramona Valley.<br />

Central Valley<br />

Central Valley, Sierra Foothills, Lodi<br />

Each region can be divided into what are called<br />

American Viticultural Areas or AVA’s. There are<br />

107 in California and they represent areas where<br />

geography, soil and climate give a similar set of<br />

characteristics.<br />

Grapes<br />

These are almost all European in origin. They<br />

include Cabernet Sauvignon, Merlot, Syrah, Pinot<br />

Noir, Chardonnay, Sauvignon Blanc and Zinfandel.<br />

Many others are used to great success.<br />

Styles<br />

They tend to be compared with<br />

famous European styles, like<br />

Bordeaux, Burgundy, the Rhone<br />

and Champagne. Really they are<br />

good enough to stand on their<br />

own. Of course the styles may be<br />

reminiscent of European ones but<br />

they are very different due to the<br />

reliable climate and the extent of<br />

sunshine. This makes the fruit very<br />

ripe and leads to commonly high<br />

alcohol levels of over 13.5%.<br />

Thus a Californian Chardonnay differs greatly<br />

from say a Chablis as they frequently use<br />

malolactic fermentation and oak ageing to make<br />

buttery full bodied wines.<br />

Most of the other grapes such as Merlot,<br />

Cabernet Sauvignon and such show<br />

concentration of fruit and Pinot Noir, a more<br />

intense fruity style than the more subtle elegant<br />

wines of Burgundy, or the more northerly Oregon<br />

ones.<br />

Conclusion...<br />

Californian Wine is certainly a force to reckon with. There was a blind tasting in Paris in 1976<br />

where Californian wines won over the French. So try a French one at the same price level as<br />

a Californian one and compare. You could be pleasantly surprised. Try the reds with a little<br />

cheddar. Enjoy!<br />

This month, Mauro brings us<br />

a fresh twist on this Catalan<br />

favourite - a hearty mash of<br />

potatoes and cabbage, served with<br />

sweet smoky bacon and topped<br />

with squid. Trinxat comes from the<br />

Catalan word for ‘chopped’.<br />

Recipe serves 4 people...<br />

Ingredients<br />

3 red potatoes<br />

Half Savoy cabbage<br />

4 small size squid<br />

30gms (in one piece) smoked streaky bacon<br />

skin off<br />

4 tbsp of honey<br />

Method<br />

1. Peel and dice the potatoes, slice the cabbage<br />

and boil together in salted water.<br />

2. Lay the bacon in a tray and cover with the<br />

honey. Let it cook for 2 hours, basting every 15<br />

minutes with the honey and the juices.<br />

3. Drain the potatoes and cabbage and mash<br />

together. Add a splash of olive oil and season<br />

with salt.<br />

4. Slice the squid ‘julienne’ (long thin strips)<br />

and sauté in a hot pan with salt and pepper.<br />

5. To serve, divide the mash between 4 plates<br />

(use a ring if you have one – otherwise just<br />

place it in a rough circular shape). Place some<br />

squid on top and a slice of the bacon next to it.<br />

A cocktail to toast Autumn’s<br />

arrival…<br />

This cocktail that is naturally sweet.<br />

I’m not a fan of overly sugary cocktails.<br />

Figs tend to vary quite a bit in terms<br />

of sweetness– some ripe figs are very<br />

sweet, while others are only mildly so.<br />

You can always add a drop of honey if<br />

this is the case. You can make the fig<br />

puree ahead, but the cocktail tastes<br />

best if stirred and mixed just before<br />

serving.<br />

Method<br />

1. Puree the figs to a pulp<br />

2. Add a shot of apple cider<br />

to a cocktail shaker along<br />

with some ice<br />

3. Then add the vodka<br />

(your preference)<br />

4. Add the puree and shake<br />

(don’t forget to strain!)<br />

5. Serve in a martini glass<br />

and garnish.<br />

• 1 jigger of pureed black mission figs<br />

• ½ shot of organic apple cider<br />

• 1 jigger of vodka<br />

CHOCOLATEY BROWNIES<br />

This month we are making some seriously chocolatey brownies! A delicious<br />

treat that is loads of fun to make. Don’t forget all these recipes and lots more<br />

can be found in my cook books.<br />

Right, ask your big person to preheat<br />

the oven to 180°C and start lining a<br />

baking tray with greaseproof paper.<br />

It is now time for the cooking so make<br />

sure you have someone big enough near<br />

by to pop your brownies in the oven for you.<br />

So, pour the brownie mixture in a baking tin<br />

and let it settle as level as possible. Now it’s<br />

time for the oven!<br />

Now whilst you have your big person’s<br />

attention, ask them to heat up some<br />

water in a saucepan and pop a bowl over<br />

it. They then need to add the chocolate and<br />

butter.<br />

Make sure they keep and eye on it though<br />

and keep stirring it. it is very easy to burn<br />

the chocolate if you do not stir it often<br />

enough.<br />

While they are doing this bit, you need<br />

to get a big bowl out and start adding<br />

the other ingredients. Start with the cocoa<br />

powder, then the flour and then the baking<br />

powder and sugar. This will need stirring.<br />

Now add the eggs and chocolate<br />

mixture and beat the until it is all nice<br />

and smooth. It should look quite silky.<br />

Your brownies need to cook for about<br />

25 minutes but keep an eye on them as<br />

ideally you want them to be slightly crunchy<br />

on the outside but soft and gooey in the<br />

middle. Remember this if you test them with<br />

a knife as you do not want the knife to come<br />

out completely clean like with normal cakes<br />

as this would mean the brownies are over<br />

cooked!<br />

Once they are cooked absolutely perfectly<br />

allow them to cool for a few minutes then<br />

enjoy with a dollop of cream or ice cream.<br />

Ingredients<br />

Melted butter for brushing 50 g<br />

Cocoa powder for dusting 10 g<br />

70% dark chocolate 200g<br />

Butter unsalted<br />

200g<br />

Golden caster sugar<br />

200g<br />

Whole medium eggs 4 each<br />

Egg yolks<br />

4 each<br />

Plain flour<br />

200g<br />

Method<br />

• Using upward strokes, heavily brush the<br />

melted butter all over the inside of nine 150 ml<br />

pudding moulds. Place them into the fridge<br />

or freezer. Once they are chilled, brush more<br />

melted butter over the chilled butter, and<br />

then add a good spoonful of cocoa powder<br />

into the mould. Tip the mould so the powder<br />

completely coats the butter. Tap any excess<br />

cocoa out, and then repeat with all of the<br />

moulds.<br />

• Place a bowl over a pan of barely simmering<br />

water, and then slowly melt the chocolate and<br />

butter together. Remove bowl from heat and<br />

stir until smooth. Leave to cool for about ten<br />

minutes. In another bowl whisk the eggs and<br />

yolks together with the sugar until thick and<br />

pale and the whisk leaves a trail. Sift the flour<br />

into the eggs, and then beat together.<br />

• Pour the melted chocolate into the egg<br />

mixture in thirds, beating well between each<br />

addition until all the chocolate is added and<br />

the mixture is completely combined to a loose<br />

cake batter. Tip the fondant into a jug, and then<br />

evenly divide between the moulds. These can<br />

now be frozen for up to a month and cooked<br />

from frozen. If not freezing, chill for a minimum<br />

of 20 minutes or up to 24 hours.<br />

• Place the fondants on a baking tray then cook<br />

for 10-12 minutes until the tops have formed a<br />

crust and they are starting to come away from<br />

the sides of their moulds. Remove from the<br />

oven, and then let them sit for 1 minute before<br />

turning out.<br />

• Loosen the fondants by moving the tops<br />

very gently so they come away from the sides,<br />

easing them out of the moulds.<br />

How to dress the plate<br />

• Make a little chocolate shard by spreading<br />

some melt dark chocolate on a bubble wrap.<br />

• Make the chocolate fondant (see recipe on<br />

other recipes document)<br />

• Slice the Stem ginger.<br />

• Dispose the chocolate fondant in the plate,<br />

add one ball of coconut ice cream next to it<br />

and dispose some slices of stem ginger in the<br />

plate.<br />

• Garnish with the chocolate shard and a dust<br />

of icing sugar.<br />

“ON TO IRINGA”<br />

Last time I left you having just finally boarded my correct bus, which<br />

was the one to take me from Dar Es Salaam to Iringa, in the middle<br />

of nowhere, Tanzania, a bus trip that should take roughly 12 hours.<br />

The bus was old with the seats packed in<br />

tightly, three on one side of the bus and two<br />

the other, effectively narrowing the gangway<br />

to squeeze the extra column of seats in.<br />

My ticket had me sat on the aisle seat of the<br />

three with a rather rotund lady occupying the<br />

window. As the bus slowly filled I was getting<br />

knocked about by bag after bag as people<br />

squeezed through, I wondered who would be<br />

sat between the lady and myself. The bus<br />

was due to depart at 8am but by now it was<br />

now ten thirty and nothing was happening.<br />

It seems that although they do advertise a<br />

departure time, generally buses will leave<br />

when they’re full, the advertised time I<br />

believe is more of a suggestion for the<br />

time you should think about turning up ...<br />

give or take an hour or two.<br />

As 11am came and went, the seat next to me was<br />

still empty but finally the engines started and just<br />

a few minutes later we were underway. Looking<br />

around, the bus has totally filled apart from the<br />

one seat to my immediate right. To be honest,<br />

by the time the large window lady and my ample<br />

bum were in situ, there was about half a seat left<br />

at best, so I think we were both a little relived.<br />

We weren’t on the road for long before we<br />

had our first stop, by now I was used to<br />

traders trying to sell food and drink through<br />

the windows, in fact, I looked forward to<br />

it. There was the usual crisps, fizzy drinks,<br />

meat on a stick and more, but one thing<br />

in particular caught my eye. It was a<br />

small, steaming black bag being passed<br />

in. I asked the vendor what was inside;<br />

“Chicken and chips” came the reply. I<br />

didn’t believe him so I double checked and<br />

he assured me it was chicken and chips. Suitably<br />

confused I asked how much and when I found<br />

out it would just be a dollar I thought it would be<br />

worth it just to find out.<br />

to pull over, which we duly did. As I look towards<br />

the front I see the large man getting on, it seems<br />

that he missed the bus and has hired a moped to<br />

chase it down … as you do!<br />

I handed over my money and tentatively opened<br />

the bag, half expecting a chick to jump out. What<br />

I discovered inside was awesome, best described<br />

as a chip omelette, fair enough I thought,<br />

chicken and chips isn’t far off. By now it was a<br />

little tepid but I expected to get food poisoning<br />

from everything I ate, so what the hell … It was<br />

delicious.<br />

About an hour later, now just over 2 into the 12<br />

ahead of me as there was honking and a lot of<br />

commotion at the side of the bus. I leant over to<br />

take a look down and saw a rather large man on<br />

the back of a moped frantically waving at the bus<br />

There was the one seat left, he was large, so was<br />

she and I’m on the outside. As he approached<br />

I kept my fingers crossed, looked down and<br />

avoided eye contact at all costs, the old ostrich<br />

technique ... but it didn’t work, he shuffled up and<br />

gestured that it was his seat. I stood up and let<br />

him squeeze in as he swiftly filled up half of my<br />

seat along with his. What was left for me was just<br />

enough for half a cheek.<br />

I wouldn’t describe the ensuing 10 hours the most<br />

comfortable of my life, but that’s for another<br />

month.<br />

This column was inspired by a<br />

friend of mine who said “wouldn’t<br />

it be great to produce a column to<br />

help people with those ‘first time’<br />

dilemmas?” I thought so too, so<br />

here it is this month, starting with<br />

‘sharing a home with a partner’.<br />

So you and your partner have taken the leap to<br />

move in together. By now you’ve probably looked<br />

into finding a new place, sorting through financials,<br />

deciding what to take or leave from your existing<br />

property and getting mentally prepared to share<br />

each others space (and habits)!<br />

The Perks...<br />

Although it may take planning, coordination,<br />

money and can be pretty stressful the upside of<br />

moving in together can be a perfect solution for<br />

some couples. Some reasons are emotional – you<br />

want to spend more time together and support<br />

one another. There are also so many financial<br />

benefit, shared rent and food shopping make<br />

living a little easier in this day and age.<br />

Collaborate...<br />

You can enjoy decorating your home together<br />

regardless of your DIY skills. Establish a combined<br />

sense of ownership, share ideas and don’t forget<br />

to take an interest in each other’s desires. Creating<br />

harmony takes teamwork… sure you are bound to<br />

disagree on something’s but I always think a game<br />

of ‘rock, paper, scissors’ could be a good way to<br />

at least one element in each room that represents<br />

you separately. They don’t have to be huge pieces,<br />

but this way you can find a larger statement piece<br />

together which is largely about the two of you.<br />

Shopping can be enjoyable but the secret is in<br />

the planning. Make sure you set budgets so that<br />

you are not disagreeing on costs. It also helps<br />

to prioritise areas of the house that need more<br />

attention initially, others can wait. Lastly from my<br />

personal experience make sure you are both fed<br />

and watered first, shopping on empty can be a<br />

tortuous experience!<br />

Those who know me will know that<br />

I am a bit of a Dior Addict, a lot of<br />

my professional kit (and personal<br />

kit) is Dior. I love Dior because<br />

most of the products do what they<br />

say they do.<br />

The award winning Dior Star Foundation is<br />

perfect if you love taking photos of yourself, the<br />

hollow silicon beads means the light goes into the<br />

beads and back out instead of reflecting the light<br />

off like most. This means that you will not look<br />

white in your photos. It is a medium coverage<br />

with the ability to be able to build on it, but it still<br />

doesn’t look caked.<br />

The Instant Cleansing Water is a lovely refreshing<br />

product for a quick cleanse before applying<br />

makeup or nice to remove your makeup with.<br />

I always keep one in my kit to use on my clients.<br />

Primers, there are two that I use from Dior,<br />

Glowmaximiser, which is a primer with a<br />

pearlescent look to it giving beautiful glowing<br />

skin, perfect for nights out, special occasions and<br />

when you want that extra glowing staying power.<br />

The second Primer is one I use on a daily bases,<br />

Dior’s Dream skin, this is a primer, moisturiser,<br />

pore minimiser and leaves your skin looking<br />

radiant.<br />

We all want our eyes to stand out, and Dior have<br />

mastered the art of it, the lash maximisor looks<br />

like a white mascara, this conditions your lashes,<br />

so you can put it on at night on its own for extra<br />

treatment over night. You can also use it before<br />

your mascara to help give length and volume; I<br />

have had so many compliments on my eyelashes<br />

since using this.<br />

As for Mascara I love the Diorshow Mascara, I<br />

have been using this since 2007 and still use it.<br />

I have tried and still try different mascaras but<br />

always go back to the Diorshow, it gives<br />

me beautiful length and volume.<br />

Of course the Eye shadows I love, the pigments<br />

are strong so they go onto your skin the colour<br />

they are in the palette and your don’t have to use<br />

much of them, meaning they last for quite literally<br />

years (please remember to keep them clean<br />

though, you can buy cosmetic cleansers sprays<br />

from Beauty So Clean, www.beautysoclean.com)<br />

Another of my must have’s and something that<br />

i always have in my handbag is the Lipglow, a<br />

lipbalm that reacts with the chemicals in your skin<br />

to bring out a hint of natural colour, great for the<br />

no makeup, makeup look. If you like a lipstick the<br />

Rough Dior Lipsticks are beautiful! Long lasting<br />

without drying out your lips, I have a fair few in<br />

my kit.<br />

For a finishing touch, have a spray of Miss Dior<br />

perfume, we all want to smell nice and this is<br />

a beautiful classic perfume which has an air of<br />

sophistication.<br />

Dior does have a premium price tag compared<br />

to some other brands, but you really do get what<br />

you pay for, I put my makeup on and do not have<br />

to top it up. The products will also last you a long<br />

time, they really do what they say they do.<br />

In Sync at SK ... <strong>Bounce</strong> Review<br />

When I was invited along to SK Clinic +<br />

Spa for a ‘Synchronised Massage’, I was<br />

a little inquisitive about how it could<br />

work, but also really looking forward to<br />

the treatment. This was a first for me!<br />

The massage is performed in a synchronised fashion<br />

by a team of two Therapists.<br />

Synchronised Massage is one of the most<br />

prestigious royal treatments in Asia and the Middle<br />

East, but is now offered as a treatment at SK Clinic<br />

+ Spa in Bury St Edmunds.<br />

This massage popularly known as a “four handed”<br />

treatment; has multiple health benefits, including<br />

muscle tension relief, improved circulation and<br />

detoxification of the immune system.<br />

Due to my hectic schedule sometimes it is really<br />

difficult to fit in some ‘me’ time, so this type of<br />

massage is perfect as the benefits of having two<br />

therapists’ means it cuts your time in half, allowing<br />

you to achieve more in your massage treatment.<br />

For an hour I am massaged all over my body, limb<br />

by limb, front and back, with the only sound being<br />

the swish of hands on flesh. As I relax, I particularly<br />

enjoy the feeling of my top half being worked on<br />

whilst the other therapist uses thumb work deep<br />

into my feet. It gives you more of an ‘all over body’<br />

sensation.<br />

During the treatment I thought to myself, how do<br />

they time their movements? Do they count? Do<br />

they wink at each other or nod their heads? Well<br />

that part I couldn’t see, however in perfectly timed<br />

formations the intensity of the massage began to<br />

kick in.<br />

Each therapist works on one side of my body, and<br />

their hand movements and continuous pressure<br />

are always in sync; the meaning of ‘synchronised<br />

massage’ becomes clear.<br />

As my treatment comes to the end I drift back into<br />

a conscious state as my eyes adjust to the light in<br />

the room. I thank my therapists and I am left to<br />

dress. Whilst I ‘float’ out to reception I carry with me<br />

a calm head and leave feeling utterly refreshed.<br />

This has definitely changed my feelings<br />

about massage and<br />

from now on I believe<br />

two sets of hands are<br />

far better than one!<br />

Well, I have discovered<br />

you can actually make it<br />

into the new statement<br />

piece you always wanted,<br />

costing you next to<br />

nothing- Promise!<br />

Walking around shops and flicking through catalogues lately<br />

I have come across a lot of painted furniture, add that to the<br />

upcoming event of moving house, the light bulb to analyse<br />

what I already had appeared.<br />

But you don’t need to be moving to revamp the whole room<br />

with a DIY piece. There are endless options of colour when it<br />

comes to making your decision obviously and it’s up to you<br />

how long you want to spend in the paint isle!<br />

Choose from black, white or a completely bold colour! My<br />

friend recently did a set of draws in ruby red, which now looks<br />

great in her bedroom.<br />

Or a unit that I came across in a department store last<br />

week was metallic silver! You can’t deny that would make a<br />

statement.<br />

Depending on how big the piece of furniture you chose to<br />

breathe new life into is, you may get away with buying just a<br />

few of the tester paint pots.<br />

If you are painting with a light<br />

colour it is likely you will need<br />

two coats.<br />

The process of conversion<br />

requires little more than your<br />

chosen piece, a paint brush<br />

and an old sheet or newspaper<br />

underneath.<br />

One of my own projects is the<br />

now ‘parchment’ coloured desk<br />

with two draws pictured, which<br />

used to be black!<br />

This took me two coats of paint<br />

and two separate hours with a<br />

couple drying hours in-between.<br />

If you have handles you do not<br />

want to get any paint on tape<br />

around them whilst working.<br />

With any luck you’ll be happy<br />

with your ‘new’ piece of furniture,<br />

but you could even go one step<br />

further.<br />

For example on the parchment desk I used<br />

sandpaper to achieve the very popular look of<br />

‘shabby chic’!<br />

Grazing the sandpaper over the edges and<br />

some of the front panels took merely another 10<br />

minutes once the top coat had dried.<br />

Another extra would be the changing of handles,<br />

which can give the piece a completely new style.<br />

Pick up new handles from shops or find weird and<br />

wonderful ones on eBay and Amazon.<br />

EBay could also be the place to pick up an old<br />

piece of furniture in need of attention if you want<br />

to have a go but don’t have a piece already that<br />

you want to use.<br />

are very collectable, as well as being full of breed<br />

specific character. I am an ardent supporter of<br />

British brands wherever possible, Melt Candles<br />

are a family business based in Lancashire<br />

producing hand made candles and reed diffusers<br />

using carefully mixed essential oils that have the<br />

most glorious fragrances.<br />

Voyage Maison weave their own tweeds, employ<br />

their own artists and make their own cushions<br />

and lampshades all in Glasgow. Their sofas and<br />

chairs are also manufactured in the UK. In this<br />

day and age, some imports are unavoidable but<br />

the quality and craftsmanship of our carefully<br />

Sarah explains that her passion for interiors<br />

started when she helped her uncle sell sofas from<br />

his barn in Chediston whilst at the same time<br />

renovating her and her husband’s family home.<br />

“In a way we were lucky as we didn’t own a scrap<br />

of furniture when we started the house so we<br />

could start to furnish it from scratch, it is still a<br />

work in progress but it is coming together”.<br />

As well as running the shop, Sarah also<br />

undertakes full house furnishings and conducts<br />

interior design services. “I’ve designed a few<br />

show houses which is great fun, and I really love<br />

helping others create a beautiful home. There<br />

is so much more to the small shop than meets<br />

the eye, for instance we can supply freestanding<br />

kitchens, headboards and complete beds, sofas,<br />

armchairs as well as designing curtains, blinds<br />

and window dressings.”<br />

I am trying to create an autumn themed room at<br />

home, what advice would you give me to help me<br />

come up with some inspired ideas?<br />

Personally, I would keep the walls neutral but<br />

add in the autumn colours with soft furnishings,<br />

throws, cushions etc and use some of the<br />

fabulous coloured autumn leaves in frames.<br />

That way if you tire of the theme you can easily<br />

change it without the hassle of re-painting the<br />

entire room again.<br />

WINTER IS ON IT’S WAY<br />

Kates Top Tip : Rake fallen leaves - Fallen<br />

leaves prevent light and air getting to plants -<br />

clean them up!<br />

Leaves are falling rapidly, and<br />

wind and rain are on the increase.<br />

Tender plants (such as bananas)<br />

will need protecting from frost,<br />

gales and freezing rains.<br />

Tidy up borders<br />

Cut down herbaceous stems and clear the tatty<br />

remains of annuals, but do leave a little cover<br />

of the perennials that fade relatively elegantly<br />

(sedum, astilbes and grasses for example). Continue<br />

collecting and storing seed from perennials still<br />

forming seed heads. Bring inside any tender<br />

perennials, such as Fuchsia, Gazania, Lantana and<br />

Abutilon, before frosts cause damage.<br />

The Greenhouse<br />

Clear out the greenhouse, wash pots and trays, clean,<br />

mend and oil your tools and throw away anything<br />

that is beyond hope or reasonable repair!<br />

Drain and lag...<br />

Save yourself untold irritation and expense by<br />

draining and lagging standpipes, outdoor taps,<br />

irrigation lines and water pumps in advance of<br />

sudden hard frosts.<br />

POOR FORM – DON’T JUST POINT<br />

As sure as night follows day,<br />

football fans will always have a<br />

strong opinion when their club<br />

is going through a rough patch.<br />

One win in 10, no victories in<br />

the last six games – at the<br />

time of writing of course.<br />

Mick McCarthy was right to<br />

admit this is his toughest<br />

time in the Ipswich Town<br />

dugout following the dismal<br />

3-0 defeat at Hull City.<br />

As he approaches his<br />

third birthday in charge at<br />

Portman Road, probably<br />

the most frustrating thing<br />

for fans is trying to work out where it<br />

has gone so wrong.<br />

How Ipswich can go from four straight wins<br />

at the top of the Championship to freefalling<br />

down the second tier in such dramatic fashion.<br />

I have to confess that I am equally mystified.<br />

Let’s start with the obvious. Injuries have<br />

played their part. As the lions of Hull roared,<br />

toothless Town had to make do without a<br />

potential starting midfield of Cole Skuse,<br />

Teddy Bishop, Ryan Fraser and Tommy Oar,<br />

not to mention their most creative player in<br />

David McGoldrick. Any team would struggle<br />

with those in the treatment room rather than<br />

on the pitch.<br />

Owner Marcus Evans must look at his role as well.<br />

Yes, he threw far too many millions at previous<br />

incumbents. But it is hard not to think Mick is being<br />

punished for the mistakes of Keane and Jewell<br />

before him. It is all very well pulling out free transfer<br />

magic rabbits out of the hat, but sometimes you<br />

need a real show-stopper.<br />

I’m not saying break the bank to try and sign an<br />

Andre Gray or, dare I say, Jordan Rhodes. But a<br />

couple of million on the right player/players would<br />

improve the squad. And even when spending sevenfigure<br />

sums, you can still do your due diligence to<br />

make sure the character is right and the team spirit<br />

remains on track.<br />

Money should have been spent in January when<br />

Town were pushing for automatic<br />

promotion. Likewise, more should<br />

have been spent in the summer.<br />

Paying half decent wages doesn’t<br />

seem like it is going to be enough.<br />

Naturally, the players have to<br />

face some hard truths – and I am<br />

sure Mick, for all his public loyalty,<br />

has talked privately with the likes<br />

of Skuse, Luke Chambers and<br />

Christophe Berra about their recent<br />

form.<br />

Then there’s Mick. To come out and<br />

say he would be put off bringing on fans’ favourites,<br />

just because they chanted for them, was needless<br />

at best.<br />

His loyalty is admirable but if his star men have lost<br />

their sparkle, it’s time to take them out of the firing<br />

line. Right now, it is about getting points on the<br />

board. And, as much as it pains me to say, if that<br />

means Jay Tabb rather than Ainsley Maitland-Niles,<br />

maybe Mick needs to resort back to basics.<br />

Action Man loves a ‘call to<br />

action!’ and when the folks<br />

at Taipan Combat asked me<br />

to come along then I couldn’t<br />

possibly refuse!<br />

and competitions based on technique as opposed<br />

to fighting an opponent. This helps maintain a<br />

fun and positive environment providing an ideal<br />

learning platform for potentially lifesaving skills.<br />

Our session started with a fun yet rigorous warm<br />

up, you do not have to be super fit the techniques<br />

can be picked up by anyone irrelevant of size, age<br />

or gender.<br />

Starting back in January 2013 by 5th degree black<br />

belt and 30 year martial arts veteran Stephen Von<br />

Leuchtenberg Taipan Combat has been designed<br />

to bridge the gaps in-between other martial arts<br />

whilst also focusing on modern day self-defence.<br />

There is a less of a competitive edge when<br />

compared with other marital arts with gradings<br />

We then moved into the defence drills, as the<br />

dojo regulars honed their skills ahead of an<br />

impending grading AM stepped onto the striking<br />

chequered floor for the first time. The drills are<br />

designed to represent potential modern day<br />

real life situations, an attack with a weapon, an<br />

altercation at an ATM, threatened with a knife<br />

and even a gun. The aim is quite simple, to keep<br />

you alive, in certain situations the best way to<br />

do that is to remove the danger by disarming<br />

the assailant. With the right techniques this is<br />

easier than you think, even with AM’s somewhat<br />

diminutive 5’5.5” frame (.5 very important!) with<br />

just enough pressure on the right point you<br />

can make a 6ft plus aggressor crumble. Used<br />

correctly the skills can eliminate a threat or<br />

give you sufficient time to flee and through the<br />

enjoyable teaching methods employed by Master<br />

Steve and Sensei’s Ryan & Chris these techniques<br />

are quick to learn.<br />

This was then demonstrated in the session’s<br />

final set piece, picture the scene: it’s a dark<br />

alley at night, and you’re set open by a group<br />

of assailants, in these conditions your sense of<br />

sight is almost nonexistent, how do we train<br />

for this?... blindfolds! Check out the video on<br />

bouncemagazinesactionman) of Master Steve and<br />

then Action Man defended themselves against<br />

multiple hostiles! This terrific drill could induce<br />

panic in some but it helps you focus and apply<br />

your skills to great effect.<br />

Vicki, 27, does circuit training, Zumba and<br />

she has classes in her diary, making a fixed<br />

appointment with herself to exercise. She<br />

said: “I started classes in 2009 because I<br />

was overweight and I wanted to be fitter and<br />

healthier and just feel better in myself.<br />

Vicki has a busy job as a secretary at RAF<br />

Lakenheath so she made sure that she fitted<br />

in a circuit training class on Tuesdays and a<br />

Zumba class when she was not working on<br />

Saturdays.<br />

She said: “It has given me so much more<br />

energy and I now take the stairs instead of<br />

the lift at work.” Vicki also runs with her fiancé<br />

Ben, 31, which has led to the couple spending<br />

more time together on something they both<br />

enjoy.<br />

They have also teamed up with<br />

Vicki’s brother and sister in law to<br />

go running together on Thursdays<br />

and Sundays. She said: “It has<br />

strengthened our relationship and<br />

it’s given me<br />

more confidence.<br />

“Shopping was no fun anymore because I<br />

refused to go up another dress size and I am<br />

not one of those people who can eat what<br />

they like and do no exercise.”<br />

A World Cup<br />

IN ENGLAND...<br />

A World Cup in England, this is<br />

something football fans have been<br />

dreaming about since 1966.<br />

For Rugby fans, the wait has not been as long,<br />

however they have still had to wait 24 years<br />

since the last one in 1991.<br />

So with this in mind, the Rugby World Cup<br />

coming to England has been hotly anticipated<br />

for the last 4 years since New Zealand won<br />

the Webb Ellis Trophy in New Zealand. With<br />

this anticipation comes pressure.<br />

Let’s be honest, there cannot be many other<br />

countries who put so much pressure on their<br />

teams to do well that we do here in England.<br />

Every 4 years you see the papers saying<br />

we’re going to win it (this is mainly The Sun in<br />

regards to football).<br />

So baring all of this in mind, when England<br />

kicked off the World Cup at Twickenham<br />

against Fiji the pressure was on.<br />

England responded to this and duly won<br />

comfortably, even getting a bonus point for<br />

the number of tries scored. The other home<br />

nations too went on to record good victories<br />

in their opening encounters. In fact the only<br />

real turning point of the World Cup over the<br />

opening weekend was South Africa losing in<br />

the final minute to Japan, a team who had<br />

never previously won a World Cup match.<br />

The second weekend was the big one though<br />

for 2 of the Home Nations. In a group which<br />

consisted of England, Wales, Australia, Fiji<br />

and Uruguay and with only 2 teams to qualify<br />

to the Quarter Finals, there was going to be<br />

huge emphasis when the 1st big game took<br />

place.<br />

And so it was, England vs. Wales. The teams<br />

traded penalties but then after England<br />

scored a try through Jonny May, England got<br />

them a 10 point lead. This lead should have<br />

been enough, however a Wales team ravaged<br />

with injuries, even before the tournament<br />

started, who then lost 3 players during the<br />

match, came back and stunned England by<br />

taking the lead with 5 minutes remaining.<br />

England then had a penalty within kicking<br />

distance to take them level on points but<br />

decided to attempt the win, however some<br />

stunning Wales defence pushed the lineout<br />

winner straight off the pitch and with that the<br />

game was lost.<br />

the All Blacks (New Zealand). The defending<br />

champions are looking to be the 1st team to<br />

defend their World Cup successfully. England<br />

came close in 2007, losing to South Africa in<br />

the final however this All Blacks side looks<br />

imperious.<br />

The way they annihilated the French in<br />

the Quarter Final even shocked my Kiwi<br />

housemate. With a touch Semi Final to come<br />

this weekend (as of writing) against South<br />

Africa, they will certainly be tested but I would<br />

still be betting on them if I was to put any<br />

money on a winner.<br />

My prediction is an Australia vs. New Zealand<br />

final. Having snuck past the Scot’s in the<br />

last minute, I still believe that Australia have<br />

enough firepower to beat Argentina in their<br />

Semi Final and New Zealand I think will<br />

overcome a strong South Africa side. The<br />

overall winner being New Zealand.<br />

I would just like to say congratulations to<br />

Lewis Hamilton on winning back to back<br />

Formula 1 World Championships (I am<br />

gambling that he would have scored enough<br />

points by now as he needs only 10 more<br />

than Sebastian Vettel and 3 more than Nico<br />

Rosberg to win his 3rd World Title and<br />

become the most successful British driver in<br />

F1 history).<br />

If he has done so, it is thoroughly deserved as<br />

he has been in a class of his own this season.<br />

England therefore had to beat Australia<br />

however they were humbled by a team who<br />

defensively were stunning. In the 2 matches<br />

where Australia played England and Wales, I<br />

have not seen a defence that good in many<br />

a year.<br />

Australia will certainly be one of the teams<br />

to beat. The other main team to beat will be<br />

Japanese Psych Rock comes to<br />

East Anglia, and recent Vicementioned<br />

Town charts it’s<br />

eclectic plethora of acts with<br />

charity compilation.<br />

Since last month’s issue, Norwich’s Owl<br />

Sanctuary venue held host to Acid Mothers<br />

Temple - the Japanese psychedelic rock band<br />

who have been on the fringes of cult status<br />

since 1995, with a discography even more<br />

difficult to chart than the Grateful Dead.<br />

The band have often been compared to kraut<br />

rock standard bearers Can or Neu, alongside<br />

the music’s clear psychedelic tendencies,<br />

such as Gong or the Soft Machine. Support<br />

came from the local post punk noise outfit,<br />

Wreck Age, who’ve been tearing through the<br />

Norwich scene for the past year or so.<br />

Down the other end of the region, Local label<br />

R*E*P*E*A*T Records have announced the<br />

<strong>November</strong> release of ‘This Is The Sound Of<br />

Sugartown’, a 12” vinyl and download album<br />

featuring twelve acts from the UK’s unsung<br />

DIY rock capital, Bury St Edmunds (which was<br />

recently featured in an article on Vice’s sister<br />

site, Noisey, charting the previous successors<br />

of the scene).<br />

Featuring new and exclusive tracks by acts<br />

such as FORTUNATO, Horse Party and Pale<br />

Fires, plus a cover painted by local artist and<br />

musician (and former Long Blonde) Kate<br />

Jackson, all profits from the compilation will<br />

be donated to Bury St Edmunds Women’s<br />

Refuge.<br />

The LP is strictly limited to 300 copies and<br />

can be pre-ordered from www.repeatfanzine.<br />

bandcamp.com - there’s also a launch party on<br />

the 14th of <strong>November</strong> at Vinyl Hunter Records,<br />

where DJ sets will be happening from the<br />

associated acts.<br />

KITTEN KINGDOM…<br />

So it’s finally happened, I am not an<br />

only pup anymore, “they” are here<br />

now, and it looks like they are here<br />

to stay! Uff.<br />

I come home from a bloomin’ hard days graft in the<br />

office only to find not one, but TWO little fur balls<br />

in my house.<br />

Lastly, don’t think I am enjoying it at nights when<br />

they ‘nestle’ up in my fur, and paw my ears; I am<br />

merely just trying to keep warm of course as the<br />

nights get cold.<br />

I suppose thinking about it the company isn’t that<br />

bad, and I do now have two others to blame naughty<br />

things on, come to think of it there could be many<br />

perks…<br />

Tsk, the little fleabags, I don’t even know how they<br />

got here, but they’re certainly making themselves<br />

at home, I even caught them drinking from MY<br />

Adnams water bowl.<br />

and I’m not jealous at all. Not one bit. No really…<br />

Hmphh!<br />

So… they may be a tiny on the cute side, rubbing<br />

around me making funny snoring noises, but I’m a<br />

terrier damn it we aren’t ‘supposed’ to like kittens.<br />

And so they may be kind of fun, chasing up and<br />

down and letting me join in, like a big brother figure,<br />

but I am still top dog.<br />
