Asparagus<br />

(Asparagus officinalis)<br />

(Approximately 30 seeds/gram)<br />

Not a plant to grow if you are looking for a fast<br />

reward. Although you probably will not enjoy your<br />

first crop for three growing seasons, it is well<br />

worth the wait!<br />

Start the seeds indoors or in a greenhouse 60 to<br />

90 days prior to your last expected frost date.<br />

Direct seeding is not recommended. The plants<br />

will grow deep roots, therefore well drained,<br />

heavily composted soil is required. Asparagus<br />

likes to be fed — manure and compost are<br />

important to successful crops.<br />

Mary Washington<br />

Bred by J.B. Norton and released in 1919, it<br />

became the most popular variety. As a perennial<br />

plant, it will serve you for years.<br />

Basil<br />

(Approximately 750 to 900 seeds/gram)<br />

An annual plant that has been cultivated for<br />

centuries as a fresh and dried culinary herb.<br />

Common in America by the late 1700s. The<br />

leaves can be used fresh, or dried, and used as a<br />

seasoning. Prefer well-drained soil, even<br />

moisture, and full sun.<br />

Cinnamon Basil (Ocimum basillicum )<br />

Adds an interesting cinnamon flavor to dishes that<br />

call for basil. Purple stems with dark green, two<br />

inch leaves on plants that can reach 30 inches tall.<br />

Purple blooms as well.<br />

Lemon Basil (Ocimum citriodorum)<br />

A small leaf variety on 15 inch tall plants. Adds a<br />

lemony flavor to teas, salads and other recipes.<br />

Lime Basil (Ocimum basilicum)<br />

The 12 to 24 inch tall plants grow best in full sun<br />

on well drained soil. The leaves have a zesty,<br />

citrus aroma and can be used in any recipe calling<br />

Licorice Basil (aka Thai Basil)<br />

(Ocimum basilicum) Grows up to 15 inches tall<br />

with leaves as big as two inches long. It has a<br />

These plants grow to about 18 inches, and provide<br />

several harvests. The leaves are used fresh to<br />

make pesto, and can be dried and used as a<br />

Beans<br />

(Phaseolus)<br />

Common beans (Phaseolus) originated<br />

somewhere near Guatemala, but their migration<br />

throughout North & South America had occurred<br />

prior to European arrival. In fact, beans were<br />

almost as universally cultivated as maize was by<br />

the native people.<br />

have organized them in the following pages by<br />

their growth habit (how they grow) and by their<br />

primary usage.<br />

Bush Dry Beans<br />

Calypso, Black (aka Yin-Yang)<br />

70 to 90 days — Nice texture and used as a<br />

baking bean. The plants reach 15 inches and are<br />

strong. The pods contain 4 to 5 seeds which are<br />

white and black with black dots in the white part of<br />

the seed. Harvest young as a snap bean and after<br />

about 90 days for dry use. About 55 seeds/oz.<br />

Dark Red Kidney<br />

95 days — Plants reach about 2 feet all, are very<br />

Great Northern<br />

90 days — Reportedly, seedsman Oscar H. Will<br />

obtained this bean from Son of Star, a Hidatsa<br />

Indian in the early 1880s. It grows well in Northern<br />

climates, is hardy and a heavy yielder. Reaches 20<br />

to 24 inches in height. Their white seeds are<br />

excellent baked or in soups. About 90 seeds/oz.<br />

Navy<br />
